By ANDREW KRULL editor.sdt@gmail.com Memorial Weekend at SCPL May 27-28 Live music and games for kids will be part of the Memorial Day celebration at Sullivan County Park and Lake. It’s also the opening day for the SCPL beach. Music starts Friday night from 8-11 p.m. when Terry Lee & The Rockaboogie Band will perform. There will also be SCPL souvenir items and a Camper Council 50/50 drawing during the concert. Saturday is generally packed with activities, with this year’s event including live music, a kid’s fishing rodeo starting at 8 a.m., a golf cart poker run, pet contest, vendors and Party On Productions providing entertainment for the kids. Vinnie and The Moochers will perform from 811 p.m. Some of the categories for the pet show at 10 a.m. include best tail wagging, most butch, best mirror image, most and least obedient, most original costume, most mysterious heritage, terrific pet tricks, best celebrity look-alike, best pairs, most glamorous, best vocal performance, most adorable and people’s choice award. The Family Fishing Rodeo contest also takes place on Saturday with a $50 gift certificate awarded to the family catching the biggest crappie or bluegill. There will also be a free raffle with prizes and awards for children under 15. Free

lunch and drinks will be served from 11 a.m. to 2:30 p.m. or until they run out. There will also be a two-person bass tournament for more experienced anglers, costing $40 per team with a 70 percent payback. Pre-entry forms with rules and details for all events can be found at

the SCPL gatehouse or several Wabash Valley sponsors. For more information contact (812) 2685537. Farmersburg Old Settlers Festival Early June (canceled) The Farmersburg Old Settlers

Festival advised on its Facebook page on May 15 that this year’s event was canceled. The post indicated that organizers were looking for volunteers to possibly bring the festival back in 2017. “Due to lack of community involvement the Old Settlers Committee has made the decision to

cancel the 2016 Old Settlers Festival,” the Facebook post states. “We have worked hard the last 3 years to attempt to keep the community activities alive and growing, unfortunately we are unable to keep doing so with so little help.” See FESTIVAL on B6

ment,” Merom Improvement Association President Curt Buethe said. “We’ve had the mechanical bull before but it’s been a few years. “There’s just lots and lots of different things, just depending on what people want to do,” he added. “It’s very family friendly, (with) an extreme amount of things to do for all kinds of ages ... and we’re also going to have horse drawn carriage rides all three days. The guy (doing it) is really cheap. It’s like $2 or so.” The festival officially opens at noon Friday, with service of the festival’s famous pork chop and chicken dinners beginning at 4 p.m. However, the 3-on-3 basketball tournament begins at 9 a.m. that day before the festival officially starts, with the tournament running throughout the festival starting at the same time on both Saturday and Sunday. Friday’s events include horse drawn carriage rides starting at 5 p.m., an ice cream eating contest at 6 p.m. and a Raku — Japanese pottery — demonstration by Buethe at 8:30 p.m. The evening culminates with the 30th Annual Little Miss Chautauqua Pageant on the Bluff Stage, in which children from anywhere in the county can participate at 7 p.m., with the festival closing for the night at 10:30 p.m. Saturday is the festival’s big day, which tips off with

continuing basketball tournament and sign-ups for the new euchre tournament at the community building at 9 a.m. “We wanted to try something different, get something for a different age group to get involved,” Buethe said of the euchre tournament. The festival parade begins at 11 a.m., with the Jackson Township Band playing at 12:30 p.m. Carriage rides begin for the day at noon. The Chautauqua Cruise-in, a car show, runs from 10 a.m. to 3 p.m., with a book sale at the Merom library from 10 a.m. and 2 p.m. The Asian carp netting contest — in its third year — runs from 10 a.m. to 4 p.m. on the Wabash River. At 3:30 p.m., the Dixie Bee Hard Working Drama Club performs, with Chautauqua’s Got Talent contests starting at 4 p.m. for those under 17 and 5 p.m. for those older than that. The band Bailout performs, starting at 6:30 p.m., until the festival closes at 10:30 p.m. “The Bailout band I think is going to be a big hit,” Buethe said of the group that covers all different genres of popular music. “They are going to come early and assess the crowd ... and the crowd can shout out anything they want to hear.” He noted that the group recently won the 2016 In-

dianapolis ABATE Battle of the Bands. On Sunday, the Chautauqua closes out with church services at 10:45 a.m., with egg toss, water games and tug-of-war action for the kids at noon. The baby contest will be held at 1 p.m., with registration in the main shelter at noon. Registration for the pedal tractor pull occurs at 2, with the contest itself at 3. A Sunday church sing takes place between 2-4 p.m., with different groups and individuals performing. Festival Continued from B9 “This is our 40th annual festival,” SCC President Don Ransford said. “It was begun in 1976 as a response to a youth in Shelburn who thought something should be done to promote the bicentennial. “A group of citizens took up the effort, and the first Old Fashioned Days was held,” he added. “We are commemorating those individuals this year as well as our typical events.” Events begin Thursday with the Sullivan County Garden Tractor Pullers at 6 p.m., with the bulk of activities occurring Friday evening and Saturday. Some new events have been added to this year’s schedule. “Plans are still being worked out, but we are adding a facial hair contest, an old fashioned costume contest, and a contest for decorating golf carts and bicycles,” Ransford said. “We will also have a car show on Saturday following the parade.” Friday’s activities include the crowning of the senior queen, a Little Miss and Mister Shelburn Contest, the recognition of festival originators, and music from 8:30 to 10:30 p.m. featuring Acoustic Doggs. The festival’s opening ceremony begins at 6 p.m. that evening. The Shelburn Community Club will serve fish sandwiches and drinks both Friday and Saturday between 6 and 8 p.m. The saloon and country store across from the community building will be serving root beer floats. The saloon will also serve noodles from noon to 2 p.m. on Saturday. Other dining options come from vendors set up near the community building. There will also be merchants available. Saturday is the festival’s biggest day. There will be a pancake breakfast from 8 to 10 a.m., a parade at 11 a.m. and big wheel and a pedal tractor pull for the kids at 12:30 and 1 p.m. respectively. Music for the evening includes an Elvis tribute from 5-7 p.m. and a performance by the Country Nomads from 8-10 p.m. In between those times, the best decorated golf cart and bicycle

contests and the facial hair and old fashioned costume contests will be held. Sullivan County Delta Waterfowl Kids Day June 18 The Sullivan County Park and Lake brings back an event that was a success two years ago, with Sullivan County Delta Waterfowl Kids Day sponsored by the Sullivan County Delta Waterfowl organization.

The event runs from 7:30 a.m. to 1 p.m. at no cost to kids or parents attending and with gate pass costs waived at the park. Organizers plan similar activities as in 2014, including Indiana Department of Natural Resourses officials gathering geese to band; a goose simulator, giving kids the effect of what it’s like to lay in a layout blind while geese land at their feet in the decoy spread; safety and public awareness with law enforcement and firefighter participation; a water

balloon fight; free lunch; goose calling; and waterfowl K-9 retrieval demonstrations among planned activities. Separate from that event, SCPL will also hold a night golf game on the park course. For more information, contact (812) 268-5537. Fourth of July Fireworks over the Lake Freedom Festival July 1-2 Fireworks over the lake will take place Saturday night on July 2.

The rain date is scheduled for July 3. Music will be available both nights with the Jake Hoult Band performing on Friday between 8-11 p.m. and Citizen Wolfe playing on Saturday before the fireworks during the same hours. Party On Productions will provide children’s’ entertainment on Saturday from noon to 4 p.m. A variety of food and vendors are generally part of the festival. See FESTIVAL on B11

Sullivan County 4-H Fair July 16-23 The Sullivan County 4-H Fairgrounds will once again turn into a hub for learning, fun and competition during this year’s Sullivan County 4-H Fair. The dog show and bike rodeo are slated for July 11, with the cat show following the next day. The open class fashion revue and 4-H consumer clothing judging will take place on July 14 in the 4-H building, along with 4-H fashion revue judging later that afternoon and the public fashion revue at 7 p.m. The night before the 4-H Fair’s official start date, live-

stock will be checked in — while rabbits, poultry, pigeons, waterfowl and gamebirds must all be put in place. Motocross practice will take place at the grandstand from 5-10 p.m. The fair’s official start date, July 16, will include judging of all non-livestock projects. From 6 to 10 p.m. that day, the exhibit building will open so all 4-H participants can see how they fared. That day also includes a rocket launch at the grandstand at 1 p.m., a 4-H foods silent auction and the Grand Champion Sycamores Baked Potato & Salad Bar Dinner from 5-8 p.m. Poultry, pigeon, waterfowl and game bird and egg judging takes place at 2 p.m., with the day wrapping up with motocross racing at 7 p.m. at the grandstand. Continued from B11 The afternoon features the 4-H Council Fazoli’s pasta dinner (11:30 a.m. to 1:30 p.m.), 4-H Ag & Compact Tractor Driving Contest (1 p.m.), the lawn and garden tractor pull at the Grandstand (2 p.m.), a baby contest in the 4-H Building (6 p.m.), a free concert in the show ring with Angie Wilson performing and dodgeball at the Grandstand (both at 8 p.m.). To be eligible for the baby contest, children must be age two or younger. It’s $1 to enter, and registration begins at 5. Winners of each category will receive a champion ribbon. One of those champions will be selected as Grand Champion, and each baby will receive a participation ribbon. event. “The ambulance and fire department is hosting their first tractor and truck pull on (Sunday) Aug. 7 at 3 o’clock at the city park,” organizer Mary Ann Dudley said. “During the bicentennial, we had a tractor pull there last year, and we’re going to try and do it every year.” The event will feature four classes each of tractors and trucks, with Charlie Kirschner — who participates and organizes pulls all over the region — handling the competition side as he did at last year’s bicentennial. “We have some pretty big classes of tractors and trucks involved,” Dudley said. Admission will be $5 with those under 12 admitted free. Food and refreshments will be available. Hymera Seafood Festival Aug. 27 This year’s Hymera Seafood Festival runs from 11 a.m. to 7 p.m. on Aug. 27. See FESTIVAL on B13

All the day’s activities will take place nearby, including vendors, activities and friendly competitions. “We’ll have entertainment starting about noon and we’ll have some type of music up until 7 (p.m.),” Hymera Ruritan Club President Sue Case said. “We’re working on a Karaoke program for later in the evening. There will be a one-mile run for children up to eighth grade. Those interested are asked to meet at the Ruritan Building to register before the 8 a.m. run. A parade will make its way down SR 48 and onto Main Street beginning at 10 a.m. Those wanting to enter the parade must simply line up on East Street the day of the event. “We haven’t picked a grand marshal yet,” Case said. “We’ll be doing that at our June (Ruritan Club) meeting.” A host of friendly competitions will go on through the day, including the toilet paper toss, a nail driving contest, egg toss and a tractor pull and big wheel race for the kids, among others. “They’ll have their dunking booths there, and several games (festival goers) can participate in,” Case said. “They’ll be going on all day long. After the parade is when we have all the activities.” Labor Day Festival at SCPL Sept. 2-3 The Labor Day Festival at Sullivan County Park and Lake will run from Sept. 2-3. The band Haywire will perform at the park from 8-11 p.m. on Friday night, with Strangers in Town on stage on Saturday night playing the same hours. Children’s entertainment will be available on Saturday afternoon, with a variety of food and vendors on hand throughout the festival.

Sullivan Rotary Corn Festival Sept. 14-17 Sullivan County’s premier festival should live up to its billing again this year, with new, live nightly entertainment and many of the familiar sights and sounds Sullivan Rotary Corn Festival visitors have grown used to. The Corn Festival will be Sept. 14-17 on the downtown square in Sullivan. Luehrs’ Ideal Rides will once again provide the carnival, which opens at 6 p.m. on Wednesday through Friday, Sept. 14-16, and at noon on Saturday, Sept. 17. Bracelets for rides will once again be available. The festival’s opening night will be visitors’ first opportunity to enjoy all the vendors, selling everything from meat on a stick to homemade baked goods. Wednesday’s entertainment, starting at 7 p.m., will be provided by Blue Moon Swamp, a Creedence Clearwater Revival band, which performed at the Corn Festival for the first time two years ago. “(Lead singer and guitarist) Dan McGuinness has been touring with the original CCR, since (John) Fogerty and them don’t get along too well,” Sullivan Rotary Club entertainment committee member Steve Simmons said. “He sounds a lot like Fogerty. These guys do a good job. He barks it out like Fogerty, McGuinness (does), and all his mannerisms, so it’s a good show.” Thursday’s entertainment, also starting at 7 p.m., brings another band that performed at the festival two years ago — The Motown Sounds of Touch, which plays a lot of songs from the Four Tops and Temptations. “They do all the old Motown music,” Simmons said of the Dayton, Ohio-based band. “Those were the guys that were on ‘The Winner Is’ on NBC as a top three finalist. Continued from B13 “They are a Beach Boys tribute band out of Canada,” Simmons said. “The year that they were here was the year they were calling for rain, and we moved it to the (Sullivan High School) auditorium. “We usually make arrangements with the high school beforehand,” he added. “We’ve been pretty lucky, but it’s good to have another option when weather causes a problem.” Another feature on Friday will be the Sullivan Elementary Chalk Drawings. Every year during the Corn Festival, the square is decorated by the students. Starting Friday night, everyone can view the drawings. Saturday is the festival’s biggest day, kicking off at 11 a.m. with the Tim Olson Futurity Turtle Derby. The event, where numbered live turtles race from a centralized location, is named after a longtime Sullivan Jaycee whose appearance in local businesses every September hawking turtle derby entries heralded the impending festival. The event takes place near the Parade Reviewing Stand. Turtles will compete in heats of 10 to 12 contestants each, with the number of heats dependent upon how many backers buy turtles. Continued from B14 The Corn Festival parade begins at 1 p.m., marching along Section Street from Wolfe to Harris streets. It’s the 60th such parade. Registration information can be found on the Rotary’s website, www.sullivanrotary.org. After the parade will be the Free Rotary Corn Feed, hosted on the northwest corner of the courthouse. All are invited for free ears of corn with the fixings, along with free soda. More than 1,000 ears are expected to be given out to festival goers to guarantee that no one is left empty-handed. Rotary gets a big help from the Sullivan Beta Club, which shucks the corn before Saturday. If you don’t get enough corn during the free feed, you can try your taste buds in the Corn Eating Contest. The contest is divided into age and gender groups, and each contestant is given 15 minutes to see how many ears of boiled corn he or she can eat. Winners will be given prizes for their efforts.

The night closes with a performance by a group familiar to Sullivan festival-goers, as BritBeat performs at 7 p.m. “They are the best out there (among Beatles cover bands),” Simmons said. “We’ve probably had them six or seven times.” The group generally covers all the different eras of Beatles music, with several costume changes covering everything from the mop-top look of their early ’60s to the more psychedelic periods prior to their break-up in 1970. “We’re trying to get some for 2:30 to 4:30 (p.m. on Saturday),” Simmons said of additional acts, with local performers having taken the stage during the afternoon in the past. He noted that bringing quality acts to the festival can be an expensive endeavor beyond normal fundraising efforts, which couldn’t be made possible without donations from about 50 area sponsors and the help of local businesses. Simmons also lauded the work of soundman Curt Hall. “He’s one of the best in the United States in my opinion,” he said. “He works for a lot of the big guys. We’ve got good bands and then we have a good sound guy, so the end result is excellent for those at the festival.”

Dugger Coal Festival Sept. 25-Oct. 1 The annual Dugger Coal Festival, celebrating the area’s rich history in the coal industry, will be Sunday

through Saturday, Sept. 25-Oct. 1. Many of the schedule details for this late in the season festival remained in the planning stage at publication time for this special section. The bulk of events will occur between Sept. 29-Oct. 1. “The only thing set in stone is we are going to be crowning the Coal Festival Queen on Thursday (Sept. 29) evening and that will be at 6 o’clock at the First Christian Church,” Coal Festival President Kelley Harbaugh said. “Somewhere in there, we are going to fit in the baby contest and the junior king and queen that evening.” A community service will be held at the First Christian Church at 6 p.m. on Sunday, Sept. 25, prior to the actual festival. Many in town were looking for a return to tradition and its original downtown location from the Dugger town park — which has hosted the event the last few years. However, Harbaugh wanted to take some new information back to the festival committee prior to giving a firm location for this year’s event. “We’re still working on our schedule,” she said. “I know we are going to have some type of band on Saturday evening and the same on Friday.” On Saturday, American Legion Post 224 has traditionally hosted a breakfast in the morning. “The homecoming parade is that morning at 10,” Harbaugh said. Dugger Union Community School traditionally crowns its homecoming queen prior its homecoming football game, in which they host White River Valley at 2 p.m. this year. An alumni banquet at the high school generally follows that evening. Coast Guard: There are several ways to stay safe on the water

Times staff report With summer activity, many outdoor enthusiasts will take to the water in boats, skis and other watercraft. However, there is risk when riding the currents. The United State’s Coast Guard’s website offers some ways to keep safe while boating. One way is for those less familiar with boats to take boating safety courses. “Errors account for 70 percent of boating accidents,” the agency’s website states. “Learn the rules and your responsibilities before you boat.” The website offers several options for the classes. The Coast Guard also suggests utilizing life jackets. “To meet U.S. Coast Guard requirements, a boat must have a U.S. Coast Guard Approved life jacket for each person aboard,” the agency’s website states. “Boats 16 feet and over must have at least one Type IV throwable device as well.” It continues that those devices should be tested every year, replacing those that are worn or that no longer support an individual they are designed for. The following are events scheduled at this time. Other events, as they are added, will be listed on www.sullivancountyin.com. • A Founders of Indiana Memorial Dedication will be on June 13, honoring James Scott, Carlisle Town Cemetery, and John Benefiel, Johnson Cemetery (Haddon Twp.). The Indiana Archive and Records Administration is honoring the Founders of Indiana; 43 early settlers, including the two aforementioned, who met in Corydon 200 years ago to establish Indiana’s statehood and write Indiana’s first Constitution. Check the website for time and any additional information. • On Sept. 21, the Indiana Bicentennial Torch Relay will make its way through the county early that afternoon, with several Sullivan County residents expected to participate. The relay will enter the county on SR 54, proceeding west from Dugger to Sullivan, then north through Shelburn and Farmersburg, before passing off the torch at the

Sullivan County celebrating state bicentennial this year; their own and Merom’s in 2017 Vigo County line. There will be a short stop in front of the Sullivan County Courthouse and the county commissioners will declare a proclamation. There will also be a brief stop in front of Sullivan Central Plaza, where Sullivan Mayor Clint Lamb will address the torch relay caravan. • During the summer and fall months, two specially painted Bison-tennial buffaloes can be expected to make appearances at various town festivals and other special events. As part of the Bison Art Project, the

Sullivan Area Art Guild and the Tourism Commission of Sullivan County have each purchased an unadorned bison to represent Sullivan County. Members of the Art Guild will paint one of the bison, already named “Sully.” The Sullivan County Historical Society will assist in historical designs for the Tourism Commission’s bison, which will be painted by artist Steve Tucker. The TCSC’s bison will be displayed at area events and festivals throughout the Indiana Bicentennial year and the Sullivan/Merom Bicentennial events in 2017.

After the festivities, it will be on permanent display at the Historical Society. Sullivan/Merom Bicentennial 2017 Next year, Sullivan County and the town of Merom will celebrate their 200th birthdays. A committee has already met to plan events, with the following already scheduled: • Bison Art Project will be displayed at area festivals and events throughout the year. • Merom Bluff Chautauqua, set for June 2-4, 2017, will have special events celebrating their 200th year. • Sullivan County Rotary Corn Festival, dates to be announced, will have special events celebrating Sullivan County’s 200th year. • The Tourism Commission plans on having a display at area events promoting the Sullivan/Merom Bicentennial celebrations during 2017. • Also, the Sullivan Area Art Guild is creating a special bicentennial quilt for the Sullivan County/Merom celebrations. The Art Guild is looking for Sullivan County quilters to help create the quilt. Pictures from the past and present from all areas of the county are needed. After 47 years, Trotter Sports Center — a hunting and fishing institution in Sullivan County — changed hands in October, with longtime owner Joe Trotter saying it was just the right time to retire. “It’s mainly because I’m 72,” he said. “That’s what people do when they get old.” At that time, new owner and longtime customer Ben Wolfe, said patrons could expect the same experience at Trotter’s that they have had in the past, including the same store name. “We’re going to try to keep the same atmosphere,” he said. “There may be some different kind of bows, but basically it’s going to be the same type of atmosphere.” See NEEDS on B34

If warm enough, city pool to open Memorial Day

So long as the water’s temperate hits that mark, the pool — located at the Sullivan City Park on South Main Street — will open Memorial Day. In addition to the pool’s normal operations and hosting the annual Sullivan Night Out event, Sullivan City Park Board President and pool manager Amy Cobb said the facility is planning additional events. “We’re taking about planning some stuff, but they aren’t finalized yet,” she added. Hours of operation and prices have remained unchanged this year The pool will be open 11 a.m. to 5 p.m. Monday through Saturday, unless closed for private parties. General admission to the pool is $3 per person, with those three-years old and under admitted free. A two-hour pool party costs $140, and a threehour party runs $175 — each with a $50 clean-up deposit. Reservations can be made by calling Sullivan City Hall at (812) 268-6077. This will be the third year that the pool will feature Americans with Disabilities Act-compliant restroom facilities and ramps, along with a lift chair that lowers patrons into the pool and an aquatic wheelchair.

Sweltering summer afternoons might not be comfortable, but any discomfort can be quickly washed away with a refreshing dessert, such as the following recipe for Kiwi Fruit Sorbet from Lou Seibert Pappas’ “Ice Creams & Sorbets” (Chronicle Books).

Kiwi Fruit Sorbet Makes about 1 quart

2 teaspoons grated lime or lemon zest 3⁄4 cup sugar, divided 3⁄4 cup water 2 pounds kiwi fruit (about 8 kiwi fruit), peeled and quartered 6 tablespoons freshly squeezed lime or lemon juice 2 limes, quartered

In a small bowl, mash the zest with 1 teaspoon of the sugar to release the oils. Combine the remaining sugar and water in a small saucepan and bring to a boil, stirring to dissolve the sugar. Cook until the syrup is clear. Remove from the heat and let cool to room temperature. In a food processor or blender, purée the kiwi fruit with the juice, syrup and sugared zest. Transfer to a container, cover and refrigerate until thoroughly chilled, about 3 hours. Freeze in an ice cream maker according to the manufacturerʼs instructions. Or, to freeze without an ice cream maker, pour the mixture into a 9-inch nonreactive square pan. Cover with aluminum foil or plastic wrap and freeze just until solid, 2 to 3 hours. Scrape out into an electric mixer or food processor and process briefly until light and fluffy. Serve at once or transfer to a container, cover, and freeze until firm, about 2 hours. At serving time, garnish with a lime wedge to squeeze over each serving. PC166150

When making a meal, be it an intimate dinner for two or the main course for a dinner party, the entree often gets the bulk of the attention. But as any cook knows, the side dishes can make just as big an impression as the main course. Few side dishes are as versatile and beloved as mashed potatoes. When making your next feast, consider the following recipe for Irresistible Basil Mashed Potatoes from Marlena Spieler’s “Yummy Potatoes” (Chronicle Books).

Irresistible Basil Mashed Potatoes Serves 4 to 6

2 pounds floury, baking-type potatoes, peeled and cut into chunks Salt 2 to 3 cups fresh basil leaves of any type (2 to 3 ounces — a nice big bunch) 2 cups heavy (whipping) cream or halfand-half 4 tablespoons butter Black pepper

1. Place the potatoes in a saucepan and fill with water to cover. Add a big pinch of salt. Bring to a boil and cook, covered, for about 10 minutes, or until the potatoes are just tender. Drain, return to the heat and shake for a few minutes to dry them out; turn off the heat, cover the pan and keep warm. 2. Meanwhile, blanch the basil. Plunge it into a saucepan of boiling water, cook a moment or two until the leaves wilt and slightly change color and lift out of the pot using a slotted spoon, then plunge into a bowl of ice water. Leave for about five minutes or until it turns brightly colored, then lift from the ice water. 3. Heat the cream in a saucepan until bubbles form around the edge of the pan. 4. Squeeze the basil in your hands gently to rid it of excess water from cooking. Place in a food processor and whirl to puree. Slowly pour the hot cream into this pureed basil and whirl until it forms a fragrant, pale green cream. 5. Coarsely mash the potatoes with a masher, then add the basil cream and mash it in; work in the butter, and season to taste with salt and pepper. If youʼre serving duck or lamb, serve the potatoes with a drizzle of the port reduction around the edge.

Chicken wings are beloved by people of all ages and appetites. While many people only eat wings when out on the town, this lovable bar food can be enjoyed at home as well. The next time the big game is on or you simply have a hunger for homemade wings, try your hand at the following recipe for Virgil’s Smoked Chicken Wings With Blue Cheese Dip from Neal Corman’s “Virgil’s Barbecue Road Trip Cookbook” (St. Martin’s Press). Virgilʼs Smoked Chicken Wings With Blue Cheese Dip Serves 4

Blue Cheese Dip 2 cups blue cheese crumbles, divided 1 cup mayonnaise 1⁄2 cup buttermilk 2 teaspoons hot sauce 1 teaspoon Worcestershire sauce 1⁄2 teaspoon kosher salt 1⁄4 cup finely chopped scallions 1⁄4 cup finely chopped celery

Marinade 1⁄2 cup vegetable oil 1⁄2 cup hot sauce 4 tablespoons Virgilʼs Dry Rub (see below) 4 tablespoons granulated garlic 4 tablespoons granulated onion Juice of 1/2 lemon

Wings 8 large chicken wings 1⁄2 cup Virgilʼs Dry Rub (see below)

Sauce 10 tablespoons unsalted butter 1 teaspoon cornstarch 4 tablespoons white vinegar 3⁄4 cup hot sauce 1⁄4 teaspoon cayenne pepper

1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce, and salt in the bowl of a food processor and blend on low until smooth. 2. Remove to a medium mixing bowl and fold in the rest of the blue cheese, scallions and celery, being sure to break up the larger blue cheese crumbles. Place in a covered container and refrigerate overnight. 3. Mix all the marinade ingredients in a

large mixing bowl. Place the wings in a large container with a lid and pour the mixture over the wings. Toss until the wings are thoroughly coated. Cover and refrigerate for 2 days. 4. Preheat the grill or smoker to 245 F. 5. Spread out the wings on a sheet pan and wipe away any excess marinade. Sprinkle liberally with the dry rub, coating the wings all over. 6. Position the wings on the grill away from the direct heat of the coals or burners, and add hickory to the smoker or hickory chips on the coals or gas burners. 7. Cook the wings for about 3 hours, flipping every 30 minutes (their internal temperature should be about 165 F when cooked). 8. While the wings are cooking, cut the butter for the sauce into 1-inch cubes and refrigerate. Whisk the cornstarch into the white vinegar, in a small bowl. 9. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat. 10. Add the cayenne and slowly whisk in the cold butter. Keep warm until serving. 11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce, and toss. Repeat with the remaining wings and serve on a platter, with the blue cheese dip on the side. Virgilʼs Dry Rub Makes 5 to 51⁄2 cups

21⁄2 cups sweet paprika 1 cup granulated sugar 1⁄2 cup Texas-style chili powder 1⁄2 cup minced onion 1⁄2 cup granulated garlic 1⁄4 cup dried parsley flakes 6 tablespoons kosher salt

Combine all of the ingredients in a medium bowl and whisk together until completely incorporated. Transfer to a covered bowl with a tight-fitting lid. Store in a cool, dry place. PC164003
