I’m delighted to have Mariana Muñoz, CEO of the hugely successful firm Terraza Balear, on our cover. It was an honour to interview her and discover her most outgoing side in our photoshoot with outfits from Folklorious and the great team of professionals who joined us. In this edition, we also had the pleasure of interviewing Davide Dellago, the second-best sommelier in Spain, and discovering some magnificent boutique hotels where you can enjoy a laid-back and more serene Mallorca. Summers aren’t as endless as we believed when we were kids, but that doesn’t mean that we can’t enjoy them like we used to. Invited to the Design Summer Party and eager to meet the woman behind Terraza Balear, I’m awestruck by an imposing figure in the distance with flowing blonde hair, an intense stare and impeccable elegance. Mariana Muñoz does not go unnoticed in the crowd.

Are there any family influences that inspired you to devote yourself to the design world? Yes, there are! I have experienced the furniture world since I was in a cot. My father was an antiques dealer. He taught me to be passionate about those special objects that have a story to tell. He also taught me about styles and periodization. I still have a very special 18th-century Queen Ana style piece... A collector’s jewel. We are aware that you were a professional athlete in your youth. What values has the sports world instilled in you? Sport really determines your character. It teaches you key values that are important for your personal growth: self-control and discipline, teamwork, sacrifice, desire to excel, passion, emotion, and much more. Also, being highly competitive teaches you to show respect for your opponent when you lose and… humility when you win. What does “love” mean for Mariana on a personal and professional level? I am a very passionate, affectionate and sensitive person. I live on an emotional level. I love the people around me, I love my profession, I love the small details... I couldn’t live without love. On a professional level, I understand that love goes hand in hand with vocation. Without love for your job, there can be no creative work. Who is a vital figure in your life? My husband. I’ve been with him for 23 years and together we created our best project: a wonderful family. Daniel gives me the serenity, calmness, and the point of rationality that my creative and floating mind needs. By his side, I’m focused and come back down to earth. Aprendí de él la pasión por el objeto especial, el que tiene una historia que contar. Él también me enseñó estilos y periodización. Conservo aún una pieza muy especial del siglo XVIII estilo Reina Ana... Una joya de coleccionista. Sabemos que en su juventud fue deportista profesional. ¿Qué valores le ha inculcado el mundo del deporte? El deporte te marca a fuego el carácter. Te imprime valores que son claves en tu formación como persona: autocontrol y disciplina, trabajo en equipo, espíritu de sacrificio, afán de superación, pasión, emoción y un largo etcétera. Asimismo, la alta competición te enseña a demostrar respeto por tu adversario cuando pierdes y… humildad cuando ganas. ¿Qué es el amor para Mariana en el plano personal y profesional? Soy una persona muy apasionada, cariñosa y sensible. Vivo en el plano emocional. Amo a las personas que me rodean, amo mi profesión, amo los pequeños detalles... No podría vivir sin amor. En el plano profesional entiendo que el amor va de la mano con la vocación. Sin amor por tu profesión no puede haber trabajo creativo. ¿Cuál es su pilar en la vida? Mi marido, llevo 23 años con él y creamos juntos nuestro mejor proyecto: formar una maravillosa familia. Wir wissen, dass Sie in Ihrer Jugend Profisportlerin waren. Welche Werte hat die Sportwelt Ihnen mitgegeben? Der Sport verpasst deinem Charakter ein Brandzeichen. Er prägt dir Werte ein, die für deine Persönlichkeitsbildung von entscheidender Rolle sind: Selbstkontrolle und Disziplin, Teamarbeit, Aufopferungsbereitschaft, Streben nach Höchstleistungen, Leidenschaft, Emotion und ein langes usw. Darüber hinaus lehrt dich der Hochleistungswettkampf, Respekt für deinen Gegner zu zeigen, wenn du verlierst und... Demut, wenn du gewinnst. Was bedeutet Liebe für Mariana auf persönlicher und auf beruflicher Ebene? Ich bin eine sehr leidenschaftliche, liebevolle und sensible Person. Ich lebe auf emotionaler Ebene. There have been many hard moments, but a difficult point that requires all my energies stands out: managing the exponential growth that we’ve experienced since the opening, exceeding ourselves in quality. I appreciate the competition, it’s always healthy. It forces you to add value to your project, makes us all strive further and sets a great challenge: to deliver excellence in our work! This always implies a sophisticated interior design project and the opportunities to do it better each time are limitless. We are honoured to be part of this evolution.

On the other hand, we’ve had the honour of inspiring international design and architecture press, which has opened the door to new projects outside Spain. On the 28th of June, we had the pleasure of organising, together with BOP, our latest Style in Mallorca Svensk After Work, an event that brought together clients of the magazine, the Swedish community and entrepreneurs of the island. The guests were able to taste samples from the BOP-Up Kitchen such as meat, fish and vegan yakitori and bao buns, gyozas and more while they enjoyed the music of DJ Lahox in a relaxed, informal and fun environment.

It has been decorated by the internationally renowned Lázaro Rosa-Violán, recognised for projects such as the Mango Tree (Washington D.C.), Les Chouettes (Paris), El Nacional (Barcelona) and Amazónico (Madrid), among many others. The restaurant exudes elegance and artlessness with large windows that fill the space with natural light. Inside, you will find an open-kitchen concept with a large bar that surrounds the kitchen so that the diner can enjoy the action.

The star of the kitchen is their charcoal grill through which we see fresh fish, seafood and meat pass daily such as the best old beef ribeye in the world, a Finnish steak matured for 60 days that was awarded first place at the World Steak Challenge 2018.

When and how did Davide Dellago’s relationship with wine begin? Working in hospitality, I’ve always had a relationship with wine, however, I went from just observing it to feeling curiosity towards it when I worked in Venice in 2016. I’ve only been in this profession for a short amount of time, but I’ve always given it my all. We know you come from Italy. What attracted you to Mallorca? Love! I met my half Swiss, half Spanish partner in Switzerland and I wanted to learn more about Spanish wines. I’ve always thought that the best way to improve is to go directly to the source, so we decided to move to Mallorca. As soon as I went up to the Sierra de Tramuntana, I never wanted to come down. I instantly fell in love with the place. You came second in the Spanish Sommelier Championship. Tell us about your experience. It was a very important experience for me. I try to spend at least an hour studying every day. You have to know everything about wines and also beers, spirits, teas, olive oils, cheese, and even water! You always have to be up-to-date and the more you study, the more you realise how little you know. What qualities do you think are essential to be a good sommelier? In my opinion, a good sommelier has to be professional, always motivated, and above all humble. Many sommeliers fail to do this. If a guest tells you that they don’t like a wine, even if it’s the best in the world, that’s fine, it’s their taste. Do you think the nationality of the diner plays a role when choosing a wine? Of course. When you approach a table, you always have to observe where they are from, if they have ordered an aperitif, etc. in order to understand what kind of people they are and be able to offer them the best wine. And that doesn’t mean that it has to be the most expensive, simply the best for them.

Cada día intento dedicarles al menos una hora a los estudios. Has de saber todo sobre vinos y también sobre cervezas, licores, tés, aceites de oliva, quesos, ¡incluso agua! Siempre has de estar al día y cuanto más estudias, más te das cuenta de lo poco que sabes.

¿Qué cualidades cree que son esenciales para ser un buen sumiller? Para mí un buen sumiller tiene que ser profesional, estar siempre motivado y sobre todo ser humilde. Esto le falla a muchos sumilleres, si un cliente te dice que no le gusta un vino, aunque sea el mejor del mundo, no pasa nada, es su gusto.

Welche Eigenschaften sind Ihrer Meinung nach von wesentlicher Bedeutung, um ein guter Sommelier zu sein? Für mich muss ein guter Sommelier profesionell sein, immer motiviert und vor allem bescheiden. Das fehlt vielen Sommeliers. Wenn ein Gast dir sagt, dass ihm ein Wein nicht schmeckt, dann macht das nichts, das ist sein Geschmack, selbst wenn es der beste Wein der Welt wäre.

¿Cree que influye la nacionalidad del comensal al escoger un vino? Por supuesto. Cuando vas a una mesa, siempre tienes que observar de dónde provienen, si han pedido un aperitivo, etc. para entender que tipología de personas son y poder ofréceles el mejor vino. Y eso no quiere decir que tiene que ser el más caro, sino el mejor para ellos.

Could you tell us about your latest discovery in the wine world? I love the wines of a winery in the south of England called Gusbourne. I was surprised by their quality; the sparkling wines are very good, and the red ones are reminiscent of a Pinot Noir. A wine to fall in love with and another to surprise you? A Pinot Noir from Burgundy to fall in love with and a San Leonardo from northern Italy to surprise you.

Of all the wines you know, which is your favourite? That’s like asking what your favourite song is, it’s impossible to answer! One day, my favourite song is Highway to hell by AC/DC and the next day it’s a Beethoven symphony. Music depends on the mood and wine does too. Is there any Denomination of Origin that we should be aware of? The Toro D.O is very important in Spain and not recognised enough outside the country. They are incredible wines that are very powerful and, at the same time, full of freshness. And finally, is there anything you are working on for the future? My goal is to become one of the best sommeliers in Europe within the next 5 years and I am also studying with the Court of Master Sommeliers, the most difficult sommelier exams in the world.

Y por último, ¿tiene algo en lo que esté trabajando para el futuro? Mi objetivo es convertirme en uno de los mejores sumilleres de Europa en los próximos 5 años y también estoy estudiando con el Court of Master Sommeliers, los exámenes de sumilleres más difíciles del mundo.

Produced in Llucmajor, its authentic flavour consists of juniper native to Ses Salines distilled with locally-grown citrus fruits for its classic gin and, for its special edition La Mallorquina, with the fruit of ancient olive trees from the Son Moragues estate in Valldemossa.

It was in 2010 that the couple Eva Maier and Stefan Winterling, an oenologist and a winemaker, came up with the idea of distilling gin with ingredients native to the island. In 2017, they decided to leave their jobs at wineries to fully dedicate themselves to the brand. “It was a slow process, but it has been growing ever since. The award has motivated us and given us great publicity. We’re really proud”, says Winterling.

Fue en el año 2010 cuando a la pareja Eva Maier y Stefan Winterling, enóloga y viticultor, se les ocurrió la idea de comenzar a destilar ginebra con ingredientes autóctonos de la isla. En 2017 decidieron dejar sus trabajos en bodegas de vino para dedicarse por completo a la marca. “Fue un proceso lento, pero ha ido creciendo. El premio nos ha impulsado y nos ha dado a conocer. Estamos muy orgullosos”, comentó Winterling.

The distillation process consists of four basic steps: steeping the ingredients for fortyeight hours, distillation, sixteen weeks ageing and, lastly, bottling the flavoursome gin for its consumption.

El proceso de destilación consiste en cuatro pasos básicos: reposar los ingredientes durante 48 horas, destilar, añejar la mezcla durante 16 semanas y, finalmente, embotellar la sabrosa bebida para su consumición.

Wir schrieben das Jahr 2010, als das Önologen- und Winzerpaar Eva Maier und Stefan Winterling, die Idee hatten, Gin mit einheimischen Zutaten der Insel zu destillieren. 2017 beschlossen sie, ihre Anstellungen in Weinkellereien aufzugeben, um sich voll und ganz der Marke zu widmen. „Es war ein langsamer, aber stets wachsender Prozess. Die Preisauszeichnung hat uns einen Impuls gegeben und hat uns bekannt gemacht. Wir sind sehr stolz“, kommentiert Winterling. Der Destillationsprozess besteht aus vier Grundschritten: Die Zutaten 48 Stunden ruhen lassen, destillieren, die Mischung 16 Wochen lang reifen lassen und schließlich das schmackhafte Getränk für den Verzehr abfüllen.

Pure art under a very expressive name in which you can make out the character of Pilar, a determined, hardworking woman with very clear ideas of how to bring a breath of fresh air to the winery. QBQ is made with the native Giro grape, which is cold-stored for twenty-four hours and then the best fruit is macerated for twelve hours at a controlled temperature, which preserves the varietal aromas. A canary-yellow wine with white-gold edges, very clean and bright, sophisticated nose with floral notes and fruity aromas of peach and apricot, perfectly harmonised with intricate aromas of hazelnut, dried fruits and memories of buttery brioche. On the palate it’s a Mediterranean wine that is also fresh, broad and long-lasting. With the initials QBQ translating from Spanish literally as ‘wow, that’s good’, we can say that it definitely warrants that name. We paired it with smoked monkfish with pine leaves, served with Mallorcan vegetables and a light butter sauce. Pure perfection! Find QBQ at wine stores or visit the winery itself. fter a painful break-up, my friend Ariana landed in Mallorca for some quality time together. She’s lived in the United Kingdom for fifteen years and has her own art gallery there. I picked her up at the airport and after a big long hug, the first thing she said was that she doesn’t want anything more to do with men. The first few days were total chill-out, but in the end, I dragged her to a couple of art exhibitions, as there’s a boom of new painters here in Mallorca right now. She spent so much time looking at a painting that a young provincial type approached her and asked whether she liked his work. Ariana turned around and the spark was instant.

Se quedó tanto tiempo mirando un cuadro que un joven con pinta de payes se le acercó y le preguntó si le gustaba su obra. Ariana se giró y las chispas saltaron al momento.

Sie blieb vor einem Bild stehen und betrachtete es so lange, dass sich ihr ein junger Mann, der wie ein Bauer aussah, näherte und sie fragte, ob ihr sein Werk gefalle. Ariana drehte sich um und es funkte vom ersten Moment an.
