Christine Wallace - My home is in Didcot Oxfordshire and I started my love of baking at the tender age of 6 by watching and learning from my wonderful grandmother. Since then I have always enjoyed shutting myself in the kitchen and creating all kinds of culinary delights! My first love has always been cake making and especially the finishing and decorating, having taught myself the art of piping and sugarcraft. Because of these skills it then, of course, fell to me to bake for all the special family occasions and I was persuaded (and bullied a little!) into applying for The Great British Bake Off 2013 series. I had no expectations of getting through so was totally overwhelmed when I received the phone call from the film company and then made my way through the audition processes to be eventually selected as one of the programme bakers, especially as 15000 people applied!! I was amazed and thrilled to get as far as the quarter finals.... I met some wonderful people, had fun and stress in equal measures and made 12 friends for life in my fellow bakers. I am now deriving huge enjoyment from all my post Bake Off activities, judging charity baking events, giving talks, attending the Food Shows, demonstrating, recipe compilation and some work with one of the Shopping Channels. I am also now resident cook with BBC Radio Oxford and enjoy working there with a great team of lovely people.
Wiltshire Cure - Not so long ago, the town of Calne was synonymous with Harris’s very many pork products and with the closure of the Harris factory in the 1980s the town seemed to lose its identity for a time. What was not appreciated then was the culinary legacy that the Harris brothers left behind, in the revolutionary wet curing process they developed for ham and bacon – the Wiltshire Cure. Whilst the factory closure was many years ago, Wiltshire cured products continue to be favoured by ham and bacon aficionados throughout the UK, something that Calne can indeed be very proud of.
