SIMPLE SUMMER SNACK

FAMILY FEATURES

From lazy days by the pool to weekend road trips and everything in between, summer is packed with adventures. To keep your energy high for all those warm-weather activities, you’ll need to keep sweet, delicious snacks on the family menu.

Make sure versatile, flavorful watermelon is always on your grocery list so you can enjoy it for breakfast, lunch, snacks, desserts, drinks and beyond. It easily fits your existing routines for morning smoothies and snacking on the go, or in makeahead dishes you can serve when hunger strikes.

It’s easy to cool off quickly on hot summer days with Watermelon Ice Pops, a simple, kid-friendly favorite made with watermelon and chunks of fresh fruit. Bursting with flavor, these frozen treats make snack time a cinch while tackling cravings, boosting hydration and supporting wellness in place of added-sugar treats.

For a light afternoon bite before the dinner bell rings, try this Watermelon Salad with Feta and Mint that offers sweet summer flavor without the hassle. Pairing long-time favorites in feta cheese and mint, it’s a classic for a reason with delicious watermelon adding nutritional content.

Of course, as a kitchen staple to keep on hand throughout the year, watermelon is also perfect for enjoying all on its own at home or on the go. Whether it’s diced, sliced, balled or blended, you can toss it in a jar for a healthy, hydrating snack.

Cutting watermelon into convenient chunks is fast and easy so you can eat at home or toss in a to-go container to take to the office, beach or soccer practice. Just cut a grid pattern on the fruit and cubes will tumble out, ready to eat. Don’t forget to wash and dry the rind on the watermelon before cutting.

1. Cut the whole watermelon lengthwise into quarters. Lay each quarter on its rind wit h t he interior facing up.

2 Place the knife about 3/4 i nch down from the peak of the wedge Holding the knife parallel to the far side of t he fruit and starting at t he edge of the rind, cut a horizontal line across t he fruit all the way down to the rind.

3. Place the knife blade about 3/4 inch lower and make the same cut Repeat. Turn the fruit to t he other side and make t he same horizontal cuts.

4 Starting at the end of t he rind, make vertica l cuts straight down the rind, 3/4 inch apart al l t he way across.

5. Remove the cubes and serve or store in a n a irtight container in the refrigerator.

I am always looking for a way to showJust as a tasty bowl of chili is a mixture of flavors and ingredients, the origins of “chili” are a blend of influences from cultures across the Atlantic, south of the border, and in our own country -- primarily Texas.

Throughout the years, pride in stirring up the best recipe has led to community chili cook-offs from coast to coast, with entrants vying for the title of tastiest bowl of chili. Although I’ve never entered a contest, I’ve certainly enjoyed being a taste tester, including at “Frontier Days,” an outdoor event I attended in the mountains of Northern California.

The winner was a family recipe cooked up by Alyssa and David West using lean ground turkey and sausage, then topped with crisp chopped celery and diced ripe avocado, rather than scallions and sour cream. The turkey adds a different take on beef or bean chili, and the creamy green of the avocados is a nice balance to the spice.

For a prep shortcut, they used Bear Creek Darn Good Chili Soup Mix. While chili chefs are known for strong opinions about the right ingredients for a “true” chili, don’t let this get in the way of your creativity as you make a batch for friends and family. If you think you have a winner, you might bring your creation to a potluck or enter it in a chili cook-off in your community!

MIGHTY FINE FAMILY CHILI

Serves 8

1 package Bear Creek Darn Good Chili (available in grocery stores)

7 cups water

1 6-ounce can tomato paste

1 teaspoon chili powder

1 tablespoon sugar (optional)

1 14-ounce can petite diced tomatoes, undrained

1 15.5-ounce can small white beans, drained

1 8.3-ounce can Bush’s Baked Beans

1/2 pound ground turkey, browned and drained

1/2 pound ground sausage, browned and drained

Salt and pepper to taste

Loosely chopped celery for topping

Diced avocado for topping

Bring water to boil, then add in dry mix and tomato paste. Simmer for 20 minutes. Add in remaining chili ingredients. Simmer for an additional 10 minutes. Keep hot until serving.

Ladle chili into bowls. Top with celery and avocado. Serve with corn muffins, if desired. *** Donna

Q: Has Hugh Jackman officially divorced his wife yet? Is he still dating Sutton Foster? -- K.D.

A: Despite separating two years ago, actor Hugh Jackman (“Deadpool & Wolverine”) and his wife of almost 30 years, Deborra-Lee Furness, only recently took the next step toward divorce, with Furness finally filing to end the marriage. Jackman has been quietly dating actress Sutton Foster (“Younger”), but it’s not known for how long. The two starred in the revival of “Music Man” on Broadway in 2022. Depending on which gossip column you read, the consensus seems to be that Jackman and Foster are living together in the penthouse that was once home to Furness. ***

Q: I’ve never seen any other actor with more energy than Tom Cruise. Now that the newest “Mission: Impossible” film is out, what does he have coming up next? Would he ever do a TV series? -- A.E.

A: “Mission: Impossible -- The Final Reckoning” made an estimated $79 million at the box office during Memorial Day weekend, adding to Tom Cruise’s long list of blockbuster hits throughout his career. The 62-year-old movie star has no plans to stop anytime soon. Production on “Top Gun 3” is expected to begin in late 2025 or early 2026. In addition, he has five films in production or preproduction currently, so I have no clue how he’s going to squeeze the follow-up to 2022’s “Top Gun: Maverick” into his crazy schedule.

First up is the untitled Alejandro G. Inarritu Film with Jesse Plemons (“Killers of the Flower Moon”) and John Goodman (“The Righteous Gemstones”). Then there are three films listed to be in preproduction: the World War II drama “Broadsword” with Henry Cavill (“The Witcher”); a remake of the 1977 Clint Eastwood film “The Gauntlet”; and the untitled Tom Cruise/SpaceX project, which will be filmed on the actual International Space Station.

Cruise has also recently expressed a strong desire to play Les Grossman again, the loudmouth, hairy studio executive he

portrayed in the 2008 comedy film “Tropic Thunder.” Cruise has yet to star in a series, however. He seems to be the last major Hollywood holdout who focuses exclusively on the big screen. Perhaps when he enters his seventh decade of life, he’ll slow down and compete for an Emmy Award. Perhaps the Les Grossman script could be turned into a limited Netflix series?

Q: Is it true that “Duck Dynasty” is coming back? Will it feature the same family members? -- D.S.

A: It’s hard to believe it’s been 10 years since we saw the Robertson family of Louisiana on our TV screens. Their fans are mourning the recent loss of family patriarch Phil but will be thrilled to know that his legacy will live on in a new series on A&E this summer.

The new series will center around Phil’s son Willie, wife Korie, and their children and grandchildren. Phil’s brother, Si, is also expected to appear. A&E has such confidence that the show will be a hit that it’s already ordered two seasons’ worth of episodes. “Duck Dynasty: The Revival” will premiere on Sunday, June 1, on A&E.

Outwitting the scammers

My phone number appears to have gotten on another list somewhere, and the potential scammers are coming out of the woodwork -- again. I have my suspicions about where they could have found my number this time, but I can’t prove it, of course. All I can do is keep fending them off ... by not answering the phone if I don’t recognize the number or hanging up quickly if I’ve answered and realize it’s a scam. After a period of time, it will wind down as they don’t have the satisfaction of anyone answering or falling for their scheme.

I try to stay off their radar by keeping to a minimum the number of places that have my information, but sometimes it’s just required that you provide a phone number. We have to weigh the value of what we’ll get -- perhaps it’s the grocery store loyalty card that requires a phone number to sign up, or even for voter registration

-- versus the potential abuse of our phone number when the scammers get it. I keep a spare email address for the same reason. If forced to give one out, and not really trusting what will be done with it, I give the “trash” address and once a month go through and delete what generally turns out to be 95% spam email.

Then there are the passwords for the things we need to do online. We’re advised to have “strong” passwords, but what does that really mean? It means using all the types of keys on the keyboard: upper and lower case letters, symbols and numbers.

Don’t go with something that’s too easy for a thief to figure out, like the name of your former high school.

CPR AND FIRST AID FOR DOGS

DEAR PAW’S CORNER: Several years ago, my family’s dog “Aker” passed away when his heart stopped. We were never sure why this happened, and I was just a kid. But I’ve always wondered if it was possible to perform CPR on a pet if this happens in the future. I adopted a puppy recently and I want to be able to help him whenever he’s hurt or injured. --

Becca R. in Boulder, Colorado

DEAR BECCA: You can perform CPR (cardiopulmonary resuscitation) on a pet whose heart has stopped -- in fact, you can even get training on pet CPR and first aid through the Red Cross.

The process for pet CPR is very similar to that of human CPR. If a dog or cat becomes ill and collapses, you first check for breathing and heartbeat -- look to see if their chest is moving, and place your hand on their chest to feel for a heartbeat. If there is no heartbeat or breathing, place the pet on their right side and perform chest compressions directly over their heart at a rate of 100-120 compressions per minute. Give rescue breaths every 30 compressions. Keep performing CPR until they begin to breathe on their own, or until you reach the emergency vet clinic.

Those instructions don’t reveal some key factors, like: What if a dog is barrel-chested? How do you give rescue breaths to a large dog? Pet CPR and first-aid training will answer those questions, and help you feel confident that you can provide immediate care for illness, shock or injury until your pet can get to the vet for advanced care.

Hollywood

HOLLYWOOD -- Jeremy Allen White, winner of two consecutive Emmys for “The Bear,” will take on Austin Butler (“Elvis”) in “Enemies.” The $25-million low-budget crime drama will shoot -where else? -- in Chicago. The dynamic duo are squaring off as a detective and an infamous contract killer who collide in a deadly cat-and-mouse game. White completed shooting for “The Mandalorian and Grogu” (opening on May 22, 2026) and is now wrapping up his portrayal of Bruce Springsteen in “Deliver Me from Nowhere.” (Springsteen has given

his blessing and visited the set several times to watch shooting.) It opens later this year. In addition, White’s fourth season of “The Bear” drops on June 25.

Meanwhile, Butler’s completed “Eddington” with Joaquin Phoenix, Pedro Pascal and Emma Stone (hitting theaters on July 18). He has also finished up Darren Aronofsky’s black-comedy crime film “Caught Stealing,” co-starring Matt Smith, Zoe Kravitz, Leiv Schreiber and Carol Kane. It completed shooting in late November 2024 and will be released on Aug. 29.

Curtis’ long-awaited sequel “Freakier Friday,” with Lindsay Lohan, is arriving on Aug. 8, and she also produced Apple TV+’s “The Lost Bus,” starring Matthew McConaughey and America Ferrera. McConaughey’s crime thriller “The Rivals of Amziah King,” co-starring Kurt Russell and Cole Sprouse, is due later this year.

MEET YOUR NEW MEAL PREP HERO: The Southwestern Black Bean & Corn Salad

PATTI DIAMOND

DIVAS ON A DIME

If you’re looking for a meal prep wonder that works as hard as you do, this Southwestern Black Bean & Corn Salad is here to save the day!

Made with pantry-friendly ingredients, this colorful salad keeps beautifully in the fridge for up to five days and offers endless ways to enjoy it. Whether you’re adding it to a bed of mixed greens, tossing it into quesadillas or serving it as a hearty taco or wrap filling, it’s a versatile addition to your meal rotation.

It also makes a delicious topping for baked or sweet potatoes and pairs perfectly with grilled chicken or fish for a light, refreshing side. With so many options, this salad is your secret weapon, and it’s easily doubled or tripled to ensure stress-free, flavorful meals all week long.

SOUTHWESTERN BLACK BEAN & CORN SALAD

Yield: 4 servings

Total Time: 15 minutes

For the Dressing:

2 tablespoons olive oil

Juice and zest of one lime

1 tablespoon apple cider vinegar

1/2 teaspoon brown sugar

1/2 teaspoon chili powder

1/4 teaspoon cumin

1/4 teaspoon Dijon mustard

1/4 teaspoon table salt

For the Salad:

1 (15 ounce) can black beans, drained and rinsed

1 cup frozen corn, thawed

1/2 cup red onion, diced

1/2 cup red pepper, diced

1/2 cup fresh cilantro, chopped

In the bottom of a salad bowl, whisk together all dressing ingredients to emulsify. Add the salad ingredients, tossing to combine. This gets better as it sits, so I recommend refrigerating this at least two hours before serving.

This salad is delicious when made into hearty

quesadillas. They are a great choice for a quick weeknight dinner or a delicious snack. The combination of black beans, sweet corn and melty cheese wrapped in a crispy tortilla is the perfect comfort food.

SOUTHWESTERN BLACK BEAN & CORN

QUESADILLAS

Yield: 4 servings

Total Time: 15 minutes

1 recipe black bean and corn salad

2 cups shredded Mexican blend, or cheddar cheese

8 (8-inch) flour tortillas

Cooking spray or oil and/or butter, as needed

Preheat a skillet over low heat and coat with cooking spray or melt a mix of 2 teaspoons each of olive oil and butter. The blend of oil and butter gives the quesadillas a rich, golden crisp that makes them extra satisfying.

Stir the shredded cheese into the black bean and corn mixture so you get that perfect gooey filling with each bite of quesadilla.

Increase the heat to medium and cook each quesadilla one at a time until golden brown and crispy, and the cheese is fully melted. You want the tortillas to have that satisfying crunch, with just the right amount of crispiness. Place one tortilla in the skillet at a time. Place 1/2 cup of the bean and cheese mixture over the tortilla and spread it evenly to the edges. Once the cheese has melted, fold this tortilla in half, making a half-moon shape, pressing down gently to help seal. Repeat with the remaining tortillas and bean mixture adding butter and oil as needed.

Slice into triangles and serve immediately. These quesadillas are fantastic on their own, but feel free to serve them with your favorite dipping sauce, like salsa, sour cream or guacamole.

Whether you’re meal prepping for the week or looking for a quick, satisfying meal, this Southwestern Black Bean & Corn Salad is a game-changer. So go ahead, whip up a batch and enjoy stress-free, healthy meals all week long!
