When it comes to desserts, Chef Allison Spicer of Scarlet Pearl Casino Resort knows how to turn seasonal flavors into show-stopping finales. Her dessert recipe recently wowed voters in Gaming and Destinations Casino Chef Showdown, earning her the title of 2025 champion and proving that simple, fresh ingredients can create unforgettable moments at the table.
Spicer’s winning creation? A blueberry galette with almond frangipane, vanilla gelato, and blueberry compote — a rustic, seasonal dessert that wowed voters from around the region. “The galette is something we do at our steakhouse,” Spicer explained. “What I like about it is that it showcases seasonal fruit. In July, that was blueberry. Right now, we’re doing cherry, and in a couple of months, it

might be apple for the holidays. We change it up to get the freshest fruit we can on the table for our guests.”
The base remains consistent — a flaky pastry layered with almond frangipane and served with vanilla ice cream — but the toppings rotate with the seasons. “We’ll change the fruit and the compote to match,” Spicer said. “If it’s a peach galette, we do a peach compote. For berries, I might add Chambord or another liqueur that highlights the fruit.”
For home bakers inspired to try the recipe, Spicer recommends following her instructions closely but isn’t against experimentation. “You can do any fruit you want — pears, peaches, berries. The key is to keep it seasonal and fresh.”
Spicer’s culinary journey began in her hometown of New Orleans, where the city’s rich food culture shaped her love for cooking. “I’ve been in the culinary world since 2005,” she recalled. “I actually started off at the casino in the salad department, trying to figure out where I wanted to go. I decided on culinary school and graduated that same year — right after Hurricane Katrina.”
Her culinary experiences at other Gulf Coast properties eventually led her to Scarlet Pearl, where shes thrived in an environment known for high culinary standards. “We definitely have an all-star team here,” Spicer said. “Our managers and directors trust us to do our jobs well. It’s nice having that autonomy.”
When it comes to her culinary philosophy, Spicer is a champion for making things from scratch. “So much of food today comes out of boxes or assembly lines,” she said. “I try to make as much as we can from scratch, just to show how good real food is. You don’t need a lot of ingredients — butter, sugar, vanilla, baking powder, flour, fruit, chocolate — when you’re starting from scratch, the flavors speak for themselves.”
That commitment is something Scarlet Pearl embraces. “We don’t skimp on ingredients,” she said. “We use the best we can, and that makes a difference.”

“I take local southern Louisiana ingredients and give them a twist— this time, transforming alligator with a classic veal piccata,” he explains.

Many moons ago, I read a narrative composed by a gentleman who was utterly obsessed with the Kentucky Derby. One that made a lasting impression on me, the piece opened with, “It’s come to the point where for me, the entire year simply bookends those two precious minutes that unfurl on the first Saturday in May.” Well frankly, this is my attitude relevant to those forty-eight hours which host the Breeders’ Cup World Thoroughbred Championships. Truly, these two days are where I “go off the grid” to the extent that not even the discovery of Nessie could arrest my attention.
Unlike the Kentucky Derby, which is a “one shot deal” for the horse player, the Breeders’ Cup offers a total of fourteen races and correspondingly, an opportunity for every division

within our glorious sport to share the spotlight. While experimentation with regards to the racing card itself has perpetuated since the Breeders’ Cup was inaugurated over forty years ago in 1984, a widely celebrated and seemingly permanent schedule implemented in 2018 involves five juvenile (two-year old) races on Day 1 and nine races for three-year-olds and up on Day 2. Oh yeah and just in case you were wondering, the Breeders’ Cup’s fourteen races are worth a combined $30,000,000 in purse monies.
Incidentally, even though I truly love the pageantry bestowed by those three timeless thoroughbred horse racing cathedrals which host the Triple Crown Series (i.e., Churchill Downs, Pimlico Racecourse and Belmont Park), a refreshing element
about the Breeders’ Cup is that it has a long tradition of unfolding against a variety of backdrops. Listed in no particular order, the following venues have had the distinct honor of hosting the Breeders’ Cup: Woodbine Racecourse, Monmouth Park, Lone Star Park, Gulfstream Park, Del Mar Racetrack, Churchill Downs, Belmont Park, Keenland Racetrack, Aqueduct Racetrack, Santa Anita Park and Hollywood Park Racetrack (closed 2013). Slated to be held at Del Mar Racetrack this year on Oct. 31st and Nov. 1st, and at Keenland Racecourse in 2026, the Breeders’ Cup will then, in 2027, make its long-awaited return to Belmont Park (which by then will be flaunting a $455,000,000 renovation).
Due to its sheer volume of races, it’s obvious that the Breeders’ Cup resembles a rare “horn of plenty”,
one that confers an exponential opportunity for what hankering horse players refer to as “action”. In conjunction, there is a positive parimutual anomaly attached to the “Sport of Kings’” annual year-end equine extravaganza that is seldom referenced. See, I truly believe that the Breeders’ Cup might be the one lone square on the racing calendar where the horse player holds a slight edge.
I’ll promptly defend the aforementioned hypothesis via a stated axiom that I gravitated to ages ago. While betting in an Orlando, Florida simulcast facility late one night in my early 20’s, I heard a fairly successful punter plainly state, “Betting quality stock is the secret to my success.” Now don’t get me wrong, I have nothing against playing smaller tracks and truthfully, Penn National Racetrack, Charles Town Racetrack and Evangeline Racetrack are three of my absolute favorites. Nevertheless, it is indeed tougher to predict how an obscure five or ten thousand dollar “claimer” (horse who is for sale) will perform verses the regally bred hundred-thousand-dollar allowance sort one typically sees throughout the card at strips like, Saratoga Racecourse, Keenland Racecourse and Belmont Park.
Moreover, if it’s true that wagering on quality stock augments a horse player’s chance for success, then the fields that make up the Breeders’ Cup are literally a breeding ground for peak profits. See, only the best of the best gain entrance into horse racing’s year end world championship series with the most direct qualifying route being that of a victory in one of the many “win and you’re in” Breeders’ Cup Challenge races that are held around the globe throughout the calendar year. A secondary qualifying route involves a “point system” where horses are ranked based on their performance(s) in certain major races.
Of course, when it comes to this year’s Breeders’ Cup, you can have a beautiful
backdrop (Del Mar Racetrack), the most preeminent horse flesh on Planet Earth, a full fourteen race wagering card and every printed and digital handicapping tool under the sun, and yet, a fully set table is all for nought if you don’t have the stake. Meaning, when it comes to (hands down) the richest event in our sport, I would humbly suggest that you “go big or go home”.
Breeders’ Cup 2025 is going to be a much more rewarding experience if you come out the other side with more “Benjamins” than you went in with. So, what are some strategies one can employ in order to ascend to a higher tax bracket (or at the very least, go out to Chili’s instead of Checkers). Well, even though I can’t confer a full proof formula, here are some sound fundamentals and historical trends for you to chew on.
Naturally, I’m not advocating converting your 401K into a cash voucher or securing a “juice loan” from a guy named “Johnny no thumbs”. This said, I’m also of a mind that you can’t casually waltz into Breeders’ Cup weekend with just a $20 bankroll. Again, this is the one time of year when we horse players may possess a slight upper hand so even if it means drinking the cheap champagne for a few months, stash away at least a c-note for the occasion. (Full disclaimer, I usually stash away two.)
With the formalities behind us, it is now time to get down to the nitty gritty as they say. Sure, all of this pomp and circumstance is great, still at day’s end,
It can’t be overstated that when it comes to betting the Breeders’ Cup (or any racing card for that matter), bankroll management is a big part of what separates the winners from the losers. Adopting the preceding suggestion of a $100 bankroll as our model, one could subsequently attack the Breeder’s Cup in a few different ways. Obviously, there’s the balanced wager model, and, in that case, you’d be risking around $7 or $8 per race ($100 divided by 14). However, I honestly think the best way to attack the Breeders’ Cup is to invest around 75% to 80% of your bankroll into those two or three races you truly fancy.
Let me supplement my latest consultation with the reality that every handicapper has their own particular strengths and weaknesses. Some can figure a dirt sprint blindfolded and yet couldn’t pick the winner of a turf contest if their life depended on it. Therefore, recognize and then play to your strengths. For example, I used to know a turf specialist from England who would split his entire bankroll between the Breeders’ Cup Mile and the Breeders’ Cup Turf. Year after year I watched this gentleman win for two simple reasons; he played to his strengths and plied basic bankroll management.
Of course, like everything else, there are exceptions when it comes to conventional Breeders’ Cup bankroll management. What I mean is, if you are simply head over heels in love with one horse’s chances and hence, want to put “all your eggs in one basket”, you won’t get any argument from me. Case in point, in looking back, the 2004 Breeders’ Cup run at Lone Star Park was one of my most successful gambling ventures ever. Heading into the event, I was hopelessly smitten with a horse named Ghostzapper (who would go off as the 5/2 favorite in the Breeders’ Cup Classic) and as a result, I put my entire bankroll ($200) on his hot little nose. Behind my muse’s gate to wire victory, I learned that contrary to popular gambling opinion, “letting it ride” is not always a bad thing.
One supplementary Breeders’ Cup bankroll tactic I wanted to slip in still involves homing in on two or three races you especially love, and then, investing the leftovers on your lucky numbers. (Yes, I’m serious.) If we employ a $200 stake and my personal lucky numbers (1-2-8) for the sake of illustration, I would then theoretically pre-bet a 50¢1-2-8 trifecta box on all 14 Breeders’ Cup races ($42 total) and then spread my remaining $158 over say, the Breeders’ Cup Juvenile, Distaff and Turf. Though playing lucky numbers may look hap-hazard on the surface, one must remember that every equine entered in the Breeders’ Cup is more than capable and thus, unthinkable results along with four figure 50¢ trifecta payouts are commonplace.
As we wind down, here are some historical Breeders’ Cup statistics you may choose to use together with your traditional handicapping theorems.
47 – Winners that started from post #5 masking it the most successful starting position for Breeders’ Cup races.
196 – Winners produced in the state of Kentucky out of 2,093 starters.
41 – Winners from Ireland, the most of any country except the United States.
27 – Number of Breeders’ Cup wins by Hall of Fame jockey Mike Smith,
leading all others and seven more than second leading rider John Velazquez.
20 – Number of Breeders’ Cup wins by trainers D. Wayne Lukas (†) and Aidan O’Brien, leading all other trainers.
9 - Nine of the last eleven Breeders’ Cup Classic Champions have carried odds of 5-1 or less.
1 – Number of horses that have went wire to wire in the Breeders’ Cup Turf, with the late runners dominating the race.
2 – Number of pacesetters that that have won the Breeders’ Cup Sprint.
In conclusion, I think I’ve always especially appreciated the Breeders’ Cup World Thoroughbred Championships because it truly gives the horse player an opportunity to end perhaps an otherwise down year on a high note. (Likewise, some extremely riveting theater unfolds when Planet Earth’s finest equines perform their best imitation of Ali vs. Frazier.)
Consequently, if you study the program ahead of time, practice some smart bankroll management, familiarize yourself with some historical trends, play to your strengths and pick your spots carefully, you might just start defining the year’s remaining 363 calendar squares as nothing but partitions which ceremoniously bookend the Breeders’ Cup!

I’ve gambled on the ponies long enough to know that you can rank in the top 10% of thoroughbred horse racing handicappers worldwide, and yet still wind up living under an overpass. Impossible you say? Well, if you don’t at least skim over the coursework contained in, “Bankroll Management 101”, then I promise that you’re going to be flying a cardboard sign just to finance an item listed on Burger King’s value menu.
Perhaps the most vital component of bankroll management is learning how to “soldier on” after a tough defeat. Correspondingly, you’ve most likely heard the old saying “chasing losses” and due to the uniqueness of this phenomenon, I believe an in-depth analysis is in order. Moreover, I’ll state right from the gate that the strategy you employ when it comes to chasing losses will literally be the difference between getting even and calling that one eight hundred number that is pasted at the bottom of every gambling advertisement on planet Earth.
I’m here to tell you that whether you are a recreational, intermediate or die-hard horse player, sooner or later you will be chasing losses. Sorry, no one wins every time out so there is just no way around this. Unless of course you swear off gambling altogether. (In that case, let me gently remind you that quitters never win.)
By far the oldest methodology concerning “digging out of the hole” is what we call the “Martingale System”. Typically employed in ventures that offer wagers which pay “even money” (like blackjack, baccarat and roulette), this approach involves doubling your bet following each loss. (For instance, if you bet $5 and lose, you would subsequently bet $10, then $20 and so on.) Of course, this scheme is fool proof since a roulette ball would never land on “red” ten times in a row. Until it does. (Actually, I once witnessed “red” hit 17 times in a row while playing roulette at Harrah’s in Las Vegas.) Incidentally, the Martingale System is the main reason why casino tables have betting limits. If they didn’t, every hippodrome in the world would go belly up.
I’ve always said that when it comes to any gambling session, the first bet is paramount because it sets the tone. See, if you win from the jump, you are now playing with “house money” and can relax a bit. Plus, landing the first punch gives your confidence a shot in the arm. On the flip side, if you instantaneously flop, you are now “chasing losses” and believe it or not, being “in the red” can adversely affect the way you wager. For example, some players tighten up after an initial beat and begin to play way too conservatively. Logically, others become atypically aggressive following a loss because they are pining after a quick “reset”. The bottom line is, when a horse player starts deviating from their normal disposition, there’s a fair chance that they’ll ultimately drop a c-note in an effort to win back ten bucks.
A column on chasing losses wouldn’t be complete without addressing that detrimental emotion known as anger. Having precipitated many a horse players’ utter ruin, anger tends to augment behind a string of torn up tickets or one particularly expensive “bad beat”. In such instances, a “cooling off” period is the only real elixir. (Loosely translated this means, go to the library and read a book.) Naturally, I am not saying that it’s easy to just slam on the brakes after say, dropping your allocated bankroll on the day’s first three races or losing $100 on a razor thin photo finish. What I am saying though is that if you hit the ATM while “steaming”, your judgement will be akin to a reveler who is downing their eighteenth bottle of malt liquor.
Certainly, the cardinal rule of chasing losses (one we’ve all heard) is that you never substantially increase the amount you are wagering while in freefall. On the contrary, one should drastically reduce their risk during a slump. Again, while this is much easier said than done, if you do indeed heed this elementary axiom, you’ll likely never paint yourself into a corner. In summation, the bottom line is; if you put yourself into a desperate situation where you absolutely must win a particular bet, rest assured, you won’t.
In an effort to close on a positive note, I’d like to offer a bit of perspective to those who currently couldn’t pick the winner of a one-horse race. The fact is, gambling tends to be cyclical in nature so if you are currently in the middle of a losing streak (even an extended one), know that the pendulum will eventually swing in the other direction. The key is keeping short-term damage to a minimum so that when Lady Luck returns from her hiatus, every date night won’t revolve around chasing losses.
If any modern table game could be said to be an adopted son of the South, it’s Three Card Poker. Success in Mississippi eventually convinced casinos throughout the United States to give the game a try and today, it stands as a casino standard that every operator must have. It is fun, easy to learn and gives players a decent chance to win.
Start by making an ante for player vs. the dealer and/or a bet on Pair Plus. At most casinos, you do not have to make both wagers. The ante and the Pair Plus wager can be of different sizes. They are separate bets, and are decided independently, so they don’t have to match.
After all players have made their wagers, each player gets three cards face down, and the dealer also gets three cards face down. Play continues after players have a chance to pick up their cards and look at them.
After you’ve seen your cards, you may either make a bet equal to your ante, or you may fold and forfeit the hand. If you’ve anted $5, then your bet must also be $5 for you to stay in the game.
The dealer then turns his cards face up. If the dealer hand is at least a Queen or better, it is a qualifying hand. For you to win, your hand must outrank the dealer’s. If you win, both your ante and your bet are paid at even money, and if you lose, the dealer takes both your ante and bet.
If the dealer hand does not qualify and you’ve made the bet to stay in the game, then you win even money on the ante, but the bet is returned to you with no additional payoff.
In addition, there is a bonus for strong hands regardless of whether you beat the dealer or not. Most casinos pay a 5-1 bonus if you have a straight flush, 4-1 if you have three of a kind and even money if you have a straight.
For example, let’s say you ante $5, see you have a straight flush and follow with a $5 bet. Assuming you win the hand, you then collect winnings of $5 on the ante, $5 on the bet and $25 on the straight flush. On other wins that don’t include one of the big three hands, you’d collect $5 on the ante and another $5 on the bet.
Optimal strategy for Three Card Poker is about as easy as it gets. Make the extra bet to stay in the game if your hand is Queen-6-4 or better. Fold if you have a lesser hand.
That means you also bet on all pairs, flushes, straights, three of a kinds and straight flushes – those all outrank high-card hands. Note that in Three Card Poker, straights outrank flushes. That’s because you see flushes more often than straights in three-card games. In five-card games, you get straights about twice as often as flushes, but in three-card games there are 1.5 times as many possible flushes as straights.
If you don’t have any of those higher-ranking hands, then hands are ranked by highest card first, then second highest. If you have Jack-10-7, the proper strategy is to fold. It is not Queen-6-4 or better since the highest card is lower than the Queen.
If your hand is King-3-2, then you should make the bet. The King outranks the Queen, making this a better hand than Queen-6-4 even though the second and third cards are lower than the 6 and 4.
With that strategy, the house edge on the ante-pay combo is 3.4 percent of the ante, or 2.0 percent when both the ante and bet are considered.
If you think ante-bet is easy, then Pair Plus is a real snap. You don’t have to beat the dealer, and there is no strategy to learn. All you need is to match a hand on the pay table – a concept video poker players can identify with. You win on any hand that contains a pair or better, and lose if you don’t have at least a pair.
There are several pay tables available, but the most common pays 40-1 for a straight flush, 30-1 for three of a kind, 6-1 for straights, 3-1 for flushes and even money for pairs. At that pay table, the house edge is 7.3 percent.
The payoffs aren’t as huge as you see on five-card games, but they are attainable. Anyone who plays very often will see the occasional straight flush or three of a kind. You’ll see the top hand, a straight flush, about once per 460 hands. Compare that to a five-card royal on a game such as Caribbean Stud. That occurs an average of once per 649,740-1. Caribbean Stud pays a lifestyle-changing progressive, but you may never see one in your lifetime. Three Card Poker pays a more modest sum, but $200 for a $5 bet is a nice win, and you’ll see straight flushes a lot more often with three cards. Good luck!
