Museum Pláticas:

Conversations That Carry Our History At the Museum of South Texas History, we believe that history lives in the voices of the people who shaped it.

That belief is the foundation of our Museum Plática program, a monthly online series streamed live on Facebook. It brings the stories of South Texas directly to viewers wherever they are, from kitchen tables to office desks. A plática in this format also becomes a way to study our region in real time, because every conversation offers a glimpse into how people remember and carry their histories forward.

Our monthly guests join us from across the region.

Some are scholars. Many are elders, educators, ranchers, artists, small business owners, and community leaders.

All bring a lived understanding of this place. The format is simple and relaxed, and the conversations unfold in an organic way. The goal is to create a space where people feel comfortable talking the way they would at home, because that is often where the most meaningful history is found.

A plática is more than a conversation. It is a cultural space for honesty, memory, and connection. Across South Texas, platicas have always taken place in living rooms, porches, backyards, and break rooms. They are where people work things out, share what they know, and keep family stories alive. At the museum, our program follows that same spirit. Each session becomes a chance to honor the lives, labor, and experiences that might otherwise fade into the background of a larger historical record.

The Museum Plática program has grown steadily since it began. Today, it has become one of the museum’s most reliable community touchpoints. It documents lived experiences. It builds trust. It strengthens connections across cities and generations. Most of all, it reminds us that South Texas history is not something preserved only on shelves. It lives in the stories people carry, and every month we turn on the camera and give those stories room to breathe.

STHS MCALLEN MARKS 40 YEAR ANNIVERSARY Photography by Sergio Arratia South Texas Health System (STHS) McAllen opened its current location in December 1985 to expand access to advanced care close to home. Forty years later, the eightstory hospital off Expressway 83 serves patients and families across a four-county stretch of the Valley—and has earned national recognition in areas including patient safety and stroke care.

The move launched a new chapter for an institution that spent more than five decades in downtown McAllen under familiar names: McAllen Municipal Hospital, McAllen General Hospital, and McAllen Methodist Hospital.

Relocating to the new building allowed the hospital—then known as McAllen Medical Center—to expand specialty services for the region.

Early on, the 441-bed facility became the first in McAllen

and neighboring cities to offer open-heart surgery, one-day cardiac catheterization, and magnetic resonance imaging (MRI)—milestones that changed what patients could access without leaving the Rio Grande Valley.

That work continues today. “Over the last four decades, STHS McAllen has invested in advanced medical technology while building a dynamic, collaborative team of healthcare professionals to expand its services and enhance patient care,” said Emma Montes-Ewing, CEO of STHS McAllen.

She added, the hospital has grown into “a comprehensive medical center” offering specialties that include emergency medicine, intensive care, neurology, radiology, and many surgical specialties.

Center, Comprehensive Stroke Center, and Level III Neonatal Intensive Care Unit (NICU). Its surgical services department also includes robotic-assisted procedures using the newly acquired da Vinci 5 (DV5) system.

Garcia—received the STHS McAllen All-Star Award for enduring service. They are among 21 staff members who began their careers at McAllen General Hospital and helped open the current building.

“STHS McAllen has become the leading facility in the region, providing exceptional care for patients from Brownsville to Roma, including trauma and stroke care at the highest level,” said Syed K. Hussain, MD, a neurosurgeon affiliated with the Comprehensive Stroke Center. He added that patients who once had to leave the Valley for specialized care can now stay closer to home.

Montes-Ewing credited the hospital’s impact to its staff.

“The resolute dedication to healthcare excellence of STHS McAllen’s 1,000-plus employees has been the backbone of the facility’s success and its impact in the Rio Grande Valley,” she said.

EDINBURG HOSTS OUT OF THIS WORLD UFO FESTIVAL Edinburg came alive from November 20–22, 2025, as the annual UFO Festival & Conference returned to the ACE Center for a weekend of cosmic fun. The three-day event offered panels, headline speakers, family activities, and a celebration of all things mysterious and out-of-this-world.

This year’s festival was extra special with appearances from the stars of the History Channel’s Ancient Aliens. Fans got to chat, take photos, and interact with top theorists and investigators—whether they were believers, skeptics, or just curious.

The weekend kicked off with an open mic honoring Edinburg’s famous 1966 UFO incident, featuring stories from locals. Friday spotlighted the Ancient Aliens Live Tour, with Giorgio A. Tsoukalos, Nick Pope, and Jason Martell diving into ancient mysteries and extraterrestrial theories.

The festival wrapped up downtown, transforming into an interstellar playground with vendors, food trucks, rides, laser shows, and the Intergalactic Fashion Show, featuring $1,000 in prizes. Fire dancers, aerial performers, and dancing robots made it a truly unforgettable weekend in the 4-time All-America City.

The American Advertising Federation–Rio Grande Valley (AAF RGV) rolled a strike for a cause at its 4th Annual Keep It Ugly Charity Bowling Tournament, held December 3rd at Flamingo Bowl. Thirty-four teams hit the lanes in the spirit of friendly competition and community service, raising more than $12,000 to support the Food Bank RGV. The organization serves more than 93,000 individuals weekly across Cameron, Hidalgo, and Willacy counties, providing vital access to nutritious food for families in need. Supporting the Food Bank RGV helps ensure no one in our community goes hungry, especially during the holiday season.

The Food Bank You Think You Know— and the One the Valley Actually Runs On

alk into the Food Bank of the Rio Grande Valley, and you’ll see what most people expect: pallets, produce, forklifts, volunteers in motion. But the real story isn’t just the food you can see—it’s the system behind it. It’s the distribution hub, and its strength is the network it powers.

Those partner agencies—nearly 300 of them—are the food pantries and neighborhood meal programs people rely on: churches, shelters, Boys & Girls Clubs, and community organizations that serve families day after day. Many are run almost entirely by volunteers.

“It’s important that people understand the coalition between all of us,” said Libby Saenz, co-CEO of the Food Bank RGV. “We do the operations piece—the grants, the contracts, the audits, the inventory, the reporting. We bring it in, we house it, and then we

They’re coming in on their own time and serving their neighbors.”

Building the Network In McAllen alone, partners include organizations like the Salvation Army, Mujeres Unidas, and Baptist Temple. In Harlingen, there’s Loaves and Fishes and the Harlingen Neighborhood Food Pantry. Across the Valley, the list extends to higher education partners, including UTRGV, STC, TSTC, and Our Lady of the Lake.

“When the Food Bank originally started, there were 12 churches that came together,” Saenz said. A devastating freeze had crippled the region; citrus fields were lost, and families who depended on that work were suddenly without income. The coalition began at St. Paul’s Episcopal Church to get food to people who were hit the hardest.

And in Brownsville, the roster is deep: Mesa Llena Food Bank, Good Neighbors Settlement House, and multiple churches, including First Presbyterian Church — the Valley’s first food pantry, opened in 1983.

“Those pioneers stood for the people and stood for our community,” Saenz said. “Making sure we weren’t left behind during a disaster.”

That date matters. The Food Bank’s origin story is rooted in disaster response and community.

Forty-two years later, the mission hasn’t changed. But the scale has.

Sourcing the Food People often picture food banks as donation-driven. While donations matter, the Food Bank RGV’s supply blends government programs, produce rescue, retail recovery, and community support.

Here’s where the “hub” model gets real: the Food Bank isn’t the only group picking up retail donations. Partner agencies participate too—because no single warehouse can physically cover every store in a region this size.

“A good portion of our food comes from the government,” Saenz explained, pointing to USDA-supported programs like The Emergency Food Assistance Program and the Commodity Supplemental Food Program for seniors. The Food Bank serves about 9,800 seniors each month through that program alone.

“There are roughly 160 Dollar General stores here in the Valley,” Saenz said. “There’s no way we could reach all those.”

Beyond USDA, produce is a major part of the picture— roughly 30% by Saenz’s estimate, with much of it donated.

Retail partners also play a big role: H-E-B, Walmart, Costco, Sam’s, and Dollar General are among the stores contributing food through a retail recovery system.

“It can’t work without them,” Saenz said. “And they can’t do it without us.”

So the Food Bank helps agencies build capacity—laptops, freezers, coolers, equipment—so more communities can pick up and move food safely.

Breaking the Stigma Ask leaders what the public misunderstands, and you’ll hear it immediately: judgment.

Saenz has heard the comments—They’re driving a nice car. They shouldn’t be in line. Her response comes from experience.

She shared a story from her childhood in Monte Alto, north of Elsa: her family had a beautiful Lincoln Continental to drive—but didn’t have a dollar for gas, or food in the house. They survived by fishing, gathering what they could from fields, and stretching whatever was available.

“You don’t know what’s going on in that person’s life,” she said.

“We don’t know if they lost their job yesterday.”

Board president Kirsten Vinson has seen it up close at distributions.

“It’s overwhelming to see the variety of people showing up,” she said. “You see people in work clothes, they’ve worked all day, and they’ve got their kids in school uniforms.”

She also pointed to another hidden population: college

students and working parents trying to finish degrees while raising families. Those students—some working full-time, some supporting children—still show up because the math doesn’t work, even when effort is high.

“Hunger’s kind of hidden,” Vinson said. “People don’t want to advertise that they’re hungry.”

The Need, in Numbers Saenz put the regional need plainly: about 180,000 people in the Rio Grande Valley are food insecure.

Right now, the Food Bank and its partners serve about 93,000 individuals every week—and still, the gap remains. Some people can’t get to pantries. Others are elderly, disabled, or homebound. And even when there are willing volunteers, there are practical limits: electricity, storage, staffing, transportation.

“We’re 85 strong here,” Saenz said, “but I have 85 that have 10 other jobs they’re

doing at the same time.”

The Food Bank reaches beyond its walls through mobile distributions, colonias, VA centers, school districts, and rural areas— always trying to stretch further.

Last year alone, Saenz said the Food Bank distributed 43 million pounds of food.

And then came the moments that show how fragile the system can be.

During the government shutdown and SNAP disruption, Saenz said the number of individuals being served spiked—from

93,000 to 180,000. By late October, the warehouse hit what Saenz called rock bottom: “We had nothing,” she said—only a few items available for partner agencies.

The community response was immediate.

Saenz said the Food Bank raised over $500,000 to purchase food, with major help from donors including H-E-B. That’s the part people don’t always realize: when the safety net tightens, the Food Bank doesn’t magically receive more supply. It has to hustle for it.

The Power of Scale Food bank math can sound like wizardry—until you understand buying power.

“For $1, we’re able to provide five meals,” Saenz explained.

“Because of the buying power as a food bank, we’re getting it pennies on the dollar.”

The Food Bank is part of the Feeding America and Feeding Texas networks, which increases purchasing leverage even more.

And then there’s efficiency. Saenz said the Food Bank keeps overhead extremely low—spending no more than three cents per dollar on administration, trucking, fuel, and operations, with the rest going into programs.

Vinson added that this scale doesn’t just help the Food Bank—it transforms what small pantries can do.

A pantry serving 100 people a month can’t stretch dollars the same way buying retail. But when it receives food through the

Food Bank’s system, the reach multiplies.

The Food Bank also addressed another misconception: partner agencies don’t “buy” food in a typical sense. They participate in a shared maintenance/handling fee system that Saenz said accounts for just 3% of the Food Bank’s budget, and generally runs around 5 to 7 cents per pound—helping cover the costs of storing and moving food, including deliveries as far as Port Isabel.

The produce isn’t “perfect.” Saenz described an “80–20” standard: 80% good, 20% not usable. Families are encouraged to sort through it—just like anyone does at home when a berry carton has a few bruised pieces.

with equipment to help people apply across the region, from Brownsville to Willacy County.

The Food Bank also supports needs SNAP can’t touch: hygiene items, laundry detergent, and feminine products. Saenz emphasized that SNAP benefits can only buy food—not toothpaste, detergent, or menstrual supplies. The Food Bank’s team helps fill that gap, including sending supplies to homes with staff visits.

Vinson added an important detail: the Food Bank sits roughly a mile and a half from the nation’s top produce import point. When bridge delays happen, loads that won’t make it to their final market in time can be redirected—donated instead of dumped— because the Food Bank has the logistics to move them quickly.

And through partnerships, donated items move where they’ll do the most good—including baby items like diapers, and even pet food, routed to shelters when appropriate.

Co-CEO Connie Ramos estimated that 30–40% of the total pounds distributed is produce—something sister food banks farther north “cry for,” she said.

When asked what matters most right now, Food Bank leaders returned to one word: awareness.

To make sorting easier, the Food Bank received support from the Church of Jesus Christ of Latter-day Saints, based in Salt Lake City, Utah. The funds helped the Food Bank purchase a custom conveyor belt intended to help volunteers sort large donations more efficiently. Saenz said the goal is to have it operational by the end of January. She also noted the partnership includes a truckload of donated goods arriving every month.

Nothing goes to waste: unusable produce is directed to farmers for livestock feed.

More than Food Food is the headline, but the Food Bank’s support programs go further.

One program is called School Tools—a free store for teachers at elementary campuses with high levels of economic disadvantage.

Teachers can “shop” for classroom supplies—everything from notebooks and crayons to paper towels and tissue—taking home hundreds to over a thousand dollars’ worth of materials so they don't pay out of pocket.

Another is the Food Bank’s social services team, which helps families apply for SNAP, Medicaid, women’s health programs, and TANF. Saenz pointed out what many families discover the hard way. The SNAP application alone runs 36 pages for one applicant, plus additional pages per household member—and renewals happen every six months. The Food Bank’s staff travels

The Ask

Tours matter. Volunteering matters. Sharing the truth matters— because the need is real, and it’s often invisible until you see the line. “Today’s distribution will have a line that goes all the way from our door in Pharr to Donna,” Vinson stated.

“People don’t grasp it until they walk into this building,” Saenz said.

Vinson agreed: “Get involved any way you can—donate, volunteer, host a food drive. People always leave in awe of what the Food Bank does.”

And the team's message was consistent: this isn’t about judgment.

It’s about the realities of wages, the cost of living, family crises, and the quiet strain many households carry.

The Food Bank’s job is simple to say, hard to do: get food out, protect dignity, and keep the system strong enough to hold the Valley when life hits.

Because when the Food Bank succeeds, the Valley eats.

And when it doesn’t—every partner pantry, every school pantry, every shelter, every family line feels it.

MCALLEN’S HOLIDAY PARADE SHINES BRIGHT IN THE SOUTH POLE OF TEXAS The 2025 McAllen Holiday Parade, presented by H-E-B and powered by Bert Ogden, brought the magic of Christmas Across America to life.

Thousands gathered at the McAllen Veterans Memorial Stadium to celebrate with stars like Danny Trejo, Dallas Cowboys Tight End, Jake Furgeson, the Dallas Cowboys Cheerleaders, Julian Gil, and new starring host, Michael Irvin. The McAllen Holiday Parade kicked off the evening with a magical Opening Extravaganza, led by McAllen ISD students and Maria D’Luz. Parade-goers from across the region experienced over 100 dazzling illuminated floats, giant spinning balloons, and electrifying performances. The night ended with Santa’s appearance, marking the last stop on his journey to the South Pole of Texas.

Less Screen Time, More Green Time

Screens shape nearly everything we do now. We use them for work and school, and we rely on technology to power our creativity, communication, and problem-solving as it continues to grow and evolve. New digital tools are becoming part of everyday life, and screen time is not slowing down!

That makes balance more important than ever. Research shows the average person spends close to seven (7) hours a day in front of a screen, and children are right there with us. As we head into 2026, this is the perfect time to be more intentional about how we use screens while also making room for more green time, fresh air, and real-world connections.

Make Family Time the Main Event Think back to your childhood. Your afternoons and weekends probably did not involve screens, but plenty of time exploring, playing outside, and getting into nature. Bring back hands-on fun with craft projects, card games, cooking meals together, and walks around the neighborhood. Visit a nature center and explore a new park at least once a month. Grab a sticker or small memento from the park and have the kids start a Nature Journal to track their adventures.

Give Screen Time a Purpose Screens can still be part of the plan. Shift from “passive scrolling” to more “interactive options” like trivia games, educational activities, or fitness-based programs. When we use screens with intention, we support learning, encourage movement, and even strengthen family bonding.

Start with Small, Doable Changes You do not need a total tech reset to make a difference.

Instead, focus on a few “Tech-FREE” moments that fit naturally into your routine. Screen-free dinners, no phones in bedrooms, or short car rides without devices are easy places to start.

How many times have we sat in a restaurant and seen an entire table together, yet everyone is looking down at their phone instead of enjoying the people right in front of them? Dinner time is especially perfect for conversations that do not involve scrolling. Have a fun topic in mind, like “If you could invent a new holiday, what would it be?” or “What is one thing that made you laugh today?” This way, talking at the table feels exciting instead of forced.

that a unique ecosystem of thriving photosynthetic algae lies hidden in plain sight along the wind-tidal flats on the margins of Texas Highway 4 on the way to Boca Chica Beach? by the CHAPS Program Team at UTRGV

Wind-tidal flats are distinctive coastal landforms found only in arid South Texas along the margins of the Laguna Madre. These flats lie less than three feet above sea level and are regularly flooded by tides and reshaped by the prevailing southeasterly winds. The tidal flats are largely barren of rooted vegetation due to a combination of irregular flooding, intense summer heat, limited freshwater inflow, and highly saline soils. In South Texas, they occupy the ecological niche filled by coastal marshes farther north along the Texas coast. Sediments reaching the flats include wind-blown sand from adjacent dunes and suspended clays delivered during high tides. Swift tidal currents redistribute these materials, resulting in broad, low gradient, unvegetated surfaces.

A NECESSARY FOOD SOURCE FOR SHOREBIRDS Within the wind-tidal flats, a unique ecosystem of felt-like mats of microscopic, single-celled blue-green algae—also known as algal mats or stromatolites—thrives. These mats are most extensive in areas that alternate between exposure and submergence during regular tidal cycles. On close inspection, they appear as very dark brown patches fringing the lagoon.

With each tidal inundation, thin layers of clay settle out of suspension.

During dry intervals between tidal floods, the algal mats can crack and peel away from the underlying sand and clay. This rare intertidal ecosystem is the primary food source for shorebirds such as sandpipers, red knots, and piping plovers.

easterly winds, which push seawater inland and rapidly inundate the landscape. Shifts in wind patterns and resulting tidal changes can move the shoreline several kilometers within only a few hours.

These algal mats and wind-tidal flats are featured in the CHAPS Program’s Ancient Landscapes of South Texas geoheritage project at UTRGV. They appear in a richly illustrated photo-history volume that presents millions of years of geological and natural history, deepening the reader’s understanding of South Texas’s natural world.

ETIQUESTIONS Gift giving for the holidays can be so confusing and stressful!!!! I consider some of my colleagues to be great friends and want to gift them something special during the holidays. However, not all of my colleagues are great friends, and I don’t usually give them as nice a gift. What should I do so that feelings don’t get hurt and I am not seen as rude?

The holidays are a great time for us to show our love and appreciation for those around us. It is ok to give gifts to your closest work colleagues since they are your friends. However, I suggest you give the gifts discreetly, preferably outside of the office. The last thing you want to do is hurt anyone’s feelings or, as you put it, be seen as rude. Also, keep the gift simple and moderately priced. It truly is the thought that counts.

What are the etiquette tips for holiday party planning?

I want everything to be amazing for all of my guests who will be attending my home holiday party.

Many experts feel that the key to great holiday parties is in the planning. Get the invitations out early. During the holiday season, people’s calendars fill up fast, so plan your holiday party guest list and send out your invitations 4 weeks in advance. This allows everyone to plan accordingly so that they can be present at the big day!

There were so many glasses and utensils on the table at a recent event that I didn’t know which one was mine. It seemed like all of our items were very close together. How do you know which glass is yours and which is your neighbor’s?

Holiday parties and dinner with friends and family are a great way to celebrate the season. Your drinking glass(es) should always be located to the upper right side of your plate. When tables are crowded, it is often confusing since the glasses might be close to the plate next to you as well. Just remember, the right side is yours! Happy Holidays.

By Dr. Ruben Castro The holidays bring sparkling lights, delicious treats, and festive gatherings, but for our dogs, they also bring unfamiliar sights, smells, and sounds that can be confusing or even dangerous. As we celebrate Christmas and ring in the New Year, a little preparation can help ensure your pup enjoys the season just as much as you do. From tempting ornaments to booming fireworks, December is full of potential hazards, many of which pet owners don’t notice until it’s too late.

Holiday Décor: Beautiful, But Risky

To keep your dog safe and calm:

Christmas trees and decorations transform our homes, but they also create irresistible “toys” for curious pets. The American Veterinary Medical Association (AVMA) warns that glass ornaments, tinsel, ribbon, and string lights can cause choking, intestinal blockage, or cuts if chewed or swallowed. Even a wagging tail can send a fragile ornament crashing to the floor.

• Bring dogs indoors before fireworks begin.

A few easy precautions:

• For severely anxious pets, speak with your veterinarian about anxiety-reducing options.

• Hang delicate ornaments higher on the tree.

• Avoid tinsel altogether; it is extremely dangerous if ingested.

• Secure electrical cords and unplug tree lights when you leave the house.

• Keep tree water covered, as additives and stagnant water can be toxic to dogs.

Seasonal Foods: Festive for You, Harmful for Them

• Create a quiet “comfort space” with blankets, toys, and low lighting.

• Play calming background noise such as soft music or white noise.

• Make sure your dog’s microchip and tags are up to date, as many dogs run away during fireworks nights.

Final Thoughts: A Season of Joy, Not Stress The holidays should be a time of warmth and celebration, not emergency vet visits. By being mindful of décor, holiday foods, and noisy festivities, you can help your dog stay safe, relaxed, and happy throughout Christmas and New Year’s. Holiday gatherings mean lots of food within reach of a curious snout. The ASPCA advises that many seasonal staples are dangerous for dogs, including chocolate, grapes and raisins, xylitol-sweetened desserts, alcohol, macadamia nuts, and onions. Even fatty table scraps, such as ham or turkey skin, can trigger pancreatitis, a painful and potentially serious inflammatory condition.

When guests visit, remind them not to slip treats to your dog under the table. To avoid accidental ingestion, keep food dishes pushed toward the center of the table and secure trash cans with lids.

Fireworks & New Year’s Noise: Protecting Anxious Dogs As New Year’s Eve approaches, fireworks become a major concern. The Humane Society of the United States notes that loud blasts can trigger fear, shaking, pacing, escape attempts, or destructive behavior in noise-sensitive dogs.

HOW ONE DOG’S STORY IS INSPIRING A LASTING LEGACY

And now, Yaqui Animal Rescue is determined to ensure that Cane’s suffering was not in vain.

In his honor, the organization is creating Cane’s Playground—a thoughtfully designed, safe, and joyful space where rescue dogs can run, play, heal, and connect with potential adopters. Designed by a professional dog-park architect, the playground will transform trauma into joy and grief into purpose.

Yaqui Animal Rescue has never been just a shelter—it has always been a lifeline. For countless animals who have known hunger, fear, and abandonment, this local nonprofit represents hope. But few stories have shaken the rescue community as deeply as Cane’s.

Cane was found barely alive. Half of his face was gone.

His frail body was failing. Maggots crawled from infected, untreated wounds. Severely anemic, dangerously dehydrated, heartworm positive, and weighing far less than he should have, Cane’s body condition score was just 1 out of 9. He was living proof of a form of cruelty that often goes unseen: prolonged neglect.

Neglect is not always loud or violent. Often, it is the quiet absence of care—empty bowls, heavy chains, and wounds ignored. Cane endured it all.

Thanks to an outpouring of community support, Cane received emergency medical care and began to recover.

Dr. Hanna, a veterinarian and Yaqui Animal Rescue board member, medically fostered him. For the first time, Cane experienced comfort, safety, and love. He played. He rested. He was happy.

But on the evening of July 31, tragedy struck.

During a walk, Cane suddenly collapsed. Despite Dr. Hanna’s immediate efforts and her team’s attempt to revive him, Cane passed away. The likely cause was a fatal blood clot related to advanced heartworm disease— damage done long before he was ever rescued.

Cane’s life was heartbreakingly short, but his impact was enormous. His story spread far beyond the local community, touching hearts around the world.
