Hello! The New Year is here and I am so excited for it. A new year always comes with so much hope and ambition. We all get a fresh start on living the way we want and being the people we aspire to be. I’ve got my list of things I will be focusing on this year for better health, relationships and finances. I hope you’ve made commitments to make this year great and improve certain areas of your life as well. It’s never easy to make changes to your lifestyle, but it is always worth it not only for you, but for others in your life. I wish you the best of luck in all your endeavors this year. No doubt many of you will make eating healthy one of your New Year’s resolutions, as so many of us do. CrossFit has one of the largest followings of any fitness style, and it was only founded 19 years ago, in 2000. There are CrossFit gyms in 142 countries across 7 continents. EATS You know that feeling you get when you find someplace special that’s unlike all the rest? That you want to share with everyone? That you just can’t get enough of? That’s Panang Thai. Husband and wife duo Mac and Pin started Panang in 2007 and it’s grown exponentially since then. They’ve expanded to four locations across the metro in north and south Oklahoma City, Moore and Edmond. Let me just say this before we start: if you want to stop reading because Thai food isn’t normally your thing – don’t. Panang will convert any hesitant eater into a fanatic. We dined at the north Oklahoma City location, and the wait staff who took care of us couldn’t have been nicer or more friendly. The atmosphere is modern, warm and inviting. Mac has always had a love for food, and his wife, Pin, has always loved cooking. This combination mixed with a whole lot of hard work, dedication and love has created some out-of-this-world Thai dishes. The menu has so many great options: curries and stir fries, seafood, soups and salads, fried rice, noodles and so much more. The dishes are a mixture of family recipes that have been passed down from Thailand and other places in Asia, and some are chef driven and created. Panang makes every sauce in-house and you can taste the love in every bite. Each dish we tasted was so full of flavor and unlike any other Thai food we’ve had in the past. Whatever you do, order the Four Seasons Salmon. You’ll want to drink the sauce (not joking; it’s that good). It’s one of the best dishes we’ve ever tasted, not just at a Thai restaurant but anywhere in the city. The combination of the crispy salmon with their house sweet-and-sour curry sauce is unbelievably delicious. You can’t go wrong with any option on the menu though, to be honest. They have plenty of meat dishes, but they are also extremely vegetarian friendly. Almost every dish is offered with the option of vegetables or tofu. Have a food allergy? They also take great care of those who are gluten free or dairy free. Extra bonus: not a single dish or food item contains MSG. It’s really, really hard to pick a favorite thing about Panang, but at the top of our list is their incredible lunch special offered Monday through Friday. It’s only $8.75 and you get to select the dishes you’d like from four different sections. The offerings change daily and it’s literally a platter of food that you probably won’t even be able to put a dent in, for under $10. Do yourself a favor and stop by any of their locations for lunch real soon. If you can’t tell, we should probably just go ahead and say it – we love Panang. Wounded Veterans of Oklahoma is stepping up in a big way and focusing on helping veterans within the state of Oklahoma with their everyday struggles and needs. It was founded by James Martin, a veteran himself. He spent 15 years serving in the United States Army and is a disabled veteran. Wounded Veterans of Oklahoma is a 100% volunteer organization. They do a little bit of everything, including taking veterans out on outdoor excursions where they’re able to get out and about, as well as providing opportunities to talk with others and share and bond over their experiences. They want to reach out to as many veterans as possible to help them make ends meet and adapt to civilian life. They help families who might be struggling monetarily with providing a Christmas for their children. They also provide carry and conceal classes. There are many veterans who feel alone, who are struggling because of injuries or circumstances and aren’t able to work or make friends. This organization steps in and creates one giant family among veterans and wounded veterans from all different branches, from the military to local fire and police departments. They’re giving back to those who gave so much so we can enjoy our freedom.
