New Year’s is always one of my favorite times. While other holidays help you enjoy and treasure what you have in your life, New Year’s is about making changes. Whether you have health and fitness goals, personal life changes, or new financial moves to be made, it is an exciting time of improvement for us all in many different ways. While I have big fitness goals I want to accomplish this year, more traveling, and of course financial ones as well, my biggest focus for 2020 is to be more open and vulnerable in my personal connections with people. Many of us live our lives so closed-off and protected out of fear and anxiety that we miss out on wonderful experiences. At least, I know I do, and I hope my New Year’s resolutions help change that for me, even if it’s just a little bit at a time. We have an awesome issue for you this month! First of all, the Okie Honor Award winners. So many votes were cast this year, and I’m truly happy for and proud of all the winners. We watched throughout the final top 5 voting as businesses and individuals worked hard to be seen as #1 in their field by the local community. That’s exactly what these awards are all about: local businesses and people being shown appreciation and respect for all their hard work by the people they service every day. So a big congratulations to every one of our Okie Honor winners and runner-ups this year!
In accordance with New Year’s resolutions, we made the focus of this food issue Healthy Eats at all our favorite local restaurants. It’s not always easy to eat healthy when you go out, but we have given you some pretty great options. A special shout-out to our new lead photographer, Ms. Laynie Pritchard. This is her first issue shooting with So6ix Magazine, and I have to say she absolutely knocked it out of the park. I also want to say thank you to our new art director, Kristen McGregor, and brag about what an awesome job she has done this month. She has been the lead graphic designer at So6ix for some time now, and she took on a whole new batch of responsibilities with her promotion to art director this month. 1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
1. Season the pork with 1 tablespoon of the dry marinade.
• 8 or 9 russet potatoes, medium-sized • 6 slices bacon • 1 cup white onion, small dice • 2 tbsp flour (Shawnee Mills) • 2 tbsp white sugar • 2 tsp kosher salt • 1/2 tsp celery seed • 1/4 tsp cracked black pepper • 3/4 cup water • 1/3 cup vinegar (apple cider preferred, but white distilled will work)
2. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble and set aside, reserving drippings. 3. Sauté onions in bacon drippings until they are golden brown. 4. In a small bowl, whisk together the flour, sugar, salt, celery seed and pepper. Add to the sautéed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar. Return pan to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.
• 8 thin pork cutlets • 2 tbsp Daddy Hinkle’s dry instant marinade • 1 cup flour (Shawnee Mills) • 1/2 cup canola oil • 1 tbsp unsalted butter • Parsley and lemon (for garnish) • 1 packet brown gravy (Shawnee Mills)
2. Combine flour with the rest of the dry marinade and set aside on a plate. 3. Heat canola oil over medium-high heat. Add butter. When butter is melted and the pan is hot, add pork in batches so as not to crowd the pan. 4. Cook for 2-3 minutes on the first side and 1-2 minutes on the other. 5. Remove from pan and set on a plate or wire rack. Garnish with parsley and lemon. Serve with warm potato salad and Shawnee Mills brown gravy.

• 1/2 lb Schwab’s smoked andouille sausage, cut into 1/2” slices • 2 1/2 tbsp vegetable oil • 5 tbsp flour (Shawnee Mills) • 1 white or yellow onion, medium dice • 1 cup celery, medium dice • 2 cloves garlic, minced

1 green bell pepper, medium dice 2 cups chicken stock 1 28-oz can diced tomatoes 2 tsp creole seasoning 4 cups chopped cooked chicken (storebought rotisserie is fine)
INSTRUCTIONS 1.
Sauté sausage in oil over mediumhigh heat in a Dutch oven for 5 minutes, stirring often.
2.
Remove sausage with a slotted spoon and drain on paper towels.
3.
Whisk in flour. Cook over medium-high heat, whisking constantly, until a dark roux forms.
4.
Add onion, celery, garlic and bell pepper. Cook 5 minutes, stirring often.
5.
Stir in chicken stock, diced tomatoes, and creole seasoning.
6.
Add sausage and chicken. Cover and simmer for 10 minutes.
7.
Serve over rice.

Q: Can I expunge (seal) my criminal record?
A: Most likely you are eligible to file for an expungement of a criminal record. It depends, however, on the type of offense you were convicted of and the amount of time that has passed since your conviction. Cases that have been dismissed or in which you were acquitted after trial are eligible right away for expungement. Some misdemeanors are eligible right away as well. Violent crimes are generally not expungeable without a pardon from the governor.
Q: How do I go about the process of expunging my criminal record? A: The expungement statute in Oklahoma (22 O.S. 18) recently changed for the better and allows for more offenses to be expunged. However, the process requires the assistance of a knowledgeable attorney to ensure it is done correctly. My office handles many of these matters, and all it takes is a phone call to set up a free consultation to review your record and see if you are eligible. The entire process from start to finish takes about 6 months.
