they will swim in the same bodies of water with the fish and emerge completely unharmed. Naturally, the occasional bite does occur but the frequency has been greatly exaggerated. However, if you decide to put your hand in an aquarium full of piranhas, there’s no guarantee that you won’t get nipped. So maybe don’t try that. But there are actually no documented reports of someone being killed in a piranha attack.

The first two vocalizations are creating using the piranha’s swim bladder, which is a gas-containing organ that helps keep the fish afloat. By contracting and relaxing the muscles around the swim bladder, the piranha can make noises of different frequencies.

WHAT’S THAT SOUND? Did you know that some piranhas can bark? It’s true. The red-bellied species of piranhas make bark-like noises in a variety of situations. For instance, in a visual “staring contest” with another fish, they make quick calls that sound similar to barks. Scientists have interpreted this as a warning to the other fish not to mess with that piranha. If the piranha is actively circling or fighting another fish, it will emit low grunts or thud sounds, which researches believe more of a direct threat to that other fish. If the other fish is scared away by the first two vocalization types,

I

t’s cold outside, which means it’s the perfect time for chili. You would have to look hard to find someone who doesn’t love a hot, steaming bowl of chili, especially this time of year. But the fellowship ends when it comes to the details. Many people pride themselves on their chili recipes. Their special mixture of spices, meat and/or beans (we’ll get to that!) is proprietary. There are strong preferences, allegiances that rival those of collegiate and pro sports teams, and depending on where you live, even national heritage. It’s not simply geography that dictates what kind of chili we prefer, sometimes whole households are divided over the issue. How we like our chili -- hot or mild, red meat or white, beans or no beans -- is personal. Even more debatable than our preferences is what exactly is chili, and where did it come from. Chili, and its history, is complex. The recipe is simply a stew of water, chili peppers, herbs and, most often, meat, with origins dating back hundreds of years. In modern times, the debate has centered on whether chili is Mexican or American. Rick Bayless, a chef who is an expert in Mexican cuisine and who has traveled extensively throughout Mexico, says it’s simply a matter of reversing the name. In Mexico, they make a stew of chilies and meat. They refer to it as Carne con Chili, either Chili Colorado or Chili Verde. They also have a dish called Carne Guisada, which has many of the same flavorings as our Chili con Carne. In Mexico, it’s Carne con Chili, and in America, its Chili con Carne, or just chili. Both preparations are closely related, but the Chili con Carne that most of us have come to love, and for which there are many recipes, seems to date back to hungry Texas cowboys inventing a trail-hearty stew of dried beef and chili peppers. The difference today between Chili con Carne and its Mexican sister is that we, being Americans, have spun our chili in countless directions. A big moment in chili history came when beans and tomatoes were added. Since then, the discussion has become fiery. With or without? What will it be? The answer is obvious. With the idea of culinary liberty for all, we should be accepting of those who want to put beans, tomatoes, seitan, tofu or a long list of other continually evolving ingredients in their chili. In the interest of culinary harmony, my recipe for Slow Cooker Diva-Style

1. In a large skillet, heat oil over medium heat. Brown the beef stew meat in the oil in batches, being careful not to overcrowd the pan, so that the meat will brown instead of steaming. (If you’re using ground meat, add it to the oil and break it apart using a spoon or potato masher). 2. Add onion, garlic, cumin, chili powder, salt, pepper, red pepper flakes and cayenne pepper. Cook 2 to 3 minutes longer. Transfer the meat to a 6-quart slow cooker to finish cooking. 3. Place 1 can’s worth of rinsed and drained beans in a medium bowl. Mash them with a spoon or potato masher. (The mashed beans will thicken the chili.) If you aren’t using beans, thicken with 1 cup of finely crushed tortilla chips. 4. Stir in mashed and whole beans or crushed chips, tomato sauce, tomatoes, water, tomato paste, salsa and brown sugar. Cover and cook on low for 6 to 8 hours or until the stew meat is tender. ncreasing our intake of whole grains results in lower risk of death from cardiovascular disease and diseases such as Type 2 diabetes, according to two large studies reported in the Journal of the American Medical Association. The studies tracked 74,341 in the Nurses’ Health Study and 43,744 men in the Health Professionals Follow-up Study. Bread immediately comes to mind when we think of increasing our grain intake, but bread labels can be confusing. Here are some of the myths and truths about bread, as provided by WebMD.com. Myth: If the bread looks brown and has “wheat” in the name, it contains fiber and whole grain. Truth: The only way to tell what bread really contains is in the ingredients label. “Wheat flour” or “enriched wheat flour” means it was made with mostly white flour. The color might come from molasses.

TRI-LAKES CHAMBER OF COMMERCE AND VISITOR CENTER MOVES TO NEW LOCATION MONUMENT, Colorado (January 23, 2015) - The Tri-Lakes Chamber of Commerce and Visitor Center has been doing business out of the historical house just off of I-25 for many years. They are moving to 166 Second Street in Historic Downtown Monument. During the week of January 26 services will be limited but available, everyone is encouraged to call or drop by either building. The house at 300 Highway 105 is available to rent; call the chamber for details. An Open House will be announced after renovations are complete. “An opportunity for us to move our operation to a larger location became available, so in the interest of the growth of the Chamber and the increase in visitors it was decided that we make this big step,” Executive Director Terri Hayes said yesterday. “Our focus is on growth in this region, serving Northern El Paso County and Larkspur, and we have outgrown our current building. This new facility will help us advance to the next level in supporting positive growth and providing easier access to us.”

Truth: Again, the ingredients label is where you’ll find the true information. A bread can be called “natural” or say how many grains it has, but the first ingredient in the label will tell you what’s really in it. How to buy the healthiest bread: • “Wheat bread” is wheat flour, not whole wheat. Look for “100 percent whole grain” or “100 percent whole wheat.” Even if you’re picking up a loaf of rye bread, don’t assume it contains rye flour as the first ingredient. • Beware the sodium level. Some breads are quite high in sodium and can become a major portion of your daily limit. • Look at the calories per serving, and don’t be fooled by the difference between “per slice” and “per serving.” • Check the grams of fiber. The new location is in what some locals refer to as the Old Town Hall. Recently, the Tri-Lakes Monument Fire Protection District administration was housed in the red brick building. Many community programs are currently conducted in the facility. The Golden Circle Nutrition Program (recently acquired by Silver Key Senior Services) holds luncheons for seniors twice a week in the community room. The Monument Homemakers Club and the Historic Monument Merchants Association each meet every month in addition to many others. Chamber officials plan to carry on all programs which are in place and encourage the addition of others.

For savings and money market accounts the rates are slightly above zero. Certificates of deposit are yielding a bit more but still well below the current rate of inflation. Diversified Bond Funds Diversified bond funds are just that –diversified. Unlike traditional bond mutual funds that limit their investment selection to a single sector of the market, i.e. US government bonds, these funds can invest in a variety of bond types, anywhere in the world.
