JUNE 2016 | VOLUME 3 ISSUE 6

PUBLISHED By SMV Texas Design Group, LLC 930 E. Blanco, Ste. 200, Boerne, TX 78006 210-507-5250

Welcome TO

the Dominion Magazine Dear Reader,

I would like to recognize Jeff Lewis for two years of service and leadership as the Chairman of our homeowners association and congratulate him on his reelection to our Board for another term. As Chairman of our homeowners association, Jeff most recently guided our Board through the process of selecting a security vendor for another contract period, and that process concluded with the selection and retention of G4S as our security provider. Our selection and retention of G4S as our security provider is inclusive of our off-duty San Antonio Police Officers. Jeff has agreed to Chair our security committee for the upcoming year. Additionally, I would like to take a moment to recognize Glen Glass. With our most recent election cycle, Glen completed his sixth year on our Board. Glen has served as Chairman, ViceChairman, Chair of the Security Committee, and as an advisor and mentor to all of us on our Board. Glen has this unique ability to summarize an issue from all view points in a succinct manner allowing all others to reach an informed decision. I mostly will miss Glen’s sense of charm, dry sense of humor, and wit. “Glen, thanks for all you do.” Our cover story in the current edition of The Dominion Magazine highlights a few of the specialty restaurants located in The RIM for fun and nightlife options. These recently opened, or soon-to-opened, specialty locations include Russo’s Coal-Fired Italian Kitchen, General Public, Bowl & Barrel, Mash’D, Hopdoddy, The Lion & Rose, and Raising Cane’s. Each of these venues has their own unique brand and dining experience. Please visit The RIM’s website for more details at www.therimsa.com. As of this writing, the rain continues and as it subsides, this serves as a reminder to me that summer is fast approaching. With that, children are home, vacations are planned, and many of our Homeowners Association members are making summer plans at the premier private country club in San Antonio – The Dominion Country Club. Wishing you and yours the best …

Summer is upon us, bringing warm weather and sunny skies to the Texas Hill Country, San Antonio and The Dominion. The summer provides many great options to enjoy the area and this edition of the magazine will highlight some of the aspects the wonderful area in which we live and work. Let’s start with the Texas Hill Country, which provides many charming towns to visit or tranquil parks and some of the most beautiful scenery in all of Texas. My personal favorites are Garner State Park, near Concan, and the town of Fredericksburg. I highly recommend taking a drive through Bandera, Medina, Vanderpool, and Leakey. A little closer to home, San Antonio offers many attractions for young and old alike. Options include Fiesta Texas, Sea World, shopping and restaurants at the RIM and La Cantera, the Alamo and the other Unesco Mission sites in the area and, of course the ever popular Riverwalk. San Antonio also now has a professional soccer team (San Antonio FC) whose season continues through the summer. For those craving something more adventurous, there is hiking in Friedrich Wilderness Park, walking or jogging along the Leon Creek Greenbelt, mountain biking in Hardberger Park or simulated skydiving at iFly near Top Golf.

Even closer to home, there are options in The Dominion such as a round of golf at the Country Club or a stroll around the Lakes or watching the July 4th fireworks on the golf course. No matter what your interests, there are plenty of great things to do and see in the area. Even without the variety of activities, the Hill Country, San Antonio and The Dominion are just wonderful places to live. The scenery is beautiful, the people warm and friendly, the food terrific and the weather fantastic. I have traveled to and lived in many cities, states and countries and can say that I feel fortunate to live here. Have a great summer.

rob mcdaniel General Manager of the HOA

SUMMER TIME LANDSCAPING Now is a great time to prepare your landscaping for the summer heat. You may consider planting perennials as there is an adapted Texas perennial for almost any exposure or application. The benefit of using perennials is obvious; 1) the plant is already adapted to our climate and soil, 2) they are available in 1 gallon, affordable containers, 3) they return every year and get better and better, and 4) some perennials thrive in the hot summers with little water. Many native plants will actually flower more abundantly under drought stress conditions and over watering may result in weak spindly growth and reduced flowering. A handful of compost in the bottom of the planting hole can increase the chances of successful establishment when planting perennials. Some favorite natives are Salvias like Mexican Bush Sage, Majestic Sage, Mountain Sage, Cedar Sage and Autumn Sage. Other plants do well in partial shade such as Rock Rose, Inland Sea Oats, Turks Cap, Copper Canyon Daisy and River fern. Another bulletproof native is Lantana, as it blooms throughout the growing season with little to no 26

JU NE 2016

attention. There are many colors and sizes available that look beautiful. Most of these native plants are also deer resistant. Your turf also requires maintenance. Regular mowing is the most obvious way to maintain your turf, but one thing to keep in mind is your mowing height. St. Augustine should be mowed no shorter than 4 inches. The longer the grass blades, the more shade is applied to the soil surface and the root structure at or just below the soil surface. This helps retain moisture. Bermuda and Zoysia can be successfully maintained at a lower height, but bear in mind that if the height is taken too low, too soon, the turf could brown out and may be difficult to reestablish. You can fertilize turf throughout the spring, but use caution when applying fertilizers or compost while the turf is growing. An overabundance of nutrients while the roots are exposed and new growth is coming out can discolor turf. At this time of year, turf discoloration could also be grubs or another pest, rather than fungal disease.

The Development Committee continues its work with Dominion Hills by reaching a development agreement. The plan calls for all residential property of Dominion Hills to be inside the Dominion’s security, while also allowing some office space outside the secured perimeter. The Committee is also working on a development agreement and governing documents for a proposed expansion of the Sales Pavilion office complex. Lastly, the committee recently gave final approval of the 2016 road maintenance project for Dominion streets. This 2016 project primarily entails applying crack and micro seal to roads in The Gardens and Cottage Estates.

UPCOMING HOA EVENTS Landscape Committee Meeting Thursday, June 2 at 8:00 a.m.

The Finance Committee welcomed a new member in May: Michael Conly, a 21-year resident. He also serves as Treasurer and executive board member for the Innlet HOA in Ponte Vedra Beach, FL. He has served on many community boards around the country, including economic development foundations, library, historical preservation, and children’s foundations, as well as the PGA Texas Open and U.S. Jr. Olympic boards, Boy Scouts, and Big Brothers. Mr. Conly’s career experience includes corporate operations, finance, and marketing in the broadcasting industry. He is a past-President and CEO of Harte Hanks Broadcasting which owned and operated TV and radio properties around the nation; locally, KENS5. He also served on the National Association of Broadcasters in Washington, D.C. as Vice Chair of the TV Board, as well as a chairman of the NAB’s finance, budget, and financial strategic planning committees. Mr. Conly was also involved in legislative development and lobbying congress. Prior positions in his industry involved programming and news development around the world, some of which you watch today! The committee recently received David Ray’s resignation due to work related obligations. He has been a valued member of the committee for over six years. We would like to thank David for his service to the community and wish him well. Landscape Committee How we love the spring rain! The Landscape Committee has completed work on several islands in the Cottage Estates, mostly on Ambassador and Waterford Glen. It is great to have the rain for them to get a good start. We are also working on updating some of the plantings along the front entrance islands as some of the plants had weather and wildlife damage. The front entrance should be looking wonderful again soon. This summer we will begin working on our plans for the fall planting season. As always, we welcome comments and ideas from residents. Architectural Control Committee (ACC) Interested in future projects within the community, and have a keen eye for architecture and design? The Architectural Control Committee would like to invite attentive homeowners throughout the community to apply and attend our weekly meetings, where committee members review all new homes and exterior modifications. The ACC’s two main purposes are to preserve a harmonious design for the neighborhood in compliance with recorded Covenants, and to protect the value of the property. We’re in need of homeowners to attend, preferably no more than two meetings a month, and review construction applications by discussing with fellow homeowners and builders to objectively determine if the new projects comply with The Dominion design standards. If you’re interested in volunteering, please contact Kellye Fralinger, ACC Administrator, at the HOA Office to submit a committee application. The Security Committee With summer fast approaching and school almost out, there will be more children playing in our neighborhoods. We would like to take this opportunity to ask that you come to a complete

Dominion Drive, Ambassador Lane, and Brenthurst Lane are 30 MPH, while the speed limit in all subdivisions is 20 MPH. In the continuing effort to preserve all of our residents’ safety, the new radar camera trailer mentioned in the February issue has been deployed. This trailer video records those who exceed the speed limit and recordings will be used by the security staff to issue violation notices. The trailer will be moved around frequently. Please be safe, watch out for the health conscious among you (cyclist, runners, and walkers) and remember if you see something, say something. The Neighborhood Outreach Committee (NOC) The NOC would like to start by thanking Carla Ruiz, outgoing Chairperson for the committee, for all of her hard work and dedication to making the community grow its social events and activities. ANN MILLS

TITLE: Dominion Camp Director Hometown: Kerrville, Texas Born and raised in Oklahoma City until the age of 15, Ann moved to New Jersey to finish out her high school years. She received her Master of Science Degree in Communication Disorders at Texas State University. Before becoming the head camp director, she was the assistant director to Sarah Mayo, the previous camp director. Sarah “designed and began the camp program in 1984, when she was a tennis pro working at The Dominion.” This coming summer will be Ann’s 15th year as the Club’s Camp Director. “I’ve loved being able to create the best camp experience that I can for the kids. I want it to be developmentally based and a learning opportunity. I want it to be great, not average. I have loved being able to open it up to children with special needs who don’t quite fit into other camps. Most rewarding is watching all the kids play – really play – without electronics, and listening to the laughter all day long. I also have been rewarded by teaching the counselors a great work ethic, and watching them grow into fine, young adults.” By day, Ann is a speech pathologist. She currently provides speech therapy to adults with special needs that have “severe and profound communication disorders.” In her free time, she enjoys activities with a creative outlet such as “listening to music, observing creative design or photography. I enjoy the arts and seeing someone’s passion for being creative. Of course, I also LOVE watching the Spurs.”

JU NE 2016

by Michelle Hans contributions from Brian Kenneth Swain, dominion resident

It’s been one heck of a week. The sun is getting low in the sky and the day is drawing to a merciful end. Just a few minutes left to go before that last meeting is over and here comes the text message you’ve been waiting for: What are we doing tonight? An excellent and welcome question, because one thing’s for sure: we’re not cooking and we don’t want to drive any farther than absolutely necessary. The goal is simple: relax with some good food, a glass of wine or the latest trendy cocktail, and something entertaining afterward— maybe a movie, a little bowling, or just a comfortable corner for some leisurely conversation and stress-relieving laughter. Luckily for Dominion residents there are plenty of unique options within a stone’s throw of home. Just south of us, as you may already be aware, is an enormous and diverse collection of shops, restaurants, and entertainment venues at the RIM. The consistently-expanding commercial and residential development community continues to add new nightlife and dining options almost as fast as people can fill them up. There are more than a hundred establishments in the area already and all so close to home that your car won’t even have a chance to get warmed up before you’re there. These newer establishments offer residents a growing variety of night-life options—whether it’s enjoying craft beers and “crafted burgers,” playing a round or two of “boutique bowling,” or grabbing a drink and revealing your hidden repertoire of British jargon. Beginning with the much-welcomed additions of Top Golf and Bowl & Barrel, The RIM continues to expand its variety of distinctive establishments, providing Dominion residents with exceptional restaurant and bar options for a great night out on the town. Whatever mood you’re in, or whatever nightlife preference you may have, you are sure to enjoy a night out at The RIM.

The General Public As soon as you walk inside, your eyes are immediately drawn to the massive, elongated u-shaped bar, with an iridescent copper-covered bar top, and muted navycolored leather bar chairs symmetrically arranged along the sides. To the left, are hightop tables and booths, and to the right are tables set adjacent to the wall leading out to the large covered, outdoor seating area - a nice place to hang out and enjoy your company comfortably on those warm Texas evenings. The interior walls are adorned with complementary colors and textures: warm, charcoal gray paint; dark nautical blue-hued shiplap; and heather gray brick. Up above, you’ll notice the muddy-reddish tinted tin ceiling tiles, bordering the same deep, nautical-blue shiplap centered directly above the bar. The décor is an eclectic blend of antiques, some displayed upon the walls, and a large collection displayed within a rustic-wooden storage shelving unit that spans nearly the entire length of the back wall, perched above the kitchen opening. The General Public is a modern gastro-pub specializing in New American cuisine and high-end spirits Their menu offers a well-rounded variety of dishes, but their specialties are the fish n’ chips and jumbo crab cakes. The ambiance is akin to a retroindustrial vibe that provides a classier, sans pretentiousness, nighttime experience for a wide range of patrons…from upper-20s to mid-60s. The music ranges from Classic Rock and R&B to today’s current chart-toppers, but no matter which era, it will keep you happy, upbeat, and enjoying your evening. According to one of their very attentive and helpful bartenders, this is the place to be on Thursday, Friday, and Saturday nights. Whether you are looking for a good dining option, or just that perfect drink, The General Public is a great place to begin and end your night out at The RIM. The General Public is located next door to its sister establishment, Bowl & Barrel, at 17619 La Cantera Pkwy, Suite 102. For reservations and to view their menu, visit their website at thegenpublic.com. You can also call 210-920-1101 for reservations. 40

Bowl and Barrel If you’re looking for a unique nighttime option different from the usual restaurant and bar, Bowl & Barrel offers a fun, upbeat venue perfect for gathering with friends and loved ones to eat, drink and play a few rounds of bowling in its “boutique bowling” alley. The atmosphere is energetic and bubbly with lots of conversation, smiles, and laughter seen and heard among its patrons. The setting is elegant-industrial, with its vintage-esque brick walls, espresso brown leather settees, coffee tables and high-top bar tables constructed of walnut-stained wooden tops and antique-bronzed metal legs. One large accent wall, covered in an attention-grabbing pattern of wooden pallets, is an interesting focal point. The ceilings are covered in various shaded planks of reclaimed wood, giving it the currently trendy shiplap design. Bowl & Barrel’s “modern American tavern” affords a comfortable setting perfect for small or large groups to have a good time while enjoying delicious food and tasty beverages. Their full bar and large menu provides patrons with an extensive variety of dining and drinking options. While walk-ins are welcome, reservations are highly recommended, especially on weekends. Bowl & Barrel is located at 17619 La Cantera Pkwy, Suite #102. For more information or reservations, call 210-920-1102 or visit www.bowlandbarrel.com.

The Lion & Rose If you are looking to unwind a bit more casually, with touches of British flair, at the end of a long day or week, The Lion & Rose Restaurant and Pub may be the perfect nighttime destination for you. Before entering, you’ll notice standing within the sprawling outdoor patio area is an iconic red telephone box, a quintessential British symbol. Passing through the honey-blonde stained oak doors of the main entrance, you’ll notice the matching rich honey hue on the oak walls throughout the entire pub. Similar to The General Public, you’re eyes are drawn to a giant, u-shaped bar in the middle of the main room, built from the same honey-blonde stained oak. Reclaimed wooden floors and vintage scroll-patterned carpeting are laid throughout the restaurant area. Symmetrically-patterned tile flooring in the pub consist of tiny, square black tiles mottled among small, white subway tiles, creating a classically, vintage look. Standing as a partition that separates the pub from the restaurant is a partial wall with a gas fireplace covered in a masculine façade of dry-stacked slate stone. The combination of the slate fireplace, honey-blonde oak walls, and exposed duct system above lends modernity, but does not overpower the perception of a genuine British pub. Also worth noting are the iron lamp sconces installed around the bar, akin to the antique oil street lamps that commonly stood throughout British city sidewalks of yesteryear, accentuating that ‘old world’ UK feel.

42

The Lion & Rose offers its patrons an extensive pub menu that includes traditional British dishes, such as Shepherd’s Pie, Fish & Chips, and Bread Pudding, along with a large variety of English and Irish beers, ales, stouts and lagers on tap. For those who enjoy the British pub feel, but not so much the British fare, the menu also offers a variety of traditional American cuisine in addition to a well-stocked full bar. Opening its first doors in the Alamo Heights area, this British-Irish pub became a quick hit and a popular gathering place for friends and loved ones. In addition to food and drinks, you can enjoy a classic game of darts or just sit back and watch your favorite sport on one of their many televisions. The RIM is the pub’s fourth and newest location, and provides a perfect setting for those residents hungry for a scrumptious meal, thirsty for a hearty ale, and ready for some good conversation…another great destination to begin and end your evening out at The RIM. The Lion & Rose British Restaurant and Pub is located between Mash’d and Russo’s Coal-Fired Italian Kitchen, at 17627 La Cantera Pkwy. To view their menu online, or take a virtual tour of The RIM location, visit www.thelionandrose.com.

Mash’D Mash’D embodies what I’d call Modern Americana: modern in the way of current music, elevated cuisine, and popular mixology and décor trends, yet Americana in the way of its purpose in encouraging and welcoming patrons into a great space to celebrate our American culture with a sort of rebellious spirit. Mash’D provides a warm, unpretentious atmosphere with an upbeat and fun vibe. Its unique design and décor set it apart from the normal chain restaurant and bar spaces. The rustic, hand-scraped wooden tabletops accented with large bronze grommets and the reclaimed wood flooring is a bit reminiscent of old, wooden whiskey barrels. Paying homage to the moonshine trend, Mash’D has taken it step further, offering a plethora of moonshinebased cocktails that even the pickiest of drinkers will surely find his or her perfect mixture. Their extended menu-options provide a modern-spin on your traditional American favorites. Mash’D is located between Hopdoddy and The Lion & Rose Restaurant and Pub. For a preview of their menus and to make reservations, visit www.mashd.com.

Hopdoddy Hopdoddy Burger Bar is definitely a ‘hoppin’ place. Right away, you’ll notice this restaurant and bar teeming with energy, laughter, smiles, and good times. The Austin-based restaurant and bar has a contemporary, industrial interior with pops of eye-catching colors – from the vibrant, deep orange-red walls and calm, subdued lime green walls to the colorfully, diverse artwork dotted amongst the eatery. The tabletops and countertops are constructed of thick, honey-blonde stained butcher block, to provide that trendy butcher shop element – minus the freezers and raw meat hanging around. Once you enter, grab a menu from the stand at the front door, and take a gander as you wait in line to place your order at the counter. Once your order is placed, choose your table, and your waiter or waitress will bring you your food and serve you for the remainder of your visit. If you are extra thirsty, you will happily notice Hopdoddy has a full bar. In addition to their signature cocktails, they proudly serve a nice rotation of locally crafted beers. Wine lovers: do not fret as they also offer an assortment of wines for your pleasure. Hopdoddy began in 2010, and has expanded throughout Texas and into Arizona, California, and Colorado. They are specifically known for only using beef from “humanely raised cows”, and cooking with fresh, all-natural ingredients. If your eyes happen to wander to the left of the front counter, you’ll notice an employee cutting and kneading the dough used for their variety of buns they bake fresh daily. With the energetic, friendly Austin-like atmosphere, an extensive variety mouth-watering burgers (I hear the El Diablo or the Buffalo Bill are amazing), and a great source to familiarize yourself with local craft beers, Hopdoddy Burger Bar would be a great place to start off your night out at The RIM. “Play your dreams at Custom Shop Guitars...Only the Best!” by Art and Lisa Spanjer, Owners and Dominion Residents

W

hile living in Austin in the late 1970s, when early outlaw music was gearing up, Art worked in the music business. He also played with the Lone Wolf Mountain band to support his college endeavors. After graduation, he continued with music sales, and then joined the corporate world of Dow Jones. As a lifelong learner, he pursued graduate degrees in Information Science and Ancient History and Art, and worked in the college arena. As an avid lover of guitars, specialized woods, and quality craftsmanship, Art’s career came full circle with the purchase of Custom Shop Guitars in December 2013. For Lisa, a former public and private music educator and school administrator, she has always included music in her life. She still plays piano and guitar, and claims music is the best therapy for the soul. Her other career interests involve managing properties and family businesses. The opportunity to purchase a boutique guitar store enabled Lisa to share the gift of music through quality custom instruments that bring joy to their customers. The most rewarding experience about specializing in this particular niche is dealing with guitar makers who are eco-sensitive, and buy the finest woods in the world: “From a sunken ship or a fallen tree, our guitar makers search for premium woods without harming the environment.” In addition to providing their customers with superior instruments, quality customer service is just as important for them as business owners. “Being a small boutique business, we challenge ourselves to

provide the best customer service, whereby our customers appreciate the value of a quality instrument in the San Antonio marketplace.” The biggest surprise for Art and Lisa since opening up their store is the many people who are collectors and players of fine guitars. When asked what they would be doing if they weren’t in the custom guitar business, Lisa emphatically stated, “Probably traveling, going to more concerts, reading, and fishing! As recent transplants to the community, Lisa felt she and Art should have lived in The Dominion from the very beginning when they first made the move to northern Bexar County. Pondering what they enjoy about living in The Dominion, Lisa shares, “We appreciate the top notch security, beautiful grounds, and the location close to Custom Shop Guitars. “ Custom Shop Guitar is located in Eilan, next to Piatti’s Restaurant. They carry Collings acoustic and electric guitars, made in Austin, TX; Santa Cruz acoustics, made in Santa Cruz, CA; Breedlove Masterclass and Legacy acoustics, made in Bend, OR; Custom Shop Fenders; and Bourgeois acoustics, crafted in Lewiston, ME. During the month of June, Art and Lisa would like to offer a discount on all purchases made by Dominion residents.

Oklahoma state university Cowgirls’ Record Performance Earns Women’s Golf Crown by Lance Gottardy, Big 12 Conference The Oklahoma State Cowgirls were on a mission from hole number one on Sunday, April 24, at The Dominion Country Club shooting a six-under par 282 en route to their ninth Big 12 conference title, and an overall score of eightunder par (856) for the tournament. The -8 (856) is a Big 12 Championship record by five strokes and the final round -6 ties the championship record at The Dominion. The Cowgirls took the crown by 11 shots over Texas (+3) after entering the final round at twounder par, four shots up on Iowa State. Back-to-back individual champion Kenzie Neisen led the charge for OSU, firing off a final round six-under par 66 on her way to a Big 12 Championship record 207 (-9) on the weekend. Additionally, the 66 ties the Big 12 Championship record for a low round (lowest at The Dominion), and Neisen, a sophomore, becomes just the second female golfer to ever repeat as Big 12 Champion (Annie Thurman-Young, OSU, 2004-05). OSU’s Emma Broze (-1, 215), Linnea Johansson (E, 216), Chih-Min Chen (+3, 219) and Maddie McCrary (+7, 223) also contributed to the win for the Cowgirls, with Broze and Johansson earning All-Tournament honors. The University of Texas’ second place 867 was trailed by TCU at 873 (+9) for third. Iowa State (874, +10) and Oklahoma (876, +12) rounded out the top five. Baylor (885, +21), Kansas (887, +23), Kansas State (888, +24) and Texas Tech (889, +25) finished sixth through ninth respectively. Individually, Texas’ Sophia Schubert and Oklahoma’s Ana Ruiz tied for second place at -3, and K-State’s Madison Talley finished fourth at -2. Four golfers tied in fifth place at -1 and three more finished at even par to round out the All-Tournament Team, which was earned by finishing in the top 10 of the tournament.

uni’ko japanese house By Lisa Arcuri, dominion resident

Close your eyes and go on a journey with me. OK pretend you closed your eyes, otherwise how on earth will you read this article? Anyway, the journey is to a far off land in the Orient. A place where fresh seafood and the highest quality of products is celebrated. Where eating is ceremonial, and almost sacred. Where you take your shoes off and sit a while. It’s a place where beautiful edible flowers adorn the food, and every detail is carefully thought out. This place has come to us here in San Antonio. This place is Uni’ko Japanese House. Chef Andres Castro has created a unique, stylish and authentic Japanese experience right here at the Eilan. And I have a confession to make. I don’t know anything about Japanese cuisine. Yes, I love sushi. Yes I can order a spicy tuna roll like nobody’s business, and yes I’ve been to my fair share of Japanese Steak houses, BUT…. I’ve never had an experience like the one I had at Uni’ko Japanese House. I’ve never tried Sake. I’ve never tasted Sea Urchine. I’ve never done a quail egg shooter! I mean how many people can say they have? Well probably a lot, but not this little Italian girl from New 48

JU NE 2016

York. Adventurous for me is deviating from my favorite rolls at a sushi restaurant and maybe trying some Nigiri or Sashimi. Which by the way is raw fish over rice, and just raw fish, respectively. There are more and more sushi places nearby these days, but there are none like Uni’ko. Chef Castro started his culinary career as an Italian Chef. He traveled through Europe, and eventually settled in Florence, where he studied at Le Cordon Bleu, perfecting his Tuscan skills. He never imagined developing a love and passion for Japanese cuisine. But, that’s exactly what happened, and after training with amazing Japanese chefs, he decided to take his love for this beautiful food and bring it here to us. We are lucky people, as I’ve pointed out in in previous articles. We are really getting some wonderful choices in restaurants coming to our area. Uni’ko is no exception. Chef Castro takes fresh and authentic Japanese ingredients and presents them in the most beautiful delicious ways. Don’t be intimidated by the menu. In fact, embrace it! Let the staff guide you through your meal. They are exceptionally trained, and as our lovely waitress, Tricia Stevens pointed out, they “get to try

everything”. She admitted it has been an incredible learning experience for her, and is excited every day to try something new. Let them bring you things you’d never think of trying. Go on a journey. Start with the Akaushi Sashimi. It’s Akaushi beef, Japanese Red Cattle, which is now being raised in the United States by ranchers here in Texas. You can eat this amazingly tender beef raw. It literally melts in your mouth, or sear it on a hot stone brought table side. Its’ drizzled with truffle oil and served with organic micro greens. Another unique starter is the Osaji Oysters with yagi sauce topped with Tobico, or flying fish caviar. Each Oyster is different. They range from habanero peppers, mild orange citrus, wasabi, and soy sauces. All delicious. Chef Castro then made us a Tower of Sashimi and Nigiri. It was a sight to see! The presentation alone was magnificent. The sushi ranged from Fatty Tuna, to Sea Bass, to King Salmon, Ahi Tuna, and Uni, or Sea Urchine. In addition the tower was adorned with edible flowers and quail eggs that had salmon roe in them. I never imagined myself trying a quail egg, but there I was….What an experience! This place is full of unexpected delights. Speaking of unexpected. I never thought I’d have homemade Limoncello, made from Sake at a Japanese restaurant, but that’s exactly what you can expect here. Chef Castro’s own recipe, which takes months to make, is delicious. I mean after all, the man studied in Italy. If all of this isn’t enough to delight you, there are plenty of selections for those in your party not partial to sushi. They have Japanese fried rice dishes that can be made vegetarian, with beef or with chicken. In addition Uni’ko serves sautéed vegetables with the addition of proteins available as well. Several desserts take the American palate that craves sweets and give them a twist with both Mexican and Japanese influences. The Kokomattsu white cake with cream is one such dessert. It is similar to a tres leches cake, topped with toasted coconut, and accented with sweet cream. Lunch and Dinner specials with all the familiar sushi rolls that you’ve come to expect are abundantly available. Not surprisingly, Uni’ko is a blend of two Japanese words. Uni: means the best, and ko: means fresh and in season. So, I challenge you to step out of your comfort zone, and go on that journey with Chef Castro and his team, and experience Japan right here at the Eilan.

By Michelle Hans, Photography by Ben Weber Wouldn’t it be lovely to have your very own retreat to enjoy the tranquility of a garden oasis: admiring the abundant and thriving flora, listening to the calming sounds of trickling water fountains, and relaxing under shady comforts? Maybe you prefer to surround yourself with the sounds of love and laughter as you entertain under the stars: hosting friends and family amid pops of colorful and eclectic décor, underneath strands of party lights that create the perfect nighttime glow, and creating joyful, happy memories? Perhaps your preference is an artfully-charming space to enjoy a delightful late-morning brunch or a

well-prepared charcuterie and cheese board at dusk with a friend or loved one, providing you an excellent spot to have a meaningful conversation? Wouldn’t it be lovely, no matter what you favor, if your perfect outdoor space was just a step away from the comforts of your own home? Whether your picture perfect outdoor living area is a place to reflect and unwind, enjoy a cup of coffee and read a current bestseller, or is the place friends and family want to gather on a mild, summer evening, you are sure to find inspiration in this month’s special edition of The Dominion’s Home Tour – Outdoor Living.

Cynthia and Craig Carson The design was done by the previous owners, but we loved every detail. We love the cave-like feeling with the arches and stone. The sun has a hard time getting through so the outdoor temperature is a lot more comfortable in the summer. We enjoy the covered patio, pool, and relaxing. We also love to sit and listen to the waterfall going into the pool - it lulls you to sleep; as well as eating dinner and watching TV. Our yard stays this lovely thanks to our gardener, Jerry Valdez. We have lived in The Dominion right at a year. We enjoy the relaxed lifestyle and the people that live here. It seems to be like a neighborhood of years ago where everyone looks out for each other.

Dick and Michele Dewese My husband and I have lived in The Dominion for almost 21 years now and have enjoyed it very much. This is our fifth house we have lived in out here after we decided to down size to a more manageable-sized home in the Cottage Estates. When we bought this house, the courtyard was in a much neglected state. There were dead bushes and a large tree that had also died. After looking through many magazines and websites, I decided to go with a New Orleans type look. We took out everything, and added on to the patio. This is now a very cozy space that we are able to entertain and enjoy almost year round.

A Cottages Residence The basic design was in place when the home was purchased, but the residents added more stone curbing, the magnolia tree, and a variety of seasonal flowers, as well as creative landscape lighting. The homeowners’ favorite feature is the waterfall. “It creates a tranquil ambiance with the sound of the water, and the lighted rocks are lovely to see from the house. Another favorite is the extensive ivy growing up and over the wall. They enjoy the patio almost every day and eveningreading, happy hour, and entertaining friends and family.

Loucyette and Craig New The outdoor living area can be seen immediately upon entering our home and continues to be viewed from the living room, dining room, kitchen, and family room. French doors on either end of the house bring the outdoors in: when these doors are open, the patio and yard become an extension of the living areas. As traffic easily flows through the house to the outdoors, music travels throughout the home and into the yard as well. The spa/pool provides swimming for our young grandchildren while being a restful conversation pit for the adults. Fun to use and pretty to view, the pool with waterfall can really be enjoyed by sitting on the patio under the lazily turning fan blades. After living in The Dominion for almost 20 years, nothing beats the relaxed feeling we get when we enter The Dominion. May of our friends reside here and are members of The Dominion Country Club, where we are active members. 66

How Do I Love Thee? How do I love thee? Let me count the ways. . . . . . . . . . . . I love thee to the level of every day’s Most quiet need, by sun and candlelight. - Poem by Elizabeth Barrett Browning

by Andy Cottingham, Dominion Resident Elizabeth Barrett Browning, of course, did not write this sonnet about a special place, but instead about a special person. However, I think the words of this sonnet are perfect as an introduction to a sanctuary in which I enjoy living and to the special people living and working there, The Dominion and its residents. Why is The Dominion special? Is it the architectural or landscape beauty, the prestige of the community, the serenity of the surrounds, the security, or the excellence of the HOA management? It is all of those, but more importantly it is the quality and friendliness of the people who live here that render it a most special and distinctive residential community. There also exists a special and unique bond between The Dominion residents and The Dominion Country Club. This symbiotic relationship perfectly enhances both entities. More importantly that relationship enriches and expands the lives of those who live here. Whether it be the Turkey Chase, the Bonfire event, the Fiesta party, the Mariachi Run, the National Night outs, the many holiday activities of Christmas, New Year, Halloween, Thanksgiving, Cinco de Mayo, etc., the Food Truck events, New Resident parties, Friday Night Happy Hours, Taste of The Dominion events, or all the rest, life is quality and enhanced because of 72

There is truly something for everyone, however, the enjoyment of our special place revolves around the residents who perform such incredible volunteer services as sponsoring events like The Women’s Forum Gala, the Monthly Supper Club, the History Club, the special Birthday Happy Hours, Performing Artist events, dancing, Appreciation Nights, and many others. We have an oasis within San Antonio. I have lived in San Antonio for thirty years residing in Shavano Park and now in The Dominion. I enjoyed living in Shavano Park. It is a beautiful, convenient location, but it does not compare with the amenities offered by The Dominion, and most of all there is no comparison with regard to the outgoing friendliness of the residents and the family atmosphere we enjoy here. Driving over The Dominion entrance stone bridge always makes me feel special and proud of my home here. My wife and I feel truly blessed to live in a community with such integrity and value; but, again, it is the residents that make it special.
