Lunch Recipe Ideas
Pannenkoeken Pancakes
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 4
Sweet roasted carrot fries covered with crispy parmesan cheese!
Ingredients
2 large eggs
1 teaspoon olive oil
2 cups milk pinch of salt
2 cups all purpose flour oil or butter for pan
Directions
In a large mixing bowl, beat the eggs with a whisk or fork Whisk in the milk. Slowly add in flour, whisking continuously. The batter should be very smooth. Cover the bowl with plastic wrap and set aside on counter for at least 30 minutes
Once 30 minutes is up, put a 10-12 inch skillet over medium heat. Add the butter or oil to the skillet.
Scoop about 1/2 cup of batter into the pan. Tilt the pan around to coat the entire bottom of the pan with a very thin layer of batter Add toppings like ham, cheese or cooked bacon now.
Flip over the pancake once it starts to look dry on top, after about 2-3 minutes Continue cooking for 1-2 minutes until the pancake is golden brown on both sides. Continue this process with all of the batter

Ingredients
4 boneless skinless chicken breasts - pounded to less than 1 inch thickness
Salt and pepper to taste
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning - (OR ½ teaspoon dried oregano + ¼ teaspoon dried basil + ¼ teaspoon dried thyme)
4 slices mozzarella cheese

½ cup cherry tomatoes - halved
1 tablespoon fresh lemon juice
½ cup packed basil leaves - very thinly sliced cracked black pepper
Directions
In a large bowl combine chicken, salt and pepper, olive oil, garlic power, and Italian seasoning Toss to combine Grill chicken over medium-high heat for about 6-8 minutes on each side until cooked through. Top each piece of chicken with a slice of mozzarella cheese and cook another minute or so until melted
Toss tomatoes, lemon juice, and basil together. Top each chicken breast with about 3 tablespoons pesto, a scoop of tomatoes, and some freshly cracked black pepper. Serve immediately
