The end of summer has us breathing a sigh of relief. The monsoons bring much-needed respite from the unbearable heat - and joy to millions of Indians. As we try to cool ourselves down during the last few days of summer, we wonder how the adoption of sustainability a few decades before it picked up steam would have impacted our world today.

Nevertheless, it is wonderful to see a conscious shift towards sustainable living across industries. In this edition, we feature renowned architect, Tony Joseph, founder of Stapati, an organization that believes in being sincere to all stakeholders, including the environment, while building one-of-a-kind spaces. Founder and principal architect at Stapati, Tony Joseph has been recognised as one of the leading architects in the country for over 3 decades and is still going strong.

Tony Joseph, the award-winning multidisciplinary architect is the founder and chairman of Avani Institute of Design, a Center for Excellence in Architecture and Design in Calicut.

After graduating from MIT Manipal, he studied at the University of Texas, Austin, in the Charles Moore Master of Design program. Tony’s design sense was greatly influenced by his interactions and travels with Moore and his views on regional architecture. His fascination with arts and built forms, along with his mathematical interest, pushed him towards architecture. After returning to India, he started Stapati in 1989. Stapati, today, is a multi-disciplinary partnership firm with offices in Calicut, Kochi, Bengaluru and U.A.E.

CreaTing SuSTainable STruCTureS wiTh STapaTi

Stapati has won numerous awards for their innovative, sustainable designs since its inception in 1989. In 2015, ORO Editions from San Francisco published a monograph

called ‘Timeless Resorts’ on Stapati hospitality projects. Internationally, ORO is renowned for publishing art and design books only featuring the most prestigious and rare architects. In 2016, Tony was also invited to participate in the Kochi-Muziris Biennale and designed its Biennale Pavilion. Stapati has been selected as one of the Top 100 most influential design firms in South Asia by Architectural Digest for 9 years continuously from 2014- 2022. The Enchanted Island Resort design has been chosen as World’s Leading Private Island Resort in 2019 by World Travel Awards.

Designing a residence in Calicut was Tony’s first project. His initial works were influenced by Sri Lankan architect. Geoffrey Bawa’s architecture and low cost technique used by Laurie Baker, the renowned British-Indian architect. Stapati still continues to be known for his cost effective and energy efficient architecture.

As one of the very first resorts built by Tony, Kumarakom Lake Resort was a turning point in his career. The architect repurposed materials from traditional Kerala architecture to make it a tribute to the heritage. The resort’s water-based ecosystem serves as the central theme of its design, with canals and waterways woven throughout the property. The use of salvaged wood from traditional Kerala homes adds character and pays homage to the region’s heritage.

Spatial planning creates a clear division between public and private areas with villas arranged along water canals and a central pool surrounded by palm trees. Its architectural design is characterised by steeply pitched roofs, deep-eaves verandahs, and intricate woodwork. The use of timber as the primary building material adds to the design’s enduring quality.

The Malabar Group Headquarters, Calicut, illustrates how

sustainable design can be integrated with a contextually relevant approach. The sloping site presented a challenge, which was resolved by designing the office spaces as two separate blocks with a landscaped spine in between. In the western facade, wooden balconies and trellises serve as sky gardens, providing shade and spill-out areas. There are amphitheatres, lounges, pavilions, and vegetation on the roof that reduce the intensity of the sun and insulate the spaces below. The result is a highly sustainable building, seamlessly connected to nature, with honest usage of materials and a contextually relevant design.

A vibrant and comfortable working environment was designed to blend with the natural landscape at Team Thai Corporate Office in Calicut. The site’s linear slope facing southwest was thoughtfully incorporated into the design, with functional areas elevated from the ground and a multifunctional double-height space on the ground floor. It creates a natural flow from the open space to the covered areas and elevated entrances at the rear, creating a cohesive and inviting space. Luxury hospitality rooted in Goan sensibilities meets contemporary styling at the Alila Diwa resort in Goa. The architectural design, which seamlessly blends interiors and exteriors, celebrates nature as an integral design element. Large porous courtyards and old trees offset the built volumes in the entrance lobby, which features dramatic wooden truss work. With a refined material palette that blends local materials like laterite with locally available stones and wood, the spatial quality is elevated by detailing that references the vernacular but is interpreted in a contemporary aesthetic. Wooden pergolas, stone flooring, and copper light fixtures come together to create a truly exceptional spatial experience. The resort created is a celebration of sensory perceptions, offering an unforgettable visual tapestry of nature that enhances the hospitality experience.

With only ten villas, the client and Tony made a conscious decision to preserve the natural features of the site, resulting in a minimal built footprint. Each villa was

carefully located to create secluded private retreats while maintaining picturesque settings. The island’s natural constructs were preserved, with every tree and boulder studied to ensure that the architecture would mould around them organically.

The spaces take cues from Seychelles’ colonial heritage, manifesting as sloping-roofed structures that merge with the surrounding environment. The resulting design provides all the luxuries of a contemporary resort getaway while remaining subservient to nature.

For women, the looks are an eclectic blend of saturated hues and pared down silhouettes. A closer look at the silhouettes reveals an eccentric naivety. Balloon sleeves, oversized pleats and rounded shoulders, all play to the tune of wonder. Tops with rounded tailored slits and voluminous pleats act as a canvas to intricate 3D floral embroidery. Staples like the basic tee and button down are transformed into a print extravaganza- whether it’s the cheerful stripes and floral print on a jersey t-shirt or the singular orange brush stroke print on a crisp poplin shirt. Reimagine the New

The new edition of Poltrona Frau’s iconic Dezza armchair with The Redevance upholstery fabric, with the original pattern designed by Gio Ponti, is a marvel and a meticulous work of archival research.

poltrona Frau, the century old, esteemed, luxury Italian furniture brand that celebrated their 110 years of excellence recently, continue to innovate with elegance. The brand’s unwavering dedication to discovering and reviving hidden treasures of design and art from its archives is exemplified in the historic Dezza armchair.

Their iconic Dezza armchair brought to life by the legendary artist, architect and designer, Gio Ponti (who lived and worked in Milan from 1891-1979) in 1965 for Poltrona Frau has now undergone a mesmerizing transformation and is available in three distinct versions. The beautiful armchair with its new look was launched at Milan Design Week 2023 with a brand new look! As a result of company’s close collaboration with the Archivio Gio Ponti and the JSA Textile manufacturing, The Dezza armchair now boasts a richer appeal with the Redevance printed Fabric Upholstery.

The Dezza chair, named after the Milanese street wehere the architech home studio was located since 1957 encapsulates all the disgners innovative force; a light, comfortable, aesthetically pleasing and functional domestictic architecture. Its soft, slender silhouette features some highly recognisable design elements such as tapered leg with traingualr cross section, one of Ponti’s distinctive features. His signature can also be found in the simplicity of the construction system of the armchair, consisting of only four pieces- two sides, the seat and the backrest. The supporting structure is made of seasoned beech wood with polyurethane foam padding while the cushions are enriched with buttons.

The use of Redevance, a luxurious printed woollen satin, whose graphic pattern was originally designed by Ponti makes it regal! This design that has been rediscovered after meticulous archival research could be ascribed as Ponti’s explorations on modularity. The simple geometric elements, broken down and replicated in sequence create an infinite number of potential visual configurations that can be implemented on various scales, from structural architecture to everyday objects. Garima Arora, a highly-acclaimed Indian chef, is creating a stir in the modern culinary world with her traditional Indian techniques.

She is the chef and owner of Gaa, a three-storeyed fine-dining restaurant situated in a traditional Thai house in the heart of Bangkok along with her exquisite Indian Eatery & Wine Bar in Bangkok, HERE. She is also the founder of Food Forward India, a unique travelling and non-profit initiative discovering the multi-dimensionality of Indian cuisine. She takes her culinary skills to newer levels as she features as one of the prominent judges of MasterChef India Season 7, alongside renowned chefs Vikas Khanna and Ranveer Brar.

A culinary icon, she was honoured with a Michelin star, becoming the first Indian female to receive one at the age of 30. She attributes this prestigious award to her team’s dedication and hard work as well. A trailblazer in the culinary segment, Chef Garima leads an inspiring career for all future female chefs. In conversation with Chef Garima Arora, she discusses her passion and career.

Setting up a reStaurant in one’S own country iS no eaSy feat. what’S it like opening one

in a foreign country? what are the upS and downS you had to face before you opened gaa?

The language, the ingredients - there’s a lot that’s different when it comes to opening a restaurant in a foreign country. But I always believe that if you surround yourself with the right people, things happen. I’ve been blessed with a very good team that’s been with me since Day 1. The biggest challenge was thinking as a chef to a businessperson - and no one can prepare you for it. One has to learn on the job to make the switch from being creative to understanding the commercial side of things.

how do you approach menu development and creating diSheS to ShowcaSe india through your creative lenS?

We concentrate highly on techniques, culture, and ingredients and then try to define what makes Indian food Indian. Sometimes we start with an ingredient or technique and somewhere down the line they both meet and something new comes out of it. »

« what waS your reaction when you found out that gaa had been awarded a michelin Star? how did it impact your approach to cooking and running your reStaurant?

It was, of course, great validation when we received it, but for me, the greatest joy was to see how happy the team was. It was more their win than mine. The Michelin is not for the chef, it’s for the restaurant and the team makes a restaurant. I’ve never seen a group of 40 people come together in so much joy and happiness derived from one achievement like this!

of late, ‘fuSion cuiSine’ haS been quickly gaining popularity. do you think fuSion cuiSine iS the future of dining?

There are takers for each type of cuisine and food. No one should shy away from experimenting, having fun and trying to push the boundaries. There’s scope for tradition, but as a cook and artist, you have to have the freedom to have fun. The word ‘fusion’ comes with a lot of added baggage but that doesn’t take away from the fact that food is democratic and one has the right to do anything they want to with food as long as it tastes good and people enjoy it.

what inSpired you to Start your non-profit initiative - food forward india?

We were winning so many accolades and the idea was to

always take the spotlight back to Indian food. The idea was to make it a nomadic initiative where we travel to different rural, urban, and tribal areas within states, understand why people eat the way they do, what makes Indian food Indian, and what makes our food so unique.

aS a much-loved judge of maSterchef india, can you deScribe your proceSS for evaluating diSheS and determining which conteStantS Should advance or be eliminated?

I always look for thought in a dish. For example, in the biryani challenge, the staples for a biryani are set, but it’s interesting when homecooks put their own perspective on things. That is where I look for thought and intention. I think it’s crucial to have a clear idea of why you’re putting things together, and why you’re choosing a technique - I’m very curious to know why. I think this is something I take back from my journalism days. When you answer why, who, which, when - as long as the dish answers those questions and makes you think a little bit, I find that most interesting.

how do you balance providing conStructive feedback to conteStantS with being honeSt and critical when neceSSary?

« work in high-pressure kitchens so we are very direct and to the point. We don’t have time to tip-toe around people’s feelings but I had to understand that in our kitchen we are all professional chefs. We come with the attitude to learn and we know it’s going to be a demanding job. But when home cooks are making the transition from the comfort of their own kitchens to a professional kitchen, it’s important to be patient, show them the way, and mentor them. People have good days and bad days in the kitchen. Ultimately that’s the format of the show. But when someone has to exit the show, I feel they should leave being better cooks than when they started. Not all skills are cooking skills. You take soft skills and hard skills away too. I think our job as judges - or rather as mentors - is to condense everything we’ve learned over years of working in the industry in this shuttle period for them.

can you deScribe a particularly memorable moment or diSh from your time aS a judge on maSterchef india?

There are so many, it’s difficult to choose. But I think one of the most moving dishes was the Holi edition where Santa Sarmah and Marina Balakrishnan made a thali inspired by

Krishna’s Holi in Varanasi. I think that was a very beautifully put-together Satvik vegetarian meal and there was so much love and respect in every single bite. I remember that so fondly.

vikaS khanna juSt Shared a heartfelt poSt about the bond he ShareS with you. could you Share Some fun incidentS you had on the Show with your ‘partner in crime’?

One of the best things that happened to me was meeting both Vikas and Ranbir. The camaraderie and friendship the three of us shared required no work, we just had so much fun. I was the youngest on the set and they bullied me and pulled my leg a little bit, but always very protective. It was my first time on set and in front of a camera. Every now and then I would hear him yell out “Baby ke liye coffee lao,” “Baby ke liye nariyal pani lao,” and then magically someone would get me coffee and nariyal pani that I had not asked for. Then he would just come and take it from me and say “Don’t worry, it’s a mistake.” A couple of days later I realized that they were calling me ‘baby’ and getting me things that he wanted for himself. The entire production team figured it out and played along, and we started calling him “Baby’ after a while.

Your journe Y as a che F started a F ter Your mother passed awaY, saYs Your bio. was it a waY to be closer to her memories?

My mother and I connected through food. Food was always the topic of conversation in the household while growing up. Serving style, creating menus, and putting something new on the table was a priority. There was a massive vacuum

with her passing away, and I had no one to turn to for new recipes. That is when I started creating my latest recipes, which were well-received by family and friends. I do connect with her when I enter the kitchen; she made cooking look so easy. You will find her unconditional love and teachings in every recipe I have written.

w hat was Your com Fort Food while growing up? a nd who made it best?

My comfort food is simple Gujarati food. Rice, daal and subzi. Maa ke haath ta khana is always the best! Gujarati food has been my favourite always. We are a Gujarati family and have grown up eating traditional Gujarati food. Undhiya, dhoklas, khandvi, shrikhand and handvo have always been my favourites. My mother made them the best in the whole wide world! I always remember her tips while making them myself. There are Gujarati dishes in all my books.

w hat ingredients are Your Favourites?

« thus, creating a new dish becomes effortless. Having said that, you can create fabulous dishes with fewer ingredients too! Purple yam (kand) is seasonal and available only in winter. Every book I have written has a recipe for this: purple yam rosti, purple yam balls, purple yam rice and purple yam and green pea handvo.

My mother taught me a lot in life. “To work hard, put your best foot forward, and whatever you do, work honestly and sincerely, give it your 100 per cent. Be patient, and results will follow.” She would often say this. She made cooking look so simple and easy. Her recipes were easy to follow and delicious to taste. The taste of the dish must satisfy your palate. I also learnt humility from my mother. With all her success and fame, she was very humble. For us at home, she was just a loving mother.

d o You believe a cuisine’s F uture lies in reinventing it bY making F usion dishes suitable For Foreign palates?

Reinventing old dishes and fusion dishes are trending these days, and both have their own spaces in the culinary world. Fusion dishes are equally popular with the Indian palate. All across India, traditional Indian food is reinvented into fusion style! Say like schezwan dosa, Mexican locho which are accepted well. Eaters who like traditional dishes to eat also love experimenting with fusion dishes. Fusion dishes have become popular in the quest to bring something new to the table. They get the wow factor but what about the taste? The authentic taste of the dish is of paramount importance. Sometimes in the reinvention, the taste is ignored; the dish’s appropriate and original taste is lost in the process.

For the dressing

2 cups peeled, boiled and chopped carrots

4 tbsp Feta cheese

1 tbsp olive oil

½ tsp chilli flakes

Salt to taste

For the salad

2 tbsp sliced olives

1 cup thinly sliced onions

3 cups chopped Iceberg lettuce

1 tbsp olive oil

½ cup chopped yellow capsicum

½ cup chopped red capsicum

1 tbsp chopped basil

½ tsp vinegar

Salt to taste

4-5 French bread slices (toasted)

method: For the dressing

Mix all the ingredients in a blender to a smooth paste.

how to proceed

1. Soak the iceberg lettuce in a bowl of ice water for 1 minute.

2. Mix the red capsicum, yellow capsicum, onions, olives, iceberg lettuce, basil, olive oil, vinegar and salt to taste in a salad bowl.

3. Mix in the prepared carrot and Feta cheese dressing.

4. Garnish with Feta cheese. Place the toasted bread slices around the salad.

5. Serve immediately.

A culinary legend helming a renowned restaurant in one of London’s most iconic buildings, there are high expectations when the words Claude Bosi at Bibendum are uttered. FOUR sits down with the inimitable French cook to understand how, even with his revered reputation, he continues to rise to new heights, day in and day out.

Hailing from Lyon in Paris, Claude Bosi was born into a lineage of great cooks, but he certainly didn’t leave it up to fate to deliver his culinary career on a silver platter. Passionate about gastronomy from a young age, he knuckled down and forged his own path to become one of the most respected chefs of his generation. Marked by classic French techniques, his cooking puts his adept culinary skills on full display — and with the resumé and pedigree he has, it comes as no surprise that he’s a force in the kitchen.

“I was born and spent the early years of my life in Lyon, France. My parents were restaurateurs, and it was normal for my brother and me to help with everything there from a very early age. My grandmother was also a brilliant cook; I learnt a lot from her and my mother especially.

“I graduated from catering college, did my apprenticeship in Lyon, and then moved to Paris to twoMichelin-starred Le Chiberta as Demi Chef de Partie for one year. My next position — which was for two and a half years — was with Alain Passard at L’Arpège in Paris, starting as Chef de Partie and then climbing to Sous Chef. During this period, L’Arpège moved from two Michelin stars to three.

“I then joined Alain Ducasse in Paris as Chef de Partie and stayed there for almost one year before I decided to

move to the United Kingdom. I took my first job here as Sous Chef at Overton Grange, Shropshire — and then got promoted to Head Chef, which is when I was awarded my first Michelin star in 1999.

“In 2000, I decided to open my own restaurant, Hibiscus (also in Shropshire), which was awarded one Michelin star, then two Michelin stars in 2004. In search of a new challenge, I moved Hibiscus to London in 2007, where I stayed until closing its doors in 2016. After refurbishing the first floor of Michelin House, Chelsea, in early 2017, I opened Claude Bosi at Bibendum that March. This is where my signature two-Michelin-starred restaurant is found today.

“When I was first introduced to the Michelin building, I was blown away by it. It has such a great history, it was already a prominent figure, and it is very special to many people for lots of different reasons. I didn’t want to ‘change it completely’, but I wanted to make a few changes to reignite the passion for the old place. It had got run down, inconsistent, and tired over the years. I worked with Sir Terence Conran to collaborate our identities in an empathetic way which would itself stand timeless, too.”

“From my family’s humble early influence, through to college, and on into the professional kitchens I worked in, I have always learnt along the way. But Alain Passard’s devotion to seasonality and learning about respecting produce has certainly influenced my philosophy over the years, and I create all my menus in accordance with this.

“The way we work on dishes is with seasons — we see what is coming up and work as a team. With Federico, my Head Chef, I tell him my ideas and mix of flavours. I let him work on this, and then we do tastings. The process takes one to two weeks from the idea to the final dish.

“Each season has one favourite ingredient for me — but overall, the excitement is about being able to work with the

first produce of that specific season — i.e. game season, asparagus, and truffle. I like to work with smaller producers where I can, and most of my suppliers I have known for years. I rely on their expertise and product knowledge to guide me to what is the best at that moment, so I can work out how to use this in the menu.”

Through his years of experience, Bosi has learned that less is more. Rather than over-complicating his dishes, they are reassuringly simple, with each plate meticulously devised to spotlight the seasonal qualities of the featured ingredients. To offer guests more selection, Claude Bosi at Bibendum serves two different dining options: a twoor three-course menu for lunch or a full, multi-course tasting menu with five or seven dishes served for both lunch and dinner. Current highlights on the menu include the likes of duck jelly with white onion; smoked sturgeon and special selection caviar; hand-dived Scottish scallops with brown butter dashi; Cornish cod à la Grenobloise; Brittany rabbit with Scottish langoustine and French tarragon; and a double-chocolate soufflé with Madagascan vanilla ice cream. Naturally, no high-end dining experience would be complete without a superb wine pairing, and at Bibendum, this is specially curated by Claude Bosi and his Head Sommelier, Elio Machiné. »

“I try to leave Elio (my Head Sommelier) to take the direction of the wine list; we have worked together for a long time now. He proposes the wine pairings for all the dishes and presents them to me. He has the same philosophy with wines as we have in the kitchen — we need to provide an exemplary experience to our guests.”

To create the perfect gastronomic encounter, it’s imperative that all aspects — from the food to the wine, service and ambience — are delivered flawlessly in unison. Even the tableware at Bibendum has been specially selected to complement the dishes and reinforce the dining room’s genteel feel. To Claude, it’s vital that nothing is overstated or overshadows anything else; everything must harmoniously intertwine to create an experience that is as comfortable and enjoyable as possible for diners.

“I want my guests to feel welcome from the moment they arrive. I tell my team they are visiting ‘our house’, so I want guests to feel welcome, relaxed, and yearning for nothing while they are here. They should leave feeling like they have had a fantastic time from start to finish.”

“A lot has changed in the thirty years I have been in professional kitchens. The younger chefs coming through the ranks now have many more options for everything — from training to the type of establishment to work in. The choice was not so vast when I was younger. Now, as a mentor with my own brigade in the modern climate, I need to make sure we maintain a work-life balance. This type of restaurant does command a lot more preparation from the front-of-house through to the back-of-house, and staffing has been a well-documented challenge industry-wide since we reopened after COVID. By deciding to only be open for seven services each week, my main aim is to ensure my guests are incredibly well looked after by a happy and healthy team.”

There’s no doubt that Bibendum’s strong team, sublime setting, and top-notch cuisine have all contributed to making it one of the most lauded restaurants in the United Kingdom and beyond. As a testament to its excellence, it took all but seven months after Bibendum’s opening in March 2017 for it to be awarded two Michelin stars. In July 2018, Bosi also won the coveted Chef Award at The Caterer’s Catey Awards. However, even though he’s proud of these accolades, it’s clear that recognition by critics is not what drives Bosi;

instead, he cooks to please his diners and create long-lasting relationships with those who visit his restaurant.

“I am very grateful for all the recognition I have received over the years; the guides have been very kind to us. But I am most content when I see guests come back time and time again; they become our regulars and ultimately ‘friends’. The support we have had, especially from the locals since being here, has been fantastic.”

As for the recipe for his success, Claude admits: “There is no one answer for this, and definitely not a definitive one. All I can say is that I have always enjoyed what I do completely. I love cooking; I love creating an exemplary experience for my guests, and I love working alongside equally dedicated people. My guests are my driving force — and my passion for creativity allows me to keep pushing forward, refining and fine-tuning the experience we provide for them as a team.”

Looking to the future, the chef hopes to continue nurturing both his eponymous restaurant and his beloved Oyster Bar, also set in the Michelin House, seeing them grow from strength to strength. With a recently launched Mediterranean bistro in London and a new fine-dining restaurant opening at the debut Peninsula in London later this year, Claude’s got an exciting few months ahead — and we can’t wait to see what comes next.

After more than a decade of success at Capri Palace in Italy, acclaimed chef Andrea Migliaccio has broadened his culinary horizons to the Middle East. Located within the epochal Burj Al Arab Jumeirah, the Dubai outpost of his distinguished two-Michelin-starred restaurant, L’Olivo, is setting a new benchmark for transcendental Mediterranean cuisine in the United Arab Emirates.

Anative of Italy’s beloved island of Ischia, Andrea Migliaccio was born with an innate passion for cooking. Ever captivated by his homeland’s beauty, culture and culinary heritage, Andrea channels this into his work as a chef. From humble beginnings to a star-studded career, he has steadily worked his way up the ranks since he was a teenager to realise his dream of delivering the pinnacle of Mediterranean cuisine to his diners.

“I was born in Ischia, an island northwest of Capri; this is where most of my inspiration comes from. My grandmother was well-known on the island for her cooking skills, and she inspired me to become a chef.

“I started my career working every summer in the kitchens of various restaurants in Ischia. After my military service, I had the chance to take my culinary career to the next level. Driven by my desire to elevate my skill set, I travelled around Europe working alongside Xavier Pellicer at Hotel ABaC, Alain Ducasse at Plaza Athénée, Antonio Guida at Il Pellicano and Enrico Derfingher.

“In 2005, I joined L’Olivo at Capri Palace as the Junior Sous Chef and worked my way up the ranks, becoming Executive Sous Chef in 2007 and, in 2009, Chef de Cuisine, where I led the opening of Il Riccio. In 2010, I became the Executive Chef at Capri Palace, overseeing both L’Olivo and

Il Riccio. I also led the opening of Ristorante Capri within the Hotel Mont Cervin Palace in Zermatt, which was awarded one Michelin star. In 2011, I received the first Michelin star at L’Olivo and the second in 2012. In 2013, Il Riccio was also awarded one Michelin star. In 2021, I was honoured to be appointed Executive Chef at Burj Al Arab Jumeirah.

“Every experience I’ve had has played an important part in my development as a chef. In every role, I learned new techniques and gained valuable skills. When I worked with Alain Ducasse, I learnt the French technique, and from Xavier Pellicier, the Mediterranean authenticity and his ability to incorporate herbs into his cooking. I have always been interested in travelling to develop my skills and learn new techniques; I always strive to improve and never stop learning.

“Ultimately, my mentor remains my grandmother, who truly made me discover my passion and love for this job. I remember when I used to help her in the kitchen and when we used to source the best products from the island together — everything started from there.”

Through his work at L’Olivo, both in Dubai and Capri, Andrea hopes to communicate this deep-rooted love for food and cooking that his grandmother instilled in him to his guests. To achieve this, the chef focuses on two key elements: simplicity and quality. »

Taking cues from the restaurant’s setting, which features a striking floor-to-ceiling aquarium as its focal point, L’Olivo at Al Mahara spotlights an array of seafood-centric dishes. The Dubai offerings are designed to parallel those at the Capri counterpart, so guests can expect signature dishes rife with flavour and narrative, all executed with the same attention to detail and superior ingredients that the original L’Olivo is known for.

“There are a few differences [between the two restaurants] as Capri is a seasonal destination with a changing menu to reflect that. In Dubai, as we operate throughout the year, we work with ingredients available according to the season. They do have similarities, with both offering a bread trolley where guests can pick from a

variety of homemade breads and a selection of Italian olive oil, the crudo trolley offering an array of raw fish, and the digestive trolley for the perfect end to the meal.

“At L’Olivo at Al Mahara, we strive to create an ambience that brings to life the Italian spirit through high-quality service, attention to detail and authentic flavours. My aim is to make our guests feel the passion of my cooking through everything I do.

“We offer both an à la carte and degustation menu at L’Olivo at Al Mahara. The degustation menu takes guests through my personal culinary journey of my most iconic dishes. It features panzanella salad with grilled scallops; lemon tagliolini with red prawns, burrata and oyster leaf; tomato risotto; and gilthead with Mediterranean sauce.
