With this, our 12th Annual Idaho Cuisine, and our new supplemental Cuisine Pocket Guide, due out this fall, we offer you more ways to find what’s really special among local restaurants, local farms, specialty foods and shops, and entertainment in Idaho’s panhandle mountains. More than ever we are able to keep you informed about the dining and entertainment scene in the Coeur d’Alene and Sandpoint areas, keeping the latest and greatest happenings magically at your fingertips. This publication is all about choices, and we are here to remind you of a few great ones. meet jillian Jillian De Lallo is a graduate of San Diego State University, where she graduated cum laude with a degree in journalism and minor in English. Originally from South Lake Tahoe, Calif., she left San Diego for Coeur d’Alene in July 2006. Within a few weeks, she was introduced to Jeanette and hired as an assistant editor. Jillian has infused Premier publications with her input and style, is instrumental in the editorial content and production now as senior editor.

meet jenny Jenny Gaddy is a graduate of Eastern Washington University in Cheney, Wash., where she graduated with honors with a double major in marketing and graphic design, and a minor in international business. RECENT OPENINGS FROSTED CUPCAKES

FIRE There’s definitely no shortage of new restaurants cropping up all across North Idaho; from Coeur d’Alene to Post Falls, Hayden to Sandpoint, get out and explore the new flavors the area has to offer. Here is just a sampling of some of the new favorites that have opened over the past year. See for yourself what all the excitement is about.

DOWNTOWN COEUR D'ALENE Fire Artisan Pizza It’s hot in Coeur d’Alene now that Fire has come to downtown! A new artisan pizza joint has made its way to Sherman Avenue, between Fifth and Sixth streets. Fire Artisan Pizza owner Doug Johnson is no stranger to the restaurant business. Since moving to Coeur d’Alene 25 years ago, his experience includes working at some of the top restaurants in the area, including catering manager at Beverly’s at the Coeur d’Alene Resort, and general manager at the Hotel Lusso and former Fugazzi in Spokane. His new endeavor is sure to heat up Downtown Coeur d’Alene. The restaurant doors opened just as we were going to press on this issue of the Cuisine, allowing us a sneak peak at the true treat we’re in for. As you walk into Fire, an urban atmosphere welcomes you. The modern, clean, contemporary look is offset by reclaimed wood walls and the fire that brings rustic, earthy elements, creating a warm and welcoming ambiance. Black and white photos adorn the walls, and the exposed pipes above add an industrial look to the place.

The menu’s focus is pizza, but not just any pizza. First off, the pizzas you’ll find here are oblong rather than the typical symmetrical round. Along with the distinct look comes incredible taste. Pizza’s feature house-made, hand-tossed dough, topped with the best cheese—Grande cheese. Doug, kitchen manager Matt Brawner and the rest of the staff support local. The heirloom tomatoes are from a farmer in Athol, Idaho, and they try to purchase as much fresh local ingredients from local purveyors as possible, including farmers markets. Salad specials revolve around what produce the area farmers markets are offering that day or week. Daily special pies also revolve around what can be found at the markets. We almost forgot the best part … the Woodstone oven bakes the pizzas at 800 degrees, cooking the pizzas to perfection in barely two minutes! And just in case you were wondering, they’re using revolving orchard woods. Now you can’t have pizza without beer, right?! No worries, Fire offers a fantastic beer and wine list. With credentials to include wine sommelier of Beverly’s for 18 years, and wine and beer buyer at Pilgrim’s Market for the past four years, Sam Lange—the premier wine expert in the Inland Northwest—is at the helm of the beer and wine line-up. You can expect nothing less than the best. Now that you have the facts, what are you waiting for? Fire is open 11am daily, until 10pm Sunday through Thursday, midnight Friday and Saturday. Blacktop Bistro Blacktop Bistro is a Gourmet Food Truck owned and operated by married Coeur d'Alene residents, Dwight and Laurie. Dwight's delicious homemade Caramel Cinnamon Rolls with toasted pecans are a highlight of Blacktop Bistro's menu; a sweet treat for any time of day. Laurie serves gourmet tacos and salads, which include shredded beef or chicken with Laurie's homemade guacamole. Blacktop's signature taco, The Drunken Pig, is a blend of shredded pork with a Jack Daniels hoisin sauce, topped with feta and veggies. At the Saturday and Wednesday Farmers Markets, they feature a special taco, which could be Greek, Asian, Moroccan or Tequila Chicken. Blacktop Bistro can be found Saturday at the Hayden Farmers' Market, Wednesday at the Coeur d’Alene Farmers Market and the Sunday Market at Sixth and Sherman. Blacktop Bistro is available for special events and catering, too. They’re a welcome addition to the local street scene. (208) 964-6528

Seasons of Coeur d’Alene Many Coeur d’Alene Brewing Co. fans were sad to see it leave Downtown Coeur d’Alene, but there’s something new at the corner of Lakeside and Second … Seasons of Coeur d’Alene Fresh Grill and Bar. Owner Don “Pepper” Smock gutted the building, expanded the dining space and gave it a new, fresh look indoors in addition to great curb-side appeal. The menu is seasonally inspired, thus the name. Open for lunch and dinner, you’ll find a Fresh Menu which is updated with seasonal specials, lunch items such as the Pepper Cristo, and dinner choices such as the Peppered Bistro Steak. 209 Lakeside Ave. (208) 664-8008

Bringing a new breed of nightlife to Downtown Coeur d’Alene, Splash Nightclub has become one of the latest and most popular attractions in the late-night scene. Splash offers a colorful array of DJs, live music, go-go dancers and more so a dance floor, hightech lighting and sound, and a stage, for an exhilarating and contemporary experience. Found on Sherman Avenue near the corner of Second Street, it is impossible to miss the garage-style doors that open up to the sidewalk, perfect to enjoy a cocktail and food outdoors in the summer. They also offer their menu and drinks in VIP seating indoors. Splash is open almost all day, every day from 11am to 2am. 210 Sherman Ave. (208) 765-4000

Jim Barrett, who we all know and love from Beverly’s, and most recently of Black Rock, has returned to the Coeur d’Alene Resort once again as the executive chef of Tito’s Italian Grille and Wine Shop. This restaurant presents authentic Italian cuisine in an entertaining, sexy, fun and conceptual experience that is completely new to our region. The wine shop gives diners the opportunity to pick out their favorite bottle of wine, and then meander to their table, allowing you to pay grocery store retail prices plus a small corkage fee. This makes it affordable, fun and informational. Tito’s also offers Coeur d’Alene’s oldest brick oven, specialty sourced ingredients and outdoor sidewalk and patio seating on Sherman, as well as a trendy lounge. 210 Sherman Ave. (208) 667-2782

Frosted is a happy and hip 1950s flavored shop, with checkerboard floors, Audrey blue walls, and a smile on every face. Stop on by to meet owners Jennifer Tarr and Daria Brown, who are now the self-dubbed "Cupcake Ladies.” They are named rightly so with 30 different cupcakes with daily rotating specials available. Open 9am Tuesday through Saturday until the last cupcake sells, they also offer locally made Italian-inspired gelato form their “gelato angels” with flavors such Blackberry Cheesecake and classics like Strawberry Stracciatella. They also offer wholesale options, custom cupcakes for events such as weddings and graduations, and even offer nationwide delivery. Cricket's Downtown Bar and Grill Since April, new owners Rico and Bob Ciccone have had brother Frank Ciccone create a completely new Italian family influenced menu for Cricket’s, but don’t worry, the food is still of traditional family variety with everything from their delicious oysters, house-made mozzarella sticks, fresh salads, thick deli sandwiches, hot meatball sandwich and even a few upscale options such as the Port Rib Eye. Not to mention their drinks will have your jaw dropping, from the full decked-out and garnished Bloody Mary to the puckering bright green Cricket Cooler. Cricket’s is definitely getting back to the basics with its simple and delicious homemade food made with fresh ingredients, great drinks and friendly faces. 424 Sherman Ave. (208) 765-1990

This downtown staple is under new ownership! Things may seem a little different at The Wine Cellar, but don’t worry. New owners Tom and Patricia Power have been making improvements to the already wellknow and loved Wine Cellar—not changing it. Its wine cellar, menu and atmosphere have all gotten a face lift and are sure to keep longstanding customers happy along with new customers impressed. The Grille from Ipanema, a Brazilian Steakhouse that opened its doors in April 2011, is an experience within itself. Offering a traditional Brazilian-style of dining known as churrasco, waiters move from table to table, offering you and tempting you with various meats on skewers, which are all roasted over mesquite coals in a pit. These gauchos come equipped with knives to slice portions onto your plate (and friendly smiles too!). They ask you to come in hungry for either lunch or dinner, but they suggest coming in on a weekend night to get to the full experience of the churrasco. 601 Front Ave. (208) 676-1122

59 YEARS OF TONY’S LAKESIDE BOAT-UP DINING Tony’s on the Lake has a rich history of family. Built as Jeanette’s Club in 1939 (ask more about this history when you dine with them), it was purchased by Tony Canerio in 1952, re-named Tony’s Supper Club, later sold to Ozzie Singer, then to Kathy Thomas and Nella Troy, who sold it to the D’Alessandro family in 2004. With architect Rann Haight, the restaurant has been remodeled, a deck overlooking the lake has been added, and in 2010, new docks installed. The D’Alessandro family has a rich history of food. Ludvico D’Alessandro left Tuscany in 1908 with a love of Italian food that has been passed on through generations to great granddaughter Cheyenne, who attended culinary school in

Florence, Italy, and graduated from the Culinary Institute of America in Hyde Park, New York. She also had the opportunity to live extensively with family in Tuscany, experiencing the best of Italian family cooking. Tony’s on the Lake offers gorgeous lakeside dining in a wonderful retreat from the bustle of downtown. top. Don’t panic. You should know by now not to believe everything you hear, especially in any small town; The Wine Cellar is still here. It hasn’t closed, and won’t be closing. This Downtown Coeur d’Alene staple is better and stronger than it’s ever been, and it’s here to stay, thanks to its new owners, Tom and Patricia Power and their Wine Cellar staff.

The initial plan wasn’t to own their own restaurant—they were just looking for an investment. But “it was kind of a packaged deal,” says Tom, as the building and the business were for sale. In the beginning, the couple was a bit hesitant, as The Wine Cellar was already a well-known, well-liked—or should we say loved—establishment with loyal clientele. Tom and Patricia knew this first hand, as they had been regulars to the iconic downtown restaurant for nearly 14 years. They have seen it grow, stumble and falter at times. They’ve enjoyed The Wine Cellar at its best and have questioned it during its struggles. [Duncan] would have allowed it, we probably would have been share holders,” adds Patricia, with a laugh. Their hopes are to bring The Wine Cellar back to its glory days—make it shine the way it did “five or six years ago”—but even brighter. Tom and Patricia have traveled the world and eaten in many restaurants world wide, and they impart knowledge of what they’ve seen—and know—works. The couple’s ultimate goal is to improve the beloved premier downtown spot known for great food and wine, fabulous music and an unforgettable dining experience. They feel that by focusing on the three core values that have kept the cellar in the forefront and its broad reaching appeal and loyal community following, the atmosphere, the music and the wine will continue to prevail. People love the food, too, but that’s not necessarily what draws guests to the cellar.

“What gives me the most satisfaction is when I’m down here, on any given night, and the place is full of people enjoying themselves,” smiles Tom Power, owner, “and knowing that you had a part in making that experience for them.” Tom and Patricia want to once again experience The Wine Cellar in its “element.” In order to achieve this, the couple began by investing in more wine, and since purchasing the restaurant, they have more than doubled the value of the wine inventory, which includes some nice library wines. With the phenomenal wines they now have on hand, they thought it only fitting to showcase it for patrons to feast their eyes upon. They had a new wine cellar built, creating a beautiful display of wines for both retail buyers and wine club member lockers. In addition to adding to the inventory, Tom and The Wine Cellar’s wine steward, Naomi Boutz, have been working on expanding and improving the wine list, also adding to its glass-pour options. The goal is to offer guests a good variety of wines with a focus on showcasing great wines from the Northwest. “We think it’s really important to support the local economy, and I think Walla

Walla is one of the best wine regions in the world,” says Patricia, “so why not profile as much of that as we can?” When it comes to the menu, they are constantly trying to marry their desires to better the menu with the current capabilities of the kitchen, which lacks full-service equipment; everything is done on electric! Despite the inconvenience, a lot of love is poured into the food, with most items on the menu made from scratch, including breads, desserts and sauces. According to Tom, the next target is to redesign and rebuild The Wine Cellar’s kitchen. General Manager Mary Jay continues to keep the front of the house running strong, as she has for the past decade, and is a master at orchestrating what appears to happen as smooth as silk from the guest’s end. “Running a restaurant is a grueling business,” admits Tom, “and out of all the

businesses that we own and run, it probably requires the most resources for the smallest return. What gives me the most satisfaction is when I’m down here, on any given night, and the place is full of people enjoying themselves,” smiles Tom, “and knowing that you had a part in making that experience for them.” At The Wine Cellar, the guest’s experience is no less than ideal. The European feel, great Mediterranean cuisine, live music , phenomenal staff, and the cozy and inviting atmosphere, along with good company … this is how a meal was meant to be enjoyed. Stuffed Mushroom Caps The Wine Cellar Bistro and Wine Bar Ingredients: 12 White Mushrooms 12 Shrimp, 71-90 Ct. ½ Cup Ricotta Cheese 1/8 Cup Parmesan 1/8 Cup Mozzarella 2 Tbsp. Breadcrumbs ½ Cup Cream 4 Tbsp. Butter 2 Tbsp. Flour Pinch of Garlic Powder, Salt, Pepper, Fresh Parsley

Method: Remove stems from the mushrooms and slice thinly. Heat a tablespoon of butter in a pan big enough for the caps and another in a pan big enough for the stems. Mix the cheese seasonings and breadcrumbs in a bowl and set aside. Cream Sauce: Melt butter in a pan and add the flour to make a roux. Slowly add the cream while whisking and making sure there are no lumps and that the sauce doesn’t burn. Season to taste with salt and pepper.

Heat the oven to 350˚F. After the caps and stems have released their liquid and start to brown, remove them from the head to cool. Place the sautéed stems in a shallow baking dish or ceramic sauce boat. Stuff the caps with ½ to 1 tablespoon of cheese mixture. Place over the stems. Top the mushroom caps with the shrimp. Cover with the sauce and a sprinkling of parmesan. Bake for 15 to 20 minutes or until the shrimp are cooked though and the cheese is melted. Garnish with fresh parsley and serve with warm baguette. Enjoy! Serves 2-4

GreenBriar Inn The Unexpected Adventure of a Lifetime…

I

t was three decades ago that Bob and Kris McIlvenna, and daughter Gwen, went vacationing to the British Isles to escape the chaos of their busy and stressful lives, as husband and wife were owners and stockbrokers of offices in Seattle, Wash., and Boulder, Colo. Though the trip was a mere 10 days, this trip was what would be the beginning of a new endeavor.

The threesome traveled through England and Scotland, retreating to overnight stays at local bed and breakfasts, adding to the already magnificent experience they were enjoying. Modest in appointments but generous in spirit, families welcomed them, sharing food, conversation and laughs, and offering tips on where to find the best restaurants and entertainment. Many of the establishments they stayed at were historic by our standards, offering guests simple and unpretentious accommodations,

yet inviting and warm. A few years passed, and Bob and Kris still remembered that trip fondly. While expecting their second child, Sean, any day, they made the decision to leave Boulder and begin another chapter of their lives. They were in search of discovering “Europe in the West” when they stumbled upon an historic 1908 building similar in design to those they experienced—and fell in love with—in Europe. But they were far from Europe; they had found what they were looking for in Coeur d’Alene, Idaho! They fell in love with the area, the building and an idea; to emulate the same hospitality and comfort they experienced during their travels in England and Scotland. No pretension, just good food, company and generosity. They purchased what is now the Greenbriar Inn in 1984. Their first brochure had a hand-drawn sketch of the Greenbriar by Bob,


resident artist, which said: “Let me live by the side of the road, and be a friend to man.” (Sam Walter Foss) Ultimately, that somewhat cheesy sentiment was to be their mission statement. There were many challenges ahead. The first obstacle was trying to get the building on the Historic Register, followed by bringing the building to code, which absorbed most discretionary funds. The original Greenbriar was decorated sparsely with second-hand furniture and hand-stenciled walls. Within three years, they had updated the bathrooms and bedrooms, and added a commercial kitchen. By the fall of 1986, Kris, with the help of her new partner Lynne Wiedemann, was catering events throughout North Idaho. After catering to several movie crews who had hired them for long-term engagements, the business quickly blossomed. More than a decade of success later, 1999 brought the addition of a full dining room and adjacent outside garden area, creating space for private parties that could not have been executed in the original house. As demand for their catering services grew even greater, they decided to close the B and B and dedicate their time and focus on the catering aspect of the business. By that point, they had already received the Good Housekeeping award for being one of the Top 10 Bed and Breakfasts in America, along with various other accolades. By 2005, things were humming along, as Bob and Kris’ children were now grown and gone. So Bob and Kris decided to re-open the Greenbriar Inn Bed and Breakfast. A complete remodel was done at the Inn,

mostly with the help of their good friend and designer, Dian Hanson. In 2007, Bob and Kris acquired a liquor license for the Greenbriar through an Historic Exception. This was just the beginning of yet another chapter in their lives. A restaurant was on its way. After deliberation, she and Bob decided they wanted to fashion a restaurant that would reflect how they wanted to eat: enjoying an evening out, sharing appetizers and salads, sipping on cocktails. They thought it was due time Coeur d’Alene had a martini and tapas restaurant, which would encourage diners to choose from several small-plate menu items, allowing them to savor various flavors. 315 Martinis and Tapas restaurant opened in June 2008, and by the fall that same year, they had added dinner entrees to the menu. In addition to the wonderful tapas and entrees, there is a selection of more than 50 delightful martinis to choose from. Take a seat at the stylish wine bar and order from the great-priced wine list, dine at a table near one of the two fireplaces, or during the summer months, guests have the option to dine outside on the patio, deck or garden. To add to the ambiance, live soft music plays every Tuesday, Friday and Saturday evening. They host Ladies’ Night Wednesday, Half-Price Wine Night Thursday and Sunday Brunch as well. Coconut Lime Shrimp 315 Restaurant Ingredients: 1 Tbsp. Butter ½ Tbsp. Garlic, minced 5 Count 16/20 Prawns or Black Tiger Shrimp ¼ Cup Coconut Flakes, toasted 2 Tbsp. Lime Juice ½ Cup Coconut Milk 2 Tbsp. Yellow Curry Powder 1 Pinch Nutmeg Fresh Cilantro

Method: In a medium-heat pan, add butter and minced garlic. Once butter is melted, add five 16/20 size prawns or black tiger shrimp. Cook half way (until light pink on bottom), then flip prawns/shrimp and add toasted coconut flakes. Cook 1 minute (until butter begins to brown) and deglaze with lime juice. Then add coconut milk, yellow curry powder and fresh nutmeg. Reduce until desired thickness and serve with freshly chopped cilantro. Rosemary Beef on Baguettes Greenbriar Catering Ingredients: 1 Tri-Tip Roast (approx. 1 1/2 to 2 Ibs.) Olive oil Salt Pepper Fresh Rosemary Apple Cider Vinegar

Method: Begin by rubbing tri-tip roast with olive oil, salt, pepper and fresh rosemary leaves, spray with apple cider vinegar, place roast in Ziploc bag or wrap with plastic wrap, and marinate in the refrigerator for a couple hours. Meanwhile, slice a baguette into 1/3-inch rounds, brush with olive oil and crushed garlic, and lightly toast for about 7 minutes at 350˚F. s you enter G.W. Hunters, not only will you be greeted by a kind host or hostess, but a fish pond. Walk into the restaurant a bit further, and you’ll find more than 80 museum-quality trophy animals adorning the walls. You’ll notice scripture from the Bible posted throughout the restaurant as well, and several signs reading “Prayer may not be allowed in school, but it’s welcome at our table.” An interesting combination, but it shows owner David Swanson’s love of hunting … and God. A Christian-run establishment, Dave strongly believes that “God has blessed us immensely.”

G.W. Hunters made its debut back in 1999 on Fourth Street and I-90 in Coeur d’Alene. Then-owners Garry Hayes and family opened the 40-seat family friendly restaurant, offering breakfast, lunch and dinner, with elk and buffalo featured on the menu, as well as alligator, duck and wild-caught seafood. The restaurant quickly gained popularity, offering great food with large portions at a fair price. In 2003, G.W. Hunters moved to Post Falls, where it resides on Spokane Street right off I-90. Now with a 130-seat restaurant, they were able to cater to more diners. The Hayes family relocated to Missouri and sold the restaurant to Dave Swanson and Rex Shank on August 1, 2005. Since then, the restaurant has continued its success that was started more than a decade ago. Dave and Rex most certainly weren’t new to the restaurant scene. They’ve both been in the business for more than 30 years; everything from washing dishes and cooking, to managing and owning restaurants. With Dave’s knowledge of the business, and Rex’s expert knowledge of food, they knew not to fix something that wasn’t broken, which is the reason there were no changes made to the restaurant’s philosophy, practices or menu after purchasing it. “The Hayes family had been successful with this idea since 1999,” says Dave. “I wanted to continue what they had started.” In 2009, Dave leased the adjacent building to use for private catered events and banquets. Accommodating 60 comfortably, it is the perfect place to hold that wedding rehearsal dinner, birthday

celebration, special family gathering, Christmas party and more. At G.W.’s, guests will find a menu smothered in comfort food items. All ingredients and products are always fresh, always flavorful, and the menu offers something for everybody. Breakfast, lunch and dinner options include wild and exotic game, steak, prime rib, burgers, seafood, chicken, pastas and an array of countrystyle breakfasts featuring elk and buffalo. They fresh-cut all the meat they serve daily (except for the T-bone, as they don’t have a band saw, according to Dave). Don’t expect anything less than freshground elk, buffalo and beef patties for your burgers. And don’t be alarmed when quarter-inch slab bacon shows up on your breakfast plate. During the summer months, outdoor seating is available on the patio, where you can enjoy the fresh air and babbling fish pond. The restaurant is also open Monday and Tuesday for breakfast and lunch in summer, allowing guests to stop in for breakfast and lunch seven days a week, but serving dinner year round Wednesday through Sunday. Beyond the food and the friendly family appeal, Dave attributes the success of the restaurant first and foremost to his team: “I own it on paper, but they’re the ones who make it happen,” he affirms. “Everything comes together because of them. That’s what makes up this whole entity right here. Each person on my staff takes pride in the restaurant and their job; I would like to think that each one feels like an owner.”

Dave has had much of the same staff for six years or more. He is thankful for their dedication and loyalty to the restaurant. “That’s tough to find in the restaurant business,” he says. “We virtually have no turnover here.” Despite the decline of the economy the past couple of years, G.W. Hunters has not faltered. “The food and the service, as well as the family atmosphere, make it successful,” he says. “Plus, I’ve kept my prices very reasonable. In fact, we haven’t raised them in more than two years,” despite the increase in food costs. Dave truly enjoys his job. “I love interacting with people, seeing friendly faces coming through the door. It’s nice when people are coming to you because they want to come out and have a great time, and they want to have great food, and they know that you will provide that,” he says. Add to that the friendly service staff, and G.W. Hunters is that go-to family friendly restaurant with consistently fresh, high-quality, handcrafted food at an affordable price. Here you’ll find that place that diners continue to flock to again and again. G.W.’s team has established a loyal following without question; it’s a local favorite sure to be around for years, even decades, to come.

Salade Niçoise (Nee-soah-zeh) Fleur de Sel Ingredients: 4 6-oz. (1 ½ lbs) Tuna Steaks ½ lb. French Trimmed Green Beans 4 Small Red Bliss Potatoes 12 Grape Tomatoes 1 Red Bell Pepper 4 oz. Baby Mixed Greens

½ Cup Pitted Pichouline Olives or Kalamata Olives 2 Organic or Farm-Fresh Eggs 4 Anchovie Fillets 1 Lemon ½ Cup Extra Virgin Olive Oil Salt and pepper to taste Fleur de Sel for finishing

BRINGING FLAVORS OF THE MEDITERRANEAN TO POST FALLS When the White House Grill first opened its doors in 1996, it was just a little white house right off I-90 in Post Falls. A small and intimate seven-table bistro, it served dishes with as much garlic as one can handle. And with owner/chef Raci Erdem at the helm, it instantly became a local restaurant gem. Raci was then and is still entertaining guests with a little conversation, a lot of joking and a little rhythm with a hand drum. He soon had people traveling from all over North Idaho and Spokane to this little white house in Post Falls, or as he would say, “to see the foreigner in the White House.” And once the secret was out, Raci enjoyed a packed house with a waiting line most days. At the White House, you will find servers offering fun, friendly service, and music that makes you want to get up and act foolish. You are bound to experience an entertaining and loud restaurant like no other in the area. What fun! During its 15 years serving Post Falls, it has grown to be a Northwest favorite that people talk about. Locals bring their out-oftown family and friends to show them a good time and what a restaurant should be. A native of Istanbul, Turkey, Raci brought a tasty unique flavor to North Idaho with the gyros, the hummus, the grilled lamb, the crumbled feta —and yes, a lot of garlic. There’s plenty on the menu that offers many flavor sensations; there’s always something to please most any palate.

Just how did this recipe for success happen so fast? Well, it did take a little time. At the age of 20, Raci decided it was time to venture out into the world, and New York was his destination. When asked how he got to America, Raci says, “I jumped out of a boat in New York and swam to America.” While in New York, he worked various jobs, one in particular he remembers, though not fondly, was moving heavy carpets for $50 a day, motivating him to find a new line of work.

He met a girl, got married and moved to her hometown of Spokane. He worked at Clinkerdagger’s and Salty’s, until he and his good friend and co-worker Dahmo decided to venture into the restaurant business together. The little white house became the White House Grill. There was no particular culinary school preparation, no recipes for what they wanted to serve. The two friends made up each recipe on the menu. They were inspired to create a place that felt like home, with people

Dahmo moved on and Raci kept the fun alive and his passion for the restaurant business. Just this year, the Oval Office popularity prompted thoughts about a third restaurant location—this time in Spokane. Thus, the West Wing was born. After all, it is further west. The West Wing offers a lot more of the same great flavors you’ll find at the White House, along with some tasty additions. ark and Irene Daanen first moved to North Idaho nearly two decades ago with their three young children. Looking for a better quality of life, they found themselves in a close-knit, caring community, where neighbors greet one another with friendly smiles and kind hellos. found an existing convenience store but quickly decided to change the emphasis to a gourmet grocery and delicatessen. They replaced the corn dogs, engine oil and rental movies with Prosciutto, Stilton cheese and imported wines. As Mark recalls, people thought they were crazy, but they believed they were just ahead of the curve, bringing in products you couldn’t find anywhere in North Idaho at the time. Daanen’s Delicatessen is more than just a retail wine shop, beer

shop or deli; it is a unique business combining all. By offering a wide variety of food products with their extensive selection of more than 250 beers and 500 wines, Daanen’s offers a dining experience unrivaled in the Northwest. The husband-and-wife team lives the gourmand dream; they choose their travel destinations based on the best locations to find premium beer, wine, chocolate and a wide array of other epicurean delights to stock Daanen’s Delicatessen.


Daanen’s Delicatessen has assembled a global selection of imports since they opened their doors in 1992. They use the classic, OldWorld method of slice to-order, just the thickness the customer wants. The quality and freshness that comes from behind the Daanen’s counter cannot be matched in value or flavor by a vacuumed-packed or pre-sliced product. In addition to the traditional deli fare of turkey, pastrami and roast beef—and of course the freshest bread anywhere!—you will find Italian dry-cured salami, authentic German bologna and Black Forest Ham. They even carry headcheese. The unique cheese selection includes Roquefort, Bleu, d’Auvergne, Leyden, and double and triple cream Brie cheeses. Along with offering a wide selection on their shelves and in their deli case, Daanen’s also has a full lunch and dinner menu. The sign outside offering lunch specials for two would tempt any passerby, and you can enjoy a bottle of wine or a beer from anywhere around the globe with your meal for a nominal markup. The grocery area showcases fine European chocolates, cookies and jams. Imported chocolates and sweets include Milka (fine German milk chocolate), Sarotti (German chocolate), Ritter Sport (German choclate squares), Droste

(Dutch chocolate), Perugina (Italian chocolate), Haribo (sweets from Germany) and Toblerone (the legendary triangular Swiss chocolate). In addition to the deli and import products, Daanen’s Delicatessen offers catering services for parties large and small, on or off site, gourmet dinners in house as well as to go, beer and wine tastings, seasonal outdoor patio dining, live music and more. Overall, Mark and Irene maintain a European feel throughout the delicatessen, coinciding with their German and Dutch heritage, which guests can tell from the moment they approach the building and walk through the doors. The Bavarian style of the delicatessen offers patrons a community-style dining table, 20-seats long, in the center of the room. festival held in Munich, Germany, during late September through early October. Six-million attendees make Munich’s Oktoberfest the world’s largest fair! Try hearty fare like prime rib or prosciutto and Brie-Stuffed Chicken Breast and TCB classics such as Cedar Plank Salmon topped with Granny Smith apple slaw and lemon beurre blanc. You don’t have to be a math scholar to realize this place has a little something for everyone. And yet, for all Trinity at City Beach does in the kitchen, it’s what they’re doing in the community that puts the good in the good food experience you can expect there. “This is home,” says owner Justin Dick, who relocated to Sandpoint permanently in 2007 after a decade of visiting family in the area. He has spent as much time revamping the restaurant as he has redefining community. Children and educational causes are near and dear to his heart, says Justin, the father of 3-year-old

Jace with wife, Shaunavee. After earning his degree in childhood development/psychology from University of Colorado Denver, Justin’s first job was working with underserved school populations. Although he eventually refocused on sales, marketing and business, the impact was long lasting. “I was fortunate to grow up in a family that had a good sense of giving back,” says Justin of his parents, who started the original Café Trinity on First Avenue. Named for the three key ingredients central to Cajun cooking (bell peppers, onions and celery), Trinity, notes Justin, receives a lot of requests for community support and sponsorship. Yet he didn’t want to just write a check; he wanted to integrate the philosophy of giving back into the business. Since 2009, Justin has relocated and expanded the restaurant, broadened its menu and committed to such causes as Kinderhaven, which provides in-crisis support to children, and Team Laughing Dog Racing 24/7 for Autism. TCB hosts events such as Yappy Hour, in which pooches and

pet-owners can enjoy a pint or two benefiting the Panhandle Animal Shelter, and Cycle Hard for Education (CHaFE) 150, which raises money for Panhandle Alliance for Education. Justin notes, with excitement, how TCB’s involvement in charitable causes like the Wishing Star Foundation breakfast has galvanized staff, whom he describes as family. “They’ll encourage me go spend time with my family,” he says, “and I know that translates to how they treat our guests.” Family includes guests, too, says Justin, who says he has found new ways to communicate with an ever-widening audience. An avid member of the Chamber of Commerce (which voted Trinity at City Beach the 2010 Business of the Year) and Rotary, Justin also does an email newsletter, restaurant blog and regularly posts to Facebook and Twitter. The result is a vibrant community of customers, ranging from the winter-loving locals who come to their KPND radio Ski and Board parties to the music fans in favor of easy listening or even a little

dancing. GET outta town! LISBON, PORTUGAL The day came so quickly! We are on a plane bound for Lisbon, Portugal. As I was last-minute-packing last night, I had to lie down on the floor, breath and laugh; laugh out loud and say, ‘Wow! I really have no idea, no expectations and certainly no plan of what the next weeks will bring!’ I have traveled spontaneously before, but not to this extreme! It is liberating, exciting, challenging and fun! We are bike touring from Lisbon, Portugal, to Barcelona, Spain! Six weeks, two bikes, two people, 145 pounds of gear dispersed between eight panniers, camera gadgets, one computer, two bikinis, a couple journals, a few unopened guide books, numerous maps and, as I said, no plan! There is, of course, a slight theme: Eat many tapas to be enjoyed; bike many miles to be explored; and, well, f#%! We'll see where this takes us!’ The kick-off party has begun—transitions

to a new world! We arrive in Lisbon at 9:30am; 80 degrees welcomes us. Chris and I tear open our boxes at the airport and reveal our new Salsa Fargo bikes. Assembly complete, we ride into the heart of the city. I am shaky. I concentrate on each weighted turn of my pedal. Only 10 miles on our first day and already my mind is exploding with writing ingredients! Here is a taste from my travel blog:

However, when I travel, I like to experience palatable pleasures ... and sometimes this includes the food groups of butter, sugar and eggs! Well, on this particular

day, for whatever reasons, my body let loose and decided to have a little pastry party! Perhaps it was the 25 miles through the rugged Parque de Arribatta that greeted us with an 18 percent grade yesterday morning! Hmmm, not sure, but something in me said ‘Bom Apetite!’ The morning started with a walnut, caramel glazed, gooey fat pellet, washed down with a creamy espresso. Just glue that sucker to my ass why don't ya! Best looking pastry yet! I couldn't resist! Let me tell ya, guilt melts away faster than calories when riding a fully loaded bike for 38 miles. And here is where I laugh ... not only did I eat an entire butter ball—but—I also sported a bikini (Oh yes! On the same day!) in the absolute coolest swimming hole ever! The cliffs met the turquoise waves with a stairway invitation to the sandy beach. The rocks formed a perfectly protected small bay with

I couldn't resist! crystal-clear water warmed by the strong solar rays of the Portuguese sun. This is what we pedal for! We stripped our sweat-clinging bike clothes off and ran to the oasis! Nothing has ever felt so good! Back on the bike, we roll into Porto Covo for lunch and opt to spice things up with homemade pizza. The last few days have been a bit bland speaking in a culinary sense. I don't know, boiled potatoes and green tomatoes just seemed a bit too ... what's that word? Boring! Pizza has always been a ‘go to’ food for us. It is easy to leave cheese off half the pie, right? Apparently not in this little village! But, they could have made us two separate pies, huh? We opt for one cheese and veggie pizza and Chris meticulously picks off

the dairy cramps for me. It is actually super tasty—corn, broccoli, peppers, olives, carrots; all the seasonals ripe on the pie. As we are watering up and heading out, we meet two local mountain bikers. They share insider secrets of their favorite stashes, and we swap bike stories. Everywhere ya travel, bikes speak a common language. We follow their tips and manage to make it to Vila Nova de Milfontes mostly on back roads. The cliff-hugging sandy stretch followed the ocean. Did I say sandy? Understatement! Let's call this the cross-training push! Pounds in panniers do not pedal painlessly through sand traps! Guess we deserve another pastry! We find ourselves at a roadside café where the sand meets the pavement. My legs are tired, my nose

freckled with sun, my taste buds are celebrating rare treats, and I am happy. This is what we came for: a challenge, a laugh with a friend, an ocean-side trail, a pastry, a swim. Life can be this easy. Time on the bike frees my mind; frees me from societal norms. It is my mediation, my therapy. It is certainly an unforgettable way to vacation and a memorable lifestyle. Life is good. Sleep well … tomorrow we ride.
