Sizzle'n Changes!

This is the year for change. When you picked up this issue, on our beautiful cover you saw the new title, Sizzle’n Cuisine. After 10 years as the Spokane Sizzle, we have now added cuisine to the title of the Sizzle. For those of you familiar with our publications, you know that this is the title of our website and weekly eNews. Our new Sizzle’n Cuisine title combines all of our publications and online media into one. We enjoy some very unique benefits to living in the Inland Northwest; Coeur d’Alene and Sandpoint areas are intrinsically linked to the greater Spokane area. Spokane residents love to play and enjoy the beautiful scenery in Northern Idaho, and Spokane is Northern Idaho’s connection to our international airport, local medical facilities and cultural events. Our new title unifies dining and entertainment in our region. Our title going forward on all our publications will be Sizzle’n Cuisine with a subtitle of Northern Idaho Edition, Spokane Area Edition and a couple of new culinary twists yet to be introduced. To understand the connection between and passion behind the creation of three of Spokane’s most notable restaurants, you must first hear about their journey. Who better to tell the story than restaurateur Deb Green herself. Introducing Durkin's Liquor Bar, Madeleine's Café and Pâtisserie and Casper Fry. We never thought this would be our life; never imagined we would spend each day working together. The lines between family and work are blurred now. Somehow, one quaint little vision of a French café and pâtisserie grew into three unique and distinctly different restaurants, each with a story and 12

a personality of its own. Yet each built with purpose and conviction; a true belief that the concept of gathering family and community together to share a meal or drink is a natural, meaningful and necessary fiber of our social being. Growing up, my children Megan VanStone and Ben Poffenroth worked by my side as I catered and eventually ran the café at the MAC. Eight years ago, that café would become Madeleine’s, as my daughter and I opened our first restaurant together on a busy corner in Downtown Spokane. The French-inspired atmosphere and menu gained a fast and loyal following, and today so many

of those guests who walk through our doors are considered good friends. Over the years, this cozy yet busy French café and pâtisserie became a downtown staple. It grew from serving not only espresso, fresh baked pastries, croissants, quiches and salads, to a menu with full-meal cooked-to-order breakfasts and lunch as well. Shortly after Ben joined the business, talks of a second restaurant began and together we began the journey that would lead to Casper Fry. Casper was built out of love and authenticity. It pays homage to my own great grandfather, a Southern-born Baptist minister who lived in the South Perry neighborhood. It was really an emotional build


RECENT OPENINGS for all three of us. We learned so much about our family, the neighborhood, and about who we are and where we come from. We have a special and historical connection there that really made Casper Fry come from the heart. A very different vibe from Madeleine’s, Casper Fry was built mostly by local artisans and has a reclaimed industrial, yet neighborly and hospitable feel. The Southern-inspired menu is seasonally and locally driven (especially when the Farmer’s Market is open next door). This is a fresh, somewhat modern approach to traditional Southern dishes, most of which are prepared in an unconventional wood-burning Josper oven. Local produce and proteins are paired with fresh fish, and organic grits shipped from Georgia, to complete a menu which includes Chef Josh Grimes’ creative versions of shrimp and grits, steaks, fried chicken, trout, ribs, a pimento cheeseburger, mac and cheese, and crisp seasonal salads. Different menus are offered for lunch, dinner, and weekend brunch. The well-appointed bar and whiskey cabinet influences our bartenders to craft classic and barrel-aged cocktails which include housemade syrups, shrubs and local bitters. A year after Casper Fry was up and running, our family began the plans and design of our third restaurant, Durkin’s Liquor Bar. Durkin’s was named for local legend and pre-prohibition era liquor tycoon, Jimmie Durkin, who had a saloon in that very location. We opened in November 2014, serving upscale takes on classic-American comfort food. There is an engaging and deliberate casual feel about this fancy, glam diner. With a meticulously curated vibe, the main-floor dining room, open to all ages, is a thoughtful blend of polish and comfort. Vintage chandeliers, white subway tile, red velvet and custom wallpaper complement the comfy overstuffed leather booths, metal bar and rich walnut paneling. Encouraging guests to dine and imbibe, the made-from-scratch menu features items ranging from bourbon and brown

sugar Brussels sprouts to grilled steaks with béarnaise, a maple-brined pork chop, braised honey and cream herbed chicken, fresh vermouth steamed mussels, house bacon and eggs, salads, a fried bologna sandwich and a burger which is the talk of the town. Crafty bartenders man the busy main floor bar, while a second, more intimate and dimly lit basement bar favors the 21 and older crowd with the same cozy swank, yet nostalgic feel pays tribute to the bygone prohibition era, encouraging guests to linger over conversation and a perfectly crafted cocktail. As the construction of Durkin’s Liquor Bar was well under way, it was decided to move Madeleine’s right next door. In the early months of 2015, Megan, Ben and I planted our hands in the cement and made the commitment to reopen the French café and pâtisserie just two blocks east of its former location. Though the charming French design is still present, the new space is a little more modern and current, with more room and a warmer feel with Provençal colors. Much of the menu, especially the pastries, remains the same. In addition, there are healthier choices to enhance the display case selections, and more items are cooked to order. The traditional daily breakfast menu has stayed the same, and instead of a street-side patio, we now have a private courtyard in back. Along the way, we have managed to surround ourselves with amazing, talented and good people, whose loyalty, friendship and hard work on our behalf has been our reward. We feel that we couldn’t have done it without those kindred spirits who helped us build our vision and made it happen for us. We are so grateful for them and the love and support of our entire family and loved ones. All of them came together for us. Recently, The Wall Street Journal named both Casper Fry and Durkin’s Liquor Bar as two of six must-try restaurants in Spokane. It’s exciting, a privilege and humbling to take part, as other locals do, in the cultural and diverse growth of our city. - Deb Green

It took a little while in the making, about two years, but the Saranac Commons at 19 W. Main brings a cool new open air market-style indoor gathering place to Main Avenue between Brown and Division. Outside, this trendy little one-street walk-about hood includes the Main Market Co-op grocery and deli, Boots Bakery and Lounge, Saranac Public House, Zola, Whisk and Borracho, with nearby Red Lion BBQ, The Globe, The Blind Buck, Revolver and Fast Eddie’s. It’s Spokane’s tiniest but most interesting neighborhood. Saranac Commons is home to Caffé Affogato, Mediterrano, Black Label Brewing Co., Common Crumb, and Sun People Dry Goods, all in an open indoor common café area for all. Just walk up to a counter to order and sit anywhere you like. Each one brings their piece of the pie to the table; brewing beers, coffees and teas, desserts, cooking up some Mediterranean fare, and baking up a storm of confections and breads. If you’re downtown, this is a must see and taste! You won’t find anything like it anywhere in the Spokane/

Coeur d’Alene area. Affogato [ah fo gah toh]: a most delicioso sip-o-Italy. Caffé Affogato’s namesake is an Italian coffee-based dessert beverage made with ice cream and coffee. Owner Sharo Nikfar’s dream of serving divine tasting Italian coffees and the best teas available (both in selection and in expertise for brewing) is presented in the bright window light up front when you walk in the commons. Originally from Iran, where the food is very inspired by French and Italian cuisines, Sharo lives to share that coffee culture and those Mediterranean kitchen delights he grew up with to the city he now calls home. Lucky Spokane! Between Affogato and his restaurant Mediterrano, he is serving ethnic foods that are taste sensations all their own. With Mediterrano, Sharo takes great pride in presenting a combination of Greek, Turkish, Persian and Lebanese cuisines, bringing

the Eastern Mediterranean food experience to East Main Avenue. Caffé Affogato is open daily at 7:00 a.m., and Mediterrano is open 11:00 a.m. to 2:00 p.m. for lunch and 4:00 p.m. to 8:00 p.m. for dinner (later on weekends), and in the commons they have live music Fridays and Saturdays. Brewing Co. co-owners Dan Dvorak and Steve Wells are brewing up some delicious beers using mostly organic grains, and hops from their farm in nearby Garden Springs. They, along with Assistant Brewer Josh Fox, are living the brewer's dream come true; they love what they do and people love their beer! What started out as a hobby was so much fun for them, they just kept brewing up different recipes, and now have more than 30, and they keep experimenting like mad scientists. They offer a rotating menu on tap, whatever strikes them to brew up. Their Espresso Stout is a crowd pleaser, and the Honey Blonde, Ree’s Red and I.P.A. are all their more frequent beers on tap. Just recently they were serving their own delicious Orange Cream Soda! Good beer and a great spot to hang out, especially in winter; it’s the place to get a little lost after dinner as a break from some of the party bars in the neighborhood, or on an afternoon stroll to simply enjoy a pint … or two! Looking for those classic Europeanstyle pastries? That is what owners Kate and Jeremy Hansen have to offer with their newly opened Common Crumb Artisan Bakery. The couple owns Santé Restaurant and Charcuterie down the street in the Liberty Building where Auntie’s Bookstore is. Chef Jeremy has had the distinction of being invited to present a “Northwest Bounty Dinner” at the James Beard House in New York City and of being nominated for the Beard 2015 Restaurant and Chef Awards, Best Chef: Northwest, along with numerous accolades from local publications, including our Sizzle Fork-in-Cork Award for “For the Love of Food; A Chef with Style.” When it comes to opening the bakery, Kate blames Jeremy. It was a natural step for them, as they were doing their own baking for the restaurant and wanted to do more with classic European-style pastries, sweet confections and chocolates, also offering wholesale breads to restaurants and

coffee shops. Hint: the macarons are a must to try! Their pastry chef, Lynette Pflueger, is an award winner in her own right, with a long list of credentials after earning her degree at the Culinary Arts Program at the Art Institute of California, and a nomination for The People’s Best New Pastry Chef (Food & Wine magazine) and was invited to join Jeremy in presenting the James Beard House dinner. Chocolatier at hand is Taylor Siok, and Kate’s talents are at the table for designing the interiors, coordinating the events and running the front-of-the-house operations at both Santé and Common Crumb. Among them all, they are a well-traveled group that brings much more than a common culture to the foods they serve there. This new relaxing and inviting place has provided a dynamic atmosphere with a little something for everyone! Visit one or all of them most any time of day. Whisk is a wee bar right next door to Saranac Commons at 17 W. Main Ave. Whisk is, you guessed it, whiskey focused and, and also pizza centered. Stop in and try their whiskey sours 5:00 p.m. - 2:00 a.m. Monday through Saturday. There is no stopping William Webster. Cooking up yet another new menu at the reinvented Globe Bar and Kitchen, 204 N. Division, across the street from Whisk, William has put gastropub on the moniker, whipped up a gourmet menu with cuisine from ‘round the globe, topped it with libations, set it forth with twelve 60-inch TVs and is presenting music every weekend. They are open every day 11:00 a.m. to 2:00 p.m. The biggest newcomer, literally, this spring is local hoteliers Walt and Karen Worthy’s Davenport Grand Hotel. This chic contemporary 716-room convention hotel is directly across from the Spokane Convention Center, the INB Performing Arts Center and close enough for an opportune stroll through Spokane’s

beautiful Riverfront Park. Restaurants include Table 13, The Grand Restaurant and Lounge and Grand Terrace Bar. It’s a little premature to get details on the new restaurants, but if the previous family of restaurants at the Historic Davenport Hotel and Tower and Post Street Ale House are any indication, they’re sure to come up with something worthy. Patrick McPherson of Manito Tap House has opened the new Blackbird among the flock of downtown’s upscale gastropubs, this June. Located at 904 N. Washington in the Broadview Dairy building, Blackbird features a full bar, 34 beers on tap and more than 150 bottled beers. They're installing a wood-fired grill and will be cooking up some smokin’ hot food on their outdoor patio.

And now for something completely different; Tamarack Public House is across the street from the entrance of the Bing Crosby Theater housed in a small brick building that has been beautifully restored. Owners Teresa and Leo Gonder are from Spokane and originally met in high school at West Valley. They headed west, where she graduated from the culinary program at the Art Institute of Seattle and worked at Mountain Springs Lodge at Stevens Pass; he has been a custom builder in Leavenworth . They have done an impressive job on the building with their combined inspiration to bring something different to Spokane. The main floor offers tables inside, with 16

a roll-up door for open-air dining, a bar area and a cozy lounge area, and upstairs you will find a loft area with its own bar for private parties. Chef Teresa has put together a gastropub menu; starters, salads, soups and sandwiches, gnocchi and rice bowls, focaccia pizzas, entrées and desserts that are all her own. A teaser for you: Forest Mushroom Pizza with fontina cheese and a balsamic reduction, a layered beet and goat cheese salad with greens, maple pecans and balsamic vinaigrette, gnocchi with seared shrimp and scallops in garlic white sauce, a wild salmon filet with pecan tarragon butter, a New York steak with garlic-herb compound butter, and for dessert, the JP Trodden bourbon truffles with mascarpone cream trifle. With 32 tap handles of craft beer, kombucha and ciders, as well as cocktails and wine, there’s a little something for every taste here. They are excited to have their restaurant surrounded by Spokane’s vibrant entertainment district near the Davenport Hotel that includes the Bing, The Knitting Factory and The Martin Woldson Theatre at The Fox, at 912 W. Sprague Ave. Nodland Cellars will soon be right across the patio when they open in their new location on the ground floor of the Chronicle Building at 926 W. Sprague Ave. They are adding this new location and keeping their Spokane Valley site for wine production. Planning to open sometime this summer, the wine tasting room will be serving food and live jazz. Jennifer DeHart, owner of Around the Board Café at 829 W. Riverside is providing a spot for fun, food and entertainment. Whether looking for some quality family time, a girls night out or for a casual date night, this is a fabulous place to enjoy some games and laughs. They offer Pictionary, Where's Waldo and many other board games, along with a private room for group rentals too.

Nearby at 32 W. 2nd Ave., Tinbender Craft Distillery is serving their one-ofa-kind spirits, made in a one-of-a-kind still, that owner tinbender Paul fashioned himself. The focus is on a modern approach to distilling classic spirits, using locally sourced ingredients. And, they give it their own modern twist, making delightful whiskeys and brandies that might not look or taste anything like you've ever had before. They are open 4:00 p.m. to 6:00 p.m. Fridays and noon to 6:00 p.m. Saturdays. Also at 32 W. 2nd Ave. in the former Spokane Public Market building, the creators of Young Buck Brewing opened in the fall of 2014, and if you would like to stop in for a taste of their 10 Point IPA, Ruttin’ Season Red, Hipster Hefeweizen or Cherry Bourbon Imperial Stout, they’re open noon to 11:00 p.m. Wednesday through Friday and 10:00 a.m. to midnight Saturday and Sunday. They formerly owned the Lantern Tavern on South Perry Street and were inspired to open a neighborhood mom-and-pop place like the ones they saw in the Midwest while visiting family. They found that Bagdad Bowl equipment was available and reimagined it all installed in their chosen location as the furniture for their family friendly spot. It worked! They built it themselves, crafted tables with 18-foot bowling lanes, designed a burger menu with fresh-ground in-house beef and their own sauces, and the neighbors have responded with a yes! The '21 window' is the 1964-1967 model called the Deluxe Samba Bus. SPOKANE BREWS! CRAFT BEERS ARE BOOMING For better or worse, the Inland Northwest can be a bit behind the times— which many consider part of its charm. But when it comes to the current craft beer boom, we’re not taking a back seat to anyone. And things show no sign of slowing down anytime soon. Compared to just five at the beginning of the decade, there are at least 22 operating breweries in Spokane and Kootenai Counties and more emerging all the time. And there are plenty more places pouring all that beer. While most bars and restaurants had no more than a few craft taps five years ago, it’s not uncommon now for even smaller establishments to feature 10 or more, with an increasing focus on homegrown brews. “It’s just so much more likely that you’re going to have exposure to a local beer and discover that it really is good, it goes with the meal, it goes with the evening, whatever it is you’re doing,” says Gage Stromberg, owner of River City Brewing (formerly Coeur d’Alene Brewing). “I think restaurants and hotels have really gotten on board with the idea that people in Spokane want to experience Spokane products, and people traveling from outside the area want to experience Spokane products.” While some observers are waiting for 20

this latest craft bubble to burst, many in the industry think there’s plenty of room for growth—particularly with the rise of beer connoisseurs always seeking the next new thing. “I think it would be an issue if we were all fighting over the same market share, but the way things are going, almost every microbrewery is expanding,” says Steve Wells, co-owner of Black Label Brewing, which opened in January in Downtown Spokane. “You can go to a place and order a beer, and instead of the same beer you get everywhere else, they have their own style.” Spokane-area breweries tend to cluster in groups of two or more, making it easy

to get plenty of variety out of a single trip. In the Riverwalk complex east of Gonzaga University, the city’s oldest and biggest brewery, No-Li Brewhouse, is constantly polishing its upscale pub menu, upgrading its Northwest lodgestyle atmosphere—including a spacious riverfront patio—and expanding its diverse beer lineup. Recent arrivals have ranged from the easy-drinking Poser pale ale, No-Li’s first six-pack offering, to the tart cherry Mosh Pit to an oyster stout brewed with actual shellfish. Just a block to the north, Ramblin’ Road specializes in Belgian-inspired ales, often featuring funky sour flavors, some of which find their way

into wine and whiskey barrels for further aging. Local vendor food trucks regularly bring their own flavors to the table, parking outside the small, pleasant tasting room. Another mile to the east, at Budge Brothers, regulars belly up to the stool-less bar for plastic cups of their favorites from a modest beer list and free servings of the self-proclaimed “best popcorn in town,” made with browned Tillamook butter. Nearby Iron Goat draws an equally avid following, and frequent food trucks, to its more secluded quirky taproom in a century-old brick building bordering an industrial area. Named after the garbage-eating goat sculpture in Riverfront Park, it turns out a wide assortment of styles, some barrel-aged; the weekly Wednesday small-batch specials sell out fast. While the Goat plans to move downtown, the area is welcoming a new arrival: Bennidito’s Brew Pub, an offshoot of the popular South Hill pizza place with its own brewery adjoining a new restaurant on East Sprague. Downtown already offers a trio of distinctive brewery spaces. River City, in the Carnegie Square neighborhood to the west, is bicycle friendly, where tables are enclosed by bike rims and tires with the stereo system playing music by area bands. The increasingly adventurous beer lineup includes a complex Riverkeeper IPA, with a portion of proceeds supporting the Spokane River protection program. Centrally located Steam Plant Brewing—housed in an impeccably restored historic structure marked by twin 225-foot smokestacks—churns out several standard selections and rotating seasonal specialties for the downstairs pub and upstairs Stacks restaurant, which incorporates the beers into its menu along with other locally sourced ingredients. Black Label, one of a handful of businesses in the new Saranac Commons on trendy East Main, serves an array of balanced beers tending to the sessionable in strength. You can grab a bite from the neighboring Common Crumb bakery or Mediterrano eatery and sit at the central table fashioned from a large wooden cable spool, part of the repurposed industrial vibe. The Spokane Valley also is home to three breweries. Despite the name, Hopped Up—in a former IHOP across from University City —is known for its maltier offerings, along with a light cream ale that’s often flavored with everything from lemon to raspberry to melon. Hopheads will be more in tune with Twelve String, a guitar-themed spot with a cozy taproom tucked into a business park just before the traffic roundabout on East Montgomery. Along with the popular IPAs, there’s a steadily increasing number of barrel-aged specialties celebrated in a series of Barrel Fests throughout the year. Man’s best friend is the inspiration for English Setter Brewing, which neighbors the industrial park on North Sullivan, from the photos adorning the walls to the pawprint-embossed popcorn bowls. A rotating array of brews are accompanied by snacks, sandwiches and flatbread pizzas turned

out from a convection “greaseless fryer.” Even the Green Bluff agricultural community north of the Spokane Valley now has companion breweries. Big Barn has been joined by newcomer 238 Brewing, named after the local telephone prefix; both have beer names themed to the area and take advantage of the bluff ’s bounty for seasonal releases, from berries to honey to pumpkins. Waddell’s Brewpub and Grille at Five Mile is the sister establishment to the original Waddell’s Neighborhood Pub and Grille on the South Hill. Its brewery produces Rube’s Brews (named for eccentric, old-time baseball pitcher Rube Waddell) for both restaurants, known for their big burger-centric menus. The lone brewery south of the freeway, Perry Street, has become a fixture in that hip, bustling neighborhood with its steady stream of clean, consistent beers and family friendly atmosphere, and is another popular stop on the food-truck circuit. To the west, Orlison—one of the few POST STREET ALE HOUSE craft breweries specializing in cleaner-finishing lagers, not heartier ales—doesn’t have an actual taproom, though you can stop by the Airway Heights operation at the end of the afternoon for pints and growler fills. It’s being joined by a West Plains neighbor, New Boundary, Cheney’s first brewery in more than 100 years—and yet another sign that the new era of local beer is in full flow.

WEST SIDE NORTHWEST MUSEUM OF ARTS AND CULTURE (MAC) AND THE CAFE MAC

WEST SIDE From Browne’s Addition to Airway Heights, Spokane’s West Side is home to the beautiful Northwest Museum of Arts and Culture (MAC), the Spokane International Airport and Fairchild Airforce Base in Airway Heights, and Eastern Washington University Campus in Cheney. In the 1970s and ’80s, Browne's Addition was considered less than desirable. Run-down houses with knee-high grass were a common sight; crime was rampant. When potential renters responded to an apartment ad and discovered its location, their response would be an automatic, “No thanks.” The neighborhood was known as Hippie Haven. Then, in the early ’80s, a group of optimistic neighbors began a branding campaign to put forth the neighborhood as historic—not just old. They came up with a logo and directed neighborhood funds received through a HUD grant to be spent on old-style street signs, historic plaques, a traffic turn-a-round and a replica gazebo in Coeur d’Alene Park. The branding campaign worked, and over the years, the perception of the neighborhood gradually changed. As the apartment occupancy rate increased, so did the revenue the building owners were willing to reinvest. Today, the upscale neighborhood is now full of classy, hip and high-end condos and refurbished stately homes. Take a stroll in Browne’s Addition to see how this magnificent area has once again come alive, allowing for growth of new businesses. This area is home to many historic homes to include the EJ Roberts Mansion, Patsy Clark’s Mansion, the Campbell House and the grand centerpiece of the neighborhood, the Northwest Museum of Arts and Culture. The MAC is one of Spokane’s must-visit treasures featuring art, history and cultural exhibits along with family-focused activities. The café at the MAC is provided by D’Zaar Cuisine and serves American and Middle Eastern lunches, along with delicious pastries. The corner of Cannon Street and West Pacific is home to the Elk Public House, the popular neighborhood pub for all ages, with El Que taco bar and tequila shack out back. The Elk presents a three-day outdoor music festival called ElkFest the first full weekend of June, filling the neighborhood with live music and merriment. The historic building on the corner to the North is Browne's Tavern. Italia Trattoria offers its eclectic Italian cuisine for breakfast, lunch and dinner, and just around the corner is Café Capri and the popular Pacific Avenue Pizza.

Nearby Coeur d’Alene Park in Browne’s Addition is home to one of the largest annual art events in the area—Artfest, usually held the first weekend of June. This three-day event of art, art-making and performances by local musicians is fun for the entire family. South on Highway 395 to Pullman at Cheney-Spokane Road you will find the charming Chaps Café and Cake Bakery next to the Trading Company grocery store. RESTAURANT & BAKERY Since 1982, Europa has been a Spokane favorite. Housed just south of the intersection of First Avenue and Wall Street near the railroad bridge, this beloved restaurant is still going strong. New life was brought to Europa when Janice and Dennis Maas said goodbye, handing over the keys and entrusting its future to husband-and-wife team Jeff and Aja Engels. The restaurant has remained in experienced, capable and passionate hands. Europa has continued to be the restaurant that Spokane has remained faithful to all these years. Husband and wife are both seasoned restaurant veterans. Aja was hired at Europa in 2009, followed by Jeff, who became the executive chef on February 1, 2012. Exactly one year later, on February 1, 2013, Jeff and Aja officially bought Europa; a dream of theirs for many years. The couple agrees that they had never imagined that they would be fortunate enough to own a Spokane landmark like Europa. Aja grew up frequenting Europa; who would have guessed 20 years later she would be an owner?! She and Jeff have enjoyed being able to reintroduce Europa to Spokane. The pair has kept the restaurant much the same, including the entire staff, the cozy at-home atmosphere and much of the great classic menu items it has been known for over the years. Jeff has been improving the menu by creating more dishes in-house using fresh—and when possible, local—ingredients. In 2014, with the help of Coeur d’Alene Cellars, they created their own house wine—Myropa Red; created to offer Europa guests a full-bodied, well-rounded wine to pair perfectly with their menu. Geno’s has long been a University District icon, known over the years as an Italian eatery. 2014 brought much excitement to the culinary scene in Spokane. Award-winning chef, Adam Hegsted, introduced not one, but two restaurants to the city. Both opened in the blooming Kendall Yards neighborhood—The Yards Bruncheon and The Wandering Table. When experiencing either of these culinary destinations, they are both dining experiences all their own; unique to Spokane. In slightly more than a year since opening, they both have created a buzz for themselves in the community, creating unmatched culinary pleasures for connoisseurs looking for that next big taste. The name Adam Hegsted is not new to the restaurant scene. Adam has received multiple awards; the most prestigious in 2012, when he had the honor of being invited to the James Beard House in New York. He has been offering his talents in the Inland Northwest for more than a decade, as executive chef at Cedars and Brix restaurants in Coeur d’Alene, the Coeur d’Alene Casino in Worley, Le 42

Catering and Eat Good Café in Liberty Lake, and now at his restaurants The Wandering Table and Yards Bruncheon in Spokane and The Cellar in Coeur d'Alene—which, interestingly enough, is the former Brix location! Adam’s brother Ryan Stoy has also made his mark in local kitchens as executive chef at Downriver Grill in Spokane and The Cellar, and now as co-owner of The Yards Bruncheon and co-owner and executive chef at The Wandering Table. Together their collaboration brings diverse yet fun food to the table in hopes to bring the local community to gather and enjoy the flavors Spokane has to offer. Before opening the restaurants, they needed to decide on a location, which can easily seal a restaurant’s fate when it comes to success. Adam and Ryan agreed that upand-coming Kendall Yards neighborhood was the ideal location for both. “We were doing the Wandering Table traveling

chef dinners, and Jim Frank [the CEO of Greenstone, the company developing the Kendall Yards neighborhood] joined our table several times and has hosted dinners,” says Ryan. “That led into a relationship where he approached Adam about opening up a restaurant, which resulted in us opening two restaurants in Kendall Yards.” Adds Adam: “We actually did a dinner here on the block [in Kendall Yards], before it was developed, on a concrete landing area in the middle of the field.” The location for their new restaurants, from the beginning, chose them. At The Wandering Table, the aim is to let the food speak for itself while representing the ideals of the restaurant. The chefs work with the season’s offerings, allowing the menu to write itself. This gives guests the opportunity to experience different flavor profiles during each season throughout the year. As Ryan says, “We aim to be fun and approachable, whether it be a $10 meal or a $60 meal. We want our

delicious and unique small bites. These dinners are a perfect blend of creativity, comfort and fun, according to Ryan, with guests experiencing some of their “normal” items along with new creations. There are a few staple items on the menu, but they strive to steer away from the routine dining experience, as the menu is always progressing with changes every four or five weeks. For the adventurous eater, The Wandering Table offers its Chef Dinners, which are different every day. These dinners allow diners to taste a variety of

NORTH SIDE seek out wines within 500 miles that best complement their menu. Of course they have some special selections of French, Italian and Chilean—but 90 percent is from the Northwest. The same goal is set for beer and liquor, to serve a good selection that are locally produced. If you are looking for that breakfast and lunch place with a classic, timeless feel and comforting food, look no further than next door at The Yards Bruncheon. The food can be described as “a little funky, a bit modernized, and made from scratch.” When you walk in, it feels like it’s always been there. The Yards takes inspiration from all over the place, creating an everyday brunch menu that is delicious, bold and big. Like The Wandering Table, they incorporate what’s in season into the menu, so guests can look forward to certain menu items being featured certain times of the year, revolving around what’s reliable during those seasons. When it comes to the reason for their success, they readily acknowledge the entire staff. “There is open communication,” says Ryan. “Our employees are empowered. There is not just one person dictating. Each

employee has an opportunity to create and own a piece of what we’re doing and express themselves. You can’t oppress an employee’s creativity or willingness to do more or better by your own ego. And everyone understands their value within the company. Each employee is seen as an integral part of the restaurant.” The brothers have also been able to transcend a lot of their ideals from their various experiences and from their Wandering Table traveling dinner into the restaurants and instill those ideals into their cooks, service staff and management. “The trickle effect is beautiful,” says Ryan. “It’s infectious; everyone wants to be the next step up and always ready for the next challenge.” Adam and Ryan have enjoyed seeing the progression of customers over the past year; how many enter timid and leave already excited about their next visit. Their style is accommodating to both the adventurous eater and those who love the traditional foods done well. This is something new for Spokane. It is sure to keep the community at the edge of their seats and firmly planted at the table.

SOUTH HILL Spokane’s South Hill encompasses several different areas, all equally worth a mention— and a visit. The lower South Hill area includes the medical centers of both Sacred Heart and Deaconess hospitals. This is where doctors’ offices and medical buildings are the scenery, and the nearby restaurants pepper the steep hillside landscape in between the trees and tall buildings. Located south of I-90 paralleling Downtown Spokane, the lower South Hill encompasses approximately 5th through 14th avenues along Grand Avenue, accessible from South Stevens downtown. The rest of the upper South Hill branches out from 14th up the hill to 29th, and then farther up to 57th Avenue. The Medical Center area (4th to 9th streets) is focused on serving those who work and visit the doctors’ offices there. The Medical Center neighborhood is where medical center visitors can enjoy Fery’s Catering and To Go, Qdoba Mexican Grill, Subway, Press, Lalo’s Pizza and The Park Inn. cherished Audubon Park neighborhood, was Jonathan’s flagship concept—a casual fine dining restaurant focusing on fresh, local and seasonal Modern-American cuisine. As the original executive chef himself, Jonathan designed the menu and space to be a welcoming addition for the local neighborhood—a place where you could get a gourmet burger or salad, a fresh pasta or a grilled steak any time of the day. Jonathan’s goal was for Downriver Grill to offer Seattlestyle cutting-edge menus and cooking techniques, yet be relatable to Spokane with its own local flair. The Downriver doors opened in June of 2003, and the success was immediate. the way for Jonathan’s second concept, The Flying Goat—a Neapolitan-style pizza and pub. Some thought it risky while others thought it brilliant for Jonathan to open the new restaurant directly across the street from his first, but to him, creating a complementary concept while supporting the local Audubon Park neighborhood and other local businesses were important. The Flying Goat was created in 2010 to become a neighborhood watering hole and casual eatery, where the crafted beer list was as carefully chosen as the menu items themselves. Though they are a casual pizza pub, they take the quality and taste of everything they serve very seriously. “It was our goal,” says Jonathan, “to make everything from scratch and really raise the bar on pub food as we

Similar to Flying Goat, Republic Pi is a casual artisan-style pizza pub in the Manito neighborhood community, and was created of the people, for the people. “Republic Pi is truly a restaurant for the neighborhood and invests in the Manito community,” says Republic Pi and Flying Goat co-owner John Stejer. “It’s a casual pub with forwardthinking food.” In addition, the goal for Republic Pi was to complement, not necessarily compete with, the other fine pubs and eateries in the Manito restaurant district. Their concept takes the best of the Northwest pub scene with 21 tap handles and handcrafted cocktails, then adds an Italian flair, evident in both the food menu and the wine list. October 2014 brought another exciting element to the restaurant—a new executive chef, Matt Poorman, from Harrisburg, Pennsylvania. After realizing he had no more room to grow in the company he was working for, which 54

included two separate restaurants and two catering venues, Matt decided it was time for a change. Having known Lee Cameron from Mirabeau Park Hotel for many years, he learned of the open position. He flew out to interview for the job, and just three weeks later, he was moving his family, including his wife Cindy and 2-month-old daughter, to Spokane. MAX is known for its extensive offerings, with five menus offering more than 100 menu items served 20 hours a day, all scratch made in house. This means that they make everything in house from raw ingredients, eliminating prepackaged, pre-made ingredients, allowing them to more easily accommodate guests’ dietary needs and preferences. Starting with raw ingredients allows for the chefs to deconstruct and reconstruct existing dishes to cater to those needs. “MAX can tailor itself to any type of

person who comes in ... the doors are open to everyone, and the restaurant can accustom itself to anybody and everybody,” says Matt. He fell into the business, as so many chefs do. He started washing dishes at a Sicilian restaurant when he was in high school. Right about the time he was ready to quit, the owner moved him up, teaching him how to make and cook pastas and sauté items. He continued working there through high school, and

experimenting with new dishes and ingredients, along with perfecting existing menu items. And the chefs and cooks don’t stop there; once the food is prepared, each dish is plated so that it is visually appealing before the guest ever tastes it. As General Manager Andy Rooney says, “From recipe conception to plate presentation, the staff and management have to be passionate about the product they are presenting to the customer.” Matt is sure to bring his own passion to the kitchen and to each plate he prepares and serves. TOWNSHEND CELLAR A FAMILY ON THE MOVE ... OF BOYS AND WINES All families grow through time—they change, they mature, they expand and they become more than they were in the beginning. Don Townshend is the perfect example of that kind of growth, both in family and in business. His two sons, Brendon and Michael, have grown from high-school boys running the production line with friends during bottling season, through college, training in the Air National Guard, and now as young adults ready to launch into the world. Don’s winery, Townshend Cellar, has also grown through the years, from producing only four wines to nearly 30, and case production from 500 to about 20,000 cases annually. Townshend‘s growth in Spokane’s wine industry has been a combination of the expansion of his location and production facility as well as various acquisitions of other wineries. This evolution is a reflection on the growth of the wine industry as a whole in Spokane which has seen incredible growth in the number of wineries represented in the area, increasing from seven to 14, with additional tasting rooms from other wineries producing out of the area. Don and his boys have expanded the Townshend Cellar family of wines to focus on different styles of winemaking for each variety. They derive their distinctive flavors from extensive oak aging in small French and American oak barrels, with premium grapes from the finest vineyards in the Columbia Valley. Since the vintage reds of Townshend Cellar are aged longer in oak than most red wines, and they are bottleaged longer before being released for sale, the wines are rich and full-bodied with layers of flavors to savor with a long finish on the tongue. The varietals range from a delightful Huckleberry Brut sparkling wine to a crisp Sauvignon Blanc, Viognier and Chardonnay, lighter-bodied red wines such as Lemberger, Sangiovese, Tempranillo and Syrah, to more full-bodied reds like Merlot, Cabernet Sauvignon, Cabernet Franc, Malbec and a delicious vintage Red Reserve blend. There is a lightly sweet Huckleberry Blush and Riesling, ice and dessert wines and a Port that rounds out the lineup. Of course, The Table Wine blends, T3 and Vortex continue

ROBERT KARL CELLARS WINE FROM THE VINE TO YOUR GLASS Hills American Viticultural Area to grow their grapes and their wine business. Joe was first inspired to be a winemaker while working toward his MBA while doing a marketing project for a family winery. He fell for the winery business right then and there. Joe and Rebecca started looking—in Joe’s usual scientific method—for the best place, where the very best grapes were coming from, and they found exactly that in Washington State, according to Rebecca. They believe that the terrior (soil and locale), the climate and the Columbia Valley’s angled slopes come together to create the most ideal growing conditions in the world. The Horse Heaven Hills AVA is considered one of the most prominent 6,000-plus acres to grow grapes in the entire Columbia Valley, and Joe believes

• Do not wear lipstick, gloss or balms as these will taint the flavors of the wine. • Do not wear perfumes, cologne or scented lotions as the fragrance may overpower the unique fragrances of the wine. • Drink plenty of water between tasting rooms, as this will allow your taste buds a chance to rest up before the next winery and keep you hydrated. • Gum and mints detract from your ability to taste the wine. In fact, winemakers have hinted that they won’t brush their teeth the morning they are tasting to see if their wine is ready to bottle! • Do not rinse your glass with water between pours. Wine diluted by wine is far less disturbing to the overall taste than a water dilution. • Follow the tasting card that most tasting rooms provide. Winemakers know how to present their products to allow the best sampling. • Don’t be afraid to dump a tasting that you do not enjoy. Move on to the next sampling and focus on the overall experience. • Remember that many of our local wineries do not sell their products in retail markets. If you find a wine that you enjoy, buy a bottle. There is something truly romantic about popping the cork on your new favorite bottle of wine when it comes with the great memory of how you found it.

Located just four blocks from Sherman Avenue near beautiful Downtown Coeur d’Alene, owners Bob and Kris McIlvenna invite you to experience an undeniably unique dining experience at their restaurant, The 315, housed in the Historic Greenbriar Inn. The 106-year-old inn greets you with its simplicity and elegance the moment you walk through the door. The restaurant sits on the main floor, featuring a flavorful and diverse menu of starters, tapas and entrées. In addition, you can choose from a selection of hand-crafted martinis and cocktails, beer and wine. Take a seat at the stylish wine bar and order from the reasonably priced wine list, dine at a table near one of the two fireplaces, or during the warmer months, guests have the option to dine under umbrella tables outside on the 150foot wrap-around deck that surrounds the dining room and looks out over the garden and patio. Brick patios in the front of the house and a shady porch are ideal for fair-weather dining.
