Joyce's Weeknight Chicken Bake
This was my late mommas quick recipe for school nights when we were kids it’s perfect for fall.
Cut up full rotisserie chicken
1 can of cream of chicken
2 boxes of uncle Ben’s wild rice
Preheat oven 400
Cook Rice with seasoning as directed. Cut up chicken while cooking rice. When rice is fine add cut chicken and mix in cream of chicken.
Bake in 13x9 glass dish for 25 min just to crisp top!
For extra veggies add sautéed mushrooms, or broccoli.

Momma's Caramel Apple Dump Cake
Dump cake Ingredients:
One yellow cake mix
Two cans apple pie filling
One stick butter
Caramel ingredients:
One cup sugar
6 tbsp butter
1/2 cup room temperature heavy cream
Pinch of salt
Open the cans of apple pie filling (optional add all spice) and put in a 9x13x2 pan, open the cake mix and dump the dry mix over the apple filling, but butter into pads and place pads of butter over the top of dry mix and bake at 350 for 15 minutes or until the top is golden brown and crisp.
For the caramel topping: On medium heat and in a medium pot add one cup of sugar and stir until all the sugar crystals are melted (very important you stir the whole time because it will burn easily) once completely melted add 6 tbsp butter and stir until combined, then add 1/2 cup of heavy cream once combined pour into a glass bowl and add a pinch of salt
To serve: get a scoop of dump cake and top with caramel optional: a scoop of vanilla bean ice cream
