HERE’S TO NEW BEGINNINGS If someone would have told me 10 years ago I’d be an editor of a magazine one day, I’m not sure I would have believed them! Back then, I was focused on a career in fashion and spent many years working in that industry. But, after having kids and quitting my job, I longed for a creative outlet. I filled that void by starting a blog in 2008, and it was then that I rediscovered my love of writing. What started as a hobby soon provided career opportunities. In 2012, I joined the writing staff of SIMPLYkc Magazine. For those of you who’ve been following along these last few years, you may have read my “Trends” columns, or an occasional “Beauty” or “Parenting” article. Now, I can’t tell you how honored I am to be the editor in chief of this amazing magazine that celebrates all things KC. This is a pinch-me moment, for sure! So, I offer a hearty thank you to all who’ve been reading SIMPLYkc Magazine over the years. I hope you enjoy the fresh look and great new features. THE BURNT ENDS OF KANSAS CITY Ask anyone from Kansas City, “Who is the king of barbecue in America?” The answer will always be “Kansas City.” Ask anyone in Kansas City, “Which Kansas City barbecue spot is your favorite?” You’ll get at least 100 different answers. When you live in one of the best barbecue towns in America, you need to go off the beaten path to find the locals’ hidden favorites. We found these prized jewels sitting in the kingdom of America’s favorite barbecue.

K&M BAR-B-Q 603 N. Webster St., Spring Hill, KS Ken and Michelle Kinler began serving barbecue sandwiches at local fairs and festivals 20 years ago. With a little tinkering of the barbecue, two years later, a hobby became a thriving business. Just recently, the Kinlers opened a banquet facility large enough to hold up to 100 people. And the restaurant could use the space as crowds drive in from all over Kansas to try “the best barbecue on the planet.” K&M Bar-B-Q has been open for the past 18 years on the southern outskirts of Kansas City in Spring Hill, Kansas. K&M serves tender beef brisket, savory ham, homemade Italian sausage, turkey, and pulled pork. Its sides include the popular baked beans with burnt ends. Try this: The Killer Combo features three meats of your choice, layered

between pieces of bread, piled to towering heights. You will need to bring your appetite.

ROSEDALE BAR-B-Q 600 Southwest Blvd., Kansas City, KS Rosedale Bar-B-Q is one of the oldest-running barbecue restaurants owned and operated by the same family in Kansas City. Two brothersin-law, Anthony Rieke and Anthony Sieleman, opened “The Bucket Shop” in 1934. The Bucket Shop was a neighborhood hotdog and beer stand. They realized Kansas City craved something else — barbecue. So the guys fired up their first barbecue pit 100 feet from their hotdog stand and thus began Rosedale’s Bar-B-Q. Today, Rosedale Bar-B-Q is carried on by the Riekes’ daughter and granddaughter. The menu hasn’t changed much since 1934, including the brisket, ham, pork, and turkey. Rosedale still offers some


of the best hotdogs in town, topped with barbecue chili. Try this: The juicy, pork spare ribs are rumored to be the best around.

BROBECK’S BARBEQUE 4615 Indian Creek Parkway, Overland Park, KS Tucked in the heart of Overland Park is Brobeck’s Barbecue. And you can smell the food for miles. Doug Brobeck opened the joint nine years ago. He’s not a rookie when it comes to barbecue — he’s owned Stilwell Smokehouse for 12 years. Brobeck’s is a little different than most barbecue places, though. You won’t find sauce served with its barbecue. “Our meat is cooked right,” Brobeck says. “We don’t hide our barbecue in sauce. We want you to taste good barbecue whether or not you add the sauce.” Brobeck’s sells its own sauces. (The mustard sauce is a best-seller in KC.) “We’re not here to sell you sauce, we’re

here to sell you barbecue,” he explains. Try this: The burnt ends or baby-back ribs. The ham salad is also a best-seller. It’s made from the ham and turkey shavings left in the smoker, a technique Brobeck learned from watching his grandmother as a boy.

LC’S BAR-B-Q 5800 Blue Parkway, Kansas City, MO It’s not uncommon to sit down next to a Sporting KC player at LC’s Bar-B-Q, considering how frequently the team visits. This family-owned-and-operated barbecue restaurant opened in 1986 by L.C. Richardson. Richardson worked as the Kansas City Royals Stadium head chef before retiring early in the 1980s to open up LC’s Bar-B-Q. The meat is smoked in front of you in its well-aged, thick-walled oven. Most orders are to-go. Try this: The burnt-end sandwich is the most popular item on the menu. Pair it with the baked beans, another KC favor-

WYANDOT BBQ 8441 State Ave., Kansas City, KS 7215 W. 76th St., Overland Park, KS A favorite of actor Eric Stonestreet, Wyandot BBQ has been serving customers since 1977. Ron Williams, owner of Wyandot BBQ, learned his trade while working at Rosedale Bar-B-Q for 15 years. Williams’ secret to the best-tasting barbecue in KC is in his sauce. “If you read a barbecue sauce label and see ‘liquid smoke’ in the ingredients, then you know it’s artificial,” Williams says. “My sauce’s smoky flavor is the real smoke from the hickory wood. I also use all wood. You won’t find a gas line running to my building.” Try this: Eric Stonestreet says he orders the ham every time he comes back to Kansas City. It’s been his favorite since he was a small boy. But the most popular item on the menu is the ribs.

FACE & BODY SKINCARE: ORGANIC BEAUTY “Your skin is the largest organ in your body,” says Heidi Talbott, owner of Face & Body Skincare. “Whatever you put on your skin is absorbed into your body, so it is really important to pay attention to what ingredients are in the skin care products you are using.” The Overland Park-based aesthetician studied business at Baker University so she could follow her dream of helping people feel and look beautiful. She uses only organic skin care products and loves educating others about why they should pay attention to ingredients. “My clients love the products,” she says. “Not only do they smell good (they are made with flowers, fruits, and vegetables), but they also feel good on your skin. Home Décor Trends for Fall As fall jumps into full swing and the weather cools down, it’s that time of year when homeowners begin redecorating and nesting. Whether you prefer to update your décor with the seasons or simply like to switch up an accent color or two every so often, there are plenty of new trends to incorporate in your home’s style. Check them out.

HOME’S A BEACH

The Kansas City area might be far from the beach (or rather, far from the ocean), but that hasn’t kept homeowners from incorporating water-themed items into their homes. Products like wicker furniture, sand-colored rugs, and textured pieces of wall art are all making their way into homes

around the country. Pair with blues and teals and you can be on your way to the beach — or at least you can help your home to feel that way! Besides, even if you’re not into the whole beach décor look, colors inspired by sand, rocks, and more have become all the rage. Use them

in every room of the house for a look that’s in the now, but doesn’t feel “beachy” in the least. You also can consider embracing these hues even if you’re not all about sandy surfaces.

SHAPE UP

Patterns can help us feel clean and organized — even when it’s in our


décor. Consider adding accent furniture, throw pillows, lamps, or even wallpaper coated in geometric patterns. These items look pretty slick, too! For a softer look, use tones that are more neutral; lighter pieces will also remain more timely and won’t overtake the look of your entire room.

FLYING COLORS

Neutral colors are a common sight for bigger pieces like sofas and carpets. Metallics are huge for accent pieces, though, as are pops of bright colors like acid green or amethyst. If you’re not keen on bringing hot-pink anything into your home, try incorporating unique textures instead.

MAN-MADE MADNESS

Pieces that have more of a handmade look and feel are popular now. While industrial pieces have come and gone (depending on your taste), that which is man-made — exposed hardware, slight imperfections, etc. — have

made their way to the top of our home décor most-wanted lists.

GRUNGE, EMBRACED

The latest clothing trends have included ’70s throwbacks but with far more toned-down colors, like the dark hues associated with ’90s grunge. (It’s likely that you’ve even seen these outfits in person, if you haven’t worn them yourself.) Now imagine that same style for home décor. We’ll admit that it sounds strange, but it somehow just works. Embrace your love for fringe or take on settes or floral art. Just consider tones that aren’t so florescent. And in the meantime, embrace your love of green. Dark and hunter greens are all over the market, and are likely to be all over our homes.

THE WINDOW TO THE SOUL

The days of big, fancy window curtains are gone! Now, folks are all

about keeping it simple. That means blinds that keep light out (or let it in, depending on your preference), and maybe a sheer curtain to top it off. The end. This style is easier on the budget and lets the windows speak for themselves, rather than covering them in layers of bright fabrics. Just be sure to keep your windows clean — with all that natural light coming in, you’re sure to see more of what sits on the surface of your glass.

OUTSIDE INSIDE Gemstones, rocks, logs, and more have been finding their way inside our homes. Nature is a timeless piece of décor — one that’s readily affordable, too. PRENATAL IMAGING CENTERS: COMFORT, QUALITY, AND AFFORDABILITY Those of you who are parents understand the joy and stress that accompanies pregnancy. Jeanette Burlbaw of Prenatal Imaging Centers understands this as well, as she has been a sonographer for 40 years. But after 25 years in traditional perinatal departments, Burlbaw decided to change the way perinatal care is performed. “Several patients complained that I had only spent 15 minutes with them. They felt rushed and dismissed,” Burlbaw explains. “A skilled sonographer can evaluate a pregnancy in that little of time, but it doesn’t allow for personal time with the patient.” This is why, in 2001, Burlbaw created her own business and named it Prenatal Imaging Centers.

Prenatal Imaging Centers currently uses equipment that Burlbaw says is normally only found in a perinatal department. “I aim to ensure quality diagnostic and patient-requested exams,” she says. “The most recent advancement in transducer technology and the computer within allows me to create a more vivid image.” The equipment used is able to produce images ranging from simple 2-D all the way to HD Live, which is a detailed, 3-D, real-time view of the womb.

Burlbaw explains that when she started her practice, she bought the best equipment available and set her schedule to allow an hour for each diagnostic and 3-D patient exam. “I didn’t want to be rushed, nor did I want patients or their friends and family that accompanied them to feel rushed,” she continues. “My intent was for everyone to leave happy and with their questions answered.” In a standard perinatal care setting, the sonographer’s primary goal is to get the information the physician or midwife needs to evaluate the pregnancy and

SKC: Are most cases of air-travel anxiety based off fear? KCCAT: There are any number of triggers and stressors that might make air travel stressful for someone. There are certainly some who have anxiety about the dangers of a plane crash, but a greater number report difficulty with fears surrounding the social or physical consequences of having a panic attack. Other fears include health problems occurring, such as claustrophobia.

Many people turn to alcohol to relax before or during a flight. Is this a good form of relaxation? An ideal approach to flying mimics everyday health recommen-

Your body will already be aroused by travel. If your body pumps extra adrenaline because there is a lack of nutrition or sleep, then you’re more likely to be sensitive to anxiety triggers. It’s a good idea to refrain from using alcohol to reduce anxiety. It may appear to work well in the short term but, over time, it can increase sensitivity to symptoms which worsens anxiety.

How can someone ease anxiety while traveling in a plane? Arming yourself with some basic factual statistics about flying can be helpful managing anxiety, if those are a part of your fears. Anxiety feeds off the catastrophic “what if” thoughts. Engaging and distracting tasks such as talking to your companions, listening to music, or reading an absorbing book can help pass the miles. Focus on something besides your anxiety. Rigidity also increases anxiety; make sure your legs are uncrossed for better circulation.

At what point does someone need to see a professional? Do medications help? If your fears are contributing to avoidance behaviors, then it may qualify as a phobic or other anxiety disorder. Medications may be prescribed, particularly in cases of very limited travel needs. The challenges of medications are similar to alcohol. It only temporarily reduces or masks anxiety symptoms, as opposed to treating or reducing interference of the problem over the long term. WHY SAVING SENIOR ANIMALS IS A DEFINITE WIN-WIN If you’re active on social media, you probably have at least one animal-loving friend that regularly posts heart-wrenching photos of shelter animals in desperate need of homes. Sadly, many are older dogs and cats who are overlooked simply because they are “seniors.” So when, exactly, is an animal considered a senior — and why should this population be given a second chance? Although there’s not an absolute standard, many animal welfare organizations and veterinary specialists apply the term “senior” to dogs or cats between 5 to 7 years old. Although this population has the highest rate of euthanasia, seniors also have several advantages when compared to their younger counterparts. For example: •M ost senior pets are already house- or litter box-trained, and most dogs know basic leash manners. • Older animals are already fully

grown and have established temperaments that make for better pet-person matches. •S enior pets still have a lot of energy but tend to be more mellow than younger pets. •O lder pets somehow seem to know when they have been saved and are grateful for being given a second chance. Sarah Fischer, owner of Joyce’s Flowers in Old Town Lenexa, adopted her dog Arizona when he was 10 years old. For the next six years, Arizona accompanied Fischer to work every day and served as the shop’s official greeter. Last summer, just days after 16-year-old Arizona had passed away, Fischer headed to a local shel-

ter not intending to adopt another dog, but just hoping to get some “furry interaction and cuddles.” Fischer shared her story with a shelter volunteer who exclaimed, “I have the perfect dog for you!” Fischer was then introduced to Harley, a 10-year-old beagle. Her heart melted. Needless to say, Harley went home with Fischer that day, and has accompanied her to the shop every day since then. Although she didn’t purposely seek out older dogs when she adopted Arizona and Harley, Fischer says she will definitely try to adopt an older dog in the future. “I hit the jackpot with both of them,” she says.

Erica Stone experienced her first seizure at just 3 years old. She was diagnosed with epilepsy at age 6. Her seizures occurred every few years, and her childhood doctors in Sedalia, Missouri, reassured Stone and her family that she would grow out of them — but that never happened. THE MYSTERY BEHIND EPILEPSY The causes of epilepsy may be related to genetics or a brain injury, but most people (two out of three) have cryptogenic or idiopathic epilepsy, which means the causes are unknown. In Stone’s case, she has not had a brain injury and no one else in her family has seizures. Epilepsy also can be caused by many conditions, including strokes, brain tumors, brain infections, loss of oxygen to the brain, traumatic brain or head injuries, certain genetic disorders, and other neurological diseases. Stone says she is fortunate that she doesn’t have seizures as often as others. She now can go from months to years without one. But, she says, they do spontaneously occur, despite the fact that she is careful to take proper precautions to avoid them. All seizures have a beginning, a middle, and end. However, the different parts of a seizure may not be visible or easy to tell apart. An aura may be the first symptom of a seizure. Some people experience warning signs such as visual loss or blurring, racing thoughts, dizziness or lightheadedness, headaches, nausea, and numbness. However, some people begin seizures with a loss of consciousness or awareness rather than an aura. The middle of the seizure, which is called the ictal phase, can involve blackouts, confusion, loss of consciousness, unusual smells and tastes, out-of-body sensations, panic, fear or pleasant feelings, difficulty speaking, lack of movement, tremors, convulsion, sweating, difficulty breathing, a racing heart, and more. It may be difficult to tell when someone is having a seizure, as some people may just appear confused or may appear to be staring at something that isn’t there. Other times, a person may fall or shake. The end of the seizure is also the beginning of the postictal phase, which is the recovery period. Symptoms of the postictal phase may include: confusion, sleepiness, a slowness to respond, memory loss, scared or anxious feelings, headaches, thirst, exhaustion, possible injuries as a result of the middle of the seizure, and more. It can take anywhere from a matter of minutes to hours to recover from a seizure. About one-third of people living with epilepsy live with uncontrollable seizures, as no available treatment works for them. But the good news is that for most people, medicines and treatments can stop or control seizures. And, Stone stresses, most people living with epilepsy can live a normal, happy life. Her advice for those living with epilepsy: “Keep pushing forward. Never let epilepsy get in the way of your dreams. We have epilepsy, but epilepsy does not define who we are as individuals.”

Italian Beef Sandwiches Yield: About 12 sandwiches

3 pounds of beef roast 1 G ood Seasons Italian dressing & recipe mix packet 1 jar of pepperoncini with liquid 2 cans of beer 2 onions, sliced Swiss cheese slices Split-top hoagie buns Nonstick foil

Toss beef roast, Italian dressing mix, pepperoncini, beer, and onions into a crock pot and cook on high for 8 hours. Once finished, shred the beef.

Tip: You can cook the roast and make sandwiches one day ahead and refrigerate until ready to heat. Or, use slider buns for a lighter version of the sandwich. Be sure to reduce the amount of juice in the meat (make sure it’s not too dry) so the buns don’t become soggy overnight.

Preheat your oven to 350 degrees. Place a Swiss cheese slice on each bottom bun. Layer with lightly drained shredded roast beef. Top with the pepperoncini and onions

DR. DENT: TREATING YOU AND YOUR CAR WITH RESPECT “This is what I would do if it were my car” is what you will be told if you take your vehicle to Dr. Dent auto body shop in Overland Park, Kansas. Dr. Dent’s staff and ownership have two key concerns when repairing a dent or other body damage on a customer’s vehicle. Their first concern is quality. They believe their services should meet a standard of

excellence they would expect for their own vehicle. The second key concern is customer satisfaction. Dr. Dent’s ownership teaches that no employee should ever recommend a repair they would not want for their own vehicle. This is why, when Dr. Dent’s staff speak to customers, they say, “This is what I would do if it were my car.” Dr. Dent’s principles have been central to the business since it was started in 1990 by Delton Griffe and Don Elliot. It began with the focus of providing excellent service at a fair price. Elliot decided to retire from the business in 2011. Griffe, along with Justen Greene (who began working at Dr. Dent in 2006) decided to buy out Elliot’s share so he

could retire. Griffe and Greene have run the business for about five years, but they have made sure to continue the original Dr. Dent principles of quality and customer satisfaction. “We base our work off of quality,” explains Greene. “People tell us our quality and our hospitality are why people like us.” Dr. Dent embraces quality in its business by expanding services while making sure the core services are held to a matchless standard. Greene says the shop is trusted by a number of prominent organizations in the Kansas City area, including the Miami County Police Department, as well as clients from as far away as Burlington, Kansas, and Chillicothe, Missouri. “We do a lot of Johnson


County cop cars and ambulances too,” he adds. “I think people seek out our services based on quality. Quality is probably the biggest thing to us.” The second cornerstone of Dr. Dent’s success is customer satisfaction. Dr. Dent’s ownership has made this a focus by increasing outreach, making a promise to customers that they will only do what they believe is best for the customer’s vehicle, and making sure the business is focused on the person rather than the transaction. “Our retail has gone up dramatically. We have focused more on social media and reaching out to people,” Greene shares. “We held a barbecue for a Porsche club that came to us. Thanks to that little event, we now do Porsches for people all over town. I try to promote as much as I can on social media as well because that is where everybody is.” The belief that the customer’s vehicle should be treated like an employee’s

vehicle is central to Dr. Dent’s culture. “I always tell people, ‘This is what I would do if it were my car.’ I’m not going to try to get more money out of them,” Greene says. “If they walk away with more information, then they end up wanting to work with you.” Finally, Dr. Dent wants its customers to feel respected. “We treat everybody like family, not like numbers,” he explains. “You wouldn’t rip off your family member. We take the time to explain things.” Greene says this applies to employees as well. “Anything our staff needs, we would do for them. If they need time off to go be with their kids, we don’t give people a hard time about those things.” Dr. Dent’s focus on quality and customer satisfaction has made it into a respectable company. Since transitioning ownership in 2011, Dr. Dent has improved its focus on customer

satisfaction through new methods while making sure to stay true to its foundation. “We’re well known for our quality and our customer satisfaction,” Greene says, and there are no plans to change this reputation.
