






People naturally think burgers and hot dogs when they envision grilled foods. But there is so much more that can be cooked over an open fire, including desserts and even pizza. Grilling lends a distinctive smoky taste to both the crust and the toppings. Grilled pizzas start with a
basic dough that cooks up quickly, and then can be customized with many different flavor profiles, as is the case with “The Jamaican.” This pizza, courtesy of “Grilled Pizzas & Piadinas” (DK) by Craig W. Priebe with Dianne Jacob, offers jerk-smoked pork with a sweet and savory chutney.
Basic Grilled Pizza Dough
Makes two 12-inch crusts
3⁄4 cup warm water
1 package active dry yeast
(about 21⁄4 teaspoons)
1⁄2 teaspoon sugar
11⁄2 cups unbleached flour
1⁄4 cup whole wheat flour
1 teaspoon kosher salt
2 tablespoons cornmeal, preferably white, plus additional
for the pan
2 tablespoons extra virgin olive oil, plus 1⁄4 teaspoon for the bowl
1. Pour the warm water into a small bowl or measuring cup. Add the yeast and sugar and stir until the yeast dissolves into a smooth beige color. Let it stand on your counter for about 5 minutes to prove that the yeasted water is active. A thin layer of foam will appear on the top, indicating that the batch is good.
2. Add the flours, salt, and cornmeal to a 4- or 5-quart standing mixing bowl. Use the dough hook attachment on the lowest speed to mix the dry ingredients. Add the yeasted water and the 2 tablespoons of olive oil. Mix on the slowest speed to allow the ingredients to come together. You may need to scrape down the sides with a spatula. Then move to medium-high speed and knead for 2 minutes. The batter should form a ball, unless it’s too wet or sticky. If so, add only enough flour to prevent it from sticking. The dough should come off the sides cleanly and form a ball.
3. Put the remaining 1⁄4 teaspoon of olive oil in a medium bowl. The dough will be sticky, so flour your hands before picking it up, and place it in the bowl. Turn it over several times until it is coated in oil. This prevents a crust from forming on its surface as it rises.
4. Cover with plastic wrap, and place in a draft-free, warm place, 70 to 80 F, for two hours, until it rises to almost double in appearance.
5. Chill the dough in the refrigerator overnight, or for 1 hour to firm it up. Since the dough is slightly sticky, chilling the dough makes it easier to roll out. Chilling it overnight gives the dough more flavor and texture. Dough will keep in the refrigerator for three days.
6. Punch down the dough gently to remove gas.
7. Lightly flour about a foot of space on a clean, dry countertop. Flatten the dough with your hands to about a 1-inch thickness. Cut in half with a knife.
8. Put one piece of dough in the center of the floured space and sprinkle a little flour over the top. Using a rolling pin, make smooth strokes to roll out the dough starting from the center out to the edges. Roll the dough out to about a 12-inch diameter. Sprinkle the crust with a fine layer of flour. It will make the dough easier to handle, and prevent stickiness.
9. Position two cookie sheets with no sides, or two pizza screens, next to your dough. Sprinkle them generously with flour or cornmeal, so the dough will not stick. Pick up the dough with two hands and fold gently in half.
10. Transfer the dough to a cookie sheet. Unfold dough
onto the pan to make it flat and stretch out the dough to an approximate 12-inch diameter. Repeat with the second piece of dough.
11. The grill should be medium hot to grill the crust. Hold the cookie sheet close to it and slide the dough onto the grill. If the dough folds in on itself, try to move the edges quickly to form a flat crust.
12. The dough should take about 3 minutes to cook. Watch for bubbles. Lift the underside. It should be an even light brown with grill marks.
13. Pick up the crust from the middle, using tongs, and place it on your cookie sheet. Flip it over so the grilled side is face up. This browned side becomes the top of your pizza.
The Jamaican Makes one pizza
Dark plum chutney
1⁄2 cup prune juice
2 tablespoons brown sugar
11⁄2 teaspoon dried ground ginger
1⁄4 cup dark raisins
1 teaspoon cornstarch
1⁄4 teaspoon chili flakes
Smoked pork
1 8-ounce boneless pork steak, from shoulder blade or butt; or boneless ribs
1 teaspoon liquid smoke
1 tablespoon jerk-spice dry rub
1 grilled pizza crust
1 tablespoon extra virgin olive oil
1 tablespoon grated Parmesan
1 cup shredded mozzarella
1⁄2 cup tomato sauce
1⁄2 ripe mango, cut into 1⁄4inch slices
2 tablespoons cilantro, garnish
1. To make the Dark Plum Chutney, mix all the ingredients together in a small saucepan. Bring to a boil and simmer over low heat for about 10 minutes. The sauce should be slightly thick, spicy and sweet.
2. Rub the pork with liquid smoke, followed by the dry rub. Grill over medium hot coals, or sauté in a skillet over medium heat, until cooked through, about 20 minutes. When the pork is ready, it will be tender and easily torn apart. Let the meat cool slightly, and tear into chunks, discarding any bits of cartilage, fat or gristle.
3. Brush the grilled side of the pizza crust with olive oil. Dust with the Parmesan and then with the mozzarella. Drop spoonfuls of the tomato sauce onto the pizza.
4. Add the pork pieces, followed by the mango, in an alternating pattern. Drizzle the chutney over all.
5. Slide the pizza onto the warm grill. Grill for 5 to 8 minutes, or until the bottom crust is crispy. You also can broil the pizza for a few minutes to brown the toppings.

Memorial Day is celebrated annually on the last Monday of May across the United States. The proximity of Memorial Day to the summer solstice has led many to view the weekend preceding the holiday as the unofficial kickoff to summer. However, Memorial Day is about more than backyard barbecues and weekend getaways.
Memorial Day honors service members who died while serving in the United States military. Though Memorial Day traces its origins to the years following the American Civil War in the mid-nineteenth century, it did not become an official federal holiday until 1971. That’s one of just many interesting facts about Memorial Day that are worth noting as the United States prepares to commemorate the sacrifices of military personnel who died in service of the country.
• Memorial Day began as something of a grass roots movement. According to History.com, by the late 1860s individuals in towns across the war-ravaged United States began holding springtime tributes to soldiers who lost their lives during the American Civil War.
• Among the more notable postwar commemorations was one organized by former slaves in Charleston, South Carolina. That commemoration occurred less than a month after the Confederate forces surrendered in 1865. Despite that, History.com notes that in 1966 the federal government declared Waterloo, New York, the birthplace of Memorial Day.
• Postwar commemorations also were organized by northern veterans of the Civil War. General John A. Logan, who led an organization of Union veterans, called for a nationwide day of remembrance in May 1868. General Logan referred to the holiday as Declaration Day and chose May 30 because it was not the anniversary of any specific battle and therefore unlikely to be viewed by some as controversial.
• Early commemorations of Decoration Day, which gradually came to be known as Memorial Day, initially honored only those soldiers who died during the American Civil War. However, that changed over time as American servicemen fought in various wars, including both World Wars, the Vietnam War, the Korean War, and other conflicts.
• The red poppy has become a symbol of Memorial Day. That red poppy can be traced to a poem by Canadian John McCrae, who served as a Lieutenant Colonel in World War I. “In Flanders Field” notes the red poppies that grew in fields where countless soldiers had been buried in modern-day Belgium. The poem was published in 1915, three years before the war ended. Sadly, McCrae himself was a casualty of the war, succumbing to pneumonia in France in 1918 while still in the service.

Various dishes are associated with country cooking, from macaroni and cheese to grits to collard greens. Buttermilk biscuits also are high on the list. Hush puppies are another treat that often are whipped up in country kitchens. Legend states that these crispy bites were tossed to hunting dogs so that the dogs wouldn’t bay and scare off the game planned for the evening’s meal. Hush puppies can be served in lieu of bread or muffins alongside grilled and fried fish, or other meats.

1 cup yellow cornmeal
1 cup all-purpose flour
1⁄3 cup minced yellow onion
1⁄4 cup fresh corn kernels
1⁄2 tablespoon granulated sugar
2 teaspoons onion powder
1 teaspoon baking powder
11⁄2 teaspoons kosher salt
1 cup buttermilk
1 extra-large egg
4 cups canola oil
1. Combine the first eight ingredients in a medium mixing bowl. In a separate bowl, mix together the egg and buttermilk.

Gardening is a worthwhile endeavor that not only passes the time, but can be a form of exercise and relief from the daily grind. Gardens also provide ample opportunity to experiment, as individuals can produce everything from vegetables to bountiful blooms.
Recent years have witnessed a growing emphasis on eco-friendly gardening that aims to reduce reliance on chemical fertilizers and pesticides in an effort to protect the planet. One way to do so is to rely on native plants.
Native plants are indigenous to particular regions. The National Wildlife Federation says native plants grow in habitats without human introduction or intervention. Native plants have formed symbiotic relationships with local wildlife over thousands of years, which the NWF notes makes them the most sustainable options. Native plants help the environment and thrive with little supplemental watering or chemical nutrients.
Native plants vary by region. In arid climates, certain succulents may be native because they don’t need much rainfall to thrive. In lush wetlands, succulents might be out of place.

Wildflowers and native grasses may be the types of native plants found in abundance, which may grow up and out quickly. These other tips can help the process.
• Plan and prepare the site by removing weeds and turning over the soil. This will give seedlings an opportunity to take root without competition from weeds. Seedlings will give gardens a faster head-start than waiting around for seeds to germinate. However, gardeners can start seeds indoors and then move them outside once they are seedlings.
• Avoid planting native plants in rows, as that’s not how they’re likely to grow naturally. Vary the placement so the plants look like they sprouted up haphazardly.
• Gardeners can still exert some control over native gardens prone to growing a little wild. Borders and paths can better define the growing areas.
• Grow Native!, an initiative from the Missouri Prairie Foundation, suggests planting two to four species in broad sweeping masses or drifts. Mix grasses with flowering plants. The grasses produce dense, fibrous roots that can prevent weed growth. Native plants should require minimal care. Keep an eye on them and supplement with water if conditions have been especially dry.

new and delicious pork dish. This recipe for “Matambre de Cerdo (Stuffed Pork Tenderloin)” from James Campbell Caruso’s “España: Exploring the Flavors of Spain” (Gibbs Smith) showcases a Spanish take on pork.
The recipe might provide insight into Spanish cuisine for those who have never been to Spain, while those who have might be instantly transported back to southwestern Europe with their first delicious bite.
Matambre de Cerdo (Stuffed Pork Tenderloin) Serves 4
2 pork tenderloins, trimmed of fat
Salt and pepper
1⁄2 cup extra virgin olive oil
1 yellow onion, diced 4 cloves garlic, slivered 1⁄2 cup finely diced jamón serrano
4 cups diced mushrooms
2 tablespoons chopped parsley
1 tablespoon chopped sage
1⁄2 cup Spanish white wine
Heat the oven to 350 F. Open the tenderloins with a full-length cut that goes about 3⁄4 of the way through the meat. Flatten out the tenderloin and season it on both sides with salt and pepper. Set aside.
Heat the olive oil in a skillet, and sauté the onion and garlic on medium heat for 12 minutes. Add the jamón, mushrooms, parsley, and sage; continue cooking for 20 minutes. Add the wine and cook for 5 more minutes. Remove from heat and allow to cool. Spread the mixture over the flattened tenderloin. Roll the tenderloin around the filling and set it on a sheet pan with the seam side down. Roast in the oven for 25 minutes. Remove from the oven and cut into 1-inch slices. Serve 2 slices per plate.

1. Heat a large sauté pan over medium-high heat. Slice the tofu into 1⁄3-inch-thick slabs. Add the grapeseed oil to the hot pan and fry the tofu until it is golden brown, about 4 minutes per side. Remove from the pan and let cool. Slice the fried tofu into small strips.
2. Whisk together the mirin, sesame oil and vinegar in a small bowl for the dressing. Set aside.
3. In a large salad bowl, gently toss the cooked rice, grape halves, scallions, pepper slices, and fried tofu strips together. Fold in the dressing and season to taste with salt and pepper.
4. Add the cashews just before serving (they will get soft and rubbery if allowed to sit).
