6 Easter egg coloring tips

Coloring Easter eggs is a timehonored tradition dating back more than 2,500 years. There is evidence that people living in the ancient settlement of Trypillia dyed eggs. Ancient Persians also were believed to paint eggs for Nowruz

(Persian New Year). Christians adopted similar traditions to symbolize aspects of the Easter story. Originally Christians dyed eggs red to represent the blood of Jesus Christ that was shed on the cross, according to Chase Oaks Church. Good Housekeeping reports early Christian mis-

sionaries adapted the dying tradition to include more egg colors to represent different aspects of the Easter story. Yellow represented the resurrection, blue represented love and red remained a symbol of Christ’s blood. Whether families dye eggs to symbolize the Easter miracle or simply

for fun, the following are some coloring tips to enhance the process.

1. Prevent cracked eggs. Most colored eggs are hard-boiled. To prevent cracking during the boiling process, add a teaspoon of vinegar and a tablespoon of salt to the boiling water. Additional anti-cracking measures include rubbing half a lemon on each shell before boiling.

5. Create distinctive designs. By covering portions of the bare eggs before dipping into color, people can create unique designs. Things like masking tape, rubber bands, wax (or crayons), and even twine can be used. The dye will only take on the uncovered areas, leaving white behind.

6. Dyes are not the only way to color eggs. Everything from watercolor paint to acrylics to decoupage can be used to cover eggs in vivid colors. Egg decorators also can use colored yarns, fabric or stickers. Search for creative materials to set Easter eggs apart this year. Coloring eggs is a popular Easter tradition, and there are many ways to ensure this beloved activity produces beautiful results.

Roasted lamb is an Easter Sunday classic

Easter is a religious holiday that occurs each spring. Easter commemorates and celebrates the resurrection of Jesus Christ. Easter is full of symbolism, but it’s also steeped in traditions, including family meals.

Lamb is a popular Easter Sunday meal, and this recipe for “Roasted Lamb with Roasted Asparagus” from “Feast of the Seven Fishes: A Brooklyn Italian’s Recipes Celebrating Food & Family” (Powerhouse Books) by Daniel Paterna can make for the perfect Easter entrée.

Lamb is most tender in spring and mild in flavor, and it pairs well with the earthiness of

asparagus.

Roasted Lamb with Roasted Asparagus

Serves 8 to 10

Lamb:

1 leg of lamb or loin of lamb, about 4 to 5 pounds 5 garlic cloves, sliced

2 tablespoons olive oil

4 cups dry white wine

1 fresh bay leaf

4 sprigs fresh rosemary

4 to 5 sprigs fresh thyme

Cut small slits in the meat of the lamb with a sharp paring knife. Insert a slice of the garlic into each slit. Place the lamb in a large sealable plastic bag and add the olive oil, 2 cups white wine, bay leaf, rosemary, thyme, salt, and pepper. Seal the bag tightly and place in the refrigerator to marinate for 12 hours. Remove the lamb from the fridge the next day, at least 4 hours before roasting. Keep the lamb sealed in the marinade bag and allow it to come to room temperature. Heat the oven to 400 F. Remove the lamb from the bag with marinade. Place it on a rack in a roasting pan. Add 2 cups of wine. Roast for 11⁄2 hours or until the thermometer reads 150 to 160 F. Baste with drippings while roasting. Serve warm.

Asparagus:

4 pounds of asparagus, remove woody ends

2 cups coarse bread crumbs

1 cup grated Romano cheese

2 tablespoons garlic powder

Freshly ground black pepper, to taste

4 large eggs

Sea salt, to taste

Preheat the oven to 400 F. Place the bread crumbs, cheese, garlic powder, and black pepper in a dish or bowl wide enough to hold the asparagus. Mix well to combine thoroughly.

Put the eggs in another dish or bowl of similar size and beat well. Working in batches, dip the spears into the egg, making sure they are coated well. Immediately place them in the bread crumb mixture and toss until each spear is fully coated. Transfer the breaded asparagus to a large baking sheet.

Place the asparagus in the preheated oven and bake for 30 minutes or until the breading is browned and crispy. Serve with wedges of fresh lemon.

Activities to strengthen the heart

The heart is a vital component of the human body. Without a functional heart, life is simply not possible. As with other muscles in the body, it is important to give the heart a workout to improve its strength and vitality. Intermountain Health says an individual who dos not exercise is more than twice as likely to get heart disease as someone who does. UCI Health says heart disease is the No. 1 cause of death worldwide.

Exercise is an ideal way to strengthen the heart and reduce your risk for heart disease and other conditions. Certain activities are prime for boosting heart health.

• Aerobic exercise: Aerobic exercise raises heart rate and gets the blood pumping throughout the body. Aerobic activity improves circulation, and over time it ensures the heart does not have to work as hard to pump blood, thus potentially lowering blood pressure. Also, aerobic exercise can reduce the risk for type 2 diabetes and can help those with diabetes to control blood glucose more readily. Aerobic exercises include brisk walking, running, swimming, cycling, playing tennis, and other activities that get the heart pumping. Aim for 30 minutes each day, for at least five days a week.

• Resistance/weight training: Building muscle can help the body burn fat and boost metabolism. This type of training can use weights or the body’s own resistance. Improving muscle mass while reducing body fat and excess weight are heart-healthy steps to take. Strength training can be incorporated into a routine two to three days a week.

• Balance and flexibility exercises: A person may wonder what flexibility and balance has to do with heart health. While there isn’t a direct correlation to how the heart works, these types of activities will help reduce the risk of falls or injuries to muscles and joints while working out. Inactivity is dangerous for the heart, so ensuring that physical activity can continue is important. Flexibility and balance exercises keep the body limber, and can be incorporated into daily workouts. Stretching, tai chi, yoga, and pilates can be included two or three times a week.

• Healthy eating: The foods people eat can affect heart health. Opt for lean protein sources and foods that include healthy fats. Salmon, avocados and olives are some options. Balance these foods with whole grains that are full of fiber, which can help a person feel fuller longer. Fiber also is essential for preventing atherosclerosis, a condition that causes hardening of the arteries.

• Meditation: Slowing down, performing deep-breathing exercises and meditation can reduce stress. That, in turn, can help prevent damage to the heart.

Strengthening the heart and maintaining its health involves various activities that can be incorporated into daily routines.

The recipes for “Farmhouse Skillet” from “Lord Honey Traditional Southern Recipes with a Country Bling Twist” (Pelican Publishing) by Chef Jason Smith, puts together a blend of savory ingredients into an egg casserole that can be a winner on any brunch table.

Farmhouse Skillet Serves 8-10

1 pound bacon, diced

2 cups cubed cooked ham

1⁄2 pound breakfast sausage, cooked and crumbled

1 small purple onion, diced

1⁄2 red bell pepper, diced

1⁄2 yellow bell pepper diced

10 eggs, beaten

1⁄2 cup heavy cream

1 20-ounce package frozen shredded hash browns, or tater tots, thawed

Salt and ground black pepper to taste

Preheat oven to 350 F. In a very large cast-iron skillet (12-inch or larger), over medium heat, cook the bacon until crispy. Then add the ham and sausage and stir. Add the onions and peppers, and sauté for 5 minutes, always stirring. In a small bowl, whisk the eggs and heavy cream. Stir the hash browns into the skillet, and add salt and pepper to taste. Cook for 5 to 8 minutes, until hash browns start to brown. Remove from heat.

Add the egg mixture, top with cheese, and bake for 20 to 25 minutes or until bubbly and cheese is melted.

A nutty start to the day

Pecan trees grow in various areas of the central and southern United States. Pecan trees are prized for their delicious nuts. There’s debate whether pecan is pronounced as pe-CAN (as in can of soda) or peCAHN, (as in con artist), and it varies depending on where you live. However, there is no debate that pecans can be versatile ingredients in both sweet and savory recipes. Pecans are perhaps best known from pecan pie, but they’re also tasty in cookies and cakes and

sprinkled atop vegetables. They’re also a key ingredient in this recipe for

Praline-Pecan French Toast Servings: 8-10

1 16-ounce French bread loaf

1 cup firmly packed light brown sugar

1⁄3 cup butter, melted 2 tablespoons maple syrup

3⁄4 c large eggs, lightly beaten

1 cup 2 percent reduced fat milk

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1. Cut 10 (1-inch-thick) slices of bread. Reserve remaining bread for another use.

2. Stir together brown sugar and next two ingredients; pour into a lightly greased 13-by-9-inch baking dish. Sprinkle with chopped pecans.

3. Whisk together eggs and next four ingredients. Arrange bread slices over pecans; pour egg mixture over bread. Cover and chill 8 hours.

4. Preheat oven to 350 F. Bake bread 35 to 37 minutes, or until golden brown. Serve immediately.

Get on the water with the right kayaking gear

Kayaking is a wildly popular paddlesport. Paddlesports offer people unique ways to enjoy nature while getting up close and personal with expansive waterways. Kayaking is remarkably accessible for people of all skill levels and interests.

According to the Outdoor Foundation’s 2019 Special Report on Paddlesports and Safety, kayaking has seen a consistent upward trend in participation for the last five years. Today, recreation-

al kayaking is the most popular paddlesport, with more than 11 million participants in the United States. And the activity is almost evenly split among men and women (51 percent and 49 percent, respectively).

Many kayakers can enter the water with relatively no instruction in kayaking and take to the sport like a duck to water. Of course, the right gear can make all the difference for both experienced and novice kayakers. Anyone

who plans to be a consistent kayaker should probably invest in a kayak of his or her own. The right kayak depends on where kayakers plan to use it.

Sea kayaks can sail easily through choppy conditions. Tandem kayaks carry two or more people and have more storage space. Touring kayaks are designed for long distance kayakers. Siton-top kayaks are ideal for beginners and casual paddlers.
