Thanks to their portability and diverse flavor profiles, cookies remain a favorite treat to enjoy at home or bring to parties at others’ homes. Cookies also frequently are go-to offerings at bake sales and school functions.
Although cookies are relatively easy to make, people sometimes find the end products does not turn out as expected. Nobake cookies, including this recipe for “Peanut Butter No-Bake Cookies” courtesy of “Live Well, Bake Cookies” (Rock Point) by Danielle Rye, are a perfect workaround for those who have previously had mixed results when baking cookies.
PEANUT BUTTER NO-BAKE COOKIES MAKES 32 TO 34 COOKIES
1⁄2
cup (1 stick) unsalted butter, cut into tablespoon-size pieces
13⁄4 cups granulated sugar
1⁄2 cup whole milk
3⁄4 cup creamy peanut butter
1 teaspoon pure vanilla extract
31⁄4 cups quick-cooking oats
1. Line two large baking sheets with parchment paper or silicone baking mats and set aside.
2. Place the unsalted butter, granulated sugar and milk in a saucepan and heat over medium heat, making sure to stir often until the butter is melted and the ingredients are well combined. Bring the mixture to a rolling boil and allow to boil for 1 minute without stirring.
3. Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the quick oats and mix until all the oats are coated with the mixture.
4. Using a 11⁄2-tablespoon cookie scoop, drop scoops of the mixture onto the prepared baking sheets, and gently press them down to flatten them slightly. Allow to cool for 45 minutes to 1 hour, or until the cookies have firmed up. The cookies will continue to firm up the longer they cool.
5. Store the cookies in an airtight container at room temperature for up to 1 week.

Aside from needing new tires + alignment, these are the repairs I know of. I’m not a mechanic or savvy with cars but did recently take it to Fremont Toyota to get it serviced. The repairs I’m aware of are the back window needs a new seal as it leaks. The wiring in the front driver’s side signal overheated & melted the bulb & casing. Now both front signals need to be looked at. Right, should only need a bulb. The passenger side window needs a new switch. It rolls down but not up (the drivers side contols can roll that window up and down). The spring in the hood that keeps it open needs replaced. I currently just use something to hold it up.The windshield has a crack but doesn’t interfere with the view it’s low to the hood. Lastly it will need a differential service. Overall car runs great & is drivable. Only pressing repair is the front signals. Toyota’s recommendations that can be chipped away at are listed in order of importance. Replace the power steering rack and tie rods. Replace the Left & Right front axle seal/ axle nut. Replace valve cover gaskets & tube seals. $4,500. Call 619876-2770(39)rs

This recipe for “Pâté-Stuffed Mushrooms,” from “PlantBased Gourmet” (Apollo Publishers) by Chef Suzi Gerber can be served as a tasty appetizer or even serve as a plant-based main course.
Pâté-Stuffed Mushrooms
Makes 8 to 10 mushrooms
8 ounces medium cremini mushrooms (with caps larger than a silver dollar), stems removed and reserved for pâté 1⁄4 cup balsamic vinegar
1⁄4 cup avocado oil
Pinch salt
Pâté
1 cup walnuts, toasted
- Stems from 8 ounces medium cremini mushrooms, roasted 1⁄4 white onion
4 garlic cloves
1⁄2 teaspoon dried tarragon
1⁄8 teaspoonlemon zest
Pinch nutmeg
Pinch salt
Pinch black pepper
1 tablespoon tamari or soy-free sauce
1. Combine the mushrooms with the balsamic vinegar, avocado oil and salt in a zip-top bag; seal, and let sit at room temperature for 30 minutes, flipping every 5 minutes.
2. Preheat oven to 350 F.
3. Combine all the pâté ingredients in a food processor and process until all ingredients reach a consistent small dice, the size of coarse sea salt.
4. Place the mushrooms open side down on a baking sheet lined with parchment paper. Roast for 12 minutes, flipping after 8 minutes.
5. To serve the pâté warm, remove the mushrooms, fill with the pâté, and return to the warm oven for 2 to 4 minutes; otherwise, let the mushrooms cool, then fill with the pâté and serve at room temperature.

Keep the focus on fun during family baking sessions
Baking is a beloved tradition in many families. Though family baking sessions tend to be especially popular during the holiday season, there’s nothing stopping families from breaking out the flour and having some fun in the kitchen at any time of year.
Fun is the focus when families bake together, and the following are some ways to make such sessions enjoyable for everyone.
• Encourage input. The designated family baker may have a host of go-to recipes up his or her sleeve, and baking such specialties might be a necessity on birthdays or during the holiday season. But all baking sessions need not be beholden to family favorites. Encourage all family members to recommend recipes prior to family baking sessions, even allowing a different person to choose the recipe each time. This can make the whole family enthusiastic about baking together and may even help families discover some new foods.
• Remember that patience is a virtue. Family baking sessions require patience, especially when young children are involved. Kids’ attention spans may wane or they may grow upset if they spill some ingredients. Remain patient at such times and let kids know making a mess is part of the fun of baking together.

But one need not stray from home to enjoy regional fare. For instance, foodies who enjoy foods typically associated with the southeastern United States can indulge that passion in the comforts of their own kitchens.
This recipe for “Southern-Style Buttermilk Fried Chicken” from AllRecipes.com is sure to satisfy anyone’s craving for southern cuisine.
Southern-Style Buttermilk Fried Chicken
Makes 8 servings
2 cups buttermilk
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 whole chicken, cut into pieces
2 cups all-purpose flour
1 tablespoon baking powder
1 ablespoon garlic powder
1 tablespoon onion powder
5 cups vegetable oil for frying
Whisk together buttermilk, mustard, salt, pepper, and cayenne in a bowl.
Pour buttermilk marinade into a resealable plastic bag. Add chicken pieces, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 to 8 hours. Combine flour, baking powder, garlic powder, and onion powder in another resealable plastic bag; shake to mix thoroughly.
Working with one piece at a time, transfer marinated chicken to the dry ingredient bag, seal the bag, and shake well to coat. After all chicken pieces are coated, repeat the process by dipping them in buttermilk marinade and shaking in the dry coating again. Then heat oil in a large frying pan over medium-high heat. Place chicken on the pan.
Fry chicken in batches in hot oil, turning chicken occasionally, until golden brown and juices run clear. An instant-read thermometer inserted into the meat should read at least 165 F.

Potato soup makes a filling meal
Many Irish dishes focus on simple, fresh ingredients that can be purchased close to home. Potatoes long have been a staple of Irish cooking. Brought to Europe by Spanish explorers from the New World, the potato put an end to famine in regions of northern Europe, like Ireland. Smithsonian notes that, by the end of the 18th century, roughly 40 percent of the Irish ate no solid food other than potatoes. If that sounds like a boring diet, it’s good to note that all that was necessary to make potatoes desirable and more versatile was a little creativity.
Potato soup is one way to experiment with potatoes. There are many different takes on potato soup, but most classic Irish recipes feature potatoes, stock, leeks, and onions. But that does not mean potato soup can’t be enhanced by other ingredients, like those found in this recipe for “Potato, Escarole and Country Ham Soup” from “The Culinary Institute of America Book of Soups” (Lebhar-Friedman Books).
Potato, Escarole and Country Ham Soup
Makes 8 servings
1tablespoon unsalted butter
1onion, diced (about 11⁄4 cups)
1leek, white and light green parts minced (about 11⁄4 cups)
1celery stalk, diced (about 1⁄2 cup)
1garlic clove, minced (about 1⁄2 teaspoon)
1 quart chicken broth
2 yellow or white potatoes, peeled and diced (about 2 cups)
1 sprig fresh or 1⁄2 teaspoon dried thyme
2 cups chopped escarole (about 8 ounces)
1 cup diced country ham
1⁄4 teaspoon salt, or to taste
1⁄4 teaspoon freshly ground black pepper, or to taste
Heat the butter in a soup pot over low heat. Add the onion, leek, celery, and garlic; stir until they are evenly coated. Cover the pot and cook until the vegetables are tender and translucent, 6 to 8 minutes.
Add the broth, potatoes and thyme. Simmer the soup until the potatoes are tender enough to mash easily, about 20 minutes.
Remove the thyme and discard. Puree the soup. Return the soup to the pot and bring to a simmer.
Add the escarole and diced ham and simmer, 12 to 15 minutes, or until all the ingredients are tender.
Season with salt and pepper. Serve the soup in heated bowls. Tip: Country hams have an altogether different taste and texture from that of boiled hams. They have been cured for lengthy periods and have a unique salty, smoky taste. Ask your deli manager or butcher to help you find country ham or a suitable substitute.

Stuffed Mushrooms
Makes 28 servings
Olive oil, to coat baking sheet
28 mushrooms (21⁄2 inches in diameter), stemmed
1⁄2 cup butter (1 stick)
1 small onion, minced
2 cloves of garlic, peeled and minced
3⁄4 cup Italian breadcrumbs
1⁄2 cup Romano cheese, grated
3 tablespoons fresh Italian parsley, chopped Salt, to taste
Freshly ground black pepper, to taste
1. Preheat oven to 350 F. Drizzle olive oil on baking sheet and coat thoroughly.
2. Gently clean the mushrooms and remove stems. Finely chop stems. Melt butter in a skillet over medium heat. Add stems, onion and garlic, and sauté until stems and onions are soft and garlic is fragrant.
3. In a mixing bowl, add bread crumbs, cheese and parsley. Season with salt and pepper and stir to combine. Add sautéed mixture to bread crumb mixture and mix well.
4. Spoon filling mixture into mushroom caps. Arrange on prepared baking sheet, stuffed side up. Bake about 20 to 25 minutes, or until the mushrooms are tender and the tops are golden. Cool for several minutes before serving. Arrange on serving tray or platter. Serve.

The good news is that spinach is a versatile ingredient and can be added to many dishes relatively easily. As an alternative to meat-based dishes, “Spinach Balls” serve up flavor in easyto-portion style. Serve these with a dipping sauce as an appetizer, or place alongside pasta instead of meatballs. Spinach Balls
Makes about a dozen 1 10-ounce box frozen chopped spinach
3 eggs, beaten 1 tablespoon extra virgin olive oil
1 cup shredded sharp cheddar cheese
2⁄3 cup gluten-free bread-
1 teaspoon dried parsley
1⁄4 to 1⁄2 teaspoon garlic powder
6 shakes Tabasco sauce (6 shakes more if you like it hotter!)
1. Place the spinach box in the microwave for 2-3 minutes until defrosted. Set aside to cool. 2. In a large bowl mix together
the cheese, bread crumbs, salt, pepper, parsley, and garlic powder.
3. Squeeze excess water out of the spinach. Place the spinach into the cheese mixture. Mix.
4. Add oil, eggs and Tabasco sauce.
5. Form into balls and place on a parchment-lined baking sheet.
