Stuffed Chicken Breasts Serves 6

6 boneless, skinless chicken breasts

8 ounces feta cheese, crumbled

3 cups chopped fresh spinach leaves

1⁄3 cup oil-packed sundried tomatoes, drained and chopped

1 teaspoon minced lemon peel

1 teaspoon dried basil, oregano or mint

1⁄2 teaspoon garlic powder

Freshly ground black pepper, to taste

1 can (15 ounces) diced tomatoes, undrained

1⁄2 cup all-cured olives (If using pitted olives, add to the slow cooker in the final hour of cooking.)

1. Place chicken breast between 2 pieces of plastic wrap. Using tenderizer mallet or back of skillet, pound breast until about 1⁄4-inch thick. Repeat with remaining chicken.

2. Combine feta, spinach, sun-dried tomatoes, lemon peel, basil, garlic powder, and pepper in a medium bowl.

3. Lay pounded chicken, smooth side down, on work surface. Place about 2 tablespoons feta mixture on wide end of breast. Roll tightly. Repeat with remaining chicken.

4. Place rolled chicken, seam side down, in slow cooker. Top with diced tomatoes with juice and olives. Cover; cook on low 51⁄2 to 6 hours or on high 4 hours. Serve with polenta.

The story of Count Dracula

The image of a menacing yet somewhat alluring man with canines piercing the neck of an unsuspecting victim has been circulating for more than 100 years, and is believed to have evolved from ancient Romanian folklore.

Count Dracula, a mythical, blood-sucking undead creature, is based on a very real individual who has a unique place in Romanian history. Vlad Dracula, nicknamed “Vlad Tepes” (“Vlad the Impaler”), was the ruler of Wallachia in the mid-1400s. He hailed from Sighisoara in Transylvania, but spent most of his adult life in southern Romania, according to Romania Tourism.

“Dracula” translates to “Son of Dracul,” meaning “dragon” or “devil.” Vlad the Impaler was the second legitimate son of Dracul and is one of the most important rulers in Wallachian history as well as a national hero in Romania. Vlad plundered Transylvanian Saxon villages who supported his opponents, and took captured people back to his home where he had them impaled.

Despite his brutal military strategy, there is no evidence that Vlad the Impaler had any ties to the supernatural. That connection is due in large part to the 1897 novel “Dracula” penned by Irish author Bram Stoker, which inspired the vampire trope. Having never traveled to Romania himself, Stoker evoked authority by including many real locations in the country in his work. The book’s narrative was built around letters, diary entries and newspaper articles, so that readers could very well believe that Vlad the Impaler truly was condemned to live off the blood of the living for all eternity.

“Dracula” helped pave the way for more Dracula adaptations, including the 1922 film “Nosferatu,” which is the Romanian word for vampire. This, combined with the dense, dark ancient forests of Transylvania, and the fact that Romania Tourism says that Transylvania sits on one of the Earth’s strongest magnetic fields, help add to the mystery surrounding this area of the world — and the possibility that there really could be an undead predator feeding on the living. Depending on the account, Dracula can shift his shape to a vampire bat or even mist. Additional accounts say that he will be burned by sunlight, although in Stoker’s version he is able to move about during the day despite typically being nocturnal. Hollywood films helped solidify the persistent myths about Dracula over the years.

Count Dracula is a famed character that often inspires Halloween costumes. The fictional count is based on a Romanian ruler who may have killed, but not by sucking anyone’s blood.

100 Years Ago This Month: Historical events from October 1923

The month of October has been home to many historical events over the years. Here’s a look at some that helped to shape the world in October 1923.

• Switzerland issues a new decree on October 1 that bans the display of fascist emblems or the wearing of black shirts. The decree is issued in response to fascists who wanted the region to join Italy.

• A standoff begins in the Kentucky State Penitentiary on October 3 after three convicted murderers obtain guns and kill three guards in an ultimately failed attempt to escape. Authorities eventually storm the barricaded inmates on October 6 and discover the inmates had been dead for about two days.

• John Charles Carter is born in Illinois on October 4. The boy ultimately adopts the screen name Charlton Heston and becomes an Academy Award-winning actor and influential political activist.

• Cao Kun is elected president of the Republic of China on October 5. Cao is deposed just 13 months later after revelations surface regarding a bribery scandal that calls his election into question.

• Boston Braves shortstop Ernie Padgett turns an unassisted triple play on October 6. To date, the feat has been accomplished just 15 times in Major League Baseball history.

• The first section of the Appalachian Trail opens on October 7. The initial stretch is a 16-mile path from Bear Mountain in New York to the Delaware Water Gap on the border of New Jersey and Pennsylvania. By 2023, the trail had grown to 2,194 miles.

• On October 10, the New York Yankees play the crosstown Giants in the first ever World Series game at Yankee Stadium. The Giants win the game when Casey

Stengel hits an inside-thepark homerun with two outs in the top of the ninth inning.

• Nicaraguan President Diego Manual Chamorro dies suddenly on October 12. His Vice President, Bartolomé Martinez, cannot be found, forcing Interior Minister Rosendo Chamorro to serve as acting president. Martinez is eventually inaugurated as President of Nicaragua on October 27.

• A bomb explodes outside Cubs Park (now known as Wrigley Field) on October 14. No arrests are ultimately made, though the incident is attributed to union agitators angry at a decision by Judge Kennesaw Mountain Landis, then commissioner of Major League Baseball.

• The Walt Disney Company is founded when 21-year-old Walt Disney and 30-yearold Roy O. Disney, Walt’s brother, sign a contract to produce the Alice Comedies film series.

• Roadside billboards are the target of a letter sent by the British Ministry of Transport on October 18. The letter alleges the billboards are disfiguring the picturesque English countryside and urges county councils to take action.

• New Jersey’s Albert Tangora sets the world record for fastest sustained typing on a manual typewriter on October 22. Tangora averages 147 words per minute over the course of one hour.

• The air force of the Kingdom of Bulgaria is wiped out on October 25 when the country’s lone army airplane crashes.

• The reigning monarch of Iran, Ahmad Shah Qajar, appoints Reza Khan as the country’s Prime Minister on October 28. Khan overthrows Ahmad Shah two years later.

• The Republic of Turkey is proclaimed on October 29, formally ending the Ottoman Empire.

1. Preheat oven to 325 F. Chill the bowl and beaters for making the meringue (if making).

2. Combine flour, sugar and salt in a large, heavy saucepan.

3. Lightly beat egg yolks and combine with milk in a large bowl or measuring cup. Pour the egg and milk mixture into dry ingredients in heavy saucepan. Cook over low to medium heat, stirring constantly, until ingredients are thickened and

5. Slice bananas and place 1⁄3 on top of wafers.

1. Whip the egg whites with an electric mixer set at high speed.

2. Allow egg whites to foam, add cream of tartar and then gradually add sugar one tablespoon at a time. Continue whipping until sugar is well-dissolved. Add vanilla once stiff peaks have formed and whip until well-combined.

3. Spread the meringue over banana pudding, making sure to spread to the edges of the dish.

4. Bake for about 25 minutes until the meringue is lightly browned. Banana pudding will keep covered in the refrigerator for up to three days.

Chocolate Fudge Pie

Serves 8

1 pie crust (store-bought or homemade), fitted into a 9-inch pie plate

6 ounces semisweet chocolate, chopped, plus more shaved, for topping

1⁄2 cup (1 stick) unsalted butter

3 large eggs

1⁄8 teaspoon kosher salt

1⁄2 cup plus 3 tablespoons granulated sugar

11⁄2 cups heavy cream

Heat oven to 375 F. Place the pie plate on a baking sheet. Prick the crust with a fork and line with foil. Fill to the top with pie weights or dried beans. Bake until the edges are firm, 20 to 25 minutes. Remove the foil and weights and bake until just golden, 8 to 10 minutes more. Reduce oven temperature to 325 F. Meanwhile, in a large heatproof bowl set over (not in) a saucepan of simmering water, melt the chocolate and butter, stirring often, until smooth; set aside. Using an electric mixer, beat the eggs, salt, and 1⁄2 cup of the sugar on medium-high speed until fluffy, 4 to 5 minutes. Fold one-third of the egg mixture into the chocolate mixture, then fold in the remainder. Pour the mixture into the crust and bake until puffed and beginning to crack, 20 to 25 minutes. Cook for 1 hour, then chill until firm, at least 2 hours. Beat the cream with the remaining 3 tablespoons of sugar on medium high-speed until soft peaks form. Spread over the pie and sprinkle with the shaved chocolate.
