16 ounces dry ziti pasta
1 large onion, peeled and chopped
1 pound ground chicken
8 cups spaghetti sauce
Butter, for pan
3 cups mozzarella cheese, shredded
1⁄2 cup grated Parmesan cheese
Salt, to taste
1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook according to package instructions until al dente, about 8 minutes; drain well.
2. In a large skillet, brown chopped onion and ground chicken over medium heat. Add spaghetti sauce, and simmer for about 15 minutes.

3. Preheat the oven to 350 F. Coat a 9 x 13-inch baking dish with butter. Drizzle sauce in the bottom of the baking dish and arrange the ziti on top. Ladle remaining sauce over the ziti. Top with mozzarella cheese. Gently toss to completely coat the ziti with sauce and cheese. Sprinkle grated Parmesan cheese over the top.

This is the case for “Turkey Burgers,” from “The New Trailside Cookbook” (Firefly) by Kevin Callan and Margaret Howard. Turkey substitutes for ground beef in juicy burgers that can be cooked on the trail or in the backyard.
Turkey Burgers
Makes 4 patties
1 pound lean ground turkey (or chicken)
1⁄3 cup panko crumbs or dried bread crumbs
1 egg, beaten
1⁄4 cup sour cream or plain yogurt
2 green onions, chopped
1 teaspoon each dried thyme and oregano
1⁄2 teaspoon each salt and freshly ground pepper
4 whole wheat buns, halved
In a bowl, combine chicken, crumbs, egg, sour cream, onions, thyme, oregano, salt, and pepper. Gently form into four evenly shaped patties. Wrap each patty in plastic wrap or foil to keep separated. Refrigerate or freeze until ready to use. When ready to enjoy, cook burgers 6 minutes per side and serve on toasted whole wheat buns. Garnish with favorite toppings.

Everyone should have a go-to whole chicken recipe in their culinary repertoire. While roasting a chicken certainly gets the job done, it’s hard to beat the flavor profile of a chicken cooked low and slow on a smoker. The chicken can be enjoyed right off the bone, and leftovers can be pulled or chopped to use in enchiladas, tacos, salads, and more.
Fire up the smoker or grill for this “Pecan-Smoked Spicy Chicken” from “Jon Bonnell’s Texas Favorites” (Gibbs Smith).
Pecan-Smoked Spicy Chicken
Serves 4
2 cups water
21⁄2 teaspoons cayenne pepper
1 teaspoon garlic powder
11⁄2 tablespoons salt
1 tablespoon honey
1 whole all-natural chicken, roughly 5 to 51⁄2 pounds
2 tablespoons Texas Red Dirt Rub Southwestern Blend, or similar Southwestern seasonings
Combine the water, pepper, garlic powder, salt, and honey in a pot and heat over the stove until completely dissolved together; let cool in the fridge.
Place the chicken in a 2-gallon zip-top freezer bag and pour in the brine. Force out as much air as possible, then seal the bag. Allow the chicken to soak in the refrigerator overnight, turning several times to ensure the brine reaches the entire bird. Remove the chicken from the bag the following day, drain off all of the brine and pat the bird dry with paper towels. Rub the bird well with the Southwestern Blend, even the inside of the cavity. Truss the bird with kitchen twine, pulling the legs and wings in tight to ensure it cooks evenly. Place the bird in a smoker with pecan chips and cook at 250 F until done, about 2 hours.
Gas grill alternative: Turn one burner on high and leave one burner off. Place a foil package of pecan wood chips over the hot side until they begin to smoke. Place the bird on the cool side, pull down the lid and allow to smoke. Turn the bird once in a while to ensure even cooking, and refresh the chips as needed to maintain a smoky environment inside your gas grill.

The games garner the bulk of fans’ attention when football season kicks off each year at the end of summer. While the exciting action on the gridiron is a cause for celebration among millions of football fans, the food enjoyed during game day provides much to look forward to as well.
Certain foods have become part and parcel of watching a particular sport. For example, who can attend a baseball game and resist the temptation to indulge in a hot dog? For football fans, chicken wings are the go-to game day dish. There’s no shortage of ways to prepare chicken wings, but fans who like their game day grub to have a little kick can try this recipe for “Spicy Soy Chicken Wings” courtesy of Andrew Schloss’s “Cooking Slow: Recipes for Slowing Down and Cooking More” (Chronicle Books).
Spicy Soy Chicken Wings
Makes 4 servings
4lbs. chicken wings, cut into sections at the joints, tapered wing tips trimmed and discarded
Coarse sea salt and freshly ground black pepper
2⁄3 cup soy sauce
2⁄3 cup firmly packed dark brown sugar
1 teaspoon dark sesame oil
1⁄4 teaspoon cayenne pepper
1⁄8 teaspoon hot chili powder, preferably habanero
2 garlic cloves, minced
Combine the chicken wing pieces with a generous amount of salt and pepper in a large zippered plastic bag. Close the bag tightly and refrigerate for at least 12 hours or up to 24 hours.
Preheat the oven to 225 F. Transfer the chicken to a baking dish in a single layer without crowding.

Raise the oven temperature to 450 F and continue baking until the chicken browns and the sauce thickens into a glaze, about 10 minutes longer. Watch carefully near the end of the cooking time to avoid burning. Toss the wings in the sauce to coat and serve.
Variation: In a slow cooker:
Follow the recipe, cooking the chicken in a 6-quart slow cooker on high for 3 to 4 hours, instead of a baking dish in the oven. When the wings are cooked through, transfer to a bowl. Simmer the sauce with the lid of the cooker off until it thickens, about 10 minutes longer. Toss the wings in the thickened sauce and serve.

Oktoberfest is a celebration that transcends geographical boundaries. Much like people in various pockets of the globe celebrate St. Patrick’s Day and Cinco de Mayo even if they have little or no connection to Ireland or Mexico, respectively, Bavarian heritage is not a prerequisite for participation in Oktoberfest revelry.
According to Oktoberfest.de, each year millions of people are attracted to the festival of Oktoberfest. It’s not hard to see why so many people attend Oktoberfest, which is synonymous with fun, food, music, and, of course, beer. But the chance to engage in what might be best characterized as living history undoubtedly is part of the appeal of Oktoberfest as well. Oktoberfest is indeed steeped in tradition, and understanding the history of the beloved festival can make the celebration even more enjoyable.
The first Oktoberfest occurred as part of a wedding. Kronprinz Ludwig of Bavaria, who later became King Ludwig I, was set to marry Princess Therese of Saxe-Hildburghausen on October 12, 1810. The couple’s nuptials were deemed a cause for great celebration, and a horse race was held in their honor on October 17. The inspiration for the races and the subsequent celebration of Oktoberfest remains a topic of debate. But there’s no debating that Ludwig’s decision to invite the people of Munich to join in the festivities had a lasting effect, inspiring many of the city’s wealthiest residents to decorate the city. But even the less well-to-do joined in the celebrations. In fact, according to Oktoberfest-guide.com, 32,065 buns; 3,922 pounds of swiss cheese; 400 kilos of mutton; 8,120 cervelat sausages; and 13,300 pairs of smoked sausage were distributed for free. Alcohol and music also featured prominently during the inaugural Oktoberfest, as 232 hectoliters of beer and four hectoliters of Austrian white wine were served during a celebration that also featured 150 musicians.
Though the festive atmosphere of Oktoberfest is known across the globe, the celebration has not been without its tragic moments. For example, Oktoberfest 1980 was shaken by a bomb that exploded at the festival entrance on September 25. Thirteen people were killed and more than 200 were injured, and the bombing remains under investigation more than 40 years later. World wars also affected the beloved festival, which was suspended between 1914 to 1918 due to World War I and then again from 1939 to 1945 due to World War II. The years immediately following both wars also featured toned down events that were not characterized as Oktoberfest but rather autumn celebrations. Celebrations in 2020 and 2021 were canceled due to the COVID-19 pandemic.
Oktoberfest remains a popular celebration more than 200 years after the inaugural event. Though devotees insist nothing can match the annual celebration in Munich, those who can’t make it to Germany can likely find some Oktoberfest festivities close to home, wherever that home happens to be.

Bullying continues to make headlines for the way it affects people of all ages, but notably kids. In fact, bullying is a top concern for parents. According to a 2022 Pew Research Center survey of U.S. parents with children under age 18, 35 percent of respondents said they are extremely or very worried that their children might be bullied. Thirty-nine percent said they were somewhat worried. Bullying is quite common. The National Center for Educational Statistics indicated in 2019 that one out of every five students reported being bullied, and a slightly higher percentage of girls reported being bullied than boys (24 percent versus 17 percent). Cyberbullying is of paramount concern. Pew Research Center indicates 46 percent of teen respondents said they have encountered at least one cyberbullying behavior, while 28 percent have experienced multiple. The most common type of cyberbullying is being called an offensive name, followed by being victimized by the spread of false rumors online.

Resolving to be physically active is an important step towards heart health and overall well-being. Exercise is one of the most effective tools for strengthening the heart and avoiding various illnesses, including high cholesterol, that can affect cardiovascular health, according to Johns Hopkins Medicine.
Although any exercise can be beneficial, there is a fitness recipe designed to be the most effective for strengthening the heart and helping it to work to its ful potential. Here are the guidelines recommended by the American Heart Association and Johns Hopkins Medicine.
• Get 150 minutes per week or more of moderateintensity aerobic activity or 75 minutes per week of vigorous-intensity aerobic activity, or a combination of both. These activities can include running, cycling, swimming, and others that will get the heart pumping.
• Incorporate moderateto high-intensity musclestrengthening activity at least two days a week.
• Strength training should be designed to work the entire body. It doesn’t have to be traditional weightlifting, either. Body weight exercises, yoga, Pilates, and even tai chi can build strength and offer additional benefits like improving balance.
• Consider HIIT exercises.
HIIT stands for high-intensity interval training, which involves exercising as hard as one can for a short period, and then resting briefly before exercising hard again for a short pe-
riod. While there are many different HIIT programs, UT Southwestern Medical Center says a popular one involves exercising hard for four minutes, followed by three minutes of recovery time, for four cycles total.
• While stretching, flexibility and balance exercises do not directly affect heart health, they do help one stay flexible and free from joint pain and other issues that can sideline a person from exercise. Doing what
one can to protect against falls and reduce risk of being sedentary will benefit the heart in the long run.
• Don’t discount everyday activities in relation to how they can enhance heart health. Walking, gardening, playing with children, or tossing a ball to a family pet are beneficial aerobic activities.
Heart health is something to take seriously, and exercise plays a key role in strengthing the heart.
