The Chinese New Year is a unique celebration with a global footprint. While many of the more awe-inspiring celebrations may occur within China, that doesn’t mean there aren’t ways to commemorate this unique event elsewhere. Celebrations can even take place at home, where individuals can whip up homemade Chinese fare to lend their festivities a more authentic feel. This Chinese New Year, those who want to bring this unique event into their homes can try the following recipe for “Deep-Fried Pork Wontons” courtesy of Lines+Angles.

Deep-Fried Pork Wontons

For the filling:

7 ounces minced pork

2 spring onions

1 green chili, deseeded

1 tablespoon grated ginger

1 garlic clove, minced

2 tablespoon fish sauce

1 tablespoon lime juice

32 square wonton wrappers

Vegetable oil, for frying

To serve:

Mixed leaf salad; cabbage, lettuce and coriander

Sweet and sour sauce

1. Mix together the ingredients for the filling, stirring in one direction only.

2. Place double layers of wonton wrappers in front of you in a diamond shape. Place a little of the filling on the bottom half of the dough. Fold the bottom corner of dough over the filling and roll it once. Take the outside corners and bring them together, sealing with a little water. Stand the wontons on their flat bases and gently separate the two top flaps. Repeat with the remaining wrappers and filling.

3. Heat about 4 inches oil in a deep pan until gently bubbling, then fry the wontons in batches for 3 to 4 minutes or until golden brown and cooked through. Drain on paper towels then serve on beds of the mixed leaves with the sweet and sour sauce alongside.

Tip: This recipe may also be steamed or boiled.

This release serves as Public Notice that the remains of the following individual of Sheridan, Wyoming, have not been claimed by next of kin for disposition, or no next of kin have been found:

Vincent Nicholas Sorbo Jr., DOB 10/25/1954 (Age 70)

The date of death of this individual was 12/23/2024. Per Wyoming Statute 7-4-207(a), the time frame of five days since the discovery of the death has passed on 12/28/2024. On that day, without claimant, and per that statute, the Coroner of Sheridan County will start the process to see to the disposition as indicated by the policies and procedures of said county. Any and all persons in the community of interest at this time, or friends of the deceased, regardless of relation or affiliation with the deceased, may make claim upon the body for disposition. Crockpot Beef Stew With Potatoes and Peas

Makes 6 servings

2 pounds boneless stew beef

1 teaspoon coarse salt

1 teaspoon freshly ground black pepper

1⁄3 cup all-purpose flour

2 tablespoons olive oil

1 medium onion, peeled and finely chopped

2 celery ribs, rinsed, trimmed and sliced

2 cloves of garlic, peeled and pressed

2 cups baby carrots, sliced

6 small new potatoes, rinsed and cut into bitesized pieces

6 ounces tomato paste

4 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon dried parsley

2 cups frozen peas

1. Rinse the beef under cold running water and pat completely dry with paper towels. Using a sharp knife, cut the beef into generous bite-size pieces.

2. Combine the salt, pepper and flour. Place the cubed beef in a large resealable plastic storage bag. Add the seasoned flour and shake to thoroughly coat the beef with flour.

3. Heat the oil in a heavy bottomed skillet over medium heat. Add the flour-coated beef and brown on all sides.

4. Place browned beef in the crock pot. Add onions, celery, garlic, carrots, potatoes, tomato paste, beef broth, Worcestershire sauce, and parsley.

5. Cook on low for 10 hours or on high for 6 to 7 hours. About 30 minutes before serving, add the

frozen peas, cover and continue cooking for an additional 30 minutes.

6. Ladle stew into individual serving bowls and serve. Tip: Cooking time may vary depending on age and size of crockpot.

Chase away the chill with hearty soup

Cold weather is just around the corner. One of the fastest ways to warm up when chilly temperatures set in is by enjoying hearty, hot soups at mealtime. People may have their preferred go-to soups to warm up. Split Pea Soup can be included in anyone’s recipe collection. Soup lovers who want to do just that can try this recipe for “Puree of Split Pea Soup” courtesy of “The Culinary Institute of America Book of Soups” (Lebhar-Friedman Books) by The Culinary Institute of America. Makes 8 servings

4 strips bacon, minced

1 medium onion, diced (about 11⁄4 cups)

1 carrot, diced (about 1⁄3 cup)

1 celery stalk, diced (about 1⁄2 cup)

1 leek, white and light green part, diced (about 11⁄4 cups)

6 cups chicken broth

2 yellow or white potatoes, peeled and diced (about 2 cups) 1⁄2 pound split green or yellow peas, or lentils

1 smoked ham hock

Sachet: 1 bay leaf, 1 whole clove, 1 garlic clove, and 4 to 5 peppercorns, enclosed in a large teaball or tied in a cheesecloth pouch

Salt, to taste

Freshly ground pepper, to taste 1 cup croutons

Cook the bacon in a soup pot over medium-high heat until crisp and brown. Remove the bacon with a slotted spoon; drain on paper towels and set aside. Pour off all but 3 tablespoons of the bacon fat. Add the onion, carrot, celery, and leek; stir to evenly coat with fat. Cover the pot and cook the vegetables over medium-low heat, stirring occasionally, until the onion is tender and translucent, 6 to 8 minutes. Add the broth, potatoes, peas, and ham hock. Bring to a simmer and cook over medium heat, 20 minutes, stirring occasionally. Add the sachet and simmer until the split peas are soft, about 30 minutes. Skim away any scum during simmering. Remove the sachet and discard. Remove the ham hock and set aside to cool. When cool enough to handle, cut the ham off the bone, dice, and set aside.

Strain the soup through a sieve, reserving the liquid. Puree the solids and return them to the pot. Add enough of the reserved liquid to achieve a thick consistency. Blend well. Stir in the ham and bacon. Season with salt and pepper. Serve in heated bowls, garnished with croutons.
