Over the past decade, we've shared countless stories of resilience—of children and adults with special needs defying the odds, touching hearts, and teaching us what it truly means to live with purpose. One such story is that of Zachary Wiederhold, a young man who inspired everyone he met. Born with semi-lobar holoprosencephaly (HPE)—a rare brain malformation where survival beyond infancy is uncertain—Zachary lived an incredible 30 years, full of love, laughter, and unwavering strength.
When Zachary was just three months old, his parents, Erich and Joan, were given devastating news. Doctors advised institutional care, saying Zachary would never thrive at home. But Erich and Joan chose a different path— one of hope, commitment, and deep love. They refused to let a diagnosis define their son’s life.
To keep Zachary at home, Erich made the life-changing decision to leave the military because it would be too difficult to move every three years and pursue nursing. As a parent of a child with severe disabilities, he spent years learning about community resources and the challenges families face. With both professional and personal insight, Erich is uniquely equipped to help families transition to in-home
care. Today, he continues supporting patients and families as Branch Director at Entrusted Pediatric Home Care.
At home, Zachary was surrounded by love. His younger sisters became his joyful companions and “mini nurses,” always finding ways to make him smile. He made an impact with his sisters; Isabella is an RN working with special needs children and Liliana teaches in special education. Despite his challenges, Zachary thrived in his own way—attending school, graduating, walking the stage with his sister Miranda in 2014, and bringing joy into every room he entered. His smile was more than a facial expression; it was a connection to the hearts of others. Though he never spoke a word, he communicated in the most powerful language of all—Love.
Zachary found delight in everyday life. He adored the “Happy Birthday” song and lit up during family celebrations. He loved his nieces and nephews, and being included in the rhythm of family life. To know him was to witness pure, unfiltered joy. To care for him was to learn patience, compassion, and what it means to love without limits.
Zachary's journey reminds us that those with complex medical needs are not defined by their conditions; they are teachers, healers, and quiet warriors. His life was a gift, and his legacy is a beacon of hope for families told “there is no hope.”

This is a wonderful fast-to-fix munchie. The recipe makes tons and doesn't involve any cooking. It's a cinch to package in individual snack bags, it keeps its crunch and it's a savory alternative to the cakes and pies usually offered at bake sales. Linda Murphy, Pulaski, Wisconsin
If your child has trouble with eating, you’re not alone—and you’re definitely not failing. Many children with disabilities or special health needs face food struggles. Whether it's eating too little, too much, or not being able to eat at all, feeding issues can feel overwhelming for parents. Mealtimes can quickly become stressful. It’s exhausting when every bite becomes a battle. But remember—your relationship with your child matters more than the number of chicken nuggets they eat. Helping them enjoy food is possible, one creative step at a time.
Feeding challenges don’t look the same for every child. Some kids refuse food altogether or eat only certain colors, textures, or brands. Others might struggle with weight—either gaining too much or too little. A few may need feeding tubes or medical support. And sometimes, the cause isn’t clear at all.
Eating issues can be tied to:
• Sensory sensitivities
• Low muscle tone
• Reflux or motor coordination issues
• Medication side effects
• Anxiety or body image struggles
Even if you don’t know why it’s happening, if you’re concerned—or if your doctor is—it’s okay to ask for help.
There’s no one-size-fits-all fix, but building a team makes a big difference. Here’s who can help:
• Doctors and pediatricians – Start here for a medical checkup and referrals.
• Nutritionists – Review your child’s diet and suggest supplements or alternatives.
• Speech or occupational therapists – Help with chewing, swallowing, and texture sensitivities.
• Your child’s care team – Keep track of everything in a care notebook and look for a “medical home” provider to coordinate support.
You don’t have to do this alone. Here are fun, flexible strategies that other parents swear by:
q Sneak it in. Hide spinach in smoothies or tuck veggies under melty cheese. Get creative with food combos!
q Make it fun. Rename foods (“superhero bites,” “power pizza”) or invent silly food games.
q Try new textures. Some kids love crunchy, others prefer soft. Explore warm, cold, smooth, or even frozen options.
q Think beyond the plate. A smoothie, milkshake, or fortified drink can be a full meal. Try PediaSure or protein powder if recommended.
q Show, don’t tell. Use measuring cups to show portion sizes in a fun way—make it a science experiment!
q Ditch the clock. Forget traditional mealtimes. Let your child eat when they feel ready.
q Let them lead. Give choices and avoid pressure. Let your child have a say—even if it’s just which plate to use.
Feeding challenges can be costly—but there are ways to save:
• Buy in bulk—stock up on go-to favorites when they’re on sale.
• Use coupons and discount programs.
• If eligible, apply for WIC for formula and supplements.
• G-tube feeding? You can make nutrient-rich blends at home from everyday grocery items.
Supporting a child with feeding challenges takes patience, creativity, and a whole lot of deep breaths. Some days will feel like a win, others might not. But progress isn’t a straight line—and you're doing better than you think.
Your child’s eating issues aren’t your fault. Keep trying, keep adapting, and keep celebrating the little victories—because one day, they add up.
