Bingo is Back!

Monday nights will be brighter in the New Year as Bingo is scheduled to begin!

Ann Pangori, Robin Fritz, and Susan Roberts are heading up the new Monday Bingo Night in Sabal Springs using a computerized caller similar to other Bingo events in the

area. We have many of the regular Bingo patterns you are familiar with along with a few new ones. Bingo will start at 6 p.m. with ticket sales starting at 5:15 p.m. Nine cards with specials will be $15. Additional special cards can be purchased for $1 per sheet. We would really appreciate it if you can bring small bills as we cannot accept $50 or $100 bills. Twas the Season!

Sabal Springs’ holiday festivities were in full swing throughout December. The community showed up shiny and bright. From the Arts & Crafts annual lunch featuring the North Fort Myers High School Choir to the Toy Drive to the annual Christmas parade — the feeling around the neighborhood was joyous and celebratory. Thanks to everyone who pitched in, donated, volunteered, participated, enjoyed the festivities, and made the holiday season special — a true community undertaking.

SABAL SPRINGS ANNUAL CHRISTMAS PARADE A big thanks to the Sabal Springs Parade Committee — Keith and Karol Bunch, Sid and Yvonne Cegelski, Carter and Anita Johnson, Mark and Mary Vargo, and Mary Maher — as well as their many Santa’s helpers who made the event a great success.

This year’s Grand Marshall Bob Petty has been a Sabal Springs resident since 2014.

Bob has been an active participant in Sabal Springs for years, using his electrical proficiency to update more than 700 mailbox lights.

SSLGA CHRISTMAS FUNDAY SCRAMBLE The Ladies’ Christmas Funday Spin-Off Scramble was full of festive fun.

Rosie Whitehouse started the day with a great tee shot on No. 4 for nearly a Candy Cane hole-in-one. After the golf was done, everyone enjoyed a delicious lunch and gift exchange. Thanks to Donna Ireland, Cathy Dobson, Mary Maher, and Shirley Berry for making the celebration so special.

SunShine Singles JANE HANSEN

The SunShine Singles, the group that Donna Milbee gave wings to several years ago, continues to soar. We had the largest attendance at our November Pizza Party meeting since this active group was launched. Terri Marotta, our current president, shared that she was gratified to see the group expanding as it made her feel the efforts involved with the planning, organizing, and executing to attract new members are paying off and it was great to see a healthy number of returning members as well.

Many activities were enjoyed at the clubhouse provided by the Summer Fun Team for the month of November and December. Many SunShine

singles attended the Chili CookOff and musical events featuring Michael Glean, Sheldon Upchurch, Paul Larsen, and Russ Mattson.

Ten of our members played Trivia under the name of Savvy Singles.

In addition to these Sabal Springs’ events, several members attended the Barstool Rodeo at Forest Park, a movie, NFL games on Sunday afternoons, and a Lee County Community Band Veteran’s Day performance. A half dozen of the group act as ushers for the Ford Repertory Theater and many also have season tickets for Broadway Palm. November was indeed a busy month.

In early December, the SunShine Singles provided a smorgasbord for the Christmas Golf Cart Progressive Dinner, which was held at the home of Lorraine Harrington. The Sabal Springs Christmas Dance had two full tables of SunShine Singles as did the New Year’s Eve Party.

Five members went to the Harmony for the Holidays performance by the Sweet Adelines, while others attended the Lee County Community Band Christmas Show.

Another stand-out event was New Year’s Eve at Kumo Hibachi, which

was enjoyed by eight members. A handful of singles also went to various church events together to celebrate the season.

Our next meeting will be Wed., Jan. 21, at 4:30 p.m. in the Sunshine Room in the Eagle’s Landing Restaurant. Information will be verified before the meeting on the SunShine Singles Facebook page, and by email.

Chili Cook-Off TAREN GROM

Congratulations to The Sabal Entertainment Group for another successful BIG Chili Cook-Off. Cheryl Frailly and her team outdid themselves for this popular annual event. Sabal Springs residents were treated to 14 unique chili offerings, cornbread varieties, multiple toppings, and many yummy desserts. Thank you to all the chefs for turning out and turning up the heat — a little bit.

Thanks as well go to the Lee County Sheriff’s Ice Cream Truck.

Congratulations to Deanna Tyree McAtee whose Cattlemen’s Chili took first place. She credits her winning recipe to several secret ingredients that she was willing to share — barbecued beef brisket and sirloin steak with poblano and jalapeno peppers — the rest she says is under wraps.

Now We’re Cooking TAREN GROM

BEATTY’S CHOCOLATE CAKE January 27 is National Chocolate Cake Day. Most people probably have a family favorite recipe or a go-to box mix for a quick fix, but according to the Kitchn website, Ina Garten’s Beatty’s Chocolate Cake* is the best, offering a rich cake with an intense chocolate flavor and a glossy and light frosting.

INGREDIENTS 1 3/4 cups all-purpose flour 2 cups sugar 3/4 cup good cocoa powder 2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon kosher salt 1 cup buttermilk, shaken 1/2 cup vegetable oil 2 extra-large eggs, at room temperature 1 teaspoon pure vanilla extract 1 cup freshly brewed hot coffee Chocolate Buttercream Frosting, recipe follows CHOCOLATE FROSTING 6 ounces good semisweet chocolate, such as Valrhona 1/2 pound (2 sticks) unsalted butter, at room temperature 1 extra-large egg yolk, at room temperature 1 teaspoon pure vanilla extract 1 1/4 cups sifted confectioners’ sugar 1 tablespoon instant coffee powder 22

DIRECTIONS Preheat the oven to 350 degrees F. Butter two 8-inch round cake pans.

Line with parchment paper, then butter and flour the pans.

Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely.

Place one layer, flat side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake.

at medium speed, scraping down the bowl as necessary, until smooth and creamy. Dissolve the coffee powder in 2 teaspoons of the hottest tap water. On low speed, add the chocolate and coffee to the butter mixture and mix until blended. Don’t whip. Spread immediately on the cooled cake.

CHOCOLATE FROSTING Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature.

In honor of National Bloody Mary Day on Jan. 1 here are some great tips to put together the ultimate Bloody Mary. The foundation for which is a core mix, including diverse alcohol options, a variety of rimming salts, and an extensive array of savory and extravagant garnishes for guests to customize their drinks. The key is providing quality ingredients and abundant choices to make the drink an experience in itself. Bloody Mary bars have become extremely popular and the crazier the add-ons the better. Go wild and thrill your guests.

Spirits: Vodka is classic, but options like gin (for a Red Snapper), tequila (for a Bloody Maria), or even bourbon make for a great twist.

Mixers: Provide a large pitcher of a premade or store-bought Bloody Mary mix, there are a variety of options such as V8 or Clamato juice, and keep it chilled.

Spices And Seasonings: Rim Salts – Offer options like celery salt, Old Bay seasoning, Tajín, or a chili-lime blend.

Hot Sauces – Include several types of hot sauce (e.g., Tabasco, Cholula, Sriracha) to allow guests to control the heat level.

Add-ins – Set out bowls of prepared horseradish, Worcestershire sauce, fresh lemon and lime wedges, black pepper, and perhaps pickle juice for an extra kick.

The Sabal Springs Ladies’ Golf Association Memorial Match Play Golf Tournament kicked off the season with tremendous excitement and a strong turnout.

We opened the tournament with an unforgettable highlight: Vickie Pirello delivered pure magic by soaring her shot straight into the cup on Hole No. 16 for a spectacular hole-in-one.

January Star Gazing TAREN GROM

This month in Southwest Florida we have the privilege of observing several prominent celestial events, most notably Jupiter reaching opposition on Jan. 10, when it will be closest to Earth making it exceptionally bright and visible all night. Its four Galilean moons also can be seen with binoculars.

The best stargazing conditions will be during the new moon period from Jan. 11 to Jan. 25, when the skies will be the darkest making it optimal for seeing fainter stars and the Milky Way. From Jan. 17 to Jan. 18 if you look to the southwest after sunset you can see bright Venus close to Saturn and Saturn’s rings will appear edge-on, a rare event.
