I hope that the Holiday Season has been filled with friends, family, and excellent beer! Is it time for a dry January? Did you make a resolution? Or maybe a somewhat sober month? Cutting back on the number of beers consumed! Hard to believe that I am advocating for less

Cutting back on the alcohol but still getting all the flavors and aromas of craft beer is easier than it used to be with the growth of nonalcoholic beers. In the U.S., beer with up to 0.5% ABV is considered nonalcoholic beer. Truth be told, if you have really ripe bananas on your shelf, there is alcohol in similar amounts to nonalcoholic beer!

Craft nonalcoholic beers offer a wide selection of styles including Pale Ales, IPA, Stouts, and Pilsners. Enough variety to make it through the month of January! How are nonalcoholic beers made? There are several possible methods.

The first is to make a fullstrength beer and dilute it –either before fermentation or after the beer has fermented. The alcohol content is lowered but adding water which can impact other flavors of the beer – washing out alcohol as well as the other beer flavors.

Another method is to control fermentation by yeast by keeping the temperature low, below 60°F, and stopping the fermentation when the desired alcohol level is reached. This retains any flavors produced by the yeast, but keeps the alcohol at the desired level.

Dealcoholization is another method. This adds another step to the process adding water and steam to the finished beer and boiling. The steam coming off the beer contains alcohol and is collected and condensed thus removing it from the beer. Sounds like a still to me!

With more and more science in the brewing industry, beer can be made without the yeast and skipping fermentation all together! Simulated fermentation uses enzymes to produce similar outcomes of flavor as the yeast would without producing any alcohol.

A thing to remember with nonalcoholic beers is the potential to spoil is greater. The alcohol in beer discourages the growth of unwanted bacteria. Nonalcoholic beer does not discourage the growth of unwanted bacteria. So, it is best to drink the whole can of beer and not have any left over. If the nonalcoholic beer is on draught, make sure the draft lines are clean. The nonalcoholic beer may become tart, acidic, or even hazy if unwanted bacteria begin to grow!

There are many companies producing nonalcoholic beers including Guinness Stout,

Heineken, Sierra Nevada, and Samuel Adams. Athletic Brewing Co. makes a wide variety of craft beer styles that are nonalcoholic. So many styles and types to choose from if you made that resolution for a dry January.

For me, I will try the somewhat sober month by cutting back a bit on beer and maybe even trying a few nonalcoholic beers as well!

Cross Creek Craft Fair A Success

Thanks to some very creative vendors and enthusiastic shoppers, the first ever Cross Creek Craft Fair and Market was a great success! With items ranging from art and photography to fudge and jewelry, from flower arrangements to lovely wearables and gift items galore

there was something for everyone to enjoy and take home.

We were honored to be able to feature the Naples Quilters Guild 2025 Raffle Quilt, “Bedazzle.” This beautiful quilt was created by 35 members of the guild. Funds raised from the ticket sales benefit Partners for Breast Cancer Care, an organization that serves the Southwest Florida area. The winning ticket will be drawn in March 2025. Wouldn’t it be wonderful if a ticket purchased at our craft fair was the winner?

Plans are already underway for next year’s market, and we are looking forward to increasing the number of vendors. Stay tuned for more information. If you, or someone you know is a talented craftsperson, we would love to invite you to participate. Information will come out late spring/early summer for the 2025 Market. WYLDEWOOD

The Wyldewood Elves were out in force in early December preparing the Christmas lighting for our pool area, signs, and buildings. Our team observed the red and green lighting on light posts leading into Cross Creek, liked what was seen, and decided that it is a good look and replaced our building lights with the same style. The team leaders were Joanne and David Wipperman (Mr. and Mrs. Santa Claus?) and were assisted by Jim and Faye Yesseldyke, Laurie Kildoo, Christine Coletta, Anette Silverman and Peter Brochhausen.

Our seasonal Social Club event schedule just came out with several fun, food and fellowship events. We encourage all to join in.

Our 2025 budget will go into effect in January. Our association, as well as others, prepare to meet new and expanding Florida condo rules and regulations. They include new costly financial auditing requirements, buildings taller

than two stories requiring engineering structural studies and more consequential reserve studies, to ensure that adequate funding for things like new roofs, painting and paving are funded. Incumbent and new board members need to complete a four-hour course on condo law and need to do annual updates. A thank you to all the Association board members for their involvement.

We have condos that are up for sale. The buying frenzy of the last two years has ebbed; however, it is expected to recover slowly. As people look to move inland, away from the Gulf and away from flood zones, Cross Creek is solid financially, has structurally sound buildings to withstand hurricane after hurricane (except for some roofs and carports), established amenities and good neighbors.

Is there something to look forward to in 2025? Yes! This year is the year that resolutions are made even though carried over for year after year. Happy New Year to all, for the best year yet.

Veterans Day Lunch 2024

This was the seventh annual Veterans Day Lunch at Cross Creek Clubhouse. Some 54 veterans attended representing all branches of the armed forces.

The ceremonial cutting of the cake was done by Art Iverson who’s 93 years young.

This was Cross Creek’s seventh year for hosting the lunch, many thanks to our president Harvey LaPointe and the master board for continuing honoring Cross Creek veterans. We had one Canadian vet.

On our walk we watch egrets Land silently to wade shallow waters. You make bird sounds Until they hear us and fly off. I remind them that soon fishermen will come to catch and release.

I remember the beach where the tide rises and falls, like our lives, leaving rippled pathways to the sea where thousands of shells wait to be gathered or tossed aside. Our feet were always cold or sandy those days. But all things come and go. Storms lash us and then leave us breathless. We look up to see endless stars and count them like white chocolate kisses Until they disappear behind a cloud. It’s a full moon tonight soft and forgiving ushering out the day. Once in a blue moon we lived our lives. A new world is coming.

January Restaurant News

Happy New Year to all and thank you for making the month of December so great. We thank everyone for their patronage and look forward to a very busy season. It feels like the season started early this year as we did numerous holiday parties and sold out a few of our dinner nights in the last couple of months that we usually wouldn’t sell out this early.

We had a great turnout for Thanksgiving Dinner, serving 182 meals. We continue to grow and “tweak” our operation with the hope that we can meet everyone’s expectations. With that being said, please be sure to make reservations for any dinners or events that we do as space is limited as you all know. We have a lot planned as we go into season including an event or two out by the pool, a Vegas night, and some other ideas that we are working the details out on. Once again, please feel free to utilize our suggestion box in the lobby or just flag me down when you’re at the clubhouse. Have a Happy and Safe New Year.

Restaurant Update

Sunday Brunch Buffet will now be scheduled from 9 a.m. to 1 p.m. as of January 1. Our full lunch menu will be offered from 1 p.m. till close.

Recipe

This is a must share recipe! Most importantly: It passed the taste test with my very conservative and traditionalist husband. Remarkable, for a man who was still asking, “Will there be mashed potatoes with gravy, and sweet potatoes, too?” Next most importantly, it made my holiday soooo relaxing. And yes, he got the green bean casserole and sweet potatoes – everything else was in the Crock-Pot! Well, not the mashed potatoes and gravy.

STUFFED TURKEY

INGREDIENTS

2 teaspoons melted butter 1/2 cup chicken broth

1 large apple, cored and chopped 1/2 cup onion, chopped

1 stalk celery, chopped

1 cup whole-berry cranberry sauce

3/4 teaspoon poultry seasoning (gives an amazing sage taste to recipe)

2 cups seasoned crumb-style stuffing, uncooked

2 3-pound turkey breast tenderloins, pounded flat to about ½ inch

PREPARATION

In a large bowl, combine first 7 ingredients.

Place 3 tablespoons stuffing mix on each turkey cutlet. Roll up and tie, place in Crock-Pot.

Pour sauce over stuffed turkey rolls.

Cover and cook on Low for 8 hours or High for 4 hours. Go, enjoy the day!

Note: When the turkey tenderloin was pounded flat, it divided along a vein of connective tissue, so I cut it that way. Was able to divide into four oval-ish rectangles, which were stuffed, rolled and tied into mini-turkey rolls. Perfect serving sizes! Or, you can leave connected and make one large roll, then slice after cooking.

HOLIDAY SCRAMBLE AND LUNCHEON

There was Merry and Bright, and plenty of jolly Ho Ho Ho’s at the Women’s 18 Golf League Holiday Scramble and Luncheon, held December 4. The morning started early, because there was so much to do before the shotgun start at 8 a.m. (Note to management: 8:30 a.m. in 2025, please.)

Drop off the golf clubs. Go inside clubhouse to register and leave donation for Toys for Tots, and Secret Santa gift. Plus, drop dollar bills for chances at 50:50, raffles, and mulligans. Slip out and decorate golf cart – there’s a judged contest, with prizes! Then, bundle up, baby. It’s chilly outside.

After 18 rounds of merriment, the ladies shared another meal planned and prepared by Cross Creek’s restaurant staff – a big thank you to Chef Juan and Dave for the Build Your Own Taco Bar. We appreciate your hospitality, and the secret sauce in the dipping salsa! There were raffle prizes and Secret Santa gifts to open, and plenty stealing of gifts with booze or lottery tickets. There was more booze stolen than golf balls; could golf be driving us to drink? Hmmm?

Hello, my name is Steve Pinger, originally from Cincinnati, Ohio. I am a P.G.A. Professional in good standing and have had a successful career in the golf industry. My wife and I, along with our youngest son, moved to Southwest Florida in 2008. Having previously enjoyed Fort Myers and Sanibel Island for 18 winters, the area felt more like home than just a vacation spot so moving here was the right thing to do. It feels like we have lived here for our entire lives.

After playing golf in college and having some good success at the collegiate level, trying to play the P.G.A. Tour seemed like the thing to do. Chasing that dream began. Spending a few years trying to qualify on Mondays and playing some mini-tour events, you find out these guys are very good, so it was time to find a position as an assistant professional at a local club. I enjoy my time in the golf business. My career has run the gamut from assistant, to head professional, to director of golf, to building and operating a driving range, moving to Florida and becoming a head golf professional again. Through all these experiences one thing remains the same: my love for the game of golf.

Cross Creek Men’s 9 Hole League

The Men’s 9 Hole League would like to invite all men members to join this league. We play Monday morning at 8 a.m. through April. You can join anytime during the season.

The membership fee is $55 which includes the $20 fee for the handicap index “Ghin” system. Make a check out to CC Men’s 9 Hole and take it to the Pro Shop.

A schedule of the games played each week and the dates of our luncheons is posted in the Pro Shop.

This league plays from the Number 4 tee boxes and scoring for most games is based upon your handicap.

Did you know you may order food and drinks to be served by the pool? All you have to do is call the restaurant, give them your order and be sure to tell them you are by the pool. 768-1474.

Desserts are made of sugar and spice and everything nice, Appetizers can be anything like the roll of the dice, Entrees can be meaty, veggie and even rice, But please, let’s not have lice or mice. So take the dare, submit a recipe you would like to share, Some will make it with care, And even serve it for their fare.
