Seasons Greetings from the Views Restaurant. As the holidays approach, we at The Views can’t help but think about family, friends and traditions that have been passed down over the years. My family traditions are ingrained in me as much as the songs we all hear on the radio, from Virginia ham and cranberry salad to the desserts my grandmother made every year in such large quantities that they lasted through the new year. Since the holidays are all about sharing, I thought for my first article I would share a recipe that my grandmother passed down to me years ago. This recipe is one of the reasons I grew a passion for food. I hope you enjoy it. Raisin-Filled Cookies Ingredients 1 cup packed brown sugar 1 teaspoon baking powder 1 cup sugar 1 teaspoon baking soda 1 cup butter, softened ¼ teaspoon ground nutmeg 3 eggs ½ teaspoon salt 2 tablespoons vanilla extract 3 tablespoons buttermilk 5 cups all-purpose flour Filling 1 cup packed brown sugar 1 tablespoon cornstarch 2 cups boiling water 3 tablespoons all-purpose 1½ cup seedless raisins flour Directions 1. In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle. 2. For filling, in a saucepan combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir for 3 minutes or until thickened. Cool. 3. On a floured surface, roll out dough into 1/8 inch thickness. Cut with floured 3 inch round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Pinch edges together and cut slit in top. 4. Place 2 inches apart on ungreased baking sheets. Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool. Yield: about 3½ dozen. This year at The Views, for the first time, we will be offering a beautiful Christmas Eve Dinner. We hope to share our holiday cheer with you over a 5-course dinner paired with 5 cocktails. Each course created by our very talented Chef de Cuisine Steve Shimmin will be complimented by a variety of unique takes on traditional holiday cocktails. This dinner will be limited seating only with two times, at 2 PM and at 6 PM. We will have vegan options available for each course. The price for the 5-course dinner is $45 per person.
