t is hard to believe the first half of 2021 is already behind us and that we are now in the second half of the year. The property market has continued to maintain great momentum and perform far stronger than anticipated on the back of the initial economic slowdown and shock brought on by the pandemic.

In addition to being delighted with the market resurgence and our team’s incredible work, it is our pleasure to announce that Knight Frank is growing.

Rennie Property has joined Knight Frank South Africa as the official commercial arm of the business, adding incredible depth to our local presence. It also allows an even better client offering with Knight Frank now being able to provide a complete and all-encompassing service with specialised divisions in Residential, Valuations and Commercial.

The Team Behind Rennie | Knight Frank The commercial Property Management business of Rennie Property (originally David Rennie Management Services) was founded in 1997 by David Rennie.

It was a family business from day one when daughter Nikki Paige and son Steve Rennie joined the company.

The siblings were born in Cape Town and matriculated in Johannesburg.

Nikki obtained a BComm and Steve a BCompt degree, both majoring in financial accounting. Before Rennie Property, Nikki worked for Habron Property Management Services in Johannesburg and later Rabie Property Developers in Cape Town where she started their Property Management Division.

Joining the family business made sense to Steve who was already fond of the industry and enjoyed listening to his father talk about being involved in commercial property, leading the property finance division of Syfrets, which later became Nedbank Property Finance. Steve was attracted to the numbers and the psychology behind commercial property, physically, how best to design it and how it can influence the way people behave and move around in buildings. Numbers, law and the economics of what makes a property investment work attracted

Nikki to the industry, combined with the physical aspects that make it interesting as well.

Today, the industry is just as appealing as ever. Steve loves thinking on his feet which is essential in such a fast-paced landscape that is always evolving. But it is also about the people; being able to help clients and team members. ‘The connectedness in the current climate has turned the world into a global village in which one can make contact with anyone at any given time. We can have good conversations about good business which is a big part of what makes this venture so exciting.’

For Nikki, it is the fact that the industry is extremely dynamic. ‘One really needs to be a jack of all trades in our line of work as we apply a broad range of expertise across different circumstances and constantly have to adapt our approach to best suit a specific property or client.’

Their adaptability and people-first approach have ensured great client feedback and referrals which Nikki attributes to their dynamic, motivated team that works as a close-knit group.

‘We have valued team members, some of whom have been with us for 10, 15, 20 years. They form the backbone of our business and we wouldn’t be where we are today without them.’

Being highly motivated individuals is part of their recipe for success. Nikki draws inspiration from the diversity in the daily work they perform, solving problems and satisfied clients. Steve is driven by finding solutions for all the challenges and scenarios they face on a daily basis as well as working with

people; communicating and listening to others’ point of view.

When not thriving in the commercial landscape, Steve enjoys an active lifestyle with his family. Nikki enjoys photography, hiking and travelling or simply relaxing at home, cooking or reading.

‘Looking back on the early days of the company, we were privileged to have our Dad guiding us. His leadership, wisdom and integrity are the cornerstones on which the company is built today’, says Nikki.

In terms of career highlights, Steve has many, but the most recent is this new Rennie | Knight Frank venture.

‘I’m very excited about the future of Rennie | Knight Frank operating in South Africa; growing our business with local expertise and global connectedness. We’ve managed to partner with one of the six biggest global players and that is quite an achievement.’

Babylonstoren | A fruit and vegetable garden with great botanical diversity.

E

very aspect of Babylonstoren – including the contemporary Farm Hotel & Spa, the Farm Shop and Restaurants – is led by the ever-changing tapestry and botanical diversity of the garden.

It is a world of espaliered fruit trees, formalised clipped hedges and stunning rose pavilions of Madame Alfred Carriere – all creating avenues and dividing the garden into different areas.

Owner Karen Roos commissioned French landscape designer Patrice Taravella in 2007 to plan the layout of the garden. His work at Prieuré Notre-Dame d’Orsan in France had impressed her greatly. There Patrice had reconstructed a medieval cloistered garden on the site of a restored 12thcentury monastery.

Set within 3.5 hectares of cultivated fruit and vegetables, the big garden at Babylonstoren is at the heart of the farm. It was inspired by the historic Company’s Garden in Cape Town, which supplied sailing ships of the Dutch East India Company with fresh vegetables and fruit during the days when the Cape was a halfway station between Europe and Asia. But it also links back to the mythological hanging gardens of Babylon. Those were thought to have been created by Nebuchadnezzar in the sixth century BC, for his wife who longed for the mountains and valleys of her youth.

The garden comprises 15 clusters spanning vegetable areas, stone and pome fruits, nuts, citrus, berries, bees, herbs, ducks and chickens, a prickly pear maze and more. Gravity feeds water from a stream by rills into the garden, flowing through ponds planted with edible lotus, nymphaea lilies and waterblommetjies.

Every one of the more than 300 varieties of plants in the garden is edible or has medicinal value. They are also grown as

organically as possible and in a biologically sustainable manner. The fruit and vegetables from the garden are harvested all year round for use in two farm-tofork restaurants. Along the edge of the garden, a natural stream flows from the Simonsberg Mountain to the Berg River, creating a space for indigenous wild olives to flourish. In their shade a collection of some 7 000 clivia lilies explode in a spectacular display every spring.

In 2012, a shaded walk was created for the collection of clivias. The walk – named ‘The Puff Adder’ for its shape – meanders for 70 metres along a stream emanating in the Simonsberg, and slithers through the wild olives and blue gum trees. The structure of balau slats on steel frames, designed by Patrice Taravella and engineered by Terry de Waal, eliminates about 40% of sunlight but allows a free flow of air, creating ideal conditions in which clivias can thrive.

The rate at which the garden grows and evolves is always astonishing. Head gardener Liesl van der Walt and her team tend the plants that have flourished beyond expectation – so much so that it is quite hard to believe that the garden is still relatively young. A true example of the importance of proper maintenance.

From Field to Plate At the rear of the garden, tucked away between the oak trees, The Greenhouse restaurant offers guests a wonderful refreshment station after their walk through the garden. All food is served picnic-style in wooden crates with the preserves, jams and salads served in weck jars, while fresh bread from their wood-fired oven comes wrapped in the iconic blue-and-white Babylonstoren paper.

Taking Inspiration from Babylonstoren Though all this was done on a grand scale, it is very much possible with smaller gardens as long as one keeps the fertiliser organic and the sprays natural.

The secret, of course, lies in the soil. Or more specifically, consistent investment in it. Soil must be composted annually and every time new plants are incorporated.

With the right routine and care, the quality of soil will increase over time. Chemical fertilisers leach out and later deprive the soil of their nutrients whereas organic fertilisers enhance and remain in the soil for years.

When designing mixed borders and planters, you can add functionality and interest by incorporating your edible plant delicacies.

Sustainable, seasonal produce and a deep respect for provenance inform the menu.

P

eter Tempelhoff is no stranger when it comes to charting a new course, pioneering a new concept, or simply making a courageous culinary statement. With award-winning venues signposting the course of his career, such as FYN and Greenhouse, the chef patron has earned a reputation for both authenticity and innovation. Managing to straddle that fine line between time-honoured techniques and creating something new, he has made a name for himself as a maverick and a magic maker.

Quernmore House, with its parklike setting and spectacular mountain views, is a gracious and much-loved home. It is also a Sir Herbert Baker Design.

But, in a change of pace as he launches his next dining destination and the latest chapter in his narrative, he comes back full circle to one of South Africa’s most historic estates and with that, a simpler approach.

The new concept, beyond, finds a home at Buitenverwachting wine farm – the name references Buitenverwachting’s literal English translation ‘beyond expectation’ – and comes with the dual challenge of offering something fresh, while acknowledging the estate’s storied past and centuries of history.

The answer to this challenge comes by way of simplicity – a light touch. Which necessitates absolutely uncompromising standards as far as ingredients go. This is one of many areas where Tempelhoff

has always shone – a reverence for his produce and a desire to exalt them has been the golden thread that runs through all of his establishments. ‘Ingredients are the soul of this restaurant’, he notes.

‘If I could choose a quote to sum up the philosophy behind the food at beyond, it would be something Marco Pierre White said: “Mother nature is the artist, we are just cooks”’, he says.

Consequently, sustainable and seasonal produce and a deep respect for provenance will inform the menu.

Ingredient-centric dishes revolve around free-range extra-matured rare-

breed cattle, site-specific Karoo lamb, heirloom organic vegetables, sustainable small fish, unique hard-to-source ingredients barely touched by human hands, the list goes on. A confidently simplistic approach will see Tempelhoff and his team craft these seasonally significant flavours into a memorable culinary experience. ‘We’re going back to the roots of the restaurant’, he says. ‘And simultaneously redefining the meaning of restaurant as a place of restauration.’ This will see food that comforts and nurtures served à la carte, to old-fashioned service standards.

He is joined in this exciting new episode by core members of his stellar team of long-standing partners, Service and 23

Beverage Director Jennifer Hugé and Culinary Director Ashley Moss. A new chapter calls for a celebration of fresh talent and Julia du Toit has been appointed as Head Chef at beyond. It is a diverse and forward-thinking group of passionate people who have all come together organically and contributed to this concept.

Du Toit has worked with Tempelhoff in some capacity or another since she joined the Greenhouse team at CellarsHohenort in 2014 and most recently with both Moss and Tempelhoff at FYN, rising through the ranks over the years from Demi Chef de Partie. Du Toit’s vision for this new venue includes a paring back – a stripping down of food to its essence. ‘We have become so used to trying to fuse flavours together that we have forgotten how to keep things simple. That’s what we want to bring back at beyond – simple, elegant food that’s still packed with flavour’, she says.

This will take the form of a menu that acknowledges the past, served traditionally as large portions in individual courses rather than the more modern tasting-menu style, with the warm and personable but professional service that has become a Tempelhoff establishment trademark.

Moss echoes this desire and elaborates on the atmosphere they want to bring to life. And, contrary to common misconception about the Constantia winelands fine-dining scene, this will be an unpretentious space and menu prompted largely by the setting: ‘We wanted to create a casual dining experience using exceptional local ingredients with true provenance and

were inspired by the beautiful Buitenverwachting vineyards in that our ingredients are simply sourced and harvested at their prime and showcase our signature commitment to traditional technique. Complex in design yet simple by nature’, he says.

This idea of a fresh take on tradition comes through in the interiors too, echoing the simple elegance of the food. A bright and contemporary but refined space, conceived by Tristan du Plessis (who was also behind the award-winning scheme for FYN), this setting is as timeless as the menu and echoes the light touch seen in the dishes.

Wine too, will tip its hat to history and General Manager Jennifer Hugé, longtime colleague of Tempelhoff, cites the Constantia Valley as inspiration for the wine list. ‘My plan for beyond is as simple as the concept – fresh and elegant with a fantastic wine offering. I’m excited to be back in the Constantia Valley as this area is so close to my heart and the wine from within the valley is definitely worth celebrating’, she adds.

Cued by its setting – the oldest wine region in the country – beyond’s wine list is a reflection of excellence over the ages. Designed, like the restaurant itself, to celebrate the heritage of the estate, the wine list heroes ‘Lost and Forgotten’ icons, such as bottles of Chateau Libertas dating back to the 60s, hard-to-find vintages of Buitenverwachting’s own wines, plus many other gems not seen in generations. In similar style to the menu, however, it looks forward as well as back, with a selection of carefully curated wines by exciting young avant-garde winemakers, the result of which is a complex, dynamic and multifaceted list of some of SA’s best wines, past and present.

The idea of celebrating the setting and paying homage to beautiful ingredients also comes through in charming, nostalgic details and the simple but universal luxury of champagne and oysters in the courtyard. A nod to old-fashioned romance, with a smart contemporary twist.

Introducing Clos d’Oranje, the only wine produced from Cape Town city grapes.

los d’Oranje located in Oranjezicht was established in partnership with the Andrag

family.

“The vineyard was the first step in our vision of regenerating what was, in the past, a city of vineyards.”

The Clos d’Oranje Syrah The Clos d’Oranje Syrah, one of the most famous South African wines, comes from this small vineyard in Oranjezicht.

Set at the foot of Table Mountain, it is an official single vineyard planted in 2001.

This small block is the only visible sign of the wine history of Cape Town which started in 1659 when the first wine was produced from grapes grown in the Gardens.

The vines, grown according to organic farming practices, are hand-harvested at perfect ripeness to protect their unique flavours. This legendary wine is the fruit of a partnership between the Andrag family and the Ridon family.

The limited production makes it the most sought-after South African red wine.

Only 550 to 600 bottles of this coveted, unique ‘plot’ of UNGRAFTED Syrah

are produced each year. As quantities are so finite, no more than three bottles are allocated to each wine lover.

The pure Clos d’Oranje Syrah secured Platter’s 5 Stars for its 2006 vintage and every other vintage averaged 4.5 stars in the Platter’s wine guide.

History: Signal Hill Winery In 2005, Jean-Vincent Ridon won the bid for the first Cape Town City Bowl Winery which he set up in the City

centre in collaboration with Laurence Buthelezi from Tukuta wines. In 2017, however, Signal Hill Winery closed its city operation due to water restrictions and is now focusing on the Clos d’Oranje.

The inner-city working winery formed part of the R1 billion Mandela Rhodes Place Development. The full production process took place on-site, including destemming, crushing, fermenting, barrelling, bottling and packaging.

Signal Hill was the fruit of hard labour, dedication and passion and would have been nothing without the team that built it up over the years. The team members left a great footprint through the wines they helped to handcraft.

Hout Bay’s Big Wave

D

ungeons in Hout Bay is the epicentre of big wave surfing in Cape Town. Monstrous waves are brought on by huge storms arriving in winter.

Dungeons Then Peter Button and Pierre De Villiers pioneered Dungeons in the mid 1980s, years before others were surfing it.

While it has been a surfing spot for decades now, it was not until 1999 when things got really interesting and even more thrilling.

The turning point was simple: Red Bull decided to hold an invite-only event at Dungeons. Winning gold at the 1999 Reef ISA Big Wave World event were no other than big wave surfers Ian Armstrong and Cass Collier, two South Africans. A proud moment for the country’s surfing community.

So, what was once a spot that attracted a handful of surfers who could only reach the lineup by paddling out over a deep channel, became something much bigger.

Dungeons was now on the map.

Although Dungeons played host from 1999 to 2008, the contest only ran four times during that period since part of the criteria was that waves had to be higher than 15 feet (4.6 metres) for the contest to commence.

In 2009, Grant ‘Twiggy’ Baker – former Big Wave World Champ – claimed the global Billabong XXL Biggest Wave Award when he managed to catch a ride at the furthest reef that makes up the Dungeons playing field, namely Tafelberg.

The epic wave he managed to conquer was estimated to be over 70 feet (21 metres), a wall of water that to this day remains unmatched in South Africa

The Basics about Dungeons Access is possible via boat from Hout Bay harbour or a long paddle after hiking over The Sentinel peak.

While the wave is renowned for its unpredictability, it can link up across the reefs to produce a wonderful rollercoaster ride under optimal conditions.

It prefers light winds and typically kicks into gear on large, clean swells. If you are a big wave surfer, bigger means better which of course makes for a fantastically frightening wave.

Today, it is one of the sixteen recognised big wave spots around the globe.

About Big Wave Surfing A wave must be at least 20 feet (6.2 metres) high for it to be considered a big wave.

Speeds of approximately 80 km/h (50 mph) are not uncommon with wipeouts resembling pebbles being skimmed on the water.

The biggest dangers of big wave surfing include: hold-downs (an exhausting time underwater which surfers have to be prepared for); immense pressure on the lungs from being pushed down 6 to 15 metres (20 to 50 feet) below the surface; being tumbled, which completely stirs one’s balance; and dangerous encounters with rocks and coral patiently waiting on the ocean floor.

With the above in mind, preparation is obviously crucial. Underwater rock running, solid workouts every day and yoga are all beneficial for big wave surfers. Mental preparation is the other big factor since staying calm is vital for preserving oxygen.

E

lize Bezuidenhout is a portrait painter fascinated by eyes, the windows to the soul.

She works from photographs that she takes herself, a step that is part of her creative process.

She was born in Springs where she matriculated at Hoër Meisieskool Hugenote in 1982. Before bravely following her dream of becoming a full-time artist and art teacher in 2014, she studied Graphic Design at Pretoria Technikon and worked as a Graphic Designer.

‘I photograph people I would like to paint in the way I love to paint, especially the way the light falls on a face. I paint realistically but try to keep the balance between realism and impressionism by not creating a photorealistic impression of my subject. I will sometimes leave areas unfinished or do only what is absolutely necessary when I paint certain areas, such as clothes. The eyes and the facial features are usually the focal areas of my paintings and the rest is less important. Much more detail is expressed in the focal area where I want to draw the viewer’s attention to. I love to experiment with different techniques but will always have areas in my paintings where I give a lot of attention to detail – to stay true to myself.

“I was interested in art and developed a passion for drawing and painting at a young age. Art and music were always part of my life and I used to play various musical instruments when I was young, but my love for art was much bigger.

My parents were always supportive, but my dad didn’t think it was a good idea to pursue art as a career. That’s how I ended up studying graphic design and not fine arts.

Her art is inspired by People – ‘Whether it’s a fisherman, waitress, car guard or homeless person... people from all walks of life.’

Her aim is to capture the character of the people she paints.

“To let their faces tell their stories – let the viewer think about the person in the painting and the story they have to tell. It is more than just a portrait.”

Different colours on a skin fascinates her.

‘I love to play with complementary colours – the optical mixture of colours when they are carefully placed side by side, the way they dance with each other to create the luminosity of the skin. I am also intrigued by the way light falls on a face and what happens when it “enters” the skin. The subtle richness of all the different colours – there is colour in everything... There is so much more to it than just copying a photograph. The photograph is only the reference.’

Unsurprisingly the most rewarding part of her career is physically painting; creating.

‘This is what makes me tick.’ However, she also finds teaching at workshops gratifying – to share her passion and her knowledge with other artists.

Since Elize paints six days a week, at least eight hours a day, there is little time for anything else yet she remains very fond of photography.

Living in the New World Like all of us, Elize has shifted her mindset since the world has changed so drastically.

‘I realised that I must maintain balance in my life. Reassess what is important and focus on that. Keep the positives and

get rid of the negative elements that tend to be draining. The global situation we continue to experience has reminded me how important family is. I also realised that I have to take better care of myself – physically and mentally.’

Elize has been working with Dijonne since the beginning of 2017.

‘In these four years he has done more for my career than I ever could have dreamed of. He introduced my art to the art world that really matters. Dijonne is extremely supportive and inspires me to grow to a higher level all the time. He understands my art and my passion for the art I create.

Dijonne is more than just an agent, he is an inspiration, mentor and best friend.’

F

rance might be home to the Bordeaux, Burgundy and Champagne regions and the United States to Napa Valley and Sonoma Valley, but according to an article in Condé Nast Traveler – the only global monthly luxury travel glossy with nine editions worldwide – some of the best wine regions in the world include Lombardy and Sicily in Italy, Willamette Valley in Oregon, Niagara Peninsula in Canada, Alentejo in Portugal and last but far from least, the Western Cape in South Africa.

South Africa, boasting more than 500 wineries across the country, is not only one of the continent’s but also one of the world’s top wineproducing destinations.

Here, the wine growing areas have been divided first into Geographical Units which subsume Regions under which there are clustered districts and wards within them. The Western Cape is by far the most prominent Geographical Unit in which the Coastal Region falls.

Franschhoek, Stellenbosch, Paarl, Tulbagh and Tygerberg are its most noteworthy districts. Constantia Wine Route is classified as a ward since it is a relatively small demarcated viticultural area.

While most districts produce multiple varietals and blends, some are more known for certain varietals than others.

Franschhoek – South Africa’s Gourmet Capital – is celebrated for its Méthode Cap Classique (MCC) sparkling wines (made in the same traditional method as Champagne) and Stellenbosch for its Cabernet Sauvignon, Merlot, Shiraz

and Pinotage – a signature South African cultivar. Rich, full-bodied, spicy reds and crisp white wines (as well as Viognier) are what Paarl is renowned for while in Tulbagh the emphasis falls on fruity blends reflecting the friendliness of the region. The Durbanville Wine Valley in Tygerberg is famed for its excellent Sauvignon Blancs. So is Constantia, along with Bordeaux Blend wines and modern dessert wines made from Muscat Blanc.

Subsumed in the Cape South Coast Region is the Walker Bay district that has Hemel-en-Aarde Valley as ward, widely acknowledged as the Pinot Noir capital of South Africa where stellar Chardonnays are also created. The Cape Agulhas and Overberg districts fall in the same region. Elegant, coolclimate Shiraz and Sauvignon Blancs characterised by a lively acidity are the staple styles in Cape Agulhas.

Chardonnay and Pinot Noir grapes stand out in Overberg, along with Sauvignon Blanc, Chenin Blanc, Cabernet Sauvignon, Petit Verdot and Shiraz.

Robertson district in the Breede River Valley Region is associated with the production of rich, fruit-driven red wines and white wines predominantly produced from Chardonnay and Shiraz grape varieties as well as sparkling wines produced from Chardonnay and Pinot Noir grapes.

Cederberg is a special ward in the Olifants River Region which, like Constantia, does not belong to a specific district. Here the focus falls on Sauvignon Blanc, Chenin Blanc and Bukettraube white wines and Cabernet Sauvignon and Shiraz reds.

Chardonnay used for MCC as well as Viognier and Merlot used as blending components can also be found in this ward.

Considering the above, it is clear why South Africa is a dream destination for all wine drinkers, from novices to oenophiles.

Combined with the spectacular culinary scene, the country is a treasure trove of indulgence, complete with unforgettable scenery.

With the launch of our Global Development Report 2020, we reveal some of the key factors that will be shaping the developments of the future, with wellbeing at the top of the list, this sets the Towers of the Waldorf Astoria, New York in good stead.

n a first of its kind since the declaration of the Covid-19 pandemic, Knight Frank have launched the Global Development Report (GDR), a survey conducted amongst 160 global developers across 22 nations.

The findings from the report reveal that almost six in ten global developers have delayed projects in response to the spread of the virus, as it broke down supply chains and prompted a wholesale rethink on how and where people want to live. Of those with delayed projects, more than four in ten are now making changes to designs that were once considered complete.

Flora Harley, associate, Knight Frank said: “While it is still too early to confirm the lasting impact of the pandemic on the development landscape, it is clear that it has accelerated pre-existing trends and prompted new ideas for current and future developments.

“Yet, what cuts through the findings of the research is the importance of not overreacting to the immediate fallout from the crisis. There is little evidence pointing to the need to design for future lockdowns or specified meterage for social distancing.”

As Maria Morris, Head of Residential, Middle East explains, lockdown has not only served to remind us of the importance of wellbeing within our own homes, but has also accelerated this already prominent trend into a priority consideration for buyers: “The focus on wellbeing and amenities is now increasingly at the top of our buyers list of considerations, and as such the level of adoption from developers that previously would have taken years has happened in a few months. Wellbeing is now very much at the top of the agenda, and not just gyms and yoga – this is something we found before the pandemic in our Wealth Report and also in our Global Buyer Survey. Developments are moving towards that sense of community and how they can improve the whole living experience with a focus on amenities, general wellbeing and lifestyle.”

That being said, lockdown and the pandemic have undeniably influenced the results of the survey, in as far as affecting what people will be looking for in their future homes, and consequently the demand that developers will 99
