Interview with Little Feat

Little Feat, a band that got its start in 1969 when Frank Zappa fired Lowell George from Mothers of Invention and told him to go start a band of his own, plays a mix of musical genres throughout their music that combines California rock, funk, folk, country, rockabilly, and New Orleans swamp boogie, just to name a few, creating a sound that has provided them recognition for their brilliant musicianship
“I was very naïve when I met Lowell in 1969 and thought to myself that we would be very popular in six months. I don’t know why I thought that, but the realization was overwhelming in that I knew that this was going to be a long trek”, comments Bill Payne, one of the founding members of the band.
Shortly after Lowell’s firing, he connected with Bill Payne, as well as Richie Hayward, and they were quickly signed to the Warner Bros record label They began working on their first album and have now recorded over 15 studio albums, 12 live albums, 6 compilation albums, and four video albums Their first album, Little Feat, featured, “Willin’”, 1972, which was an instant hit that remains popular to this day Other top hits of theirs include, “I’ve Been the One”, 1971, “Sailin’ Shoes”, 1972, “On Your Way Down”, 1973, “Fat Man in the Bathtub”, 1973, “Roll Um Easy”, 1973, “Dixie Chicken”, 1973, “Rock and Roll Doctor”, 1974, “Spanish Moon”, 1974, and “Time Loves a Hero”, 1977 Their album, Waiting for Columbus, has been regarded as one of the best live rock albums to date
“I think success is really about loving what we do as musicians and being tenacious. You have to earn it, and even when you think you’re earning it, you may not get it. I take whatever I do seriously, but I also maintain a level of serious fun as well. Lastly, I think a big proponent is being inquisitive and creating your own recipe out of whatever it is you do”, says Payne.
The bands current members are, Bill Payne, keyboards and vocals, Sam Clayton, percussion and vocals, Fred Tackett, guitar and vocals, Kenny Gradney, bass, Scott Sharrard, guitar and vocals, and Tony Leone, drums
Although Little Feat has been together for over 50 years, they did go through an almost 10-year hiatus, from 1979 to 1986, after the passing of Lowell George, one of the founding members of the band. In 1986, Paul Barrere, a prominent member of Little Feat from 1972 until his passing in 2019, and Bill Payne met up, and they discovered that their passion for Little Feat was still alive. In 1988, they hit the road again, and the band has been back together ever since.
“We’ve been up, and we’ve been down, but what I landed on through it all was that I hoped that no matter how productive or well-known we were, we would always be respected throughout the musical community, by our peers and our fans”, comments Payne.
“I’m currently writing my memoir because there are a lot of great memories, a lot has happened, a lot of people are gone, and the experience of doing so adds to the history of it all. I’m not here to write the history of Little Feat, it’s something I can’t and won’t do, but going through all of the moments, reliving them, it’s been pretty neat”, adds Payne.
Their latest studio album, Rooster Rag, 2012, has been regarded as their best studio album in over 20 years. This album features four songs co-written by Payne and the Grateful Dead’s legendary lyricist, Robert Hunter. It also features four breakout songs by Fred Tackett, and a collaboration between the late Paul Barrere and Stephen Bruton.
“We cut Rooster Rag in 2012, so it’s been a while, but when I hear it I kind of go, ‘oh gosh, I don’t remember it being like this’, and then I realize it’s really great”, Payne says.
When asked what Payne would regard as the most rewarding part of his journey, he replied, “It’s a simple, but great question. I think the most rewarding thing is two and three-fold. The number of relationships I’ve had professionally and musically with people, but coinciding with that is getting to know our fans. A lot of them have become friends. Life is a journey, a journey that is filled with experiences that hurt, that help, and those that are formed with love, occasionally hate too, and I cherish those moments”.
Regarding their upcoming show, Payne says, “In this particular case, people can expect the unexpected. Our set is ever-changing, we will have songs that we will always play, but we’ve been changing things and like to keep it fresh. We enjoy things that challenge us as musicians, so we are going to have some fun with this, as we always do, but we are challenging ourselves and that is really cool”

Deviled Eggs with Caviar
INGREDIENTS
Filling
2 quarts water
6 large eggs
2 tablespoons Truff Mayo
1 tsp. juice from pimientostuffed green olives
2 tsp. Dijon mustard
1 tin Siberian sturgeon caviar
4 pimiento-stuffed green olives, thinly sliced
DIRECTIONS SERVES 6-12
In a medium saucepan add eggs and fill with water until just covered. Bring to a boil and allow to cook for 8 minutes. Remove from heat and cover for 5 minutes. Add to an ice bath to cool. When completely cooled remove shell rinse with water and pat dry.
Slice eggs in half lengthwise, and remove yolks. Mash with a for into a small bowl. Stir in mayonnaise, olive juice, and mustard until smooth. Add to a piping bag, and evenly fill each egg white half. Garnish each with a small dollop of caviar and sliced olives.

Beef and Asparagus Negimaki
INGREDIENTS
1/3c. hoisin sauce
1/3c. mirin
2 tbsp. rice vinegar
2 tsp. toasted sesame oil
3 tsp. toasted sesame seeds, divided
1 lb. flank steak, butterflied and pounded extremely thin
1 lb. asparagus
8 scallions
1 tbsp. olive oil
DIRECTIONS SERVES 8
Whisk together hoisin sauce, mirin, rice vinegar, sesame oil, and 1/2 of sesame seeds to combine. Dived in half and set aside.
Cut steak into 1/4 inch strips, toss to coat in sauce mixture let marinade for 15 minutes.
Pre-heat grill medium-low. Slice 1 scallion on an angle thinly and set aside for garnish Quarter the remaining scallions lengthwise, then cut into 6 inches long strips.
Toss scallions and asparagus in olive oil.
Take one scallion strip and 1 asparagus and roll steak tightly around them. Secure with a toothpick through the vegetables. Repeat with remaining meat and vegetables.
Grill covered, and baste at least twice with reserved marinade, cook until lightly charred and just barely cooked through, 2 minutes per side.
Remove toothpicks serving immediately, garnish with scallion and sesame seeds.

Honey Chipotle Glazed Ham
INGREDIENTS
1 fully cooked bone-in ham (8 to 10 pounds)
1 cup packed brown sugar
3 tablespoons honey
2 tablespoons cider vinegar
2-1/4 cups ginger ale
4 chipotle peppers in adobo sauce, minced
3 garlic cloves, minced
1-1/2 teaspoons Dijon mustard
3/4 teaspoon ground cinnamon
3/4 teaspoon ground cumin
Preheat oven to 325°.
In a saucepan, mix brown sugar, honey, vinegar and ginger ale. Bring to a boil on medium high heat, cook until mixture is reduced by half. Stir in remaining ingredients. Reduce heat and simmer for 5 minutes uncovered. Reserve 1 cup mixture for sauce keeping it warm for serving. Using a sharp knife, score ham with 1/2-in deep in a diamond pattern. In a roasting pan place ham on center rack. Bake, uncovered, 1-1/2 hours
Brush ham with glaze, coating thoroughly. Bake uncovered until 140° internal at the thickest part avoiding the bone Brush the ham at least 2 additional times with the glaze while the ham bakes Serve with reserved sauce
Key Lime Pie
INGREDIENTS
1 Store bought graham cracker
crust
Two 14oz cans sweetened
condensed milk
1c. plain Greek yogurt
1 tsp. grated lime zest
3/4c. lime juice
Whipped Cream for topping
Preheat the oven to 350 degrees F.
In a large bowl, whisk together condensed milk, yogurt, lime zest, and juice.
Pour mixture into graham cracker crust.
Bake for 15 minutes, until the filling is almost set still having a little bit of jiggle.
Let cool at room temperature. Place in the refrigerator to chill and set up the rest of the way, about 3 hours.
Top with whipped cream and serve.

Pat’s Pizza & Bistro at 1426 W Broad St in Bethlehem has become well known (or more accurately a viral hit) after the introduction of their now famous Pasta Flights. Which consists of 4lbs of 3 different types of pasta served on a board to the table acting as the perfect way to share between a group or to sample new dishes to see what you might want to order on your next visit. The restaurant has always prided themselves in innovating new ways and always pushing the bounds of what is normally expected from an Italian restaurant. They are back at it again now by introducing Sunday brunch.
We had the pleasure of sitting down with the owner, Yianni Kyziridis, and discussing the inclusion of brunch. He informed us that Pat’s did previously have brunch but it unfortunately ended due to the pandemic So this is actually a long anticipated return to the brunch scene. Yianni and his kitchen staff did not take the easy route adding standard brunch items or even just reintroducing the same menu from their original brunch.
Much like any new endeavor Pat’s undertakes they invest as much time as possible developing the perfect recipes for their dishes.
The BYOB restaurant has topped off their new brunch menu with complimentary Peach Bellinis.

After putting together a beautiful photo shoot with a local photographer highlighting the new dishes, Yianni let Lehigh Valley Food break the news to the public and the immediate response has been overwhelming positive.

Corpse Reviver No. 2
1 oz. American Dry Gin
1 oz. Cocchi Americano
1 oz. lemon juice
1/2 oz. Cointreau
1/2 oz. Grand Marnier
2 dashes of Absinthe
INGREDIENTS BUILD
Combine all ingredients in shaker except for the absinthe. Add Ice and shake until shaker is frosted and chilled. Rince a chilled cocktail glass with absinth, and strain drink into the glass. Garnish with lemon twist.
A pre-prohibition cocktail dating back to at least the 1870's. Famous for being a hangover cure it got its name for it miraculous ability to rouse the dead, and by that I mean give life and vigor back to those facing the consequences of their actions the night before. Almost lost to history after prohibition the Corpse Reviver #2 was brought back in Harry Craddock’s “The Savoy Cocktail Book" originally published in 1930, along with many popular modern cocktails While there is in fact a Corpse reviver #1, CR #2 has remained a more poplar version of the drink. The first Corpse Reviver, with no numbers, showed up in the 1871 book, "The Gentleman’s Table Guide: Being Practical Recipes for Wine Cups, American Drinks, Punches, Cordials, Summer & Winter Beverages."

INGREDIENTS BUILD
Combine ingredients in a cocktail shaker with crushed ice. Shake and pour into cocktail glass. Top with a sprinkle of nutmeg, and garnish with pineapple fronds and an orange wedge
First crafted in the 1970's at the Soggy Dollar Bar in White Bay on the islands of Jost Van Dyke in the British Virgin Islands. The Soggy Dollar got its name because the only way to reach it was by swimming leaving the party goer to pay in soggy bills Daphne Henderson, owner of the Soggy Dollar, created the infamous Painkiller using Pusser’s Rum. Charles Tobias the founder of Pussers had spent 2 years trying to get Daphne to give him her secret recipe but she refused. Until one Day he got his hands on a pain killer and was able to take it home and reversed engineered it. During the 80's the Rum brand trademarked the Painkiller and while it can be made with any rum if its on a menu at the bar it better list Pusser's Rum as an ingredient.

It’s safe to say that most people enjoy dining out; the ability to try new exciting foods, being in a well decorated place that’s different than your home, being able to socialize with your party in a comfortable environment and honestly not having to worry about what you’re going to cook? These sentiments are almost universally shared amongst foodies, unfortunately there is a large percentage of the foodie population that whether for health reasons or basic dietary needs have restrictions that hinder their ability to enjoy a lot of the foods that others so easily order and enjoy As someone new to this community I’ve found these new restrictions are actually helping me find new amazing dishes that are helping me push out of my comfort zone and try new foods and ingredients Just because it’s a restriction doesn’t mean it’s negative
Aril is here and there are amazing places to eat out in the Valley when you have a restricted diet and that’s no joke! This month we visited Urbano Mexican Kitchen and Bar. We were blown away by both the flavor of the food and drinks but also with the selection that they had on the menu that catered to those with dietary restrictions. For those of you with gluten intolerance all of their taco shells are soft corn tortillas so they are gluten free, as well as all of their non fried meats do not contain any flour. Too avoid contamination all gluten free food is prepared on a designated section of their grill to try to further ensure the safety of their gluten intolerant patrons. For the vegetarians and vegans out there, Urbano offers 15 plus vegetarian and/or vegan menu options, with the ability to make more dishes vegan by substituting their aioli for any other sauce on the menu for no additional cost. To go even further in an attempt to cater to those with dietary restrictions, diabetics like myself can safely dine at Urbano with less worry of sky rocketing sugar levels Their Guacamole has the option to substitute the traditional chips with a carb healthy Celery and Carrots, as well as the option to substitute your tortillas for a Lettuce Bib at no additional charge This idea of carb friendly also extends to the rice that can be substituted for Lettuce also upon request Urbano has created an environment and menu that really makes if easy for those of us with restricted diets to still enjoy delicious Mexican Food while out with family and friends.

They are open Monday, and Wednesday through Saturday from 9 am to 4:30pm and Sunday from 11am to 4:30 pm. Online reservations are required for anyone age 12 months and older.
There's lots to do with two full floors of fun and engaging exhibits. I love that it's all hands on and kids are able to explore and use their imagination. Currently, the featured exhibit is Food & Family with a shopping market, a home and industrial kitchen, and a neighborhood festival area. And now through May 7th you can explore Emotions At Play With Pixar's Inside Out as part of their traveling exhibit.
Monthly events include First Wednesdays (admission is $2 per person from 4-7pm on 4/5 & 5/3) and Museum Minis ( Toddler Subscription Series with this month's theme "Celebrating Spring" on 4/6, 4/13, & 4/20). Other upcoming events include Storytime: Easter on 4/8, Storytime: Passover on 4/10, Black Box Saturday 4/15 (in the Playhouse Theater with a special performance by renowned percussionist Dende Macedo), Storytime: Eid al-Fitr 4/23, and We Love the Earth 4/29.

Now through April 30th OceanX Adventure is happening at Crayola Experience in Easton, PA.
Explore and learn about different ocean animals and their superpowers. You can build an ocean landscape at an interactive 3D sand table, take an "underwater" photo in a Crayola OceanX Sub, visit the black light coral cove, measure up to the largest hammerhead (a 20ft photo op), make a "splash" playing ocean-themed games on an interactive floor, melt and mold crayons into a seahorse or shark, and more! Open daily 10am, check website for closing time (varies between 4-6pm). And don't forget to stop inside the Crayola Store on your way out!
