WELCOME TO OUR WINTER EDITION! A big welcome to our gorgeous Winter edition of Ruffles & Cake Magazine! This edition has been by far one of my favourites to put together. I am just so smitten with the beautiful weddings in this edition; some of which I was lucky enough to be there to capture there story. I am so thrilled to be working along side the best in our industry, from locally and afar. We've teamed up with team the enchanting Anna Campbell once again with an exclusive sneak peek at her 'Forever Entwined' Collection to be released later this year. We chat with and share the story of the photogenic and bubbly Mel from North Queensland cake decorating business, Paper and String. If you haven't tasted one of her cakes yet, it's safe to say you're missing out! As I type this I'm about to eat a snack the size of my hand; all healthy and apart of a clean eating, twelve week fitness challenge. So, it might be best I stop talking about Mel's cakes or I'll be hunting for a sneaky treat soon... ! I am so excited to showcase the first ever wedding held at the The Heritage Trust; Nikki and Todd. I'm sure this is just the first of many we'll see at this beautiful location; the perfect backdrop for a Great Gatsby or vintage inspired wedding. To finish off, we've decided to mix things up a little this edition! Instead of showcasing the usual destination wedding, we've decided to give you a sneak peek at a traditional Hindu wedding of Sarah and Vishal. HOW WE MET he said We first met on a Contiki tour in the USA.

she said We meet back in 2009 Â in the USA, we were on the same Contiki Tour!

T H E F I R S T D AT E he said We didn’t really have an ‘official’ first date, but the first time we went out together was at the end of our Contiki tour in San Francisco. We spent a day walking around San Fran site seeing together. It went really well, mainly because we had spent the last two weeks sharing a bus. The usual awkwardness that goes along with a date wasn’t there.

she said We didn’t really have a first date, but I count our first date as the day we spent together in SanFrancisco. We spent the day exploring the city, visiting all the ‘touristy’ places and just getting to know each other. That day is the date we picked to be our anniversary.

THE FIRST KISS he said The first kiss was in Scottsdale, Arizona on our Contiki tour - however our first real kiss was at the Grand Canyon. We had just had ice cream after dinner and were walking back in the cold when she kicked snow at me. This inevitably unravelled into a snow ball fight and finished with me kissing her.

THE FIRST I LOVE YOU he said I think I said it first. We’d been together in a long distance relationship for some time, travelling back and forth across the country every couple of months to see each other. Despite the distance it felt easy to say. I'm not sure how expected it was [laughing].

she said I travelled to Melbourne to visit Cam, as I was still living in Perth at the time. We were in his room on base watching a movie and he just said it. We had both hinted how we felt over the phone calls, but wanted to wait so we could say it in person.

FINDING THE ONE he said I’m not sure when I realised, but I distinctly remember the moment when I decided that I wanted to propose. It was following an ANZAC Day in Sydney where I had been visiting my family. Janae had to stay in Townsville to work. We both are used to spending long periods of time away from each other, but I think on this particular day I realised how lucky I was, how much she cared about me, and how much I cared about her.

she said It's one of those really corny sayings where I 'have always known'. When we first met in America I just had this feeling that we would be together... [here we are] 4 years later!


THE BEST MOMENTS he said 1. Walking around San Francisco together at the end of our Contiki tour, 2. Flying over to Perth and surprising her over an Easter long weekend, 3. Janae moving to Darwin to live with me, 4. Spending ANZAC day together, 5. Christmas in Melbourne with Janae’s family, 6. Skiing in Queenstown, New Zealand

she said The best memories are all the adventures we have been on. Especially packing up the car and just exploring which ever state we are living in at the time, and just being able to spend time together.

THE PROPOSAL he said I proposed on a jetty in Queenstown, New Zealand. It was after a day exploring and bungee jumping. Janae had wanted to get a photo of us with the mountains and lake in the background, and I used the opportunity to ask her to marry me. She will say it was unexpected but I think she knew I was going to happen sooner or later.

she said We were in Queenstown, New Zealand on a holiday last year. We just got back from bungy jumping and he suggested we go for a walk along the lake. We found a little jetty just down from the hotel. I had been taking photos and Cam asked me to come over to were he was standing. I walked over and he had the ring in his fingers and asked me to marry him. I went in to complete shock, covered my face with my hands and buried it into his chest. I then remembered I needed to say yes!! I was so shocked, but so excited. I later found out that he had the ring in his pocket whilst bungy jumping, too!




THE WEDDING he said We’ve decided to get married in Sydney, at a small chapel connected to the school I attended. We are very excited, and I know I am a little nervous but we are looking forward to having all of our friends there on the day, enjoying themselves and being with us as we make it official.

she said Plans have been up and down with Cam getting deployed, but we have now set a date - 17.12.15! We have decided to get married in Sydney and have locked in our church, reception venue and photographer (the big 3). As an Event Planner I have 1000 ideas, so trying to pick just one theme is proving to be difficult.

“Pastry chefs aren’t real chefs!” This is what Melissa Hiette first thought when she was moved from the world of hot pans, fish and meat, and into the pastry section of the restaurant she worked at in Sydney.

Melissa had been running a bakery in Townsville and It was here that she realised she had a passion for making cakes. She began by first experimenting on family members but it wasn’t long before she had complete strangers asking her to make cakes for them. “I was like ‘wow this is crazy’,” she said. “It kind of planted the seed that maybe I could do this as a career.” Cake decorating seemed like a natural progression for Melissa. “I just love being creative and I love food. You put them together and the love child is cake decorating,” she said. “But then to make people’s cakes for their wedding is just amazing.” Melissa started Paper and String just under two years ago and said she never expected to become this popular so quickly. “At the beginning I thought if I can just do one cake a week, maybe even three or four cakes a month then that would make me really happy,” she said. “Now I’m doing say four cakes a week with cupcakes on Tuesday and biscuits on Thursday." “I’ve just kind of fallen into it and hit the ground running and thought what am I doing?” she said, surprised by

“I keep saying whoa, it’s been two years – that’s crazy!” Cake decorating is a full time job. It's not uncommon to work anywhere from 15-20 hours a day toward the end of the week for Mel. “It’s a three day process that’s providing I take on my normal number of cakes per week which is anywhere from 3-5 depending on size and detail obviously,” she said. “Then, of course if someone’s getting 150 favours with their cake then I have to put that down as a bit of an event as well.” It’s not just wedding cakes that this talented lady makes though; she does anything from kid’s birthday parties to christenings, baby showers and basic birthday cakes as well. “Generally I can do pretty much anything,” she said. “If someone wants something and I have the time, which is the big thing, then I’ll make it.” While Melissa doesn’t have any big plans for the future, she wants to continue building on Paper and String and catch up on some of the success that she’s had. “I’m about a year and a half behind. It’s all just really taken me by surprise,” she said with a laugh. “I’m blown away and I’m absolutely flattered that people are constantly calling and wanting cakes, it’s the biggest compliment. I just absolutely love what I’m doing.” •

WEDDING CAKE 101 Mel talks trends, hot tips and all things cake!

Popular cake flavours “Chocolate mud cake seems to be one of the most common requests. I think nearly everyone has at least one tier that’s chocolate mud. I get good reports on it and I used it on my wedding cake too, so that’s a good recommendation! With favours, a lot of people choose macaroons these days and chocolate truffles as well. Biscuits are really great because they can double as a name place; taste great and they’re cheaper, too.”

Popular shapes “There are a lot of round cakes at the moment. There must be some sort of trend because you’ll get the odd square one but most seem to be round and I like that shape too.”

Inspiration “A lot of brides are using things like Pinterest and Google Images and coming in with four or five cakes in mind that they say 'ok, can we incorporate aspects of all of these'. Whether that might be a vintage kind of style or a more modern kind, or even a really classic, butter cream and fresh flowers.”

Consulting with brides “I sit down with probably 50 per cent of my brides for a consultation, where we talk about the height and width of the tiers and the design on each, so I can be really clear on what they’re after. With others, we can work it out via email and shoot ideas back and forth. Sometimes I’ll draw it up if I feel I need to be a bit clearer on it and say ‘is this what you were imaging’ and it helps us both to visualise the end product, as well.”

Top tips “Know how many people that you’re wanting to feed with the cake and whether the cake is going to be as dessert or whether it’s going to be with tea and coffee after. If it’s for dessert, then without fail we need to get x amount of portions out of a cake, but if it’s with tea and coffee, people tend to just take a little bit and have some more beer or wine. The key is knowing how many you want to feed!”

THE DRESS "My dress was a gown from Sydney designer Luomo. I travelled to Sydney with my mum, aunty and maid of honour to find the perfect dress. As soon as I stepped into the Luomo showroom, I knew that's where I would find 'the dress.' Luom individually handcrafts her dresses and takes such pride in her creations. She was an absolute dream to work with and made the experience incredibly special. Luom also custom made my headpiece which matched my dress perfectly. " - Siobhan

THE CEREMONY “We were married at the St. Joan of Arc church in Alma Bay, Magnetic Island; which was VERY small and intimate. We were married by Father Dave Lancini who is known for bringing a personal touch to the ceremony. I was so nervous to walk down the aisle and be the centre of attention, but as soon as I saw Aaron waiting for me at the alter, I didn't notice anyone else and felt completely at ease. - Siobhan

THE RECEPTION “Our reception was held at the beautiful Lotus House in Horseshoe Bay. It is such an incredible location and we were completely smitten with our choice! We didn't have a theme as such, but once we had decided on having the reception at Lotus House, a laid-back garden theme seemed to fit our style pretty well and was loosely followed. The guests arrived to canapés and drinks on the deck overlooking Horseshoe Bay. Guests were then led to the garden where they listened to the touching and amusing speeches given by family and friends. We wouldn't change a thing about our day, except the fact that we missed a cyclone by mere hours and it didn't just rain, it poured! ” - Siobhan

THE DRESS "Seeing myself in my dress for the first time was a moment I won't forget; it brought me to tears. Â Thank goodness I had my photographer and the girls there to calm me down! I remember when I first went dress shopping I knew what I didn't want, but not really what I did want. I found my dress just so feminine, which was always how I wanted to feel on my wedding day. Â It has a tule skirt, which was something that I wasn't sure I liked, but once I tried it on I felt like a princess!" - Nikki

WA L K I N G D O W N T H E A I S L E “After arriving 30 minutes late for the ceremony, I then cried almost the whole way through. That feeling of 'finally we are here' was just so overwhelming and I couldn't of felt happier! I remember walking down the aisle with Dad talking about the most random things. He even commented on how green the grass was! I now know that he was doing his best to distract me from crying, but I remember thinking as we walked, 'what is he talking about?' PERSONAL TOUCHES "Our ceremony was really important to us both and we put a lot of time and thought as to what it was exactly that we wanted to say.  We both wrote our own vows in secret so we each got to hear our heart felt words on the day and not something rehearsed. We read them from our personalised vow books, which we had specially made just for our day. For the something a little different, we also decided to incorporate a 'knot tying ceremony'. Together, we both tied a fisherman’s knot; also known as a 'true lovers knot', for it is the strongest there is; its bond will not break; only becoming ever stronger under pressure. We love that we now have an actual symbol of our marriage which we will frame and keep for the rest of our lives." - Nikki

SWEET MEMORIES “Todd and I met while working at Jupiters Hotel and Casino. Todd was working as an Accountant for the property and I worked at the hotel reception. We ran into each other a few times at work, and things just went from there. I still remember seeing Todd for the first time during my first day of work. I remember I had butterflies for the rest of the day and hoped that I would get to see him again! This is still a memory I think of quite often and can't help but smile at.” - Nikki

THE VISION “When we first got engaged I spent so much time looking through wedding magazines and picking out things that I liked. After a while, I realised that I wasn't going to have any of these things as they were either not easily accessible, or just out of our budget. When I finally put the magazines away and thought about what we wanted our day to be it just all came together so nicely. Our day was just so perfect and we honestly wouldn't change a thing!” - Nikki

THE RECEPTION "We held our reception at A Touch of Salt and we couldn't have hoped for more. The team there did such a great job of setting everything up, looking after our guests and cooking the most amazing food! Our guests had sunset canapés on the deck while we had photos taken. We had a solo singer / guitar player who played music throughout the evening." - Nikki

THE MEMORY BOX "Instead of the usual guest book, we decided to have a Memory Box. Guests each filled out a questionnaire, including questions about when they first met us, their favourite memory of the day and advice for the bride and groom. They then put this in an envelope, along with a polaroid picture of themselves taken on the polaroid camera we provided for them. They then placed this into a box that we have kept and will open on our first anniversary!" - Nikki

S TA N D B Y M E “ We learnt a salsa routine for our first dance which we danced to a 'salsafied' version of Stand By Me by Ben E. King and Prince Royce. It was lots of fun and we managed to get through it (thanks to a sneaky shot beforehand) without too many mistakes!" - Nikki

GETTING READY "It was special getting ready as there are a lot of customs and traditions involved, including the Mehndi, which is the decorations on your hands and arms. I wore the most special red / maroon Langa which was covered in hand-made beading. My mother-in-law travelled to Fiji especially to buy it for me!" - Sarah

WA L K I N G D O W N T H E A I S L E "The wedding didn't actually start until 6pm! As the ceremony was at home, we both just got ready there and I met Vish, all dressed and ready at the top of the stairs for the first time. We walked down the red carpet aisle together infront of 200 of our friends and family, where we'd eventuate at the Mundup (A Hindu type stage) where the ceremony would be held" - Sarah

THE CEREMONY "It was all very strange and surreal. I couldn't believe it was finally happening! Vish and I had two weddings, the Hindu wedding first followed by our Australian wedding the next day; allowing us to incorporate both cultures. Of course, I'd never been part of a Hindu wedding before so I learnt things along the way on the night. We sat on the stage for about an hour and a half, making promises together as husband and wife and following custom wedding traditions. " - Sarah

THE RECEPTION "The reception was very colourful and there was lots of dancing! Of course, it was a Bollywood theme. We didn't have a first dance organised because that is not the traditional custom, but our family got us both up; we had to wing some 'Bollywood' style dance moves! It was so much fun!" - Sarah

"It all depends on your style of dress, the way you are going to have your hair on the day and personal choice. I had a long veil that extended beyond my dress because that’s what I wanted since I was a little girl. My advice would be, put your dress on and then play around with hairstyles and veil lengths.
