TIPS • A pizza peel (a shovel-like tool to maneuver pizzas in and out of the oven) is a must! Dust it with flour or cornmeal to prevent sticking. • Pizza should be at least 1/2 to 1 inch smaller than cooking surface. • Shred your own cheese - many pre-shredded cheeses contain fillers that might make it burn. • Don't overdo toppings, this makes the pizza too heavy causing it to stick to the peel or hold too much moisture in the crust. A ceramic pizza stone is another easy and affordable alternative to any type of pizza oven. While you won't get all the benefits of using a specialty oven, they do help retain heat and absorb moisture to create a crisp, tasty crust. You can also use a cast iron skillet - heat your oven to its hottest temperature and place it on the bottom to start, then move it to a higher shelf after adding the toppings.
