Ingredients: 4 x 6oz rump steaks | Salt & pepper | 2 cloves garlic, sliced | 1 red chilli, sliced | 1 knob of ginger, cut into matchsticks | 1 tbsp light soy sauce | 1 tbsp balsamic vinegar | 1 tbsp sesame oil | 100g radishes, cut into quarters | 200g tenderstem broccoli, trimmed | 200g choy sum, trimmed | 50g roasted peanuts, crushed Method: 1. Pre-heat a large frying pan and while you wait, season the steaks with salt and pepper. 2. Add 1 tablespoon of olive oil and cook the steaks each side to your liking. Remove and keep warm. 3. In the same pan, add another tablespoon of olive oil and fry the garlic for 1 minute. Add the chilli and cook for a further 30 seconds, before adding the ginger, soy, balsamic vinegar and sesame oil. 4. Once the dressing comes to the boil, add the radishes and tenderstem – cook for 1 minute. 5. Add the choy sum and cook for a further minute, before removing from the heat. 6. Method: 1. Reserve 1 tsp of the Chipotle rub and put the rest in the marinade bag with the steak, 2 tsp of oil and juice of 1/2 lime. 2. Shake the bag to coat the meat and refrigerate overnight. 3. Slice 6 shallots finely, put in a bowl and add the remaining lime juice, cloves and chilli. Cover and refrigerate overnight. 4. The next day, remove the steak and shallots from the fridge and bring to room temperature. 5. Heat the oven to 200°C/180°C fan and also heat a frying pan/griddle to hot and cook the steak on each side to your liking. Once cooked, set aside to rest. 6. While the steak is cooking, finely dice the remaining shallots, heat the remaining oil in a pan and gently cook the shallots for 3-4 minutes. 7. Add the beans and reserved Chipotle seasoning to the pan and heat through. Once the beans are warm, remove from the heat, mash, taste and season. 8. Lay the tacos on a baking sheet and warm in the oven for 6-7 minutes until crisp. Remove and keep warm.
