Keenan Boyle prides himself on his height and his ability to shuck oysters. “I figured I would just put the two together,” he said in a phone interview a from his boat on the Great South Bay, a 45-mile-long lagoon situated between Long and Fire Island. “That way people can remember that I was that tall mother shucker that they saw at the party.” The 6 feet 7 inches tall shucker started with oysters around 2005 when he became SCUBA certified to dive for “wild” oysters on the Long Island Sound according to his

He traveled to oyster farms along the east and west coasts of the United States to learn how to successfully grow oysters for market, then he started working as a farmer at one of the Town of Islip’s first aquaculture leases in the Great South Bay. Boyle also worked for wholesale companies purchasing oysters from different parts of the country, Mexico, Canada, and New Zealand to sell to chefs at high-end restaurants. He said sales demonstrations of oysters from the different regions helped him become a knowledgeable shucker. “What I found is that people are more starved for fresh oysters here,” he said.
