Chef Zakarian has turned his passion and hobby into an award-winning career and has gained further fame as the biting (but fair) judge on Food Network’s Chopped and as the recent champion of The Next Iron Chef, Super Chefs. In an exclusive interview with NY Resident, Mr. Zakarian gives us his take on being a chef in New York. NY Resident (NYR): First of all, nice to speak with you today and congratulations on the recent win! Geoffrey Zakarian (GZ): Thank you very much, it feels done – it was brutal. It was truly physical and it was shot over two months, from Los Angeles to Montauk, we were all over the map! But I’m very grateful for the experience and for the win! NYR: You are an adopted New Yorker, having been born in Massachusetts, correct? When and why New York and where in the city do you live? GZ: I moved to NY in 1981, I was actually a year and half in Hyde Park, going to CIA. When I graduated in late 1982, I moved to Manhattan. Now I live near Sutton Place on 58th and 2nd. I enjoy Midtown East. I can walk to restaurants nearby and go to my daughters’ school. It’s a great area, safe and close to a lot of businesses. NYR: How does New York color your approach to cooking? Do you think you’d change your style if you were primarily based in another city? GZ: Yes, I’d think I would change my approach if I lived in another food city. But the base of my food is a modernist approach to a clean, classical technique. Obviously the ingredients also inform my cooking. I know I’d be a different chef if I were cooking in Paris than in New York. NYR: New Yorker’s are notoriously spoilt for their restaurant choices. How do you keep the diner engaged and coming back for more? GZ: Well, it depends on the kind of restaurant you have. I have one that is up-market (The Lambs Club) and one that is more neighborhood café (The National). New Yorkers are wonderful - they want to have all types of choices – casual, fancy, expensive, etc. We have some of the best bistros, best wine bars, best little sushi bars in the York; you just have to know where to look. NYR: How hard is it to open and operate a restaurant in the city?

GZ: On a scale of 1 to 10 – it’s a 20 and if you know what you are doing it’s a 19. It’s a crapshoot, but with the best information, best ingredients, and best staff –it helps. There is, however, no guarantee - it’s an industry with an extremely high failure rate. NYR: Any plans for new restaurants in the city or beoynd? GZ: We just opened Tudor House in Miami. Beyond that I’m always looking, but I’m not right now engaged with anything new. Just looking around for a few good possibilities and we do have a few things on the backburner, but for the moment nothing planned. NYR: Do you have a classic New York favorite dish or restaurant?’ GZ: New York is fantastic! If I want something, I can go to XYZ establishment. I go to neighborhood restaurants, because they are convenient. I very much exist on yearnings; and I have different needs and wants. I’m around food all the time. I just want a plate of seafood or a slice of pizza. It’s never what’s the best pizza slice, etc. Restaurants – I lean toward casual – I love Bond St. for forward and innovative sushi, Balthazar is great for French bistro fare and Molyvos for Greek seafood. NYR: What do you think the next new trends in NYC restaurants are? I would like to eliminate the word trend. We (the restaurant industry) need to focus on service; and we must always give great value to the customer. Trends are always going to come and then going to fade. And I believe strongly, that trends are just going to get the chef/restaurateur into trouble. We put a plate of food in front of a customer; and we thank them for coming and we hope they come back. We are basically innkeepers – we should never forget that! NYR: Is there a New York chef or restaurant that you truly admire? GZ: Of course I am a big fan of Daniel Boulud for whom I worked. I’m also a big fan of Terrance Brennan, Marcus Samuelsson and all of the contestants from The Next Iron Chef. NYR: How was it to work at Le month’s edition) at its peak?

When I told people I was headed to Mexico City I was met with friends’ furrowed brows and warnings to be careful. The idea that it’s a dangerous place full of drug lords is totally false image. As a native Manhattanite I wasn’t worried, besides, I’d done my research. Mexico City has a sophisticated system of video surveillance cameras to deter crime. It is a cultural metropolis that welcomes more than 12 million visitors a year. It houses 160 museums, 100 art galleries and 500 movie theaters. Foreign Policy magazine ranked Mexico City as one of the world’s top 10 cultural destinations. I was gung ho to go. My trip was in early November, in time for the multi-day Mexican celebration similar to our Halloween, Dia de los Muertos (Day of the Dead). It’s a time of festive, colorful costumes and artworks of dancing skeletons. Candles lit up the night for the traditional holiday that honors the departed. Mexicans partied hearty in the streets, danced, and played music with abandon. The weather was warm and breezy. Due to its high elevation of 7800 feet, Mexico City is
mild all year. Winters are cooler but they’re nothing like our New York City frigid temperatures. Their “cold” months average 70 degrees. No matter when you go, though, bring a light sweater for the breezy evening and early morning air. I took a taxi from the airport to the boutique hotel, Condesa DF, located in a quaint neighborhood with sidewalk cafes and the large park Parque España. It’s a great place to jog because the path is in a loop so you can’t get lost. We were advised to stay out of the park after dark but that’s just common sense. have charm and there was a fully stocked mini-bar and a basket full of snacks. Condesa DF boasts a treadmill, bike, terrace, equipped gym. The staff was warm and gorgeous. Be sure to get to the fun local attraction, the Museo Nacional de Antropologia. It has
rooms of artifacts including Aztec Calendar Stones and Mayan treasures. Guided tours are available. Xochimilco, a borough outside Mexico City, is known for its canals which reminded me of Venice. The preserved waterways and chinampas—squares of land for growing crops—a vestige of pre-Columbian times. Colorfully painted gondola-like wooden boats called Trajineras are available for rent the same price for one person or 20 and a guide is included. The Mexican government is doing much to preserve this area. The water in the lagoons is clear and the wildlife protected. It is illegal to shoot birds there. At this time

Lunch was served on the boat—a sweet bread snack along with Horchata, a warm rice and milk drink similar to hot breakfast cereal. I loved the tasty little lumps. Other people on the boat indulged in ancient delicacies—fried grasshoppers, baked worms, ant eggs and bright red mini shrimp that looked like bugs. I did not partake. Thank goodness there was “normal” food available. I enjoyed guacamole, tortilla chips, black beans and rice. Another Xochimilco adventure, and a highlight of the trip, was an afternoon spent at the Dolores Olmedo Museum which boasts the largest collection of Diego Rivera and Frieda Kahlo art anywhere in the world. “Lola” Olmedo was a Mexican businesswoman, an entrepreneur who made all of her own money—mostly in real estate—and became extremely wealthy. She was friend and patron to Rivera and Kahlo. In 1962, Olmedo bought the estate, including a dilapidated mansion—a large colonial home from the 1600s that was in ruins. She restored everything with meticulous attention to detail. Stunning peacocks wandered the enormous grounds amidst bright yellow the Mexican hairless dogs, Xoloitzcuintle (try saying that

three times fast), and Olmedo left money to maintain a pack of them on the grounds with their own caretaker. When asked, the caretaker brought out a few dogs for visitors to see up close. They looked threatening, like pit bulls, but gently nuzzled their heads against my leg. It was weird when I petted one, the hairless skin felt like warm rubber. I learned that Mexican food is not the same as the American translation. Portions are smaller yet tastier, hence more satisfying. Dishes contained less cheese, grease and fat. The following day I went for lunch at Arroyo Restaurant and learned of their seventy corn dough stuffed with refried beans and cheese. Delicioso! The music and festive atmosphere was the main attraction. Exquisite looking Mexican men and women danced, sang and played an assortment of instruments. The costumes were bright white The tastiest meal I had was dinner at Rosetta. Chef Elena Reygadas is famous for her Italian fare served in a restored Belle Epoque mansion in the historic Roma neighborhood. The appetizer was beetroot with goat cheese and red wine reduction, followed by butternut squash ravioli, with amaretti and sage. I ordered the house polenta. Dessert was a sinful chocolate mousse with fresh whipped cream. On the last day, I experienced what felt like a magical mystery tour in Zócalo, the huge town square in the historic center of Mexico City. In honor of Dia de los Muertos, the Museo de Arte Popular annually sponsors a competition of alebrijes— brightly colored, over-sized paper maché monsters, dragons and fantastical animals.

Upon his return to the area, Miller purchased the land in parcels and then named it La Vergne after a battle he fought during the war. Miller’s daughter inherited the property and hosted many illustrious guests through the early part of the 20th century, including President Theodore Roosevelt and General John J. Pershing. In Manhattan, people talk about location, location, location. On the Caribbean island of Dominica, it’s all about nature, nature, nature -- which is why it is called “the nature island.” Its scenic landscape is so beautiful that you soon understand why the island was chosen for many scenes of “Pirates of the Caribbean 2 & 3: “Dead Men’s Chest” & “At World’s End.” Our adventure on Dominica began with a onemountains from the Melville Hall Airport to the capital city of Roseau. Our private driver for our entire stay, Benjamin Joseph, took us on a back route about nine miles out of our way to avoid roads that were in poor condition. We wound along one-lane mountain roads in the midst of the dense forest, surrounded by high trees and foliage. Resident
Along the way, Mr. Joseph pointed out items of interest such as dasheen, a root vegetable which is cooked like a potato. What immediately strikes a visitor is how much of this beautiful country has not been touched or developed. Besides the green water of the Atlantic Ocean and the clear water of the Caribbean Sea, many say there are 365 rivers, one for every day of the year. Dominica, not to be confused with the Dominican Republic, is a small island in the Caribbean, located in between Martinique and Guadeloupe. It is 29 miles long and 16 miles wide. English is Carib and West African languages, is also spoken. building on a cliff, next to the public library and across from St. Thomas Anglican Church, we were greeted with a drink made from orange-and-passion-fruit juice and coconut milk. Twenty-four-hour police were on hand, due conferences at the Roseau hotel, whose boutique atmosphere consists of 33 rooms. While eating our buffet breakfast, we overlooked the sea where the cruise ships arrive. We loved swinging in bird’s nest chairs in the lobby while sipping more of the “welcome drinks.” The whole island feels like a big botanical garden, but we had the opportunity to go to the Botanical Gardens, also in Roseau. More adventures were to come. The Emerald Pool in the mountains beckoned. After walking down paths and stairs of the Emerald Pool Trail in the Morne Trois Pitons National Park, we reached the Emerald Pool. After climbing over stones, some of which were sharp, the reward was swimming in refreshing water next to a waterfall. Morne Trois Pitons, the second highest peak on the island, is a dormant volcano. Another day we swam in Titou Gorge, after walking in the rain on a desolate nature trail and over a high, suspension bridge. Workmen were sprucing up the area adjacent to the gorge. Hot springs gushed next to the cold water here.
Culture awaited us at the Kalinago Barana Aute (The Kalinago Village by the Sea), in the Caribe Territory. At the museum, the tour guide told us that Kalinago is the name that the Native or Indian population call themselves. The Spaniards noticed human bones in the homes and erroneously called them Caribes, or cannibals. (After their deceased relatives’ bodies decayed in the sand, the Kalinagos took the bones indoors, in order to worship their ancestors.) Approximately 3000 out of Dominica’s population of about 72,000 have Calinago heritage.

After a few days of walking, it was time to get on a boat -- for a whale watch! Before embarking, we viewed a huge, female sperm-whale skeleton on deck at the Anchorage Hotel, which sponsors the excursions. We actually spotted ten sperm whales while we were out at sea. Everyone was really excited because there are no guarantees in nature. We learned that a sperm whale is the only whale with a blowhole on the left side of the head. It comes up out of the water to re-oxygenate itself and goes down for a

Imagine for a moment the joyous smiles of boys and girls when they truly get excited about something they’ve always wanted. As a parent, there is almost nothing as satisfying as that instant. My friends and relatives know that I am guilty of doing almost anything when it comes to my children’s happiness. And I know of no company, who goes to the same extreme, to bring smiles to their faces than the Walt Disney Company. But Disney is not the company it was when you and I were kids. No, they’ve grown and become leaders at pleasing the whole family. Beyond parks and cartoons, they have built and promoted a line of cruise ships that are some of the best in the world. Now they are feeling so bold that they’ve brought their ships to the
hardest market in the world, New York City. When I heard about Disney’s decision to come to New York I was both nervous and ecstatic. Obviously this was a great opportunity for local families to experience the “Disney Magic”. Well, I needn’t be worried because they are masters at bringing out the kid in all of us. From food, entertainment and down to the staff interaction with guests, Disney has created a world-class experience worthy of the pickiest New Yorker’s attention. Since its launch in 1998, Disney Cruise Line has established itself as a leader in the cruise industry, providing a setting where families can reconnect, adults can recharge and kids can immerse themselves in worlds

Upon arriving at the oasis, otherwise known as Pico Bonito Lodge, a friendly host greets you; “Bienvenido” she beams behind her reception desk. You instantly feel welcomed upon arriving, as if the staff has been waiting for your arrival. The tropical air smells fresh and full of life. If growth and greenery had a scent, this would be the source. As you walk to your cabin, you are entertained by the sound of orchestrated birds singing an ensemble of sweet, cheerful notes. Although pitching in on the performance, you can only spot six through the dense greenery. We are told by another friendly guest that you can spot the remaining birds on one of the many hikes Pico Bonito has to offer. After showing interest, we were instantly informed about the eight ecosystems, home to nearly 800 species of birds, within Pico Bonito’s Lodge and National Park proximities. Pico Bonito’s cabins are bundled against the jungle canopy range. They are made of stone and wood, authentic to the Honduran
culture. There are twenty-two cabins, with about six rooms per cabin. Each cabin, with louvered wood and screen windows, has an overhead fan and air conditioning if requested. A landscaped pool sits amidst the lodging grounds for those who wish to lounge. Common areas within the resort include: farm, serpentarium, the restaurant, and four story observation decks. The restaurant at the lodge provides their guests with an excellent dining experience. The authentic room, modeled with Honduran pine, is enclosed with screens to keep the bugs out while welcoming in the night breeze. The menu includes an exotic array of Central American food choices their guests eating preferences. The food is Mero dish is highly recommended. Since
fresh seafood is brought from the Caribbean Sea (only twenty miles from the resort) to the lodge daily, you always want to keep an eye out for those options on the menu. The dining room’s ambience sets a warm tone for pleasurable dining as you look out into the tropical gardens. During summer, the temperatures average at 90°F during the day and a comfortable warm 80° F during the day and a refreshingly is humid, but comfortable for a tropical standard. Although the days are sunny for the most part, on a typical day the rain will fall for about 20-30 minutes before the sun takes comes out once again. This is what gives Pico Bonito such vivacious wildlife for both plants and creatures. The lodge is not only accommodating to their guests, but also appealing for the hundreds of species of animals, bugs, and birds who love to visit the fruit trees
around the lodge. When you indulge in an exciting hike through the rainforest foliage, you’ll see the wildlife has fully grown to the around each other as if the forest has tangled fauna mesh together as you get deeper into the rainforest. The monstrous size of plants will have you reassess your standards on what the typical tree or plant size should be. On the skirts of Pico Bonito’s lodge, is a loop trail. It is intended for guests to hike independently or with family members and friends. However, if one does not wish to explore the jungle, you may choose to request a tour guide. The beauty of the excursion pours in when you come across one of the waterfalls or swimming holes along the way. One of the infamous trails leads up the Rio Coloradito. This narrow and steep river pours into the jungle-clad abyss, which provides swimmers with a unique swimming hole. The water is the perfect temperature for a break in the middle of a warm hike through the trails. Another enchanting hike will lead you to Unbelievable Falls, also known as the ultimate destination upon hiking through
the National Park. This particular waterfall is a double drop waterfall that spills for one hudred feet before it reaches the glimmering hole. Typically, these holes are not too crowded given the various other activities intended for Pico Bonito’s guests. Of course, the resort provides guidance to participate in additional adventures such as whitewater rafting along Rio Cangrejal, a twenty-mile timers to experienced kayak enthusiasts. Snorkeling ten miles off the shores of La Ceiba will land you on the world’s second largest barrier reef. Pico Bonito Lodge is a true getaway for those who wish to escape into the deep forests of Central America. It’s January 2012 and we’ve all made our resolutions and promises to make this the best year yet! And we’re going to keep them - of course we are. Its lobby with signature rotunda and trompe l’oeil murals dazzles. And the room, elegant and luxurious, has a breathtaking view of the park. Silks and brocades with a pale ivory, taupe and coral décor create a lush ambiance. I could get used to this. I liked this New York City oasis. We scheduled the Jiva in-room couples spa treatments with Stephanie and Vladimir. They are not the ice skating duo from the Olympics; they are excellent massage therapists who sent both boyfriend and myself into a state of bliss. They brought two massage tables with all amenities into our room. We both opted for the full body treatment to soothe tired muscles, relieve stress and energize. First our feet soaked in a basin of warm water and Jiva oils and were massaged. We inhaled the ginger and jasmine scents and began to breathe deeply. We learned that the principles of the Jiva Spa draw on ancient Indian wellness heritage and use all organic products, from oils to linens. Once we got on the table, the sterling duo worked their magic. Boyfriend and I were transported to a serene and restful realm. Our consummate professionals knew where we were tense and how much pressure to apply. I even got a creative solution to a work idea while I was getting massaged – without thinking about it. Next we headed to the Lambs Club in the Chatwal Hotel for a pre-theater dinner where famed restaurateur Geoffrey Zakarian (our cover story this month), winner of the Food Network’s Iron Chef competition, helms the kitchen. The dining room, with red leather banquettes, celebrity photos lining the walls and surroundings. I wondered if the cuisine could live up to the touches - did not disappoint. I chose a strawberry gimlet and boyfriend picked Guillermo Wallace – tequila, honey and peated Scotch from their famous old world cocktail menu – served with hand carved ice. At this point, I could not tell if the happy smile plastered across his face was from the Jiva massage or Guillermo’s tequila combo. No matter, it was all good. For starters, tender, well seasoned and excellent grilled octopus with lemongrass, turnips and potatoes. Hand cut beef tartare was bold and delicious. Hamachi Sashimi was fresh, and well balanced with celery root and compressed apple; quite tasty. A mouth. I chose a robust entrée, lamb loin with chorizo, piperade and sofrito across the table was prepared to perfect consistency. All Everyone in the room was smiling and chatty creating a cool, clubby vibe. I was expecting someone from Mad Men to walk in any second. We were taken back to another era, when

Forget about trying to analyze the wacky plot where a patient David is a reincarnation of Melinda - a feisty big form and wardrobe, singing and dancing, during the hypnosis sessions, and Connick falls in love with her. There is a truism amongst ski resort operators that unless skiers see snow or other skiers with slats on the rooftop of the car heading north, they think there is no snow and they opt for dinner and a movie instead. of spotting a convoy of skiers heading for the Thruway is somewhat slim and, except for the odd blizzard the streets are bereft of the white stuff by morning. And, frankly, what little snow is left on city streets after a couple of hours is unattractive and uninviting, mountain resorts. Another little known fact is that there are more ski areas in New York State than in the mountains of Vermont and many of them offer the same terrain variety and enough diversity so as to cater to any skill set.

Belleayre is an anomaly in that it is run by the New York State Department of Environmental Protection. That is a double edged sword because while it keeps the price of lift tickets reasonably low (to the consternation of Windham and Hunter) it is also at the mercy of Albany budget cutters who can’t think beyond the tip of
their collective noses. Interestingly, it shows that some government operations can work. While privately owned resorts are able to budget for promotion and events such as and improved, Belleayre was not permitted by DEP to participate. In spite of this, Belleayre has a diverse double chair lifts carrying about 1,200 skiers per hour to a high speed, detachable quad moving 2,400 an hour. Reached by Exit 20 and then following the well-marked signs, Hunter is also about a half hour from the Thruway. There are a wide variety of skill trails with 16 greens over the three mountains, 14 blues, West caters only to experienced skiers and offers no green trails. It has three blacks and three double blacks. Hunter One is best suited for the casual skier with nine greens, Mountain covers all four skill designations. The resorts 10 lifts can easily handle an amazing 16,400 skiers per hour while the

There are several that carry passengers through the tree tops and one that runs some across the valley in a spine-tingling ride. The zip doesn’t come cheap and it is not included in lift ticket prices, but it one of the most exciting rides you’ll ever experience. There are a number of overnight and weekend accommodations in close proximity to Hunter. The area around Windham offers a wide variety of accommodations, restaurants and activities.

If you visit Peru, your guide will undoubtedly tell you certain things, many of them food-related. Youâ&#x20AC;&#x2122;ll discover that there are, thanks to the 28 microclimates, some 3000 varieties of potato grown in the nation. That the distinctive Peruvian gourmet corn, with kernels nearly the
size of incisors, is raised in a specially demarcated region similar to the ones set aside for growing top-grade Cuban tobacco and grapes for champagne. That Punoâ&#x20AC;&#x2122;s rain forests produce the best organic coffee in the world, and pisco, the incomparable national beverage, was developed by Italian
immigrants who were trying to distill a Peruvian variant of grappa. And that there are roughly 5000 Chinese restaurants in the country, and chifa, as the cuisine is called, is Peruâ&#x20AC;&#x2122;s most popular food.

What can’t be conveyed in language, however, is the incomparable majesty of the Sacred Valley of the Incas, nestled high in the Peruvian Andes, and the urbane elegance and surprising variety of the nation’s capital, Lima. These must be experienced, and one could do far worse than to do so from two of the most recent luxury properties opened by Libertador, Peru’s leading hotel group: Tambo del Inka, in the Sacred Valley, and the Westin Lima, both designed, with signature suavity, At some 9000 feet above sea level, and with an average year-round temperature of 55 degrees, the Urubamba Valley (as the Sacred Valley is properly called), sits between two Andean sub-ranges in the Cusco region, and is the preferred place for summer houses among the nation’s elite. Urubamba River, which crosses the valley on a north/south axis, mirrors the route of the Milky Way: the ancients believed that the two “rivers,” earth-bound and celestial, would meet at the end of the world. Its geographic pleasures notwithstanding, the area is best known for its standout attraction, the 15th-century Incan “lost city,” Machu Picchu. Set on a vertigo-inducing mountain ridge, the UNESCO World Heritage monument, now widely believed to have been the summer palace of the Inca’s king of kings, Pachacuti, is one of the most popular destinations on the planet. Last year was the one-hundredth anniversary of its discovery by the American explorer Hiram Bingham. Picchu is easy to visit, thanks to the

Lima remains a cosmopolitan yet low-pressure city with, distributed among (ranging from the expected Spanish Colonial and Mediterranean Revival to unexpected examples of Deco, Bauhaus and Tudor); ample park space (including, in the upscale odd architectural sites; impressively creepy catacombs; an exceptionally well curated, utterly absorbing pre-Columbian art museum, with a delightful (and, I must say, educational) erotic pottery gallery (Museo Larco, in an 18th-century mansion constructed atop a seventh-century pyramid); and – when the charms of cultural tourism pale – casino gambling and a beach popular with surfers. San Isidro, the city’s garden district and center and, despite its heavy business, tourist
old-world aristocratic quality it developed as a colonial enclave in the early 20th century. San Isidro is home to “El Olivar,” a fourcentury-old park and historic landmark; Huaca Huallamarca, an archaeological site dating from 100 B.C.; and the Virgen del opened last July, it has the distinction of being in the tallest building in Peru. Accordingly, Arquitectonica’s sleek, undulating tower seems consciously contrived to be a contemporary icon for a booming city and, indeed, everything about it feels – indeed, is – outsized. The 20,000-square-foot spa – the largest in any South American city – has 17 treatment rooms, multiple water features center that would pass muster with the most discerning gym rat. No less monumental is the business center, with its 18,000-squarefoot convention facility – the largest indoor meeting room in Peru – and numerous smaller venues. So it’s surprising that, with its multiple “largest in” distinctions the Westin Lima is actually an inviting place to stay. This owes much to the interior design work, by the Chilean Sergio Echeverria. Much attention
has been paid to the material palette, which in the guest rooms and public spaces is almost unfailingly warm, organic and, where appropriate, luxurious; furnishings that gain notice for being more thoughtfully considered than the ones typically found in generation hip-hotel style clichés; and most of all the art program, which has been curated carefully enough to cause you to actually stop and consider what’s on the walls. Best of all, among the Westin Lima’s various dining venues can be found a powerhouse: Maras, overseen by chef Rafael Piqueras, whose resume includes Antica Osteria del Teatro in Italy and, not least, Spain’s late, great El Bulli. Piqueras’ tasting menu more than delivered the goods. Tuna tartare with ceviche-style scallops; a corn tart wild mushroom Porcon sauce; grilled deeppumpkin ravioli: it all added up to one of the most thoroughly satisfying dinners I’ve had in years. And as it was the last experience I had before leaving, several hours later, for a to a visit that was, in every sense, savory.

KATORI HALL’S “The Mountaintop” appeared to be a sure thing - winner of the Olivier Award, starring Samuel L. Jackson as Martin Luther King Jr. and Angela Bassett as an attractive chambermaid named Camae and directed by Kenny Leon. The playwright seems determined to bring King down to earth, starting the work with the civil rights leader calling to Ralph (Abernathy, presumably) to get him a pack of cigarettes. Then, he goes to the bathroom offstage and audibly urinates, after which a cup of coffee and it is delivered by drink alcohol and discuss politics, among other things; she expresses views closer to Malcolm X’s. I won’t reveal the weird directions the two-character play takes but they are ridiculous, despite a strong montage section near the end. Jackson (wearing a wig and sporting a mustache) is completely credible, as both the public and the private Dr. King. Bassett is equally gifted, with an extraordinary range of facial expressions and vocal intonations but she is misdirected into overacting and lapsing into comedy
shtick. Setting the play in the Lorraine Motel in Memphis (where Dr, King stayed) on developed it as a play. On the plus side, David Gallo’s motel set looks real and Branford Marsalis’ score perfectly sets the mood. “The Atmosphere of Memory,” a new play by David Bar Katz, directed by Pam MacKinnon (with a modest set by David Gallo), is a send-up of autobiographical plays, like those by O’Neill and Williams. It begins with a play within a play, in which the author (Max Casella) has cast his mother as herself. Things go awry when his other is offended that she is depicted as having played with his genitals in the bathtub when they were children. Then, the author’s cocky deadbeat dad appears to add his caustic comments. Katz is lucky to have Ellen Burstyn and John Glover as the warring parents. While some of the jokes score, the work quickly becomes tiresome. To transform this unhappy childhood into art would require better writing than is on display here.

THE 1971 ROCK MUSICAL “GODSPELL” is based on “The Gospel According to St. Matthew,” but takes a jokey approach to the material. Now back on Broadway (at the Circle in the Square Theater) in a production directed by Daniel Goldstein, the book by John-Michael Tebelak has been updated with references to a host of well served by an energetic cast. The savior and his apostles are a sort of rainbow coalition, led by Hunter Parrish, who seems closer to Justin Bieber than Jesus Christ. He and his followers splash around in holy water, leap on trampolines and play charades with members of the audience. The musicians are placed around the theater and the show is wholesome family fun, assuming your kids are old enough to deal impressive since she is an understudy), “Day by Day” by Anna Maria Perez de Tagle, and good-natured. good news about the Broadway version, directed by Walter Bobbie, is that Arianda has an ideal love-hate partner in Hugh Dancy. precursor of the screwball romantic as a vehicle for himself and Gertrude varying success. The current Broadway revival, directed by Richard Eyre, stars Kim Cattrall and Paul Gross and they skillfully maintain the love-hate balance throughout. Their stick-in-the-mud
spouses are well played by Anna Madeley and Simon Paisley Day. Coward provides plenty of laughs and any show where towel is off to a promising start. “Private

his “semester” on Broadway, there is serious examination of the interplay of race, gender and ethnicity – a veritable survey course in the introduction of sociology. Lydia R. Diamond’s Broadway debut, Stick Fly (Cort Theatre), presented by Alicia Keys (who also composes original music for the production) is a superb tri-fecta. This dramatic comedy of the LeVay family is set in David Gallo’s incredible set, a Martha’s Vineyard summer home for the wealthy African American family. Tony award winner Ruben Santiagoneurosurgery practice is emulated by his plastic surgeon son Flip (a prowlingly arrogant Mekhi Phifer) and Kent/Spoon be launched. An unimpressed Joe that “paid for law school, business school in a master’s in sociology,” and questions when Kent is “going to get a job.” Having gone to law school, graduate school and gotten an advanced degree in sociology, I felt for Kent when he “shrank,” according to his new fiancée Taylor, played with compassion and ferocity by Tracie Thoms, an earnest entomologist who is deemed still lacking, despite a background as a semi-acknowledged (but
legitimate) daughter of a Pulitzer Prize winner. While the “surprise” of the weekend was supposed to be Flip’s white (no, Italian, no, WASP) girlfriend Kimber (Rosie Benton), a privileged woman who works with inner-city students, the truest surprise of this play (which is ultimately more about family dysfunction than anything else) is young Condola Rashad, as second generation housekeeper Cheryl. This young woman receives second billing to the more acclaimed and famed, who should watch out – Rashad’s Broadway debut follows on her acclaimed performance in Lynn Nottage’s Pulitzer Prize winning Ruined, and I predict she will someday soon bring a Tony to place on her own family’s mantle. Theresa Rebeck’s Seminar (Golden Theater) is conducted by the superlative Alan Rickman as Leonard, who purrs, snarls, mocks, mimics and otherwise tortures four aspiring writers (Lily Rabe, Hamish Linklater, Jerry O’Connell and Hettiene Park), disarmed Broadway audiences in Les Liaisons Dangereuses, leaving all of the women wanting to sleep with him, it should come as little surprise that he has a similar effect on his seminar students, even as he trounces his way through their writing (shared brilliantly with the audience by oral rendition). Chinglish (Longacre Theatre), is David Henry Hwang’s new comedy of manners, ethnic misunderstandings and the non-material culture or words and gestures, which we call language. With superscripts in English translating between Mandarin Chinese and English, Daniel Cavanaugh (Gary Wilmes) tries to explain how a bumbling signmaker ties to forge a deal with a second city, dealing with unable translators, a corrupt government, a duplicitous intermediary (Stephen Pucci) and a very able second in command, Xi Yan (the superbly linguistic and comedic Jennifer Lim). Those who enjoy (or enjoy being frustrated by) signage will howl, as will those who appreciate superscripts (which have unabridged language). For those who seek language and exploration through movement, rather than verbal communication, Parsons Dance returns to The Joyce Theater from January 10-22, 2012, with a program that includes two World Premieres, a new untitled piece by David Parsons as well as a new untitled work choreographed by emerging choreographer and former Parsons dancer, Kate Skarpetowska.

THE 3 COHENS are a world class group of musical siblings. They differ from other famous jazz families (such as the Marsalis and the Heath brothers) in that they are from Israel and one member is a sister Anat, who plays sax and clarinet. Her brothers are trumpeter Avishai and soprano saxophonist Yuval. They each have their own careers but get together periodically to record and tour. The latest album is appropriately titled “Family” and is dedicated to their parents. Performing with them is Aaron Goldberg on piano, Matt Penman on bass and Gregory Hutchinson on drums and the special guest artist is the charming vocalist Jon Hendricks. The CD gets off to a swinging Both Yuval and Avishai penned tributes to Charles Mingus—“Blues for Dandi’s Orange Bull Chasing an Orange Sack” and “With the Soul of the Greatest of All,” which recalls the mood swings in the late bassist-bandleader’s compositions. They evoke the early days of jazz with their fresh versions of “Do You Know What It Means to Miss New Orleans?” and “Tiger Rag.” Hendricks adds charm to “On the Sunny Side of the Street” and
on February 11th, Anat Cohen will perform with her Quartet at Miller Theater at Columbia University. Not all Cohens come from Israel. Emmet Cohen, a 21 year old rising star, was originally from Florida and he grew up in New Jersey. The pianist already has an impressive resume and has been Downbeat's Best Jazz Soloist and leader of the Best Piano Competition. His debut CD, “In the Element” is mostly a trio date with bassist Joe Sanders and drummer Rodney Green, supplemented by trumpeter Greg Gisbert on three tracks. Included are four originals and six covers. His funky composition, “Just Desserts” with Gisbert sounds like a classic Blue Note track, something that Lee Morgan could have recorded, while “Good Morning Heartache” exudes emotion. Cohen comes up with inspired re-workings of pop standards, as in the opening “It’s Alright With Me.” Clearly, this young man lives up to the hype. On February 18th at 199 Chambers Street. work at Capitol and at the label he formed, Reprise. “Best of the Best’s” chronological At Heart,” “You Make Me Feel So Young,” “All The Way,” and “Come Fly With Me,” as well as the Sinatra recording that is the theme of “Married With Children,” “Love 1980, are also featured, including “Night And Day,” “The Way You Look Tonight,” “Fly Me To The Moon,” “Strangers In The Night,” “My Way,” and “Theme From New York, New York.” “Best of the Best’s” 2 CD version adds a previously out-of-print Seattle concert recording, and is packaged in a lift-top box with an expanded booklet Sinatra in 1957 at the peak of his powers with a full band led by Nelson Riddle. The material is all from the Great American Songbook with only one ephemeral tune, “Hey Jealous Lover.”

FEW MOVIES in recent years have moved an audience to rise from seats at the conclusion, applaud and stand still while watching the credits. War Horse was one of them. One of the best war movies—make that one of the best movies ever produced was “The Killing Fields.” The film showed the absolute brutality of the vicious Khmer Rouge in Cambodia slaughtering millions of their own people. Audiences left theaters absolutely drained war naked and drew the audience into the brutality of man vs. man. War Horse does not skimp on the brutality of war, but it shows a human side to the combatants and how even those trying to kill each other can show compassion and humanity. Joey, the War Horse, has an understanding of those around him shared by few humans. He responds to kindness and patience and is forlorn when another horse he has bonded with dies. With all the horror and death in the end it is an uplifting tale. Spielberg has cast a virtual unknown, Albert Narracott, a young English farm boy who raises and trains a horse only to breaks out. Think “Call of the Wild,” about a dog that goes from master to master in Alaska, sometimes fending on his own and at other times eking out life in the care of of “The War to end all wars,” and you can have “character,” Joey, the stallion has it in spades. He survives artillery attacks, cavalry charges and entanglement in barbed wire. Although some of the

instances border on the preposterous, the audience is forgiving because the story is so compelling. Some in the audience commented that the story could have been trimmed somewhat to shorten it’s nearly two and a half hour length. The majority of those in the theater did not appear to agree. Peter Mullen, cast as a downtrodden farmer harboring dark feelings over his role in the Boer War, has turned to drink and buys Joey at an auction, spending money that should have gone to pay the rent on his farm. Mullen is perfectly cast in the role as is Emily Watson as his formerly beautiful wife,
thrown into the mix in order to take advantage of holiday movie-goers and to earn take home its share, there is no justice.

Carlo manages the trade shows and operations while Clorinda works closely with the company’s sale representatives scattered throughout the country. Both share responsibility in designing La Villa Collections’ products. Some designs are exclusively Carlo’s, while others are the result of Clorinda’s fashion and art expertise. The scene at the Jacob K. Javits Convention Center is a familiar one. On 2012 New York International Gift Fair. Buyers and designers will enter, weaving through the display maze of housewares and accessories. And Carlo and Clorinda Palandri will man their booth for La Villa Collections. There, the company plans to unveil its nine newest lines of European glass, ceramics and tableware. Three years ago, the Palandris built La Villa Collections on a foundation of heritage, specialties and networking. Now, Carlo and Clorinda are the Jack and Jill of all trades. The husband and wife team oversees the entire process, from the drawing book to the actual production to the sales.
At age twenty-one, Carlo moved to the United States from his Tuscan homeland. While in Italy, he apprenticed for a furniture maker and attended art and dance school. Once in the States, he opened a furniture business. His involvement and connections in the industry helped him forge relationships with overseas factories. As Clorinda puts it, one thing simply led to another. décor was made in Italy, which seemed appropriate considering the country was perhaps the greatest source of inspiration for La Villa Collections. They continued to make a handful of collections strictly out of Italy, but have since expanded. One of the biggest changes came
in the past year and a half, when they began using Turkish factories to produce glassware. “Right now it’s hard for a lot of factories overseas,” Palandri said. “A lot are eager to work with us, and we have close personal relationships with them.” These close relationships with glass factories in Florence and ceramic factories in Umbria require year. Palandri said she is not quite as lucky as her husband, but believes it is also a good excuse for him to visit his family members. The Palandris started their business during an economic time as fragile as their products. But La Villa Collections has managed to survive – a feat that realistically is the company’s greatest accomplishment, Palandri said. In an effort to appeal to a broader audience, La Villa Collections has turned to designing more price-conscious selections for its glassware, their best-selling product. Colored glass and stemware from Italy and Turkey will be among these new collections. Palandri predicts new products from India will also be even more competitively priced.

Along the Hudson, up the Turnpike and across from the city-that-never-sleeps sits a stretch of land just less than thirty seven square miles known as New Jersey’s Gold Coast. With breathtaking views and a small town feel, the communities that make up this unique region are ideal for almost anyone. Although few people outside the area know of the well kept secret, this area has some of the country’s best restaurants, nightlife and real estate. And that is just the tip of the iceberg that is New Jersey’s Gold Coast. Coined the “Gold Coast” in the 1980’s by real estate promoters, the area has seen a tremendous revival and now competes with New York City as a place for those who work in the bustling metropolis to rest their heads. However with today’s informed consumer being savvier than ever, more and more people are choosing the suburban setting with the twenty minute commute over their concrete jungle penthouses and subway rides. Were it not for the big drink in between, the Gold Coast would most likely be the sixth borough of Manhattan and as Michael sees it, the Hudson does very little from preventing this farce to be reality. “It is an extremely easy and comfortable commute from any of the communities within the Gold Coast to Midtown. The structures are great. The architecture is great. It is an extension of Manhattan”, says Trefel. As we pick apart the Gold Coast, it is made up of eleven individual towns, each with their own identity and character. As Trefel sees it, “Two of the hottest towns in this region are Weehawken and Edgewater. With Bergen County having generally
lower taxes, Edgewater stands out as a great mix of luxury amenities and lower cost of living. At age 8, Marilyn Hoffman knew what she wanted to do for the rest of her life. For her, it was an obvious choice. Real estate was in her blood. Hoffman, an international real estate broker and founder of Hoffman International Properties, Inc., was the daughter of a Texas developer and racehorse breeder. Early exposure to the real estate industry shaped her specialties and provided her with background knowledge. “I never wanted to do anything else,” Hoffman said. “[Real estate] was appealing because you get to travel, sell beautiful places and meet interesting people.” that she began smashing sales records. She $5.2 million Dallas estate – three times more than any previous sale in Dallas. Since then, Hoffman’s listings have continued to grow, both in importance and price. She has even set records for selling the largest homes in multiple states. After completing her educational training in real estate, a 21-year-old Hoffman dove into the industry. She kicked off her real estate career working for a few different companies. Hoffman noticed, however, that each company marketed houses in the same non-proactive manner. “I knew there had to be a better way, and I knew I had to start my own business in order to make it happen,” Hoffman said. So in the early 1970s in Dallas, Texas, she did just that. Although Hoffman was successful at the start, it was not until the following decade

Monaco Yacht Show and the Salon du Cheval show in Paris. Hoffman will host an exhibit at the Palm Beach Cavallino Classic on January 19.

Deion Sanders also listed his $21 million home and $7.5 million penthouse with Hoffman. In 1984 the International Federation of Estate Agents presented Hoffman with the Superstar Award. The accolade recognized Hoffman as the agent with both the highest weekly and yearly volume for sales. It also represented another achievement: in a mere seven days, she sold a total of $7 million worth of homes. One of the sales during that record-setting week was the $4 million home of cosmetics empire queen Mary Kay Ash.“It was a normal week. Just a great week when everything came together at once,” Hoffman said. Similar achievements have also earned

For Italians ingredients are the key to a successful meal. Without the freshest, highest-quality produce and meats, the meal will inevitably fail. Whether or not Italian chefs follow the strictest recipe or technique is of little or no concern, but rather their dish should be delicious and bring a smile to the people who are eating it. Recently Resident colleagues and I embarked on a journey to two famous Italian restaurants to test this theory; and what we found is sure to prod you into visiting them. We

Owned by the Maccioni family of Le Cirque fame, the restaurant offers upscale Italian fare built upon a foundation of signature Tuscan recipes under the direction of Executive Chef Michael Galata. The menu is served in a lively, sophisticated setting reminiscent of the old-style European circus tents which inspired the restaurant’s name and for which the family has become synonymous. On our visit to the restaurant, we were struck by the charming interior and delicious food. True to its name the restaurant has bright blue circus rings suspended with gold stars, sculptures of monkeys swinging overhead, playful clowns dancing above the open kitchen and a ceiling hung with tapestries - all to reinforce the vibrant circus theme. And the food is just as effervescent! Balancing classic Tuscan dishes and more contemporary seasonal offerings, Circo is a treasure for New Yorker and visitor alike. There were many dishes that we loved, but a few were standouts. We were enthralled by the Polpo alla Brace – grilled octopus with fennel, artichoke, tomato and a pine nut salad with basil and vinaigrette adding needed acidity. Pastas abound and a knockout was the Ravioli di Mamma Egi. Here it was served with ricotta di bufala and spinach in a butter and sage sauce. It was divine – tender, sweet and savory at the same time – a true masterpiece!

Located in the heart of Chelsea, this artisanal-inspired, handcrafted restaurant whose chic interior and hip staff draw-in large crowds is owned by Donatella Arpaia, the maven of food television and visionary of Italian cooking. From the moment we walked in to the last bite of food, we were in love with the restaurant. Its appetizers were scrumptious (try their Calamari Fritti, Crocchette di Patate and Arancini). We loved the fried calamari, but the two dishes we obsessed over were the potato and mozzarella croquette and the fried rice balls. These two encapsulate Donatella’s love of the Abruzzo region of Italy (she has familial roots there) and brought back memories of my many trips to that beautiful region. The pizzas were out-of-this-world, partly because each one is cooked in a 700 degree wood burning oven to create a pizza that is both soft in the middle and crispy on the ends. This is in keeping with the authentic Neapolitan tradition. We had the Rotolino with (from the Parmigiano). It was perfectly balanced and it showcased the care and skill that Donatella’s kitchen is achieving. Resident

fact that we’ve seen everything before – haute Barnyard, rustic Italian, myself that if I see one more clever way to use foie gras I might just stop in the light of the recent opening of Gravy, a fabulous new restaurant Southern cuisine with a twist. delicious new cuisine draws inspiration from the traditional fares of such notable cities as New Orleans, Savannah and Charleston. Housed in a landmarked printing press building, the space boasts eighteen foot ceilings and original brick walls. Recently colleagues and I had a lavish lunch here. And from start to with the quality of the ingredients, the technique on display and the tastiness of the food. And we promised ourselves (and have followed up) that we would return for another meal.
What can be said about Southern cuisine that hasn’t already been said? Its richness is legendary and it is often considered the pride of American cooking. But for so long here in New York it was derided and underserved. Now with Gravy, New Yorkers can rejoice that we have a restaurant that caters to lovers of all things Southern. was almost literally out-of-this world! Served with a tomato aioli it was crisp and meaty at the same time. We loved the knew from this bite that we were in for a treat. Other appetizers that appealed to us were the spinach crab dip and the blue crab bisque. The spinach crab dip was perfectly made and its sweetness rang true, but that seen scraping the bottom of the bowl for the last spoonful of soup. boy served with green apple, avocado and arugula. The sharpness of the apple melded perfectly with the butteriness of the avocado and the sweetness of the shrimp. It was a true home-run. praised and I predict it’s here to stay for a long time. For some time, popular and trendy spots in New York were synonymous with dining experience. But recently, things have changed. With the opening of two new spots, Gastroarte and Employees Only, the tide is shifting toward pleasing the consumer, providing well-prepared, thoughtful food in an atmosphere that is cool and vibrant. kitschy psychic at the entrance of Employees Only to the beautifully intricate paintings at Gastroarte, there was a chic and debonair feeling to both.
When one walks into Gastroarte, one knows one has arrived at a special place. Located on the ‘garden’ level, the space is bright, airy and has a wonderfully landscaped courtyard that serves as inspiration for an excellent meal. During the visit, we were struck with their innovative use of ingredients. We especially loved an appetizer of shrimp perfect combination with briny pungency and savory notes. For another starter the soft, and lobster ragout went beautifully with the loved was the Salmorejo – salt-cured rock shrimp, hitachino, white ale and grapes. The shrimp was perfectly plump and tender and the acidity of ale was paired nicely with the sweetness of the grapes. For a main dish we ordered and enjoyed the Serrano-wrapped

However, their food isn’t. Matched expertly with handcrafted cocktails and made with the utmost of care, my guest and I were thoroughly impressed. One of the most innovative dishes I’ve ever had was the bone marrow poppers. Served with a pastry shell and a bordelaise, it was a truly succulent and tender pieces of pork I’ve ever had. It was accompanied by black-eyed peas and Savoy cabbage. The peas gave a nice textural contrast to the pork, while the cabbage was rich and savory. Have a glass of their Provençale made with lavender infused Plymouth gin and stirred with Herbs de Provence-infused vermouth and cointreau – it was a real winner! Resident

By Christopher Pape Here in the city we are spoilt for choices when it comes to Asian (pan, Chinese, Korean, Japanese, etc...) food. From the high to the low and everything in between, options abound for the picky New Yorker eater. And it isn’t necessarily the case (as it is typically in French or Italian) that cheaper means lesser quality. In fact, there are two places that I frequented radar. Take my word for it; these are two places that can’t be missed.
Full House Café: Located on the outskirts of Chinatown on Bowery, Full House Café is designed for a younger crowd of native Chinese customers and in the know non-Chinese seeking authentically delicious food at reasonable prices. With a modern décor and a full assortment of Chinese delicacies they are poised at becoming one of the hottest Chinese restaurants in town. It was telling that even my friend, who originates from Beijing, was impressed with the quantity and quality of their offerings. From their steamed crab meat and pork juicy dumplings (a perennial favorite of this journalist and done perfectly here) to Shanghai salted duck, each dish was made with care and consideration to the China they are highlighting. My friend, of aristocratic means and a fan of more subtle pleasantly plump with a full range of smoky

From appetizers like Fried Calamari which were breaded and had spicy mayo, watercress and sesame seeds which were equally imaginative and hearty to soups whose rich broth made me swoon – we were smiling through the whole meal. Their noodle dishes must be tried. Amongst their varied and interesting choices, our favorite was the spicy duck served with rice vermicelli, shredded duck, curry, coconut milk, bean sprouts and cilantro. Its rice vermicelli it also recalled Vietnam. The cilantro added needed brightness and the duck was succulently tender. Perfect for late night cravings or brunch plans, Republic has been churning out quality food at reasonable prices for years. Besides their savory options their dessert and drinks deserve praise. On a recent trip to Wales I was put to test on a daily basis, mountain biking, sea kayaking rock-hopping, river rafting and coasteering into the Irish Sea. Gin–If their fellow Brits can bang out a beautiful gin, one might suspect that they too could try their hand. And that’s exactly what they did. It was clear from with aplomb. Preparation: Beat egg yolks and sugar in a medium saucepan. Slowly beat in 2 cups of the milk. Cook over medium heat, stirring frequently until thermometer registers 150 degrees, or mixture coats the back of a metal spoon, Remove from heat; strain into container. Stir in remaining milk, Jim Beam Black, vanilla and nutmeg. Cover and chill at least 8 hours or overnight. Sprinkle with additional nutmeg. Makes 6-8 servings.
