MEAT & CHICKEN // For our dishes we use exclusively Swiss meat and chicken. Exceptions are marked in the menu.

FISH // We build on sustainability and regionality. The char comes from Römerswil, Lucerne and the salmon from Norway.

GIANT SHRIMPS // Our shrimps come from the Bianchi breeding farm in the mangroves of Mau in south-west Vietnam. On this farm, only 250–500 shrimps per m³ are held, whereas normally there are 10 000 per m³

EGGS // Regardless whether for your breakfast or another delicious dish, we only use Swiss eggs from local farms with an animal-friendly facility (no cage-rearing).
