Roasted Cauliflower

Head chef Mina Tomas shares her head-turning signature dish, ‘Roasted cauliflower with burnt honey, feta, preserved lemon, and hazelnuts’, from Richmond meeting place, Waygood.

Ingredients Method

1 small whole cauliflower

1 whole lemon

15g thinly sliced preserved lemon (rinsed, peel only)

60g crumbled feta

2 tablespoons cauliflower puree

1 tablespoon pickled red onions

Honey dressing

For garnish

1 tablespoon hazelnuts

(roasted at 160 degrees for 10 minutes)

2 sprigs coriander

2 sprigs dill

2 sprigs parsley

2 sprigs mint

Burnt Honey

100ml honey

20ml cider vinegar

60g olive oil

1 tsp green peppercorns

1 tsp Dijon mustard

Pinch of salt

Pickled Red Onions

2 large red onions, thinly sliced

150ml white wine vinegar or apple cider vinegar

300ml water

60g salt

40g sugar

Serves 2 as a main course or 4-6 as a side serve

Preheat oven to 200 degrees.

Remove green leaves from cauliflower and cut the bottom edges so the cauliflower sits flat on a plate.

Steam the whole cauliflower for 20 minutes.

Roast in a 200-degree fan-forced oven for 8 minutes.

Cauliflower Puree

Cut ¼ small cauliflower (florets and stems) into 5 cm pieces.

Steam for 30 minutes.

Drain, keeping the steaming liquid aside.

Puree cauliflower, adding 50ml of the steaming liquid at a time until the consistency of smooth mashed potatoes is achieved.

Season to taste with salt, pepper, and lemon juice.

Burnt Honey

Bring honey to a simmer for 30 minutes, stirring every 5 minutes. Maximum temperature: 160 degrees.

Add the remainder of the ingredients and stir continuously until the dressing is totally emulsified. (around 10 minutes)

Pickled Red Onions

(Prepare at least 24 hours in advance. Will keep for 2 weeksrefrigerate once opened.)

Combine vinegar, salt, sugar, and water in a saucepan. Bring to a simmer.

Pour the mixture over the thinly sliced onions. Place in a clean jar and set aside overnight.

To Assemble

Place 2 tablespoons of warm cauliflower puree on the base of the plate.

Top with the whole roasted cauliflower.

Drizzle with 60ml burnt honey dressing.

Top with feta, hazelnuts, preserved lemon, and sprigs of herbs.

Vanessa Hulands Change Makers

This month, we spoke to Vanessa Hulands, Coordinator of Case Management for Women's Services at Launch Housing, a charity organisation passionately committed to ending homelessness in Melbourne. Through innovative programs, partnerships, and crisis and long-term housing solutions, Launch Housing provides immediate and practical solutions for those experiencing or at risk of homelessness, offering lifechanging and life-saving support to women and children facing housing insecurity and family violence.

Can you describe the evolution of Women’s Services at Launch Housing over the years you’ve worked there?

Launch Housing, formed in 2015 from a merger between Hanover Welfare Services and HomeGround Services, has grown from offering a 15-bed crisis accommodation and a women’s rooming house in 2012 to operating six residential buildings in 2024, housing over 200 women and children per night. Services include Australia’s first apartment building for families escaping violence, a pregnancy outreach program, a female crisis accommodation site, and a partnership with the Royal Women’s Hospital and Housing First supporting mothers and babies.

What are the most significant challenges that women facing homelessness encounter today, and how does Launch Housing address these issues?

Many factors lead service users to access Launch Housing, including poverty, family violence, and tight rental markets, pushing women into raising a family without a stable home. Family violence is a main driver of homelessness, often forcing women to choose between abuse or homelessness when there’s a shortage of appropriate housing.

Partnerships, like First Step and the Road Home Program, are key to addressing the complex supports required by women experiencing or at risk of homelessness, allowing them to focus on compounding factors while addressing housing needs. Funding remains an ongoing challenge.

What are some misconceptions people might have about women experiencing homelessness?

One main misconception about homelessness is that it’s always visible, with people sleeping rough on the streets. In reality, homelessness is often hidden, with most people couch surfing, sleeping in cars, or staying in unstable accommodation. Women experiencing homelessness might be retirees forced to sleep in hotels or mothers and children sharing an unsafe room.

Family violence is a primary driver of homelessness for women and children, but factors like mental illness, rising cost of living, and the gender pay gap also impact women's financial vulnerability, leading to less savings, part-time work, and reduced superannuation.

How do events such as the Marshall White Foundation Ball impact Launch Housing's efforts to provide lifechanging support for disadvantaged Melburnians facing homelessness?

The Marshall White Foundation Ball raises funds for The Parachute Fund, providing immediate support for women facing homelessness to pay bills, rent, removalists, or essentials for setting up a new home, which is crucial for those escaping family or domestic violence. The fund recently helped a client secure a community housing property by covering furniture and the first week’s rent.

We are grateful for partners like the Marshall White Foundation and events like the ball, which raise vital funds and promote empathy and awareness about homelessness. We need a community of supporters to drive change and cannot do it without our partners.

Many existing homeowners are also retrofitting their garages and carports to include these stations. This will lead to a shift in the way Australian homes are designed and built, with a greater emphasis on sustainability and energy efficiency.

Companies like JetCharge and ChargeFox are leading the way in providing efficient and user-friendly residential charging solutions, ensuring that charging an EV at home is as simple as charging a mobile phone.

The integration of EVs into Australian homes is closely linked with the development of smart energy management systems. These systems help to optimally manage the home’s energy usage, ensuring that the additional load of EV charging does not overwhelm the household’s power supply. Smart systems can schedule charging during off-peak hours to take advantage of lower electricity rates, contributing to costeffective EV ownership.

Australia has one of the highest rates of solar panel installations per capita in the world. This is good news for EV owners, as it allows them to charge their vehicles using renewable energy generated right from their rooftops. which can then be used to charge EVs overnight or during cloudy days, further reducing reliance on the grid and lowering electricity costs.

Some states are contemplating building codes that would require new homes to be EV-ready. This legislative support not only makes it more economical for homeowners to install EV charging infrastructure but also promotes a broader adoption of electric vehicles.

Developments include plans for shared EV charging stations in apartment complexes and community centres, which not only cater to residents who may not have individual charging points but also encourage the adoption of EVs by making charging accessible and convenient.
