KINGFISH SASHIMI

One of Chin Chin’s most iconic dishes, this Kingfish Sashimi pairs delicate fish slices with bold green nahm jim and decadent coconut cream. Easy to recreate at home and perfect for entertaining or as a light starter.

INGREDIENTS

200g kingfish loin, sliced crosswise into 2 mm-thick pieces

2 tbsp Green Nahm Jim Dressing (see below)

1 tbsp coconut cream

2 limes, segmented

½ large green chilli, julienned

3 kaffir lime leaves, julienned

Baby cress leaves, to garnish

Torn Thai basil leaves, to garnish

Green Nahm Jim Dressing

10 green chillies, deseeded

4–5 garlic cloves

1 bunch coriander root

¼ cup (55g) caster sugar, plus extra to balance

4–5 tbsp fish sauce*, to balance

¼ cup (60ml) lime juice, to balance

METHOD

1. Carefully arrange the kingfish slices flat on a serving plate.

2. Layer the remaining ingredients over the top.

3. Start with the green nahm jim dressing (see below), drizzle with the coconut cream, then gently break up the lime segments and scatter them over everything. Add the green chilli and kaffir lime leaf next.

4. Finish with the cress and Thai basil and serve immediately.

Green Nahm Jim Dressing

1. In a blender, blitz the chillies, garlic, coriander root, and sugar into a paste.

2. Transfer to a sealed container and let sit for at least overnight, or longer, if possible. This allows the sugar to macerate the garlic and mellow any harshness.

3. When ready to use, season the paste with fish sauce and lime juice to taste, adjusting with more sugar if needed. You are aiming for a flavour profile that is bright, zesty, mildly spicy, and balanced with salty sweetness.

4. Enjoy immediately or use within 24 hours.

*To make a vegetarian version, simply substitute the fish sauce with soy sauce.

This July, join a growing community of Australians stepping up to take on the Walk4Rita 2025 Step Challenge, an inspiring campaign that raises awareness and much-needed funds for pancreatic cancer research.

The challenge was launched in honour of Rita Agati, former HR Director at Viridian, who passed away in late 2021, just six months after being diagnosed with pancreatic cancer. Since its inception, Walk4Rita has become an annual tradition, driven by a determination to support improved diagnosis and outcomes for those affected by this devastating disease.

This year, participants will aim to complete 250,000 steps across the month of July. Walk4Rita is a challenge that encourages movement, motivation and connection, whether you choose to walk solo, form a team with friends or family, or take part through your workplace. Participants can track their steps through the MoveSpring app, with a one-time $31 registration fee that includes a commemorative t-shirt and cap to wear with pride throughout the month.

Funds raised through Walk4Rita go directly to the Jreissati Pancreatic Centre at Epworth Hospital, helping drive research into earlier detection, faster diagnosis, and better patient support. In just a few short years, this initiative has raised over $500,000, making a real impact in the fight against pancreatic cancer.
