No Valentine’s Day celebration is complete without something sweet. For our shoot, Denver Cake Company created custom heart-shaped cookies that doubled as place cards for “guests” to take home as favors. Our favorite touches, however, were the Valentine’s themed X and O sugar cookies, along with a stunning cake beautifully adorned with lipstick-marked kisses. Inside, a traditional white vanilla cake was dyed pink for an unexpected touch.

What do you enjoy most about working in Cherry Creek North? The sense of community. The neighborhood is a welcoming place that truly supports each other’s businesses and brings people together.

Do you have any neighborhood favorites? I am a little biased, but Local Jones, Rare Bird or B&GC are at the top of my list. If I am looking to go outside the hotel, Quality Italian, Forget Me Not or Aviano coffee are all great! Gnat Jewelry Atelier is a must visit to see Raz and the team for something special. We also love to send our guests to the various locally-owned boutiques like Garbarini and Perch.

Most memorable Halcyon moment you’ve witnessed so far? Watching this team grow and collaborate to achieve the best results in the history of the hotel. The hotel has achieved the #1 hotel on TripAdvisor and number #10 spot in Condé Nast for the state of Colorado.

What’s the last book or television program that made an impression on you? Ted Lasso has been my favorite. The show reminds me of a hotel and the teamwork involved to accomplish our level of service each day. The show embodies goodness and kindness which we all strive in doing at Halcyon.

What’s something that most people don’t know about the hospitality and hotel world? Learning to balance all aspects of the hotel by wearing different hats and always having to be in two places at once. Each day is completely different, and I continue to be faced with challenges that I have never seen before in my 17-year career.

Currently, what’s your favorite menu item at Local Jones? Chef Daniel’s Swedish Meatballs as a starter, salmon as the main as it always is changing by season, then cauliflower gratin, and you can’t forget about Chef Saura’s pies.

What are the three things that you can’t live without? My wife and kids, my annual golf trip with my best friends of 30 years and a morning run to clear the mind. Who are your five dream guests to join you at a dinner party, and what are you eating? Cal Ripken Jr., Macklemore, Taylor Swift, Steve Jobs, and Jake Nicklaus. I would arrange a coursed-out dinner to start with sushi/ sashimi, blooming onion, wagyu steak, all out baked potato, asparagus, and my mom’s homemade coconut cake.

The most fun you’ve had in any city is where? My wife and I went to Singapore for our honeymoon. We ate at all the hawker centers (food halls), underground dumpling restaurants, all the chili crab you can eat and visited the Marina Bay Sands. We also went to a local bar with live music overlooking the bay, only to end up at The Ritz-Carlton with a turndown amenity.

Best piece of advice you’ve ever received? I had a baseball coach when I was a child that always told me, “Practice doesn’t make perfect, but practice makes permanent.” You must build consistency in anything you do.

BEAR METHOD ORGANIZE Wife. Mother. Model. Pageant Queen. Professional Organizer. Meet Bethany Jordan, the Cherry Creek powerhouse whose background is as eclectic and inspiring as her sense of style. Here, she shares the ins and outs of life as a professional athlete’s wife (her husband is Denver Nugget DeAndre Jordan), why she chose to launch her organizing company, Bear Method, the Cherry Creek haunts she loves to frequent and why New York City will always have her heart.

What is your favorite aspect about Cherry Creek? Cherry Creek is the nucleus for Denver living - we can take advantage of the 300+ days of sunshine and support local businesses. We have everything we need at an elevated level. It feels both charming and chic and it is a blessing to be able to walk around. What I love most though, is the people. When we first moved here, we were finding homemade cookies, hand-written notes, and thoughtful gifts left on our doorstep. We have made lasting friendships with our neighbors in such a short period of time. That kind of human authenticity is something I hope everyone can both experience and embody. You recently launched an organizing business. What prompted this and how did you get into this line of work? I spent years searching for work that brought me joy and afforded me exceptional flexibility. Because of the nature of my husband’s job, I have to be able to take my work to any city at any time. It can be hard to have autonomy while in a relationship with someone whose job is larger than life. I interviewed with anyone and everyone, dabbled in modeling, got certified to teach Pilates and even attempted to start an instant baking mix business with a friend. It wasn’t until my mom randomly sent me a social media ad for Marie Kondo’s KonMari Consultant Course two weeks before the start date that I felt fully confident in investing in a career. This course is extremely particular and I had to meet certain requirements to even apply. It just so happened that I had serendipitously embarked on a Tidying Festival (a traditional Japanese act of committing to organizing your entire home, category by category) prior to a big move and in preparation for the birth of our son, so I was primed and ready to submit. It all just clicked. I re-aligned with my younger self who enjoyed purging and tidying my room on the regular. As a new parent, I felt called to help others find peace and create harmony in their homes, even with the wildness involved with children. I realized that I had been managing multiple homes for years, as we had been moving back and forth to different cities, and I discovered there is a whole group of people and families living similarly who could benefit from my experience of implementing organized systems to minimize stress, decrease waste and unnecessary duplicates, and bring in more joyful living. I thought of my family members and acquaintances from my small hometown who have lived in chaos and disease, burdened and buried by stuff. I connected with my desire to leave a legacy that has no limits. I started this business to inspire a new way of living - one that promotes thoughtful intention in a world that encourages fast acting. What’s something about your industry that most people wouldn’t know? Most people don’t think of tidying up as a form of self care, but it is. Our environment has a profound impact on our well being. This is why we are so often encouraged by wellness gurus to get out in nature, soak in some sunlight, take a breath of fresh air. I can help you invite more peace and balance into your interior space by guiding you through the process of de-cluttering and organizing. Clearing out old, stagnant energy by de-cluttering allows you to let go with grace. Organizing your treasured belongings allows you to give them thanks and an extended shelf life. How you take care of your belongings is a reflection of how to take care of yourself. Secondly, going through the process of de-cluttering and organizing can be incredibly emotional. Just as organizing can be a form of self-care, it can also be a form of therapy. I am here to help you unload your baggage, literally and figuratively. Each of us has our own stories to tell and a big part of an organizing session is sharing those stories. I want to hear about where you got … or who

gave you the.. or the person whose face is plastered all over those socks. Sharing your stories gives you an opportunity to show appreciation for an item, regardless of whether you want to keep it or not. Taking time to make a decision about every item that you own is empowering. It can be incredibly therapeutic to take control of your environment, rather than letting it control you. Finally, trust that I’ve seen worse. So many clients feel self-conscious about the state of their home or office when I first walk in. There can tend to be a sense of “cleaning before the cleaners arrive” mentality. In my line of work, we don’t judge. We listen, we empower and we guide. You don’t have to be a minimalist to be tidy and you don’t have to be a hoarder to want to seek help organizing. You majored in Industrial Engineering in college. You were Miss Kansas USA 2010 and participated in the Miss USA Pageant. You’ve modeled and done a bit of acting. Your husband is a Denver Nugget. In addition to your new business and motherhood, where is life for you now? Life for me now is a continuous cycle of regenerative evolutions. I am constantly seeking out new ways to optimize my day and improve upon what I’ve already built. Recently, I committed to waking up at 6am every day, no matter the time I go to bed. My husband thinks I am playing with fire, considering we are often eating dinner at midnight after he plays a home game. But I crave consistency - not necessarily routine. Both have been challenging to maintain over the years with my husband’s erratic work schedule. Not to mention we now have a baby, so we really never know what we’re going to get handed each day! Every day is different - we don’t have a 9-5 M-F schedule with weekends off. And that’s okay. I’ve let go of trying to force routine into a lifestyle that doesn’t accept it. I’ve been forced to get clever and remain flexible in how I implement and maintain discipline for my daily non-negotiables and personal time. With this early wake up call, I am able to create consistency and keep routine in flow. In the quiet hours by myself in the morning I am adding into my daily rituals meditation (via MindValley and Joe Dispenza), yoga (via Yoga with Adrienne and Melissa Wood Health) and reading (via Headway App). Most importantly, I’m learning to accept that five, 10 and 15 minutes are enough. Some is better than none, so if I can squeeze in a quick workout, or do a short meditation, I can be proud of myself and feel good about the day. Do you have any favorite stores in the neighborhood? Show of Hands is fantastic for sourcing unique gifts from local artists. They have the best selection of children’s toys that are educational for the babes and not an eyesore for your home. For clothing, I love A Line Boutique. It’s pure elegance. They carry many of the brands I like to invest in for staple, statement and hero pieces. What are your favorite restaurants in Cherry Creek and what do you order? Matsuhisa has been one of our go-tos since day one in Denver. Obviously it has an exemplary reputation, being a Nobu Restaurant, but I love that I can feel just as comfortable as I do chic having a sexy date night or a fun group dinner with family and friends. Personally, I’m ordering everything on the specials menu, but if I have to pick a few musts from the standard menu they’d be the Wasabi Caesar Salad, Black Cod Miso in Limestone Lettuce, and Toro Tartar, Caviar. My husband and I love Narrative in the Jacquard hotel - which is my top rec for our family when they visit. I love a hotel bar/restaurant vibe and Narrative vibes high. From the variety of diners (interviewers and interviewees, friends who brunch, the elderly couple regulars, families with and without babies), to the collection of book page art, there is so much to absorb and appreciate. For breakfast I’m always getting the Avocado Toast, add soft boiled egg. For lunch it’s the Farmer’s Gazpacho. Dinner has got to be the Jack Burger and don’t sleep on the Lobster Corndogs for a happy hour snack! I can’t not mention Quality Italian. They have some of the best steak house style menu items with a special twist. It’s cozy and noir inside - very classic, yet gangster. They’re one of the only spots in Denver that will stay open late for us to have dinner out after a Nuggets game and we appreciate their hospitality. The private room is essential and we’ve made rich memories with family and friends over many bottles of exquisite wine there. What’s your favorite way to relax? I’m a Taurus Zodiac sign by definition so anything that invigorates my senses gets me into a state of calm centeredness. I love to light incense (currently loving Forest Floor by PLTNC), get a massage (deep tissue or sports, not Swedish, and scalp massage from Face Foundrié), drink something hearty and warm (coffee, Nettle tea with honey, or bone broth), listen to music (Solfeggio frequencies and chill R&B), and walk outside to look at the details of houses and trees. Who are your five dream dinner party guests and what are you eating? Nelson Mandela to take notes on his courage, unwavering faith and focused discipline. Bill Hader for good-natured entertainment and therapeutic belly laughs. Haley Bieber, but only if she’ll spill all her skincare secrets. Amanda Gorman because - swoon - girl crush who makes me feel all the feels. And finally, Sophia Roe, someone whom I’ve admired through social media for her relentless fight for food equality, impeccable taste and creativity. I have full confidence she is just as incredible in person as she presents herself to be online. We’ll feast on homemade Caesar salad and air fried buffalo chicken wraps - high protein, slightly healthy and truly satiating.

What city in the world have you had the most fun in? New York City. Hands down. I’ve lived nine

lives in NYC and they’ve all been vital pillars holding up who I am today. My first visit was with my brother and grandparents when I was eleven and we took pictures at the top of the Twin Towers. It was also during this trip I saw Phantom of the Opera and was too spooked to close my eyes in the shower. I’ve been lucky enough to have several friends live there who’ve taken me to the best eateries, dopest lounges and coolest museums. I’ve gotten to enjoy drag shows, cabarets, karaoke, piano and show tune bars. The energy, the culture, the food, the grunge. It’s simply the best. My husband and I spent a couple of years living in Tribeca, which is a very family-oriented neighborhood with elementary schools on every corner. It was then and there we decided we wanted to get married and start our family. We not only survived the dark days of the pandemic, but we came out of it with a deeper appreciation for each other and for community. New York is romantic and fun. It holds a special place in my heart.

We’re married. We work together. We see each other all the time. So, what could we possibly talk about while out for dinner? In this case, food. And lots of it. Join us at Fruition.

He: The biggest compliment that I can give Chef Jarred Russell and Fruition is to just bring me whatever it is you feel I should be eating. I trust you implicitly. She: Oh, absolutely. I cannot believe we haven’t been here before. It’s such an icon on the Denver culinary scene. I have not been this excited to experience a restaurant in years. He: Juan Padro of The Culinary Creative Group told me that he was shocked that Fruition didn’t win a Michelin Star. They were recognized by the Michelin Guide on its recommended list, but I think they’ve got more coming their way in the future. She: Which is why we didn’t bother to “order” per se. In fact, not ordering is my favorite way to order. That’s truly how you can get a feel for a restaurant of this caliber. Chef’s choice. Experience the menu as it was intended. He: I’m told this Fried Maitake Slider is a menu mainstay. It doesn’t come off even though Fruition has created 147 different menus to date. This is easily one of the best things I’ve eaten in the last five years. The perfect mushroom with spicy honey and a bread-and-butter pickle on a homemade bun is to die for. I’m getting at least two of these next time. She: I liked it as well but, so far, my favorite small plate has been the Japanese yellowtail crudo. It’s a simple dish and a lot of people do a version of it, but not everyone gets it right. Fruition, however, does the art form proud. He: The sweet potato agnolotti deserves its own holiday. If you haven’t had it before and don’t know what’s coming, that first warm bite of pasta with the brown butter and Parmesan cream is indescribable. And I basically ate the remaining sauce like cereal. No award-winning fare left behind.

She: The Colorado Bartlett pears were great, too. Another

simple dish that’s bursting with unexpected flavors. Definitely light, but it doesn’t disappoint.

He: You could do an incredible meal here just on small

plates alone, and you can add the Smoked Trout Rillette with Colorado potato latkes, crème fraiche and trout roe to that group. Great textures. Some sweet. A bit of spice. And the presentation is stunning. It’s like artwork.

She: Yes, but the pan roasted scallops are easily my top choice of the evening. They’re magnificent. It’s easy to mess up scallops - especially in a landlocked state - but these are perfection on a plate. The texture, the flavors, the presentation...they nailed it. He: And what else would you expect than a perfect dessert? Their take on the banana cream pie. The graham cracker crust is ridiculous. I don’t know why I agreed to share this with you. Get your own, mama. She: Next time, I will. But for now, let’s opt for an order of the homemade chocolate chip cookies. When we see them on a menu at an establishment like this, we have to try them. And I am so happy we did. The perfect ending to a perfect meal. He: Agreed. They’re decadent and every bite pops with flavor. Normally when we do this article, we talk about other stuff, but there’s too much to wow about with what’s coming from that kitchen. She: That there is. COLIN OVERETT of AY PAPI CHERRY CREEK IS GOING LOCO. The culinary and hospitality masterminds behind the likes of neighboring Forget Me Not, Aviano, and Michelin Guide award winner Mister Oso, to name a few, have just created a tropical portal to all things leisure and lovely in the peerless form of Ay Papi. The mere sight of its charming facade hints at nothing less than an unforgettable experience, smack dab in the middle of Cherry Creek North’s ever-changing glass and concrete jungle. Dubbed “a vibrant and energetic cocktail bar where Latin inspiration meets the party vibes of Cuba through the lens of Miami,” we went straight to Colin Overett, Ay Papi’s GM, to get the lowdown and, needless to say, Overett was all over it. How did you get into this industry and why? I’ve always been a real people person ever since I was little. I would visit my brother, who was a singing waiter at the old Macaroni Grill here in Cherry Creek. I would sit in front of the open kitchen and just watch the chefs and talk with them. It really sparked my interest in being in the hospitality industry. By the time I was 13-years-old, I was helping out at a 70s style soda shop in Wash Park where we made tonics and house syrups for the various sodas. I always tell people it was my first “bartending job.” What’s the vibe at Ay Papi? How is it different from other bars in the neighborhood? Ay Papi is unique in Cherry Creek in that we have a very upbeat and lively feel to the concept. The Latin influence (Puerto-Rican/Cuban), upbeat music, bright colored decor and, of course, an amazing staff tie everything together for a great place to come and enjoy a refreshing cocktail. On the weekends, we turn it up and it’s been an exciting dance party where you get to let loose. Give us your take on the Cherry Creek crowd? What do they appreciate in a place to relax and imbibe? The Cherry Creek audience is great and they know what they like so it makes it a lot easier. We also love to expand their horizons on trying something new, like rum! It has been fun blowing some minds on how versatile and delicious rum is. But you can’t beat a well-crafted mojito on a beautiful day. What’s the best drink we’ve never had? Our Miami Vice. It’s not on the menu, but the beautiful blend of our Pina Colada with the subtle nuttiness from the sherry we use, mixed with our strawberry daiquiri which has a refreshing tarragon and pink peppercorn note to it. All together it’s heaven! Is there one drink in particular that you love to make? The Painkiller. I have always been a fan of pineapple and coconut. It’s a cocktail that I can drink in any type of weather and I will be a happy person.

Is there a cocktail with a particularly interesting background or story to it that you like? All of them! Just like every person who walks into your bar, they have an interesting background or story. I love how gin and tonics were “invented” for survival by the British troops to battle malaria when in India. Or even the history of Chartreuse and the Carthusian Monks and what they have done throughout time. It’s awesome seeing the evolution of cocktails throughout history and how they still play a large part in modern day creations. What’s the most interesting comment that you’ve overheard from a guest while working behind the bar? Guest: “What is this in my drink?” Me : “That is a straw, sir!” Guest: “I could have choked on this!” Me: Stands confused since it was a long metal straw. What’s the oddest drink order you’ve ever received? I had a guest ask me to make a cocktail that reminded him of David Bowie from the movie Labyrinth. So I asked, “Which scene?” Where do you get your inspiration? Anywhere and everywhere. I have come up with cocktails based on music, sunsets, or even sitting on a mountain in winter seeing a tiny pine tree try to poke through the snow. I once made a cocktail that reminded me of a banana bread stand that is on the road to Hana in Maui. When that light bulb hits, you have to run with it. Any seasonal cocktails that you recommend for winter? At Ay Papi I am working on a few things, such as a frozen cinnamon PainKiller and a frozen Banana Daiquiri so when you mix them, it will taste like a Bananas Foster. Doing some other fun plays on a Carajillo-meets-Irish Coffee and a Coquito-meets-a classic Tom & Jerry. meet JOSEPH GRAVES, JR. He’s an artist of smiles. Whether it’s gazing at his stunning paintings and thought-provoking sketches or a simple face-to-face conversation with the man, you’re sure to come away with a smile. He’s as authentic and down-to-earth as his artwork would imply, possessing a fascinating story of various chapters in life, from law school and working in the legal sector, to on stage as an award-winning actor, writer, acting coach, singer and artist. When we laid eyes on his attention-grabbing wall art prominently displayed on the second floor of Clayton Hotel & Members Club, we needed to know more. And we got more in our latest edition of Artist in Residence with the one-and-only Joseph Graves, Jr.

How did you first get into art? When did that happen and what direction did it take you in? My father was an artist, but he stopped drawing and painting when I was 9-years-old. I asked him why and he said, “Sometimes life just gets in the way.” I said I’ll never be like that, but then my life started to get busy in the legal field after law school and working with former Governor John Hickenlooper. I have a daughter and we used to do Sunday brunch and then we’d paint and draw. And then that stopped. She asked me why and I caught myself saying the same thing to her that my father had said to me. So, I made a change, did my first art show in 2016, and got the ball rolling from there. As a kid growing up in Kansas, I copied the art I saw in comic books. At college at CU in Boulder, I took art classes, studied different artists, and was influenced by the likes of Mark Rothko, Jacob Lawrence, and Basquiat. I modeled their style and took little bits and pieces to create my own vibe. I like to say I’m the remix of different artists and I interpret things with my own versions. Talk about your approach, which you describe as “get messy and defy the lines.” I am a sketcher, so I think I master in sketching of drawing and portraits. When I started doing more painting, that style came over with it. If you ever watch me sketch, I skip around all over the paper. I scribble but, somehow by the time I think I am finished, there’s a piece of art. Sometimes I love it, sometimes I don’t. But it’s an extension of myself, for all to see with some aid of permanency. When I’m going after it, I turn the music on and open the windows and really let the environment dictate what I’m going to paint. How did the opportunity come about with the Clayton? A man named Chris Christmas was doing a cowboy event called Urban Cowboy at Clayton last year. I bumped into him, he told me about it, and I told him that I had the perfect piece for it. It’s called Sunrise Ryder and it portrays my grandfather, who was born in 1911, and he was a buffalo soldier.

I wanted the painting to capture some of the themes that represent Colorado, so I used yellows and blues from the Denver Nuggets’ colors, the sky light from the sunsets we have out here, and then I painted a young version of my grandfather if he was alive today. Christmas told me to bring the piece and, when I was there, another member of Clayton said that this piece belongs there. That’s how it happened. Any new pieces that you’re particularly excited about? It’s called Merry GO Round: Ode to Hip Hop. It’s four-feet-by-four-feet, and it’s inspired by my four pillars of hip-hop: 1) MCing (rapping); 2) Graffiti art; 3) Break dancing; and 4) DJing. I wanted to commemorate this year’s 50th anniversary of hip-hop, so I designed this painting to look like an album cover but also like a spray-painted wall in Brooklyn to flashback to that time period. I love the piece and it’s very close to my heart. What’s your opinion of the art scene in Cherry Creek North? I get inspired every year by the Cherry Creek Arts Festival. Additionally, the artists featured in the galleries are fresh and they revitalize me every time I see their various works, and I love seeing the local talent that’s spotlighted there as well. There’s a gallery in particular, who I’d really like to meet with about working together. What inspires your work? I’m inspired by low key things and people who give me good energy. I can feel inspired immediately, from simple things like having some wine and eating sushi. I can come up with different ideas from things like that. It’s all really about what I’m feeling that day. Your last cover of Cherry Creek Magazine inspired me because now I want to do a cocktail and maybe a whiskey smoke-type thing. The colors you used really drive at me. COMING A COLORFUL HISTORY

When Steve Souza - founder and principal designer of Ouest Interiors - saw this enviable home in the Denver Country Club enclave, he was immediately inspired. Enlisted to complete an extensive renovation that spanned the entire footprint of the historic estate, Souza left no surface untouched in the pursuit. “Our goal was to reinstate the home’s original charm and timeless elegance while integrating modern-day conveniences,” Souza explains. To accomplish this, the designer focused on honoring the home’s architectural details and maintaining its character through traditional style décor and a nod to all things English – the perfect way to bring the 1920s Tudor back to life. By adding rich layers, sumptuous textures and antique pieces to every room in the home, Souza created a collected look that felt natural to its aesthetic, while simultaneously modernizing the space for comfort and livability. “We designed the home to include comfortable places to sit and simply enjoy its beauty and charm,” the designer beams. “The living room is probably my favorite. I love that it is sunken which gives a sense of arrival upon entering.” The adjacent office not only adds formality to the room but also suggests its purpose for daily use, reflecting its practical yet welcoming nature. Another guiding force in the renovation? Entertaining. “The ability to host dinner for four or holiday cocktails for 50 needed to be effortless,” Souza reveals. Indeed, in a home where grand gatherings were once de rigueur, he aimed to bring that splendor back with a design that was as inviting as it was impressive. And while the home is indeed up-to-date in its function, its form is as timelessly beautiful as it was nearly 100 years ago. “The elements that were original to the house and unaltered are stunning. The hearth in the living room, the leaded glass windows throughout and the staircase railings among them,” Souza points out.

Yet with any project of this scope, there were most certainly challenges along the way. According to Souza, reconfiguring the primary bedroom and kitchen layouts were the most significant. “There was no opportunity to expand the footprint of the house, so we had to work within the exterior walls we had,” he details. Case in point? The primary bedroom did not have its own bath but rather a Jack & Jill shared with guests. Moreover, the room itself was cavernous – 40 feet long with large windows and a fireplace at the far end. Souza worked within the home’s parameters to design a wonderfully private retreat reminiscent of a luxury hotel suite. Souza also reimagined the kitchen, creating additional space for guests to sit and chat with the chef pre-dinner. “The original kitchen was long and narrow with a powder room so small one could barely squeeze in,” he details. “We removed all the walls to allow the powder room to be expanded and relocated closer to the office.” The end result is a historic estate that is as beautiful as it was a century ago - one brimming with authentic charm. +MORE VIA OUESTINTERIORS.COM

Valentine’s Day is a time to commemorate love in all its forms – from your significant other to your favorite friends, your family and even your little ones. A time to cherish those we hold dearest and shout our love from the rooftops. This year, we’re celebrating in grand style with a soirée fit for royalty. Heeding our edict of all things lovely and all things Cherry Creek, designer Jenna Frum of Marigold Events created a fête that was anything but typical. With the illustrious Hotel Clio as our backdrop, we created a Valentine's Day celebration to spark inspiration for the season of love. In lieu of the traditional red and pink theme, our sophisticated take on the holiday was designed with a lipstick color palette where deep tones of burgundy, plum, and pomegranate were woven together with touches of caramel, gold and an ever so soft blush. Timeless romance and whimsical elegance shined through every detail, from the cozy velvet textures, blooming florals, and dripping candles to the beautiful gold and cream placesetting, berry-colored stemware and hints of Baccarat butterflies. “Pattern play and layered colors are my favorite way to design an awe-inspiring tabletop,” Frum explains. “Breaking away from matching sets and creating unexpected combinations offers a surprising pop of personality.” To bring her vision to life, Frum collaborated with White Peacock, a Cherry Creek gem where classic tabletop wares are met with a modern point of view. Frum layered pieces from Royal Crown Derby, Pickard and Ginori with baroque linens from Le Jacquard Francais, crystal Baccarat butterflies and Moser’s iconic “pebble” glassware in lipstick hues. To add to the decadence, Frum enlisted the talent of Melissa Johnson of Cherry Creek-based Pepper Rose. A fine art florist known for her organic style, Johnson designed lush, sophisticated arrangements with just the right amount of whimsy to serve as the table’s stunning centerpieces. Dahlias, garden roses, ranunculus, scabiosas, cappuccino roses, and fresh cut pomegranates added to the opulence.

When it came to the decadent fare, Frum and her team pulled out all the stops. “Sweet treats are a lovely way to weave in your theme and impress your guests with a thoughtfully designed dessert display,” she explains. Enlisting the help of Denver Cake Company, she opted for custom heart-shaped cookies that doubled as place cards for guests to take home as favors. What’s more, an enviable dessert display was lavishly dressed with Valentine’s themed X and O sugar cookies, along with a stunning cake beautifully adorned with lipstick marked kisses. Inside, a traditional white vanilla cake was dyed pink for an unexpected touch. For something savory, Valentine’s themed charcuterie by Gather to Graze was the perfect touch. Offering a cozy place for guests to lounge after a meal and enjoy a cocktail is essential at every gathering. Jenna teamed up with Joybird as she curated a Valentine’s Day lounge with Joybird’s rose-colored velvet sofa, berry accent chair, warm wood and rattan coffee table, textured rug, arched mirror, and walnut end table. A Star IS BORN Cherry Creek and the Colorado restaurant scene recently joined the most exclusive culinary club on the planet. The world-renowned Michelin Guide strapped on its hiking boots and has climbed up into our world of mile high dining. Membership has its privileges. So, what are those privileges? We went behind-the-scenes with the people who made this happen and those who know a thing or two about the Michelin Guide to find out what’s next.

Was André Michelin about to get sick to his stomach out in the middle of the French countryside? His beloved passion project that he authored with his brother Edouard was a small red guide filled with handy information for the travelers of France. And it was being grossly misused at this tire shop that he had just popped his head into. The co-founder of Michelin Tires was staring at his guides propping up a workbench. Something had to change regarding the respect for these guides, and, unbeknownst to the Michelin brothers at the time, their changes would revolutionize the restaurant industry. For all we know, between the two of them, André and Edouard didn’t have a culinary bone in their body. And if they did have a to-die-for boeuf bourguignon recipe, the public wasn’t aware of it. They were all about where the rubber meets the road with the nearly 3,000 automobiles in France in 1889, when they founded their now world-famous tire company. The travelers’ guide that they had produced consisted of maps, gas station locations, how to change a tire, and other adventures for those traveling by car. The last thing that they saw their guide intended for was to help aid the stability of a workbench. So, they changed things up. In the 1920s, the guide would include a list of hotels in Paris and lists of restaurants according to specific categories. As the restaurant section of the guide grew in scope and in popularity, the brothers enlisted the aid of dining inspectors who’d visit and review restaurants anonymously. In 1926, the guide began to award stars to fine dining establishments, initially marking them only with a single Star. Five years later, a hierarchy of zero, one, two, and three Stars was introduced, and, in 1936, the criteria for the starred rankings were published. During the rest of 20th century, a star was born. The Michelin Guides became best-sellers, and present day sees ratings for over 40,000 establishments in over 24 territories across three continents, and more than 30 million Michelin Guides have been sold worldwide since. Here in the United States, it acknowledges the best restaurants in California, Chicago, Georgia (Atlanta), New York, Florida (Orlando, Miami and Tampa), and, as of 2023, right here in Colorado, covering Aspen, Snowmass Village, Vail, Beaver Creek, Boulder, and Denver. For those embedded in the Colorado culinary landscape, partnering with Michelin is exciting more than it is surprising. The quality and consistency of the food coming out of here has been remarkably steady, with some of the state’s top chefs considered among the best in the nation. Over the past several years, Denver, in particular, was finding itself mentioned in the same breath as perennial top tier food destinations like New York, Chicago, and Los Angeles. So, how did this all happen with the Michelin Guide? It started with a basic inquiry from Colorado Restaurant Association (CRA) CEO and Director, Sonia Riggs, keeping true to the old adage, “If you don’t ask, then you don’t know.” “We’ve had countless restaurant guests ask why we didn’t have Michelin in Colorado,” Riggs begins. “So, I connected with Michelin to see how their process worked. The Colorado Tourism office was interested in pursuing it, so I made the introduction and they took it from there.” With the baton being handed off, it was now Colorado Tourism Director Tim Wolfe’s race to run. “It was a huge collaboration between our office, our Board of Directors, CRA,

and then those DMOs (destination marketing organizations) around the state,” Wolfe explains from his Denver office. “Our role was to brand the entire state and the program, and to bring everyone together and make sure that they knew what the opportunities were.” Wolfe and his team had to decide how they were going to put this together, so they looked at Florida as a template because of their prior success with the Michelin Guide in Orlando, Tampa, and Miami. But what about the folks at the Michelin Guide? Where did Colorado’s potential French partner’s desire register on dining in the Rockies? Gwendal Poullennec, International Director of the Michelin Guides, has the answers, “Along with initial conversations with the Colorado Restaurant Association, Michelin had its inspection team conduct a destination assessment. The inspectors determine whether an area’s culinary scene is developed enough for a Michelin Guide selection of restaurants. They were impressed to find a world-class culinary offer that was strong enough to become the sixth Michelin Guide destination in the U.S., and Colorado also showed potential for growth as well.” “This is the starting point,” Wolfe impresses. “I believe this is going to elevate Colorado’s status as a global dining destination, showcasing the state’s unique flavors, our commitment to sustainability, and the innovation of the culinary industry. The bounce back from pre-pandemic levels with international travelers is only 80 percent, so to be able to market the Michelin Guide on an international stage is huge – especially to Japan, the U.K., and Germany.” Here we are. Part of the most discerning restaurant guide in the world. So, how do you get a Star? How do you get two Stars or three Stars? What’s a Green Star or a Bib Gourmand? Poullennec breaks it all down. “The Michelin Guide is unique, thanks to its universal and historical methodology. Over the Guide’s 120 years, restaurants are still assessed based on five universal criteria, focused on the quality of cuisine, and only the cuisine: 1) Quality of products, 2) Mastery of cooking technique, 3) Harmony and balance of flavors, 4) Personality of the chef as expressed in the cuisine, and 5) Consistency between visits and throughout the menu. That’s how we ensure that Michelin Stars have the same value worldwide from Paris to Tokyo to Colorado.” Poullennec goes on to explain that in 1926, the Michelin Guide began awarding Stars. At that point, all a restaurant could earn was a single Star. Five years later, it changed to One, Two, and Three Michelin Stars. One Star means “high quality cooking, worth a stop.” Two Stars mean “excellent cooking, worth a detour.” Three Stars are for restaurants with “exceptional cuisine, worth a special journey.” Also worth noting is that the Michelin Star is given to a restaurant as a whole, not just a chef. In addition, the Bib Gourmand distinction was introduced in 1997 to honor restaurants offering “exceptionally good food at moderate prices.” In 2020, the Michelin Green Star was introduced for restaurants that are role models in sustainable gastronomy.


“There’s a lot of pressure once you get a Star to try and get a second Star. Once you get a second Star, to try and get a third Star, or just trying to keep the Star you have because it does make a difference to your business.” - Juan Padro, Culinary Creative Group It’s not a culinary distinction, but a complementary one, to encourage restaurants and stimulate the sector in their commitment to sustainability. Every restaurant from the Guide’s selection – regardless of its culinary distinction – can receive a Green Star if their involvement in sustainable gastronomy is particularly impressive and inspiring. The term “Recommended” means a restaurant is recommended by the inspectors. It’s listed on Michelinguide.com as part of the Guide’s selection of restaurants, but it has no specific award distinction, such as a Star or a Bib Gourmand award. Meanwhile, we haven’t even scratched the surface on how Colorado’s chefs and restaurateurs feel about all of this. It’s a mixed bag of elation, ambivalence, and caution, depending on whom you talk to. Take Alex Seidel, for example. The internationally renowned chef and proprietor of Fruition and Mercantile Dining & Provision is no stranger to prestigious awards. Recognized by The James Beard Foundation and Food & Wine among countless others, he was clear with his thoughts on the Michelin Guide in Colorado, “The restaurants aren’t for awards,” Seidel concedes while sitting at a corner window table in Fruition. “It’s not what gets me excited. That’s not why I wake up every day and it’s not why I got into cooking. I love to cook, and I love to make people happy.”

With a resume that includes being a part of three different Michelin Star restaurants in Chicago, Jon Keeley, Executive Chef at Narrative at The Jacquard in Cherry Creek, sees Colorado’s inclusion as a big tip of the cap to the region. “It means that Denver is a food city on the rise because the Michelin Guide is, bar none, the premier guide for restaurants and hotels in the world. The fact that we already have Stars and Bibs here in Denver means that Michelin has been watching us for a few years.” Now that there are major, restaurant-changing awards involved, do chefs here continue to run their own race, or do menus change and are more risks taken to contend for next year’s accolades? Riggs has some intel on that. “We’ve already been hearing from some of our member restaurants that they’re going to up their game, and Michelin has told us that’s what they tended to see in other states in the first year. Michelin areas have also attracted not just chefs, but all restaurant employees who want to be in that kind of dining environment.” “Some restaurants will want to aspire to be recognized as a Star-rated restaurant. Others will be looking at their sustainability. I think it helps us attract some of the top culinary talent to Colorado,” adds Wolfe.

Seidel’s Executive Chef at Fruition, Jarred Russell, has a different take, “I was surprised. There are only six spots in the U.S. Obviously it’s an exciting time and it’s going to push more people to do more things whether that’s the right reason to do them or the wrong reason. It will attract more people to come in here.”

However, there are plenty who won’t be altering anything for the Guide. “You start to get caught up in those things, and it doesn’t serve anyone,” Seidel advises. “So, we will always continue to do the things we do. We never really shout from the rooftop about what we do. We just quietly do them and try to do them well and that’s really what it’s all about.”

Just down the street from Fruition at Barolo Grill, Director of Operations Ryan Fletter was also surprised by the announcement of the Michelin Guide coming to Colorado. “I frankly thought that Texas and some other states with big markets would be considered before us, so I was quite shocked,” he admits. “And then to hear that they may have already been here, it’s really quite nice to have an objective approach instead of, “OK. They’re coming. Let’s start preparing or do things differently.”

Russell concurs, “It’s not going to change what we do. We’re not going to be chasing after it. All of a sudden, we’re going to be doing all these foams and weird stuff? No. That’s not what we do here or who I am. But we’ll always grow and continue the pursuit of deliciousness.”

Juan Padro, CEO of The Culinary Creative Group which includes Michelin restaurant honorees Mister Oso, Ash’Kara, and A5 Steakhouse, was a big proponent of Colorado becoming the newest member. “The Michelin Guide brings a lot of attention to the culinary scene wherever it is. I was in favor of it coming to Colorado and I thought it would be good for Denver. I think Denver, nationally in particular, doesn’t get the credit it deserves as a culinary destination, and I think Michelin will help with that. Denver will continue to get better because of it.” Troy Guard, Executive Chef and Founder at TAG Restaurant Group, shares, “I’ve lived overseas for a long time, so the be-all and end-all is the Michelin Guide. It represents great chefs and restaurateurs, and it’s the premier crop of everything. When I heard it was coming to Colorado, I was excited because it shows that Colorado is doing well.”

Barolo Grill will also continue to stick to the plan that has gotten them to where they are. “It really feels like we should keep doing what we’re doing. It’s kind of like changing your name or changing your flight path,” says Fletter. “If it encourages and increases your product, which we’ll do anyhow, then yes, but not with the mission to obtain status.” Padro is very straightforward in warning of the stressors and pitfalls in chasing Michelin awards. “There’s a lot of pressure once you get a Star to try and get a second Star. Once you get a second Star, to try and get a third Star, or just trying to keep the Star you have because it does make a difference to your business. But for me, I don’t open restaurants to win Stars. I am eternally grateful for the recognition, but we open restaurants for our activism, our equitable business model, and our community in Denver. So, that’s our priority.” Guard admits that he’s been down this award road before. “As a younger chef, I chased after accolades. It’s not all that. Believe in yourself. Believe in what you put together

and, sure enough, we got recognized for one (with Guard & Grace) without even putting ourselves out there, so that is a tremendous feat. When you start doing things for other people and recognition, you can get lost and get yourself burned, so I just focus on having the best ingredients, try and use as much local as possible, provide great service, and a great vibe. Those are my three things: food, service, and vibe.”

Dining & Provision landing on the Recommended List. “It’s just a hard business period. To achieve the quality and consistency over and over is not any easy feat. People put a lot of effort and passion and thoughts and nightmares and dreams, and all these things come together, so that’s what it’s cool for. Chef Jarred certainly thought we were deserving of a Star. I just don’t really think about that.”

Keeley adds, “As chefs, we are always evolving and we’re always trying to push ourselves, but I think it’s really important to cook for your guests, your team and the culture you have within your establishment. If you try to please everyone then you end up pleasing no one, so stay within your comfort zone. I cook for what’s in my passion, what’s in my heart, and what’s in my head. I think that’s the level of what Michelin is looking for anyway.”

Michelin, however, did throw Seidel for a loop with one decision. “One thing I was a little bummed about was maybe the Green Star, if anything. This area is probably where I spend most of my time now – policy talk, access, sourcing, connecting producers and chefs - and I think that’s really what the Green Star is about. So, that was like, ‘Wow. Hmm.’ I thought we led that industry, right?”

One aspect everyone seems to agree on is the effect that the Michelin Guide will have on Denver and Cherry Creek. Seidel says, “There’s going to be a good opportunity to push the envelope and reach for higher standards and find more tweezers in your knife bag.” While Fletter contends, “I really think the Michelin Guide will elevate the entire dining scene. I’m assuming it will be infectious and others will improve. Our job here is to be the ambassadors of the moment. We are the only Michelin-recommended restaurant in Cherry Creek. We are in the Cherry Creek community. It forces all restaurants to keep doing what we’re doing. I hope more of my colleagues are included in the rounds ahead.” “We were really surprised that there weren’t restaurants that were recognized in the Cherry Creek area like Matsuhisa and Le Bilboquet,” Riggs expresses. “I’m hoping we’ll see more recognition in the future. I think Cherry Creek has amazing potential. It feels like it’s going nowhere but up, and I feel there will be restaurants there in the future that will be recognized by Michelin.” Wolfe is excited that Michelin’s presence will elevate restaurants that aren’t in the Guide, with food experts coming into Colorado to try all the different types of restaurants. Riggs has heard that it’s not just the restaurants that get the Stars or get recognized by Michelin that benefit from this – it’s really the entire restaurant scene that will be visited. Guard points out that Cherry Creek has exploded with business travelers, tourism, and the locals, and that there are quite a few restaurants from outside the state coming in as well as local restaurateurs setting up shop. Keeley encourages everyone in Cherry Creek to push that envelope. “Take your comfort zone and elevate it a touch. Then that becomes your new comfort zone, so you can keep doing that as a chef and still be true to who you are, but also grow and educate your guests.” And while they weren’t purposefully going after an award, some of these restaurants not far from Cherry Creek took home some hardware. So, what are their thoughts on catching Michelin’s eye? “What is most exciting for me is for the recognition of my team because they work so hard,” Seidel explains with both Fruition and Mercantile

Consider Juan Padro an Alex Seidel fan. “Probably the biggest surprise for me with Michelin was Fruition not getting a Star. They made the Recommended List, but Alex Seidel, for me, is one of the best chefs in the country. They deserve a Star next year.” Barolo Grill, while making the Recommended List, isn’t far from stardom either. Fletter shares, “I do think we have the potential for a Star. Our guests feel that way, but I tell them, ‘We got what we got and we get what we get,’ but I do think what Darrel does and what this restaurant does is One-Star Michelin quality.” “Darrel” is Darrel Truett, the highly respected and award-winning Executive Chef at Barolo Grill. “I’ve always tried to implement the things into my own food that I’ve learned and seen from these One Star, Two Star, and Three Star restaurants in Italy where our staff goes every year. I’m striving for a Star. That’s what I think our food is worthy of. Our recipe here works. We’ll continue to progress, stay relevant, and keep doing what we’re doing because it’s working and we’re busier than ever. It’s fantastic to be recognized on the Recommended List and to be a part of the Michelin Guide.” Not only recognized for their fare and service, Barolo Grill also took home a motherlode of an honor with the Michelin 2023 Sommelier Award for Colorado. Well known for their affinity for fine and rare wines, Fletter and sommelier Erin Lindstone’s commitment to one of the best wine lists anywhere is not surprising. What is surprising, at least to Fletter, was winning the Sommelier Award. “I was completely blown away,” he admits matter-of-factly. “There are lots of amazing sommeliers and wine programs in Colorado, so when you get that kind of recognition, it just tells us that we’re doing what we should be doing and that we’re doing it correctly. We’ve been doing this for 30 years, so we’ve been practicing a lot, and we do it all without an agenda, except to serve our guests. It makes it all the more exhilarating and thrilling.” Speaking of which, the Michelin Guide’s anonymous chief inspector shared the following review for Barolo Grill exclusively with Cherry Creek Magazine. “Barolo Grill is recommended by the inspectors. It has high-quality cuisine, but also excellent service and a thoughtful wine list. In fact, owner/wine director Ryan Fletter and sommelier Erin Lindstone are very knowledgeable and received our 2023 Sommelier Award for Colorado.”

Michelin’s praise for the Culinary Creative Group’s three restaurants elicited some grateful reflection from Padro. “I think Mister Oso and Ash’Kara fit beautifully into that Bib Gourmand category,” he says from a quiet lounge in Cherry Creek North. “Bibs are really good because that’s for the general public to say, “Hey, where do I get the best food for the best value?” I felt we had a shot at the Bibs we won, and I think we had other restaurants that had a shot as well. With A5 Steakhouse (Recommended List), we think the food certainly warrants a Michelin Star, but I think we need to clean some things up and it brought to light some conversations that will give us a better chance in the future.” Downtown Denver is where you’ll find Troy Guard’s Michelin Recommended List Guard & Grace. Nothing surprises the veteran Guard anymore, indicative with his response. “It was kind of a surprise because you see things in our local magazines and newspapers “Who’s the best? Who does this well? Who does that well?” I try to just let the chips fall where they may, and that’s always treated me well. In the food world, it means so much to so many people – Michelin, James Beard, a New York Post review. It’s very prestigious, and my staff and I are super excited to win something like this.” As formal and refined as the Michelin Guide is, the process by which they rate each dining experience is anything but. It’s something straight out of a spy novel with its cloak-and-dagger, clandestine nature. Poullennec explains, “The Michelin Guide has anonymous inspectors, who carry out the fundamental field work. These former hospitality professionals are full-time Michelin Group employees who have at least 10 years of experience in the industry, which ensures that they have a precise and technical knowledge of the field. They also receive extensive training in the Michelin Guide’s methodology. The inspection teams, which include local and international inspectors of various ages and backgrounds, enjoy complete independence in choosing the restaurants they visit. No one can tell the difference between a regular customer and a Michelin Guide inspector. Their identity, when they are visiting, and where they are visiting are all kept secret. They pay their own bills, just as any other restaurant goer.” Padro shares, “What they do is they email your restaurant, and they say you have eight days to fill out this information and we’re evaluating it. And that’s it. You don’t hear anything else. It’s very anonymous.” Fletter admits, “We had no idea when they were here or how many times or how often.”

Hydrate IV Bar was founded by Denver native, Katie Wafer-Gillberg. While working in medical sales in Las Vegas after graduating from Arizona State University, Katie saw people seeking IVs for hangover relief and realized that there was an untapped market for utilizing IV therapy to be proactive about health and wellness. Katie moved back to Denver and began to work on her dream of making IV Therapy for health and wellness a reality. In 2016, the first Hydrate IV Bar opened. For myself and other pioneers in the industry, we had to educate consumers about the benefits of hydration and getting vitamins and minerals administered intravenously. Many people knew IV therapy as the hangover cure, but that’s just scratching the surface. Since then, there have been so many new wellness modalities more readily available from red light therapy, cryotherapy, infrared sauna, compression therapy, and Ozone IV Therapy, just to name a few. I can’t wait to see how this industry continues to evolve. This shift in wellness is extremely exciting and rewarding and we are just getting started.
