Beaulne says Bâton Rouge’s guests are often curious about the space; he admits to having done background research on the building’s history. The building has been repeatedly repurposed over time, he reveals, and even survived several fires before its reinvention as a restaurant. The location may be historical, but one frequent response from Bâton Rouge’s more tech-savvy diners is quite modern: “I see about 10 people a day pull out their phones and take pictures of their food!” says Beaulne.
