MEET THE LOCALS By Annie Clover

What are your favourite restaurants in Hangzhou?

My favourite restaurants here are Mojar, formerly known as Mojito, and Wagas. and Wagas. I am vegetarian, but I don’t have any problems finding meals in Hangzhou. I often eat lunch at Lanzhou Lamian ( 兰州拉 面 ), which has restaurants located throughout the city. My favourite meal is vegetable rice.

Where do you spend your evenings in Hangzhou?

I really like Jam Nights on Monday nights at 9club. I also like Eudora Station; it is a nice place with live music. And, of course, there’s Wade’s. There is also an excellent Thai restaurant named Sawadika, and a Japanese restaurant called Wasabiya, close by to Wade’s.

Which places do you like to explore in Hangzhou?

Hangzhou has many lovely places, such as Hefang Jie and Xixi Wetland Park. However, my favourite spot is hiking the trails along Yangmeiling. The next place I want to explore is Qiandaohu Lake.

Where do you like to go in the evening?

What are your favourite things to do in Hangzhou?

Where have you been eating recently?

In the evening, I like to go to Mojar because they have delicious cheap Mexican food. It’s a great place to hang out with friends and play some pool. I also really enjoy Hangzhou’s nightlife. Sometimes, I go to Queen Night Club or SOS club. SOS has nice music and free drinks for foreigners.

I love to hike around the West Lake area, and nearby where I live (near Chaowang Road) there’s a lovely walk down by the river. I also like to go bowling with my friends at a place that’s right behind the Hangzhou Tower. One other place that I often go to is the Xinyuan International Cinema.

I really like the Chinese restaurants along Yan’an Road, plus Eudora Station; I enjoy Saturday brunches there. Oh, I completely forgot about my main spot; it’s Mojar! I love its food, its friendly environment and its prices.

/ LIFESTYLE // 广告 • 生活方式 Tucked away in a serene community neighbouring the Hangzhou Olympic Sports Stadium, we found a different kind of bar. Go Professor is ideal if you are looking for a place to have a beer, cocktail or listen to music, but even more entertaining is the bar's décor and history. Opened in March this year, the bar is home to two different bars under the one roof. on the ground floor there's a vintage jazz lounge with live music, and above it is where we discovered the Space Cocktail Lab.

THE PROFESSOR’S COCKTAIL LAB By Pepe

T

he Chinese name of Go Professor translates to, "the professor is busy," and this title was going to be the name of a movie that was meant to be shot here. The owner of the bar, Kyle Yang, who was also going to be the main actor, designed the bar to be the setting of the entire movie. The movie would have been about a professor with a busy lifestyle and a gentleman’s image. When Yang decided not to go ahead with filming the movie, he maintained the look of the bar and created the second bar downstairs to appeal to a different crowd. Yang believes that the upper bar truly looks and feels like something from the future. He believes that 300 years from now, there will be no need to change the bar’s décor because this is what all bars of the future will look like.

10

redstarhangzhou.com

Go Professor offers a good selection of finger food, but the drinks interested us more. We each picked a different cocktail, and I felt like our choices were highly influenced by the story behind the drinks. For example, Valentine 1 was named after the main lady in the film. Before people got to know that she was a robot, they felt love whenever they were close to her. It is made from a simple mix of sparkling rosé wine and cranberry and is served in an elegant flute. As we watched the bartender make the drink, we were impressed by her skill and attention to detail. Another popular drink here is the Gentleman’s Kiss named after the main lady who lost her human identity. The Casanova professor gave her his last kiss - the only time the professor had shown her an expression of love. This cocktail has interesting notes of honey, almond and lemon juice engulfed in brandy. Cocktail prices range from 80 to 120 RMB. # 104 Unit 3, Building 5, Jiarun Mansion, Jinji Lu. 金鸡路嘉润公馆5号楼3单元104号 Open daily, 19:30–03:00

WHY I LOVE WADE'S, WENSAN BRANCH... AND WHY YOU SHOULD TOO. By A. Michelle

A sense of community, a sense of belonging, a place where “everybody knows your name...” This is just the beginning of what Wade’s Wensan offers the expat community in Hangzhou. If you haven’t been there yet, hurry up and see what all the fuss is about!

A

sk a group of expats to tell you the hardest thing about living abroad, and most will mention: “I don’t really have the feeling that there is someplace in this foreign land where I call home.” In his 11 years on the culinary front in Hangzhou, Wade You has set out to fill that void—and many argue he has done a better job of it than anyone else. Recognising a need to spread the joy of his flagship Wulin restaurant, and to accommodate the ever-growing expat community, he opened a second location on Wensan Lu, on the west side of town, a little over three years ago.

Enter this hidden gem —a little less 'sports bar' and a little more 'local pub'— and you are immediately welcomed by Alex or one of his attentive staff members, usually by name if you’ve ever visited before. The core of the Wensan’s team of consummate professionals have been together for more than 10 years and are skilled at the art of customer service. They strive to offer customers all the creature comforts of home, including nightly specials and an ever-expanding array of entertainment choices. There’s something for everyone at Wade's, Wensan.

CAFÉ

WHERE WESTERN FOOD CRAVINGS ARE SATISFIED By Sabrina Valles of ingredients that add freshness and contrast (check!); and a soft hamburger bun (check!). Overall, I felt satisfied by the taste of the burger alongside the American-style fries and salad. Served as a sweet dessert, the mini Fruit Pancakes (35 RMB) arrived nice and fluffy, topped with a light coat of powdered sugar. I greatly appreciated how the restaurant’s western-style comfort food caters for the Chinese palate while equally appeasing the average foreigner’s taste buds. They also have an excellent coffee menu and serve a diverse array of alcoholic beverages, juices, and milkshakes.

On the way to Yuan Café for my first visit, I lost connection to the internet and needed to top up my cellphone service immediately. Frantically panicking, I rushed to the restaurant relying on an inaccurate WeChat GPS location. Initially, I felt that I was a lot further along in my journey than I was, but I instantly relaxed when the restaurant came into view, thanks in part to the hand of fate and Yuan Café’s excellent street view location.

T

he café’s modern décor and eclectic collection of artwork give a nod to a variety of Western cultures. Any customer, whether alone or with other guests, can feel at home in Yuan Café by sitting at the bar, a table, or in a booth. The menu’s offerings fulfil a variety of Western comfort food cravings, including soups, salads, pizzas, burgers, and more. Kicking things off with the Chef’s Salad (45 RMB), the house-made vinaigrette tied the ingredients cohesively and the

mandarin orange slices added a nice finishing touch with its sweet, tart flavour. The Hot Mexican Pizza (9-inch pizza for 48 RMB; 12-inch pizza for 95 RMB) proves taco ingredients equally belong on pizza dough as well as in a hard taco shell. The tangy sauce coating the Kung Pao Chicken (39 RMB) added character to the dish. Utilising my pre-programmed burger checklist, I evaluated the Classic Beef Burger (60 RMB). I sought a thick meat patty cooked medium rare (check!); a variety

And this article wouldn’t feel complete without mentioning some of the café's incredible deals! They serve a happy hour special every Monday through Friday from 16:00–18:00. On Monday through Thursday from 18:00–21:00, pizzas and burgers are halfpriced (regular price for these items range from 48 to 98 RMB). Additionally, Yuan Café offers a three-hour, freeflow special for 80 RMB on Fridays from 18:00–21:00, and on Saturdays and Sundays all day. If you are seeking breakfast specials on Saturdays and Sundays, they offer a breakfast menu until 11:00 and one entrée, All Day Breakfast (55 RMB), is served all day—just as its name suggests. No matter your reason for choosing to dine at Yuan Café, your Western comfort food cravings will be satisfied. The restaurant is located near Zhejiang University Zijingang Campus, subway station (Line 5). 53, Zixia Street, Xihu District 西湖区蒋村街道紫霞街 53 号

angzhou’s nature is enjoyable in every season, and there’s nothing better than a sunny December day in the city. The typical green colour of nature has already turned into yellow, red, purple and many more shades of orange—the weather is chilly—but still not too cold. A HOLY NIGHT IN THE OLDEST CATHEDRAL IN HANGZHOU By Camilla Fatticcioni Photos by Annie Clover

// CULTURE /

Many people the world over feel most at home for the holidays under a high-peaked church celling. Yet, in a largely nonChristian country that only recently began to take a passing interest in the Western holiday season, finding the right place to observe this important Christian holiday might not be so easy for people spending Christmas in China.

I

n Hangzhou, you can always discover something new: last year I was walking near Wulin Square, and between the apartments and the shops I noticed a building that didn’t look like a typical Chinese temple. As I got closer, I realised it was a Catholic cathedral. This building was the Cathedral of Our Lady of the Immaculate Conception, a Roman Catholic cathedral located at 415 Zhongshan Road North ( 中山北路 415 号 ). The Cathedral’s History The Cathedral of Our Lady of the Immaculate Conception was originally built in 1661, and it is one of the oldest churches in China. Its original Romanesque form was designed with three naves and two rows of columns separating them. The cathedral was built by Martino Martini, an Italian

Jesuit, and leading geographer of the 18th century. Martini is celebrated as the first Italian to undertake the study of Chinese history and geography with meticulous scientific impartiality. The added acclaim in China and beyond, alludes to his acute awareness of Chinese culture and profound understanding of all things Chinese became the intellectual bedrock upon which the modern study of sinology has been built. In 1691, during the Qing Dynasty, the governor of Zhejiang, Zhāng Pénghé, banned Catholicism and took control of the cathedral. The following year, under pressure from the Italian Jesuit Prospero Intorcetta, the emperor ordered the restoration of the cathedral. Unfortunately, the cathedral was severely damaged in a fire later that year and remained unrepaired for nearly a decade, until 1699. It was only when the Kangxi Emperor passed by and saw the cathedral for himself that he decided to grant funding to complete its repairs. He also had the two characters " 敕 建 " (chìjiàn, "built by order of the emperor") inscribed upon the cathedral gate.

l MASS TIMINGS General masses in Chinese are held every Sunday morning at 6:30, 8:30, 10:30 and 19:00. There is an English mass held on Saturday evenings at 18:30. l CHRISTMAS MASS TIMINGS The Cathedral of Immaculate Conception looks stunning during Christmas time; and the cathedral will host a Christmas Eve Mass on Tuesday, 24th December and a Christmas Day Mass on Wednesday, 25th December: Christmas Eve Mass, 23:00 Christmas Day Mass (Chinese), 7:00 Christmas Day Mass (English), 11:00

GETTING INTO THE CHRISTMAS SPIRIT By Nick Priquette

I

don’t know about you, but I’ve always had a difficult time getting into the Christmas spirit while living in China. The reasons stem from China not quite having the same festivities as the US (or any other country that celebrates Christmas), but also my own laziness about not attempting to ‘do‘ Christmas festivities here. So, if you’re like me and you miss doing Christmassy things, here’s a list of traditions that you should look into:

DECORATING A CHRISTMAS TREE...OR THE HOUSE One of my favourite things to do when Christmas comes around is decorating! I love Christmas lights; there’s just something about the reds, blues, greens, and whites twinkling that remind me of when I was a kid. There are a lot of places in China to get a Christmas tree, inflatable reindeers and Santas, wreaths, Christmas lights and decorations, either on Taobao or even a local supermarket. But here’s the thing: decorating isn’t quite all it’s cracked up to be, unless you have others to do it with. That being said, by the time you are reading this, my wife and I will already have our house decorated and filled with classic Christmas music, which leads me into my next tradition . . .

18

redstarhangzhou.com

LISTENING TO CHRISTMAS MUSIC There are few things that will make you smile and bring back memories of your youth like listening to classic Christmas music. Whether it’s Nat King Cole, Ol’ Blue Eyes (Frank Sinatra), Bing Crosby, Mannheim Steamroller, or even The Drifters, classic Christmas music warms the heart. Even writing this, I’m listening to the ‘Classic Christmas’ station on Spotify. Mind you, from this current musical era, I only enjoy Josh Groban and Michael Bublé singing anything Christmas-related. If I could make a suggestion, stick to songs pre-Mariah Carrey’s “All I Want for Christmas is You” (1994), they’re just better. Besides music, you should also start filling your house with the smell of Christmas by . . .

MAKING CHRISTMAS DESSERTS AND DRINKS There’s nothing quite like having a nice cup of cocoa with some marshmallows to end a crazy, stressful, or pretty much any kind of day! Besides cocoa,

// CULTURE /

I’m also a huge fan of eggnog, some people aren’t, and I can forgive them for being wrong! Not that eggnog is easily accessible, but doing a quick online search on how to make it, and by going on Taobao (since it has everything), will make it possible.

WATCHING CHRISTMAS MOVIES

Besides drinks, desserts are a huge crowd-pleaser or at least will taste good to you. My personal favourites are making gingerbread and sugar cookies, then decorating them with icing. I also enjoy making peppermint bark; it’s a chocolate base with crushed peppermints and white chocolate on top—tasty! After baking and making hot cocoa, you should sit down and start …

I’m not going to go into details about the many different Christmas movies available out there; you can look at Placido’s Christmas movie article in this issue! I’ll simply say, to get into the Christmas spirit, you should spend the 20 or so days leading up to Christmas watching a movie about Christmas every day. (And yes, I do believe that Die Hard is a Christmas movie!) Then, of course, there’s . . .

JOINING OR STARTING A GIFT EXCHANGE PARTY There are three ways to go about this: Secret Santa Party: This is where you get together with a group of friends at the beginning of December, put names into a hat, and pick out names randomly; the person whose name you get is the person you need to buy a gift for. Then, pick a day closer to Christmas to meet-up and have a party. Now, for this to work, you’ve got to set a price limit, if not, you may get a 20 RMB gift, and another friend may get a 200 RMB gift. This can be a great party, especially if you know the people you’re with, but if you want to include more people, you can do a . . . Gift Stealing Party: This is where you set a date, set a price limit for the gifts, make sure gifts are wrapped, and tell people to be there. When everyone arrives, they draw a number out of a hat. Number 1 goes first, opens the gift to show everyone what they have, then number 2 has the option to get a new gift or go steal the gift from number 1. If they steal, number 1 goes back to the wrapped gifts and gets a new one to open. Number 3 then has the chance to open a new gift or steal

from number 1 or 2. Then it continues until everyone has a gift. A rule that most people have is that once a gift has been stolen three times, it can no longer be stolen from the owner. Lastly, a . . . White Elephant Party: This one, from what I’ve experienced in the past, can make for a very funny and entertaining night. You set a date for the party, tell everyone to grab a gift that’s not meaningful but can be anything; an old pair of socks you don’t use anymore, a cheap deck of cards, a bag of durian candy, etc. Use the rules from

the gift stealing party, but this time, it’s just random gifts. The reason why these have always been fun for me is that my dad, being a comedic-minded man will typically go buy cheap items and then write a goofy poem, story or limerick for the unsuspecting receiver. So, go out there, invite your friends, family, or even strangers and get into these traditions. Let me remind you, these are to be done and enjoyed with others, not just by yourself. Sharing with others, that is the true Christmas spirit!

IS CHRISTMAS TOO WRAPPED IN MATERIALISM? By Dr Rob Burton

C

hristmas in China is a strange affair. The trappings of the festival are all around festooning China’s shops, offices, and public spaces. It’s the usual tat: glitter, greenery, ribbons, images of Santa, reindeer, Santa hats, and snowy vistas. The popular Christmas songs are playing on a loop in all the big stores and cafés like Starbucks from November onwards. But who is it for? Surely not for the average Chinese man and woman on the street? They have a veritable smorgasbord of festivals of their own to choose from, and indeed their own, immensely popular and huge Spring Festival is arriving very soon when they welcome their own New Year in. The Chinese Spring Festival, which incorporates Chinese New Year, takes place over fifteen days or more and most Chinese people will take a month off work, so why they are in thrall of the Christian festival Christmas takes some thinking about. Chinese New Year is the longest and most important festivity in the Chinese calendar. The origin of Chinese New Year

itself originates as far back as -2300 BC and gains significance because of several myths and traditions. Whereas, what we Westerners know as Christmas is barely 1,600 years old. The modern Western Christmas also shares a quite convoluted history which is tied up in paganism and burgeoning Christianity. It wasn’t until about the 4th century that Pagan and Christian leaders agreed that the old festival of Saturnalia, held in December with its concluding day being December 25th, could also be used as the celebration of the birth of Jesus Christ. Thus, Christ’s birthday was arbitrarily set as December 25th. Apparently, the earliest Christmas holidays were celebrated by drinking, sexual indulgence, singing naked in the streets (a precursor of modern carolling), etc. – which sounds to me a darn sight better to behold than the spend-fest we indulge in nowadays. Red also seems to be an important colour for both festivals. Red symbolises the blood of Jesus, and at Christmas time, we see red everywhere. Santa, thanks in part to

Coca-Cola’s advertising campaigns of the 1930s, sports a bright bloodred costume. Red is also a very popular colour for Christmas decorations, especially when teamed with green, for example, the green foliage and the red berries of the holly bush which has both pagan and Christian associations. Red is the dominant colour of the Chinese spring festival too. Red, corresponding with fire, symbolises good fortune and joy for Chinese people. Red is found everywhere during Chinese New Year and other holidays and family gatherings. Red clothes are bought and worn. A red envelope with money inside is given to children and friends. In China, the red envelope is looked forward to as intensely as a child in the West waits for his or her presents on Christmas Day. Red is also often worn at weddings as it is the traditional symbolic colour of happiness. A Christmas in China tends to take on a rather hollow meaning here. I would argue, it has more to do with the 'almighty dollar'—or Yuan

In China, the red envelope is looked forward to as intensely as a child in the West waits for his or her presents on Christmas Day.

here—than the birth of the Christian God child. It is more of a marketing opportunity for the canny Chinese businessman, not only to sell to the homesick expats but to the burgeoning middle-class Chinese that has money to burn. That Christmas first started to take off in the big cities such as Beijing, Shanghai and Guangzhou is no accident; these cities have large numbers of expats and financially secure Chinese. A Chinese Christmas is celebrated as a happy occasion for get-togethers of friends and couples, but without any religious connotation. It is a good time to celebrate with presents, good food and entertainment. Christians in China celebrate by lighting their houses with beautiful paper lanterns and decorating their Christmas trees, which they call "Trees of Light". They decorate the trees with paper chains, paper flowers, and paper lanterns. The affair is ultimately of a nominal nature, since, nothing stops; should Christmas Day fall on a weekday, work still carries on, and the schools are open for teaching.

This echo in the East of a more traditional Christmas in the West can be cold at times. Behind all of materialism wrapping Christmas, there are still the subliminal Christian messages such as 'Goodwill to All', 'Peace on Earth’ at its heart. The rejection of ‘scroogism’ and a focus on charity, whether through giving of money or the giving of time at homeless shelters, show this message isn’t lost. It is a time when we try to reconcile ourselves with family and friends, to bury the hatchet, to bring harmony and joy to the world and our lives, however spurious and short-lived those attempts might be. Although it must be said, most of the time is spent, drinking, gorging on food and watching crap TV – a spooky reflection or indeed a return to, the more basic instincts and bacchanalian pleasures of the holiday’s early pagan origins. Indeed, perhaps that’s all we want to do at Christmas – “eat, drink and be merry” – wherever and whoever we are in the world! Ho Ho Ho!

AN INSIDE LOOK AT WULIN NIGHT MARKET By Turaeva Ziyodakhon 30

S

ince moving to Hangzhou three years ago, the city continues to surprise me with its amazing places, great food, friendly people, and an experience I would like to share with you: The Wulin Night Market (located at Feng Qi Lu) is one of my favourite destinations to buy something unique, eat delicious food, and have fun while shopping for great deals. The market really stands out at night - with its bright lights and smiling faces, I felt like I was in a small world with many wonderful surprises. The bright colours made my head spin, and many things captured my attention, such as beautiful Chinese-style umbrellas, colourful scarves, amazing fruits, street food and gorgeous pearl jewellery. At the entrance to the market, a cart will greet you with a variety of fresh, inexpensive fruits from China and around the world. The vendors accept

either cash or payment through WeChat and Alipay. Just beside the fruit cart there is a pretty Chinese girl who can draw a funny caricature of you. The girl is very talented; sit in front of her for a while, and you will have a cartoonstyle picture of you in minutes! If you’re visiting Hangzhou and want to buy some Chinese souvenirs for family and friends, then this place is for you! If you’re looking for a special gift for your mom, wife, girlfriend, or sister, I highly recommend some beautiful pearl jewellery. The night market's shiny pearl rings, bracelets and necklaces will make your loved ones feel very happy. At the corner of the market, you’ll find dolls dressed in traditional Chinese costumes; these dolls really impressed me with their colourful clothes and shiny hair. There are also fans adorned with Chinese characters, traditional

umbrellas made from silk and paper, and silk scarves with colourful ornaments. The first thing that comes to mind for many people who have never visited China is its food. Chinese food may feel like a nightmare initially, but after exploring the country, people find Chinese food to be quite delicious. At Wulin Night Market, you will see a scared look in most foreigner’s eyes upon seeing dried and fried cockroaches, spiders, caterpillars and many other creepy crawlies. Honestly, most Chinese people don’t eat this kind of food, but you can try it if you’re brave enough! Wulin Night Market is one of those destinations in Hangzhou that you won’t want to miss! To explore this amazing gem, take the subway to Feng Qi Lu subway station (line 1 and 2). 43 Longyou Lu 龙游路43号 17:00-22:00 redstarhangzhou.com

SIP AND SAVOUR THESE WINTER ALCOHOLIC DRINKS By REDSTAR’s Ganbei Girls

¢ HOT TODDY

Hangzhouvians who have spent a winter here know what those long, cold months are like; wet days with a frigid air that seeps into your blood, and chills you to the bone. Luckily, Hangzhou has an abundance of locations that offer a wide array of beer, wine, and cocktails to help ward off those winter chills. So, wave zàijiàn ( 再见 ) to summer’s light yet refreshing thirst-quenchers and offer a hearty nĭ hăo ( 你好 ) to the following beverages designed to make you feel warm and toasty. 32

redstarhangzhou.com

A winter staple, the hot toddy is a classic hot cocktail that is sure to keep you warm and toasty. With a long and varied history, not to mention multiple cultures duelling to claim the original as their own, there is no ‘standard’ recipe for the hot toddy, so bartenders and mixologists have a lot of freedom when creating their offering. At Wade’s, the brew is a delicious mix of sweet black tea and white rum, spiced up with lemon, cloves and cinnamon. The result is sweet and zesty, warm and comforting, and a perfect remedy for the cold and rain. Once touted as a “cure-all for the common cold,” if you imbibe, you could always claim it’s for ‘medicinal purposes’ (40 RMB a glass at both Wade’s, Wensan Branch and Wade’s, Wulin Branch).

// CULTURE /

¢ CRAFT BEER Sit back and get ready to swoon as rich, dark, full-bodied beers make their way into many taprooms’ lineups for the winter season. Craft beer drinkers can expect to find more chocolate-rich porters, coffee-like stouts, strong and nitro-infused ales available at their favourite haunts. Breweries in China, and around the world, take advantage of the holiday season to infuse traditional flavours—including candy cane and gingerbread—into their beers. This season, we’ve noticed that Hangzhou’s brewers are integrating classically brewed ales with an innovative twist. Taste Room has its Belgium Spring Dark Ale (45 RMB) on tap now. East River Tap Room plans on having an imperial stout and barley wine (both 60 RMB per glass) in January 2020.

¢ MULLED WINE The appearance of mulled wine (known as Glühwein in German) kicks off the holiday season in Christmas markets in Germany and around the world. Many of the recipes use red wine as a base and combine it with a variety of seasonal spices, including citrus, cinnamon, star anise, cloves, and vanilla— all sweetened with sugar. Sometimes, a shot of rum or some other liquor is added. Fortunately, many restaurants in Hangzhou will offer this traditional beverage during the holiday season. We recommend trying this powerful potion at both Wade’s, Wensan Branch and Wade’s, Wulin Branch (40 RMB a glass at each location), as well as The College Bar (also 40 RMB a glass).

¢ BOWL OF UMAMI Chimney’s Bowl of Umami is the perfect antidote for a chilly winter’s night. The complex flavours focus heavily on the least appreciated of the five basic tastes: the eponymous umami, aka savoury. Definitely one of the strangest cocktails that we’ve ever tried, this unique drink is also one of the most satisfying. The scotch base is a mix of Glenfiddich 12-yearold and Drambuie, but that’s just the beginning of the intriguing experience. Served in a lidded pottery bowl, the drink is chock-full of surprises—from the chunks of mushrooms and kombu served inside to the accompanying dried fish served as a flavour-enhancing side treat—this is definitely one cocktail that you will remember forever, (87 RMB for the whole experience). redstarhangzhou.com

LEIFENG PAGODA AND THE LEGEND OF THE WHITE SNAKE

By Jerry Shen

If you’ve been in Hangzhou for more than a couple of minutes, you’ve been to West Lake. If you’ve been to West Lake, you’ve seen that tall building which resembles a temple. That five-storey temple-looking building is the Leifeng Pagoda or léi fēng tǎ ( 雷峰塔 ).

34

redstarhangzhou.com

T

he Leifeng Pagoda was originally built around 975 AD by Emperor Qian Chu of the Wuyue Kingdom to celebrate the pregnancy of his concubine. Later during the Ming Dynasty (1368-1644), pirates invaded Hangzhou and burned the tower down for fear of a possible ambush from soldiers within the structure. The fire destroyed most of the structure, leaving only its brick framework. The locals then took

these bricks because of myths that said the bricks could exorcise demons, repel illness and promote prosperity and fertility. Eventually, the pagoda collapsed the 25th September 1924. In 2001, the site was excavated, and archaeologists found many artefacts, including Buddha statues, coins, and relics. Reconstructed in 2002, the Leifeng Pagoda now stands a historical landmark and a popular tourist attraction for West Lake visitors.

With the offer of the umbrella, Bai Suzhen recognised this man, fell in love, and ended up marrying him. Still, the history and the structure of the pagoda is not what makes it famous. Instead, it is its association with The Legend of the White Snake that has made it so well-known. The following is the most popular adaptation in Chinese culture:

ended up marrying him. Xu Xian became a herbalist, and with Bai Suzhen’s help, they opened a medicine shop to help the locals. With Bai Suzhen’s mystical powers, many incurable diseases were being treated in the shop. All was well.

The legend is set in the Song Dynasty (960 – 1279) and revolves around a benevolent white snake demon/spirit named Bai Suzhen (白素贞). With over a thousand years of Taoism training under her belt, she had powers beyond human imagination. Even though she was a snake demon, her form was that of a beautiful young lady.

Eventually, these miraculous feats drew the attention of a monk named Fa Hai (法 海). Like Bai Suzhen, Fa Hai also had Taoism training and could sense that Bai Suzhen was a snake demon rather than a human. He informed Xu Xian of this discovery, but Xu Xian refused to believe it. Fa Hai told Xu Xian to give Bai Suzhen some special wine to prove that she is not a demon. Xu Xian did so, and Bai Suzhen’s powers waned, turning her back momentarily into serpent form. Xu Xian—astonished that his wife was a demon—died of shock.

One rainy day, Bai Suzhen and her apprentice Xiao Qing (小青) were walking along the Broken Bridge (also at West Lake) when a kind-hearted man named Xu Xian (许仙) offered them an umbrella. Many romantics would call this love at first sight, but this was actually love at second sight. A thousand years ago, when Bai Suzhen was a small snake, a beggar was going to kill her and sell her for money. However, a kind-hearted passer-by saved her. Sound familiar? That’s right! This man was Xu Xian in a past life. With the offer of the umbrella, Bai Suzhen recognised this man, fell in love, and

The grieving Bai Suzhen then travels to an enchanted mountain and braves grave danger to steal a magical herb. This herb was able to revive Xu Xian. Upon his revival, Xu Xian maintains that he loves Bai Suzhen regardless of whether or not she is a demon. This upsets Fa Hai, but he eventually leaves the medicine shop. Some time passes, and Bai Suzhen became pregnant with Xu Xian’s child. Before she could tell him, Xu Xian receives an invitation

from the Buddhist Jinshan Temple. While Bai Suzhen warned him not to go, the devout Xu Xian decides otherwise and heads to the temple. When he arrives at the temple, he finds Fa Hai and becomes imprisoned by the monk. With Xu Xian having been gone for such a long time, Bai Suzhen goes to the temple to find him. Realising that Xu Xian had been imprisoned, Bai Suzhen engages in a fight with Fa Hai and ends up flooding the temple and drowning many innocent people as collateral. Eventually, Xu Xian and Bai Suzhen escape from the Jinshan Temple and give birth to their baby boy named Xu Shilin (许仕林). Fa Hai then catches up to the couple, defeats the weakened Bai Suzhen and traps her in the Leifeng Pagoda. Overcome with guilt from the flooding; Xu Xian returns to the Jinshan Temple to repent for his wife’s sins. Twenty years later, Xu Shilin achieves the honour of becoming the nation’s top scholar. Grateful to his parents, he brings his father Xu Xian out of the Jinshan Temple to the Leifeng Pagoda to pay respects to his mother. Suddenly, the Leifeng Pagoda collapses, and Bai Suzhen is reunited with her son and husband. It was at this time when they discovered that Xiao Qing (Bai Suzhen’s apprentice) had searched and defeated Fa Hai. All was well again. redstarhangzhou.com

CHRISTMAS COOKING RECIPES FEELING DOWN? HOW TO FIGHT WINTER BLUES ADVICE FROM ANDERS HJELM, EXECUTIVE PRINCIPAL OF WAHAHA INTERNATIONAL SCHOOL

HANGZHOU FAMILY

CHRISTMAS MEALS FROM AROUND THE WORLD By Brine Taz

I

t’s almost that time of the year we all love. Gifts, drinks with family and friends, even if it’s for a few hours before you head back home and prepare for work or school the next day. Winter is the main holiday season for most parts of the world, but the way it is celebrated varies depending on where you find yourself during this festive season. Since the international community here in Hangzhou is made up of people from every corner of the world, it made sense to reach out to the community to find out what they enjoy eating during the holidays, be it in China, or back in their home countries.

ISOMBE The first one on our list is a meal enjoyed in Burundi called Isombe. It usually takes a little under 40 minutes to make, and to honest, sounds absolutely delicious. Here is a rundown of the ingredients:

PORK BELLY STUFFED WITH CABBAGE AND APPLES Another Eastern European meal that is sure to please your taste buds is pork belly stuffed with cabbage and apples. Back in the old days, serving porridge with pork legs was a common dish in Ukraine. Around the holidays, however, using pork belly with cabbage and apples has become very popular. To make this meal, you’ll need to:

SOCHIVO Rice sochivo is the one holiday meal that I wouldn’t mind trying if I ever get the chance to visit Russia or places with similar traditions. To make sochivo, you’ll need to: • Steam some dried fruits, like prunes, apricots or apple slices, above hot water for 15 to 20 minutes • Add in some crushed almonds • Cook some steamed white rice • Once it has cooled, mix the steamed fruits and nuts along with some honey into the rice and you’re in for a truly tasty Christmas treat.

In America, depending on the family’s cultural background, the popular food combinations over the holiday can cover a pretty wide selection from pasta, lasagna, macaroni and cheese casserole, honey baked ham, sweet potato soufflé, meatballs, to name but a few. But the most common entrée for the season is usually a roasted turkey stuffed breadcrumbs, seasonings, and some finely chopped onions, carrots and other small veggies. The overall idea is to make it a big family event and enjoy each other’s company … and, of course, the food and drinks.

• Chop, salt, and squeeze some fresh cabbage • Add finely chopped sour apples and some oil to the cabbage and mix • Wash the pork belly, chop the bones in several places and cut a large hole between the bones and the meat • Fill the pork belly with the cabbage apple mix and some minced meat • Tie the belly with a string, and place in a baking pan or on a baking sheet • Sprinkle the tied belly with finely chopped onions and seasonings • Add three tablespoons of water to the pan, cover and bake in the oven at 200°C until the meat has an internal temperature of 70°C • Serve with crumbly buckwheat porridge and enjoy. For those of us who stay in the city during the holidays, we like to come together to either meet up at a restaurant or go to one person’s home and enjoy each other’s company. When we meet up with our ‘family’, we all bring something that we believe to be a great meal from each of our home countries. All the people interviewed for this article agreed that, regardless of your background or ethnicity, the holidays are a time to eat to your heart’s content and enjoy the company of your closest friends and family. Great food is central to all cultures and brings families and friends together during each and every holiday; however, with all these carbs, sweets and fatty meats, I hope you’ve got your gym membership ready for the new year. redstarhangzhou.com

10 WAYS TO OVERCOME WINTER DEPRESSION

Each year, when the weather turns cold and grey, you may start to feel quite blue. REDSTAR would like to share some ways to help you fight seasonal depression naturally.

By Annie Clover

1. Colour therapy

7. Comedy

Many psychologists will advise you to start with colours. It is well known that colours can greatly affect your mood. Orange is a suitable colour to lift your mood throughout winter; you can decorate your room with orange: orange (and yellow) pillows, small orange vases, flowers and even real oranges on your bedroom table.

2. Lighting

Lights are perfect for decorating your wall or window. They will make your room feel cosy, warm and uplifting.

3. Hit the gym

When it’s cold outside, you really don’t want to move too much. Some of us prefer to lie around at home or under a warm blanket. However, try to go to the gym or swimming pool at least once or twice a week. After exercising, you will feel energised and less down.

4. Vitamins

After summer, our bodies lose vitamins a lot faster because they are adjusting to the change in weather and temperature. So, pay attention to what you eat — add more fruits and vegetables, make more salads and take more vitamins.

If you still can’t leave your sofa and warm blanket; this option is perfect for you. Try to exclude emotional dramas and watch some comedy films instead; this will definitely cheer you up!

5. Smells

Do you know what the hormone of happiness is? Scientists have found that people are a lot happier in themselves when they are engaged in creative activities, like baking. So, why not jump in the kitchen and bake up a storm to banish those bothersome blues? If you already forgot how to make your grandma’s apple pie, here you go: four eggs, one cup of sugar, one cup of flour, apples, cinnamon—enjoy!

6. Sunshine

In winter, we don’t get to see much of the sun because it is usually covered by grey clouds. If you need a dose of vitamin D, there are two options to get some sunshine: there’s the solarium tube option (three to five minutes once or twice a week will be enough), or head down south and enjoy a few days off at the nearest sunny beach!

8. Friends

Find time to meet up with your friends. Conversation and laughter are often the best medicine.

9. Go on a date

If you have a partner, invite him or her on a beautiful date. If you don’t have anyone to ask out on a date, you can always browse certain apps for potential companions.

10. Exclude or reduce alcohol

Alcohol is relaxing, but it’s also known as a depressant. After a night out, you can sometimes feel sad the next day. Over winter, try your best and drink less. redstarhangzhou.com

STRIKING A NEW CHORD IN EDUCATION

REDSTAR INTERVIEWS ANDERS HJELM, EXECUTIVE PRINCIPAL OF WAHAHA INTERNATIONAL SCHOOL

By Jared Thompson Photos by Brine Taz

A

nders Hjelm has built his whole life around education. Before taking up his latest post here in Hangzhou as the executive principal of Wahaha International School (WIS), he had taught and led schools in eight countries and three different continents. We recently got to sit down with Mr Hjelm to talk to him about where he sees education is heading in the future, and what needs to change to help produce the workforce the world needs for this rapidly changing world. You taught in Beijing before here, and you’ve now been in Hangzhou for about a year and a half, did anything surprise you about this country when you arrived? Yes, I was very pleasantly surprised to see how involved and informed the parents were in the student’s educational journey. They really do put the time and energy into knowing the pedagogy and theory behind what can best help their kids succeed in the future ahead. It’s a great thing to see. What are some common beliefs parents have about education? Well, there is a growing appreciation of the importance of the kind of interdisciplinary curriculum we

HANGZHOU FAMILY What is on the horizon for WIS? We are currently working on our second WIS campus in Boston, MA. We will be using that [campus] as a base for short-term enrichment programs and growing it from there. We want to make it a priority that during their time at WIS, every student spends some of their time living and studying abroad; developing their transferable life skills through project and problembased learning, as well as growing their English language proficiency.

teach here at WIS, with a focus around teaching soft skills. However, parents—particularly here in China— often believe that when it comes to homework and structured activities, "more is more," but the data seems to paint a different picture. Providing some unstructured time for kids to self-determine and play is crucial in fostering creativity, communication, critical thinking and independence. So how do you incorporate this approach into the education culture at WIS? We make it a priority to focus on functional skills over just rote memorisation and digesting content. The standard approach to education hasn’t changed much in the last 50 years, but when you look at our modern world, the job market is incredibly different from 20 years ago. Many jobs didn’t even exist when the students who are just now finishing high school were born, and the pace is picking up. Our IB curriculum is very open, and we make sure it is reinforced with as many ways for students to figure things out on their own – inquiry-based learning is at the heart of it. Transdisciplinary skills are essential to the kinds of work and roles that today’s workforce must cope with. This adaptability and critical thinking are essential for success in a world that will look completely different by the time these children finish school.

What would you say is a key aspect of education that needs to be developed further? Promoting and developing a more focused approach to soft skills. The Emotional Quorum (EQ—the emotional corollary to IQ, the measure we use to rate intelligence aptitude) of a worker is quickly becoming a key component of what employers are looking for in the labour market. A higher EQ provides workers with the ability to put themselves in the shoes of someone else, whether they are co-workers, employees, partners or clients. This ability to empathise and act in a manner that promotes deeper connections and more open exchanges is crucial in a world that is becoming more integrated, international and diverse.

Why would that be important to their overall development? Well, having lived, studied and worked abroad for over 20 years I have experienced how much spending time overseas forces you to realise that there are different ways to look at the world, and different ways to think about problems; developing a deeper understanding of cultures and people. This way to look at the world is far more rewarding than just getting to practise a second language.

One of Anders’ biggest passions is music. He is a classically trained trumpet player, who often goes out to play along with others at Jam Nights like the one at Eudora Station, as well as performing with symphony orchestras in Shanghai. “There is a lot we can learn from how music is created. Sure, it’s important as a musician to practise a lot and study the theory to become a good player, but the real magic of music starts when you get people to jam on the spot and create music together. The communication and harmony between the different players is what makes it incredible.” That sounds like a good way to think about education: different perspectives, like notes, sound better when they get to play together, harmonising and building off one another.
