Introduction: Welcome to our June in season Podcast here at RecipeThis.com. At home with the Milners June means the start of the summer beach season. The time of the year when we can head down to the beach, build sandcastles, swim in the sea, walk along the beach in our swim wear and best of all eat warm beach doughnuts. Well this month on RecipeThis.com is dedicated to the Whole 30 and super healthy recipes, so it is probably best that we don’t mention doughnuts. But everything else still stands about June. We also usually manage a day at the waterpark and temperatures in Portugal and nearly always in the 30 degrees range. We will go out running before 7.30am just because it is the only time it is cool enough to put our body through it. From a foodie point of view our biggest summer addiction is watermelon. Just because it is often the only way to get our bodies hydrated again. Even though we drink several litres of water a day, we never quite feel right and the watermelon always makes us feel better. Then again give me strawberries too and I am also in food heaven. Then there is the barbeque when every type of food is covered in garlic and grilled.

June Foods In Season I am sure what you really want to know is what the main foods in season are right now. I have taken the top 10 June foods in season and shared with you five amazing recipes for each of them. They


are all perfect for summer and if you look in season recipes then you’ll love these. Foods In Season #1 – Blackcurrant

Blackcurrants are an amazing summer fruit. They’re full of delicious flavour and make desserts, drinks and salads taste so good. I always have a good amount of them in the fridge during the summer time and pick up a lot of them from the market. Blackcurrant Recipe Suggestions Starting off with this truly amazing easy blackcurrant curd – something that I must do from now on with my fresh in season blackcurrants.

Yeah…..strawberries. Strawberries are like god as they are just so amazing and I can never stop at one tray of them. I have spent 2 out of the 3 of the previous summers pregnant and have dived into huge portions of strawberries. But if you want to do something other than just eat them from the packet then you’ll need the recipe suggestions below. Strawberry Recipe Suggestions For a delicious dessert this summer, dessert doesn’t get any better than this strawberry cheesecake. It is so quick to make in the Instant Pot and I doubt you will be able to stop at

To refresh yourself this simmer it doesn’t get any better than watermelons. Nectarines and peaches completes the fruit that is heavily in season in June. They are delicious and at less than 65 calories is a great refreshing summer fruit. They also cook very well and are perfect for trips to the beach or the park or in your kids packed lunch box. Nectarine Recipe Suggestions Lets start with some rosemary pork chops. They are cooked in a delicious peach cider sauce and

For our fresh herb for June we have the amazing basil. Fresh basil is just truly amazing. It cooks so well and makes Mediterranean food have the X Factor. I love it with my chicken pasta dishes and grow my own on my patio. Basil Recipe Suggestions I am starting the recipes off with my turkey and sweet potato


lasagne. It is a great alternative to a traditional lasagne and is cooked in the Instant Pot. Not technically a recipe but this guide to freezing your fresh herbs is a necessity when you have some leftover basil that you need to use up. With more and more of us buying garlic by the jar as garlic puree many of us forget how amazing fresh garlic can be. Put it into a big pork shoulder to make pulled pork, use it for garlic carrots or best of all in Asian cuisine. Garlic Recipe Suggestions


For getting the garlic foodie experience started we have Whole 30 garlic and creamy cauliflower rice. It tastes as good as it sounds and combines a creamy coconut sauce, cauliflower rice and delicious garlic. chicken and vegetable traybake and there are many more possibilities. Carrot Recipe Suggestions I just love the idea of carrot risotto where you use carrot as a substitute for rice. It is so creamy, so delicious and even if your kids hate vegetables they will love this! Aubergines are also fantastic this time of the year. Though when I think of aubergines it is rare that I have them beyond Greek summer food. They make an amazing moussaka and are also delicious air fried too. Aubergine Recipe Suggestions Lets start with a delicious Greek Moussaka after all that is always the first thought when you think of aubergines. Layered in a casserole dish served with loads of cheese sauce and tender mince. I love courgettes and the summer variety are just so good. They are normally supersize as they have no limits when it comes to how long they grow and most of the time they are so big that I can’t fit them in my fridge. I eat them all times of the year but in the summer they’re much better quality. Courgette Recipe Suggestions I have to start with these courgette fritter bites just because they are so good and I eat them as much as I can. They just taste so good and are perfect for a quick supper. Foods In Season #10 – Tomatoes

My favourite healthy food and just so good that you can’t just have one. At this time of the year we buy them by the box and get a 6 kilo container of them for cooking with. Make a homemade tomato sauce, enjoy a summer tomato salad or use them to make stuffed tomatoes. The possibilities are endless. Tomato Recipe Suggestions First let’s start with these no cook stuffed tomatoes as this is what summer tomatoes are all about. Ripe, beautiful coloured and taste amazing.

Slimming World Courgette Bread In The Airfryer Welcome to our latest Slimming World recipe and this is a delicious courgette bread in the Airfryer. A great alternative to traditional bread for reducing your Syns or for if you want something that is low in carbs.

Author: RecipeThis.com Serves: 10 Slices Preparation time: 10 Minutes Cooking time: 30 Minutes

Ingredients:            

Airfryer 1 Large Courgette 190g Self Raising Flour (15 syns) 2Tbsp Coconut Oil (13 Syns) 1Tbsp Cocoa Powder (1.5 Syns) 1 Large Egg 175g Fat Free Greek Yoghurt 1 Medium Orange (rind and zest) 2Tsp Vanilla Essence 2Tsp Cinnamon 1Tsp Nutmeg 1Tsp Salt

Method:


1. Preheat the Airfryer to 180c and grease a tin suitable for bread baking for the Airfryer. 2. Grate the courgette and then squeeze out any excess moisture with your hands until it is water free. 3. Whisk the oil, egg, yoghurt, orange and vanilla together in a medium bowl. Continue to do so until it is well combined. Add the seasoning and then the flour a bit at a time. 4. Fold in the courgette. 5. Pour into your bread tin. 6. Cook for 30 minutes in the Airfryer or until cooked in the middle. 7. Serve.

Notes: You will find that some Airfryers cook quicker than others, so keep an eye on your timings. Also use a toothpick to check if it is cooked and if it comes out clean you know it is done. This recipe can be frozen once it has cooled down and stored in the freezer for up to 3 months. For Syns this bread is rather low in Syns with just the flour and the coconut oil having syns in it. It made 10 slices for me and with the Syns for the whole loaf being 29.5 Syns it works out at just short of 3 Syns a slice. Also from a Slimming World point of view you can reduce it by using a lower syn fat instead of coconut oil, but I find coconut oil gives it an amazing flavour.
