Introduction: Welcome to our May in season Podcast here at RecipeThis.com. At home with the Milners we love May and the seasonal produce that comes with it. May to us is huge amounts of fresh strawberries and the sun on our back while we dive into barbeque season. Strawberries is one of my favourite fruits and along with my daughter Sofia we will dive into them when they are in season and taste their best. When I was pregnant with her, I had more than I should and still craving has passed onto her. When she was being weaned onto solids she would refuse to eat anything. BUT pass her a strawberry and you will soon wonder where it has gone!!! We have a few outdoor spaces at our home that are just perfect for the barbeque. We love to have warm jacket potatoes, coleslaw, a big salad along with whatever meat we have in the house at the time. Normally, there will always be big fat juicy sausages, sizzling burgers, chicken kebabs and we often have a thing for some chicken kebabs. The weather in Portugal in May can be hit and miss. Some times we can have a really warm 29 or 30 degrees other times we are lucky if it hits 25c. So we tend to watch the weather and embrace the best days with a family barbeque. We will get involved in putting it together and then enjoy it with lots of fun and laughter. Though someone needs to explain to our 2 year old that it is sweetcorn that the cobb holders go on, NOT the white onions like she seems to think!

May Foods In Season I am sure what you really want to know is what the main foods in season are right now. Well I have highlighted what I consider to be the top 10 as there is just way too much choice. Way too many foods to get excitable about and it is hard to know where to start. These are also the foods that are in season in May that are not


expensive to source and you could imagine cooking a variety of recipes with. Foods In Season #1 – New Potatoes

Bring me some new potatoes cooked in garlic butter and with some fresh herbs and then I am in complete food heaven. They just taste so good when they are combined together and make a perfect side dish for some steamed fish or meat. They are actually one of those food types that I could just talk about it and I am hungry! New Potato Recipe Suggestions Starting off with my garlic potatoes in the Instant Pot. Just because they are so easy and so delicious when they are made like this. Plus they are a perfect

Yeah….peppers are back after last been featured in the Podcast in March. I love them and buy them in packs of 3 where you have the green, yellow and red in one pack. Then I can have rainbow salads, omelettes and so many other delicious peppery treats.


Pepper Recipe Suggestions For a delicious peppery start I would recommend starting with Kalyns Stuffed Peppers. They are filled with brown rice and I doubt you could just have the one!

If you want to embrace a fresh herb, then it doesn’t get any better than the beautiful mint that is in full season in May. It makes a perfect seasoning for a meal and once you start adding fresh mint to meals you won’t want to go back! Mint Recipe Suggestions Starting your mint cooking feast we recommend that you start with some After 8 Mint Icecream. It is the perfect time of year for some refreshing icecream and this is a favourite of mine. After this I would also suggest:

This is a totally new fruit for us to share on our podcast and on our food blog. Its not that that we are anti apricots because we are not. In fact we love them a lot! Its just something that sits in our fruit bowl come spring to summer time and then forgotten the rest of the time! Apricot Recipe Suggestions


We are kick starting things with some pan fried pork chops with a delicious apricot and mustard sauce. This dish is perfect for a night in for two that is also low carb and doesn’t break the bank. After this I would also suggest:  Apricot Glazed Carrots  Asian Chicken & Broccoli Bowls  Moroccan Pilaf  Clean & Healthy Maple Granola Foods In Season #5 – Bananas

The bright yellow fruit are back by popular demand. They are perfectly ripe in May and are perfect both in savoury or sweet


dishes. I say savoury because I grew up on my parents having them in their curries. It certainly added a lot of flavour to it. Banana Recipe Suggestions I am starting the recipes off with my banana and strawberry smoothie. Just because in the summer you just want something cool and refreshing and full of fresh fruit to make your afternoons complete. We starting the in season meat this month with beef. It is one of those meats that you could live on as your main meat forever and never feel like anything else is missing out. Enjoy beef wellington, roast beef and Yorkshire Pudding, stew and dumplings along with many more classic dishes. Beef Recipe Suggestions For beef recipe suggestions lets start with beef pot roast cooked in the Instant Pot. But better than that lets make it whole 30 compliant so that it super healthy and also super tasty. Then serve this whenever you feel the need for some good old

So if beef is the more expensive meat, how about going down the frugal end with some delicious pork. Pork often gets the raw end of the deal with it being so cheap but it can taste amazing. Plus if you compare how much the fillet costs on beef compared to pork you will understand why a lot of families eat it on a daily basis.


Pork Recipe Suggestions I just love these bite sized pork ribs. They fit perfectly into the Instant Pot, are also amazing in the crockpot or you could even cook them on low in the oven. Then serve them up with a salad, or coleslaw and you have a fantastic lunch, dinner or supper. I just adore chicken. It is just so versatile that you get some frozen chicken out of the freezer the night before and come up with 100’s of different ways to cook it. Each of them feeling like a completely different meal and perfect for people with completely different cooking abilities. Chicken Recipe Suggestions Lets start with the 3 delicious leftover chicken recipes mentioned in this post. We have barbequed chicken wings, Philadelphia herby chicken and Thai mango chicken. All three of them are so easy to make and are perfect for quick easy dinners.

You mention tuna and it is one of those foods that we are all into. We love it from the can or fresh from the fish mongers and it is so cheap compared to other premium fish. Plus it can be like chicken when you add it to food and just so easy. Tuna Recipe Suggestions Lets start with some tuna pasta. It is something I have when it is the night before grocery shopping and I am low on food in the fridge. I can then make a


quick pasta sauce, add some tuna and boil some pasta and I have dinner. Plus add fresh vegetables to it and it is amazing how far the meal will stretch. Last on the list is halibut. It is delicious and perfect for summer meals. When a recipe calls out for white fish add halibut and you


won’t be disappointed. You can use it in fishcakes, fish stews or just steamed with vegetables for a healthy lunch. Halibut Recipe Suggestions I first made this Brazilian Fish Stew just after giving birth to my third child. It became an amazing comfort food for those sleepless nights and is now a family favourite. Slimming World Red Pepper Hummus Welcome to our latest Slimming World recipe and today on our podcast we are sharing with you our Slimming World Red Pepper Hummus. It brings out the delicious May in season red peppers and its hard to believe that this is actually Slimming World friendly.


Author: RecipeThis.com Serves: 4 Preparation time: 5 Minutes Cooking time: 25 Minutes

Ingredients:           

Airfryer Blender 3 Large Red Peppers 1 Large Onion (peeled and diced) 1 Can Chickpeas 1Tsp Olive Oil 1Tsp Garlic Puree 1 Lemon (juice and rind) 1Tsp Coriander 2Tsp Cumin Salt & Pepper

Method: 1. Slice the top off the peppers and once removed pull out the seeds. Slice them into quarters and place them in the Airfryer. Dry fry them for 20 minutes on 200c until they have a black coating. Remove them with tongs and put to one side. 2. In the Airfryer place the onion with a teaspoon of olive oil and cook for 5 minutes. 3. When they have cooled down (or enough to touch) peel off the skin. 4. Place the onion and the peppers into a blender. Add all the other ingredients and blend until smooth. 5. Place in the fridge for an hour to chill. 6. Serve.


Notes: This makes a good bowl of hummus and is great for sharing with another 3 people. Given that it just has 1 teaspoon of olive oil means that it works out at ½ a Syn per person.
