Twenty Twenty Three

has certainly got off to an interesting start! It has been truly devastating to see what other people have been going through with the recent flooding and Cyclone Gabrielle. I hope that you and your loved ones have managed to stay safe throughout this period.

It has been really lovely to get out and about in our neighbourhood. I have really enjoyed having Melba join us in the last year. I quite often visit for brunch or to grab a coffee with friends and colleagues. In this issue, they feature in our Chef's Corner with one of their classic recipes which you are sure to enjoy. I even substituted chicken for halloumi and it was equally delicious!

For those of you that exercise around Harbourside you will have seen that Pararekau Island has opened to the public. If you have not managed to visit yet then I would urge you to take advantage of our extended coastal walkway.

Make your own compost!

Compost is a natural fertiliser that is great for your garden. Autumn is a great time to start making compost because many trees are dropping their leaves, which you'll need to use. Make sure you get the balance right between garden waste and kitchen scraps in the compost mix for the best results.

Mulch for your garden!

Mulch is your garden's best friend. It helps the soil hold in moisture so you don't have to water it as often and it also keeps down weeds. Over time, mulch will break down into your soil and improve it by adding nutrients.

Fertilise your lawn!

Fertilising your lawn will ensure that it stays green and healthy throughout the year. Autumn is a great time to apply fertiliser because it protects your lawn through the winter months..

HONEY GARLIC CHICKEN SALAD with Melba Karaka

The honey and garlic chicken salad features on all MELBA menus across Auckland and was a must for our newest café in Karaka. This is a delicious salad perfect for spring, as it is light, balanced and always satisfies. Any spring herbs and vegetables can be added. We always use free range chicken and our house garlic aioli is made with free range eggs and confit garlic. We are sure that you will enjoy the combination of flavours and textures.

150 grams Free range chicken breast

15 ml Soy sauce

10 ml Honey

20 grams Roasted cashews

1/4 Avocado

1 whole Vine tomato

30 grams Mesclun

35 ml Balsamic vinaigrette (house recipe)

35 ml Garlic aioli (house recipe)

40 grams Apple, finely sliced

1. Heat oil in a pan and brown the diced free range chicken breast

2. Add the honey & soy sauce & reduce until caramelised

3. Toss the mesclun in the vinaigrette & place in the middle of the bowl

4. Evenly place the tomato quarters around the plate as well as the sliced apple

5. Fan the avocado on one side of the plate and top with the cooked chicken

6. Zig zag the aioli across the salad

7. Top with cashews & garnish
