“My palate likes exciting flavors. It likes acid, it likes spice, it likes sweet flavors. It likes unctuousness,” he says. “I like taking all flavors and just seeing how much we can crank it up and balancing it at a higher level, making it a lot more fun.”

Growing up in Bainbridge Island, Washington near the Seattle area, Chef Gavin Schmidt began his culinary career as a humble dishwasher at a hometown bistro. His career continued as he slowly climbed up the ladder in various establishments along the American west coast.
