AOVE Baby is a family-owned company from Jaén, Spain Built on generations of expertise and with a deep connection to our land, commited to producing the finest Extra Virgin Olive Oil.

Initially based in Baeza (a UNESCO World Heritage city in La Loma, Jaén), our company was founded with an unwavering dedication to quality, sustainability, and the timeless heritage of the olive grove, and with an aim on crafting the finest gourmet oils in the region,

After years of dedication, time, and effort spent in our lands and fields, as part of our expansion in a highly competitive sector through rural development, we acquired our first facilities at the SCA San Antonio Abad Cooperative, where we farmers have been trading for generations We have successfully maintained our competitiveness while gaining an edge in the market, transforming our product line into something truly unique

Our Mill

Our oil mill is located in the historic Sociedad Cooperativa Andaluza San Antonio Abad in Cárchel (Sierra Mágina, Jaén) Founded in the 1950s, it brings together around 220 members and boasts an average annual production of over 1,500,000 kilos of olives.

Through the acquisition of these facilities, AOVE BABY was able to transform them into a state-of-the-art private mill, equipped with advanced auto-cleaning, oxygenation, and Pieralisi ™ continuous systems Which ensures an efficient coldpressing process, maintaining a consistent temperature below 20°C throughout grinding, beating, centrifugation, and natural decanting preserving the oil's flavor, aroma, and nutritional properties

Additionally, this oil mill has helped AOVE BABY achieve some of the highest polyphenol levels on the market, excelling in tasting panels and enabling us to hold multiple organic certifications, including the CAAE, which ensures full traceability and adherence to the highest standards

Our Fields

To produce the highest quality oils, we carefully select our olives in Parque del Estrecho (Tarifa, Cádiz), Valle del Guadalquivir (Baeza, Jaén) , and Sierra Mágina (Cárchel, Jaén), with the primary goal of harvesting them at their peak ripeness We handpick each olive to ensure optimal quality and flavor

This dedication to craftsmanship results in an exceptional Extra Virgin Olive Oil that is pure, flavorful, and of unmatched quality, reflecting both the excellence of the harvest and the meticulous care taken in every step of production. By using traditional cold-pressing methods, we preserve the olives' natural flavors and aromas, maintaining the integrity of each product

Parque Del Estrecho - Tarifa

Parque Del Estrecho and Sierra del Retín are protected areas in the region of Tarifa, Cadiz Free from contaminants, these fields are nestled with wild olive trees thriving in harmony with the surrounding flora and fauna The wild Acebuche olive tree, which is the ancient ancestor of all olive varieties, grows naturally in this environment thanks to the continuous exchange of winds, migratory birds, Saharan sands, and Mediterranean-Atlantic tides between Europe and Africa

These natural interactions enrich the Acebuche fruit with numerous macro- and micronutrients, within this self-sustaining ecosystem, the results are unique and our olive oil (Acebuche Salvaje), thrives with an exclusive wild olive juice renowned for its exceptionally high polyphenol content, containing nearly 250 different natural antioxidants and bioactive compounds, such as sitosterol, which has remarkable dermatological properties

Sierra Mágina - Cárchel

Sierra Mágina covers over 60,000 hectares of olive groves, mostly consisting of highaltitude, dry-farmed traditional olive trees in small plots. The region holds a Protected Designation of Origin (Denominación de Origen), which ensures that all Extra Virgin Olive Oil produced here meet the highest quality standards

The mountainous terrain makes mechanized harvesting impossible, and the lack of irrigation results in lower yields. However, this contributes to exceptional quality, with olives that surpass those from irrigated lowland areas As a result, our olive oil from Sierra Mágina offers a gourmet experience with aromas and flavors that reflect its natural surroundings.

The dominant variety is Picual, followed by the exclusive Manzanillo de Jaén, found only in Cárcheles and Campillo de Arenas (Jaén) Oils from these varieties have low acidity and feature green fruity notes, with hints of fresh grass, tomato plant, and fig tree. Their balanced bitter-sweet and spicy profile is enhanced by high polyphenol and antioxidant content

Valle Del Guadalquivir - Baeza

Our Finca Las Delicias is located in the biodiverse Valle del Guadalquivir, an area rich in flora, fauna, fertile soil, and abundant water resources. We sustainably manage water through photovoltaic-powered drip irrigation, ensuring a consistent supply while supporting environmental sustainability

As a result of these sustainable practices, we create a harmonious life cycle with the native flora and fauna of the Guadalquivir River. Our key methods include natural fertilizers such as sheep manure, compost from olive pomace and leaves, and plantbased extracts like horsetail and nettle. These practices, alongside biodynamic preparations (500, 501, and Maria Thun), ensure a healthy, balanced ecosystem, contributing to the premium quality of our olive oil
