Bak Kwa (肉干) is a Chinese dried pork product

prepared using a unique preserva�on and cooking technique. Sliced pork is marinated before it is air-dried and cooked over a hot plate. This sweet and savoury delicacy is thought to have originated from Fujian, China, and Singaporeans have tweaked the recipe a li�le. For example, bak kwa (肉干) here is grilled over charcoal, instead of a hotplate, to achieve that smoky flavour we all adore. Just look at those crazy snaking queues consis�ng of even tourists! Anyone will agree that Bak Kwa (肉干) is a huge part of our CNY tradi�on.

Lunar New Year has ALWAYS been one of the most heated fes�ve in Asian Countries. It is the ONLY �me where we locals get to pig out mountains of mouth-watering goodies and scrump�ous snacks. Riding top of our list is nonetheless – Kim Hwa Guan’s (金华源) Bak Gua! CNY is not CNY without bak kwa! Sweet juicy minced pork totally well charred on all edges is definitely our calling.

While some indulge in the tradi�onal dried minced meat, Kim offers a variety of their speciality from Chilli Dried Minced Meat, Hand-Made Dried Meat and our children’s all-�me fave the Gold Coin Minced Meat.

Smoked with their own tradi�onal recipe handed down from their father, the 金华源 family has never once lost their touch with their cra� especially maintaining the glazed crunchy surface on every slice of their bak kwa.

Reminiscing their golden days, bak kwa grilling was once done by their stall side where the young brothers followed their father day in and out in honing their skills.

Filled with hear�elt passion and loyalty, the Ng family kept their honour and promises in delivering only quali�ed bak kwa to all their customers. Catering to insanely long queues during the CNY period, Kim’s Chinatown outlet operates from 10am in the morning �ll 6pm in the evening.
