El niño mexicano espera con ansias la llegada por la madrugada del 6 de enero de los Santos Reyes (Melchor, Gaspar y Baltasar), quienes traen regalos a los niños bien portados. En honor a estos augustos personajes, tanto los chicos como los grandes acostumbran partir en familia un enorme pan dulce en forma de rosca que representa las coronas de los Reyes Magos, mismos que visitaron a la Sagrada Familia poco después del nacimiento de Jesús. Escondido en este pan es la figura (a veces más de una) del Niño Jesús y a la persona a quien le toque la rebanada que contiene la figura le cae la responsabilidad de proveer a los presentes de los tamales que se comen el 2 de febrero, Día de la Candelaria. (Descubre por qué se acostumbra comer tamales el 2 de febrero.) Hacer pan en casa requiere de tiempo y paciencia, pero la elaboración de esta rosca vale la pena por lo divertido tanto en hacerla como al partirla después. La receta rinde dos roscas de aproximadamente 12 pulgadas / 30 centímetros cada una, lo suficiente para unas 12 a 16 porciones en total. Yo lo hago así porque me permite hacer que roscas tengan forma de círculo, pero si lo prefieres puedes hacer una sola rosca grande ovalada.
Ingredientes Para el pan: 4 y 1/2 cucharaditas (15 gramos) de levadura seca granulada 1/4 de taza de agua tibia 2/3 de taza de leche 1/3 de taza de azúcar 1 cucharadita (10 gramos) de esencia de vainilla 1 cucharadita (6 gramos) de sal 1/3 de taza de mantequilla 5 huevos (4 para la mezcla y una para barnizar) 5 tazas de harina de trigo 2 tazas de frutas secas (acitrón, naranja, piña, higo, uva pasa, etc.) 1/4 de taza de azúcar morena Para la costra decorativa: 1/4 de taza (100 gramos) de manteca vegetal 3/4 de taza ( 100 gramos) de azúcar glass 2/3 de taza (100 gramos) de harina de trigo 1 cucharadita (10 gramos) de esencia de vainilla Prep Time: 60 minutes Cook Time: 30 minutes Fermenta: 180 minutes Total Time: 270 minutes Yield: 12 - 16 porciones
Preparacion
1. Prepara la masa: Saca del refrigerador la mantequilla y los huevos para que se vayan calentando hasta la temperatura ambiente. Combina la levadura y el agua tibia, moviéndolas suavemente hasta que la levadura quede disuelta. 2. Calienta la leche hasta que casi llegue
al punto de ebullción, pero no la dejes hervir. Quítala del fuego y agrega el 1/3 de taza de azúcar y la cucharadita de vainilla y agita hasta que el azúcar quede perfectamente disuelto. 3. Junta las dos mezclas (la de agua con levadura y la de leche con azúcar) y deja que repose hasta que haya prendido bien la levadura y toda la superficie de este líquido quede cubierta de burbujitas. 4. En un recipiente grande coloca las 5 tazas de harina, la sal y la mantequilla y mézclalos bien. En otro recipiente, bate 4 huevos con batidor de globo hasta lograr una mezcla homogénea. 5. Añade el huevo batido y la mezcla de levadura a la harina. Usa las manos para mezclar bien, primero dentro del recipiente y después sobre una superficie plana rociada con un poco de azúcar. Amasa hasta lograr una masa elástica integrada que se despega fácilmente de las manos y de la mesa. 6. Coloca la bola de masa en un recipiente engrasado y cúbrelo con un trapo húmedo. Déjalo en un lugar bastante tibio durante 1 hora o hasta que haya duplicado su tamaño. 7. Pica finito aproximadamente las dos terceras partes de la fruta seca; que los pedacitos sean del tamaño de una uva pasa. Mezcla la fruta picada con el azúcar morena. A la fruta seca restante córtala en tiras o (en el caso de frutas esféricas como son las cerezas) en mitades; ésta la usaremos para adornar las roscas.
Engrasa dos charoles planas y grandes de metal (de las que se usan para hornear galletas). 1. Ya fermentada la masa, divídela en dos. Extiende una parte en un rectángulo sobre una superficie plana. Esparce encima la mitad de la fruta picada; luego enrolla la masa para formar una especie de tronco largo. Coloca el tronco sobre una de las charolas de metal. Junta los extremos para formar un círculo, pegándolos de tal manera que no se note fácilmente dónde se juntaron. Levanta suavemente una porción de la rosca y con mucho cuidado mete uno de los muñequitos al rollo por debajo de la masa. Asegúrate de que quede bien envuelto en la masa y arregla la sección donde hiciste esta maniobra para
que no se note ninguna diferencia del resto de la pieza. Estira y acomoda la masa para formar una corona bien formada. Haz lo mismo con la otra mitad de los ingredientes. 2. Vuelve a tapar la masa -- hecha ya dos roscas -- con toallas húmedas y déjalos reposar 1 o 2 horas en un lugar muy tibio para que nuevamente dupliquen su tamaño. 3. Prepara la mezcla para la costra: En un recipiente mediano, combina la manteca vegetal con el azúcar glas y bate bien hasta que queden perfectamente combinados. Agrega la harina, la vainilla y los huevos y sigue batiendo hasta obtener una mezcla homogénea. 4. Adorna y hornea las roscas: Cuando la masa enroscada se haya levantado al doble de tamaño, ¡ya es hora de adornarla y hornearla! 5. Prende el horno a 375°F / 190°C para que se vaya calentando. Utiliza la masa preparada para la costra para formar tres o cuatro tiras (de unos 4 centímetros de ancho cada una) de mezcla en diferentes lugares sobre cada rosca. 6. En un recipiente chico, bate el huevo restante con el batidor de globo. Utiliza una brocha de pastelería para barnizar cada una de tus roscas con el huevo batido. Coloca la fruta seca reservada (la que cortaste en tiras) para decorar las roscas de una forma agradable. Después, vuelve a pasar la brocha con huevo por toda la superficie de las dos piezas hasta que se haya terminado el huevo. 7. Hornea las roscas (si el horno es chico, hornea una la vez) durante aproximadamente 30 minutos hasta que estén cocidas y doraditas. 8. Al sacarlas del horno y mientras aún estén calientes, corta cualquier sobrante de la mezcla de costra que se haya derretido por la charola de galletas desfigurando las coronas, dejando cada rosca en su forma circular. 9. Permite que tus roscas de Reyes se enfríen completamente antes de moverlas y partirlas. Disfruta tu rosca con alguna bebida caliente mexicana como el chocolate caliente, el café de olla, o el champurrado -- o si hiciera mucho calor prúebala con un buen tepache de piña o agua de jamaica.
