Gran Canaria está localizada en la zona atlántica de la Macaronesia, conformada por los archipiélagos de Madeira, Salvajes, Azores, Cabo Verde y parte de Marruecos. Se sitúa a unos 210 kilómetros del punto más cercano de la costa africana y a 1.250 de Cádiz, el puerto continental europeo más cercano. Dentro del Archipiélago Canario, Gran Canaria está situada entre Fuerteventura de la que dista 83 km. al Este, y Tenerife situada a 62 km. al Oeste. De origen volcánico, Gran Canaria reúne en sus 1.560 kilómetros cuadrados de superficie y 236 kilómetros de longitud de costa, buena parte de los variados paisajes del Archipiélago. Este hecho y la diversidad de su clima le ha valido el calificativo de “continente en miniatura”. La característica física más emblemática de la Isla es su redondez, distorsionada por una pequeña península de unos 12 kilómetros cuadrados situada al nordeste (La Isleta) unida a la Isla por un istmo arenoso. La altitud máxima se sitúa en el Pozo de Las Nieves, en el mismo centro de Gran Canaria, con 1.949 m. Desde estas alturas y hasta la costa, la Isla está surcada radialmente por profundos barrancos, en los que se exhibe un paisaje diferente. Es asimismo el lugar preferido por aquellos que desean unas vacaciones diferentes, cerca de casa, con todas las ventajas de un lugar que forma parte de la Unión Europea y con el aliciente de descubrir, cada día, un mundo nuevo de sensaciones con todos los sentidos.

Gran Canaria cuenta con una enorme riqueza natural, en la que sobresalen sus numerosas playas de calidad, en su mayoría de arena rubia, algunas de las cuales son únicas en el mundo. Casi 60 de los 236 kilómetros de longitud de costa de Gran Canaria están ocupados por playas de distinta naturaleza, que van desde la impresionante Maspalomas, con sus 250 hectáreas de dunas junto al mar, a la recóndita y virgen Güigüi, pasando por la animada playa capitalina de Las Canteras. El clima templado y la agradable temperatura del agua de baño (entre los 18 grados de los meses de invierno y los 22 del resto del año) permite que las playas puedan ser usadas todo el año.

This natural richness is the principal reason why part of its geographical territory has been declared a World Biosphere Reserve. This recent acclaim has been received with great enthusiasm by the Gran Canarios who are themselves very keen on improving the environmental conditions of the island. Gran Canaria is situated in the Atlantic area of the Macaronesia, a geographical zone encompassing the Madeira, Azores and Cape Verde Archipelagos, the Savage islands together with part of Morocco. It is located at approximately 210 kilometres off the African coast, and 1250 kilometres from Cadiz, the nearest European continental port. Within the Canary Islands Archipelago, Gran Canaria lies between the islands of Fuerteventura - 83 km towards the East - and Tenerife - 62 km to the West.

This fact in itself, in addition to its climatic diversity, has won Gran Canaria the nickname “miniature continent”. The most emblematic physical characteristic of the Island is its roundness, solely distorted by a small peninsula, approximately twelve square kilometres in size, located towards the northeast (“La Isleta”), and joined to the mainland by a sand isthmus. The island’s highest peak (1,949 metres) is found at “Pozo de las Nieves”, right at the centre of Gran Canaria. From its peak, down to the shores, Gran Canaria is radially crisscrossed by deep gorges which exhibit completely different landscapes. The island is a favoured destination for those yearning to enjoy a unique holiday, close to home, with all the advantages posed by a location forming part of the European Union. The most noteworthy are the abundance of high quality beaches, mostly covered in white sand, some of which are unique in the world. Almost sixty of Gran Canaria’s 236 kilometres of coastal line are covered by beaches of differing nature: from the impressive beach of Maspalomas - over 250 hectares of dunes along the seashore - to the recondite and virgin beach of Güigüi, without forgetting the bustling beach of Las Canteras, in the island’s capital city. Die Landfauna der Insel ist dadurch gekennzeichnet, dass es keine großen Wirbeltiere oder Schädlinge gibt. Vögel und Reptilien sind die am zahlreichsten vertretenen Arten der Landfauna auf Gran Canaria. Bei den Wirbeltieren gibt es die Kanarische Eidechse- die nur auf dieser Insel und zwar im Überfluss vorkommt, die bläuliche Eidechse (lisa azulada), der gestreifte Kanarengecko (Tarentola boettgeri) und die Spitzmaus von Osorio (Crocidura osorio). Die Vögel sind am stärksten vertreten. Genau 48 Arten umfasst die nestbauende Vogelwelt auf dieser Insel, unter ihnen die nur dort vorkommenden Arten, wie der Große Buntspecht, das Rotkehlchen und der Blaue Fink, der sich im Kiefernwald Pilancones - Inagua aufhält. Centro de Arte Indigenista, en Gáldar, un inmueble donde conviven el regionalismo y el racionalismo, resume la obra de un sorprendente pintor que puede situarse dentro del movimiento expresionista, al que le vincula su gusto por lo popular y su reelaboración. Su pintura es un reflejo de los colores del paisaje insular y, como él mismo decía, de “los propios ocres y rojos, en tonos cálidos, característicos de la tierra canaria” ubicada “alrededor del volcán”. El jardín y su fuente de azulejo azul regalan un oasis urbano escondido entre guanábanas y bambúes, un microcosmos fruto del espíritu integrador del artista. EN > ANTONIO PADRÓN HOUSE-MUSEUM. INDIGENIST ART CENTRE> Few artists reflect the spirit of the lands and peoples of Gran Canaria as he did. The Antonio Padrón House-Musuem, Indigenist Art Centre, in Galdar, a property that brings together regionalism and rationalism to synthesise the work of a surprising painter from the expressionist movement, with his taste for the popular and his re-elaboration. His painting is a reflection of the colours of the island landscape and, as he himself said, of the “very ochres and reds, in warm tones, characteristic of the Canary Island lands” located “around the volcano”. The garden and its blue-tile fountain offer an urban oasis hidden among sour sops and bamboo, a microcosm that is the fruit of the artist’s integrating spirit.

DE > MUSEUMSHAUS ANTONIO PADRÓN. ZENTRUM FÜR HEIMATKUNST> Nur wenige Künstler haben es wie Antonio Padrón vermocht, den Geist der Insel und der Menschen Gran Canarias widerzuspiegeln. Im Museumshaus Antonio Padrón und Zentrum für Heimatkunst in Gáldar vereinen sich Regionalismus und Rationalismus und fassen das Werk eines außergewöhnlichen Malers zusammen, der in die expressionistische Bewegung eingeordnet werden kann, mit der er durch seine Vorliebe für das Volkstümliche und dessen künstlerische Verarbeitung verbunden ist. Seine Malerei spiegelt die Farben der Insellandschaften und, wie er selbst sagte, "die ockerfarbenen und roten, warmen Töne, die so charakteristisch für die kanarische Natur" sind, die sich "rund um den Vulkan" legt. Der Garten und sein blauer Fliesenbrunnen bilden eine versteckte urbane Oase zwischen Stachelannonen und Bambus - einen Mikrokosmos, der Frucht des integrierenden Geistes des Künstlers ist. ES> MUSEO Y PARQUE ARQUEOLÓGICO CUEVA PINTADA >>> El Museo y Parque Arqueológico Cueva Pintada, en Gáldar, supone una verdadera inmersión en el pasado insular, un legado que se ve, se transita y que –casi– se puede tocar. El espacio toma su nombre de una espléndida cámara decorada excavada en la toba volcánica y decorada con motivos geométricos, la manifestación más genuina de la pintura mural prehispánica. La Cueva Pintada formaba parte de un caserío de más de cincuenta casas y cuevas fechadas entre los siglos VII al XVI. El centro muestra una selección de las colecciones fruto de las distintas campañas arqueológicas, mientras que la proyección en 3D sitúa al público en el espacio y

en el tiempo antes de que éste se adentre por la pasarela desde la que se recorren las casas y cuevas del poblado. EN > CUEVA PINTADA MUSEUM AND ARCHAEOLOGY PARK> The Cueva Pintada (Painted Cave) Museum and Archaeology Park, in Galdar, is a deep-dive into the island past, a legacy that you can see, walk around and – almost - touch. The space takes its name from a splendid chamber excavated into the volcanic tuff, decorated with geometric motifs, the most authentic manifestation of pre-Hispanic mural painting. La Cueva Pintada formed part of a hamlet of over fifty houses and caves that date back to between the 7th and 16th centuries. The museum shows a selection of the collections that are the results of the different archaeological campaigns, while the 3D video situates the audience in time and space before they take the path running through the houses and caves of the settlement. DE> MUSEUM UND ARCHÄOLOGISCHER PARK CUEVA PINTADA> Bei einem Besuch des Museums und des archäologischen Parks Cueva Pintada in Gáldar taucht man wahrhaft in die Inselgeschichte und ein historisches Erbe ein, das man bestaunt, durchquert und „fast“ berühren kann. Der Name, Cueva Pintada – bemalte Höhle, besitzt seinen Ursprung in einer in das vulkanische Tuffgestein gegrabenen Höhle, die mit geometrischen Motiven prächtig dekoriert ist. Sie stellt fürwahr eine der authentischsten Manifestationen prähispanischer Wandmalerei dar. Die Cueva Pintada war Teil eines Weilers mit mehr als fünfzig Häusern und Höhlen, die aus dem siebten bis sechzehnten Jahrhundert stammen. Das Zentrum zeigt eine Auswahl der Fundstücke aus den verschiedenen archäologischen Kampagnen und ein 3D-Film versetzt die Besucher zurück in Raum und Zeit, bevor sie über Stege entlang der Häuser und Höhlen der ehemaligen Siedlung der Ureinwohner schlendern.

ES > El Museo Elder de la Ciencia y la Tecnología de Las Palmas de Gran Canaria, el más visitado de las Islas Canarias, ha abierto al público la exposición EL LEGADO DE ATINDAMANA, que recrea un antiguo poblado aborigen en una superficie de seiscientos metros cuadrados. En él, los usuarios podrán adentrarse en la vida de los primeros pobladores de las Islas a través de una experiencia única, una visita guiada con distintos ambientes en la que agudizarán los sentidos. El recorrido, con una duración de cuarenta y cinco minutos, aislará a los visitantes de nuestro tiempo y espacio. ES > La historia del faro de Maspalomas comenzó en junio de 1861, cuando la Comisión de Faros y alumbrado marítimo de las Islas Canarias, emitió un informe sugiriendo «la construcción de un faro de primer orden, de luz fija o centelleante, en la Punta de Maspalomas, al sur de la isla de Gran Canaria». En un contexto histórico que dotaba a la Isla de una infraestructura marítima, de puertos y muelles, respondiendo a la demanda del tráfico marítimo comercial en la segunda mitad del siglo XIX.

Recibió el encargo de la redacción del proyecto constructivo del faro, el ingeniero teldense Juan de León y Castillo, hermano del político Fernando impulsor de la legislación de puertos francos. El faro de Maspalomas comenzó a alumbrar a los barcos el 1 de febrero de 1889.

El Faro de Maspalomas y la Fedac El faro de Maspalomas, tras una concesión administrativa, fue cedido al Cabildo de Gran Canaria en 2009 con el objetivo de darle un uso cultural, quien delegó en la Fundación para la Etnografía y Desarrollo de la Artesanía Canaria, FEDAC, la transformación en Centro Etnográfico. El Centro Etnográfico Faro de Maspalomas ha abierto sus puertas con salas de exposiciones, una tienda de artesanía canaria, un punto de información turística, así como talleres de artesanía y presentaciones etnográficas temporales. El proyecto museográfico, ha pretendido destacar los oficios artesanos y sus productos en el contexto de la historia de Gran Canaria. El Centro Etnográfico, para dotar de contenido a las salas, ha recurrido a la rica y variada producción artesanal existente en las colecciones de valor etnográfico que atesora la Fedac.

EN > The history of Maspalomas Lighthouse began in June 1861, when the Canary Islands Lighthouse and Marine Lighting Committee issued a report proposing â&#x20AC;&#x153;the construction of a first-class lighthouse, emitting flashes or a steady beam, at Punta de Maspalomas, on the south of the island of Gran Canariaâ&#x20AC;?. The proposal came at a time when the island was developing its coastal infrastructure of ports and docks to meet the rising demand from commercial marine traffic in the second half of the nineteenth century.

Telde-born engineer Juan de LeĂłn y Castillo, whose brother Fernando was the politician behind the legislation granting free port status, was commissioned to design the lighthouse. Maspalomas Lighthouse cast its first beam over the sea on 1 February 1889. Maspalomas Lighthouse was taken over by the Cabildo (Island Council) of Gran Canaria in 2009 with the aim of putting the building to cultural use. The Cabildo tasked the Canary Islands Ethnographic and Crafts Development Foundation (FEDAC) with transforming it into an Ethnographic Centre.

The Maspalomas Lighthouse Ethnographic Centre has now opened its doors and offers exhibition spaces, a Canary Islands craft shop, a tourist information office, craft workshops and temporary ethnographic exhibitions. The museum project seeks to showcase traditional crafts and trades in the context of the history of Gran Canaria. The Ethnographic Centre has filled its exhibition spaces by drawing on the rich and varied craftsmanship held in FEDACâ&#x20AC;&#x2122;s valuable ethnographic collections.

DE > Die Geschichte des Leuchtturms von Maspalomas nahm im Juni 1861 ihren Anfang, als die Kommission für Leuchttürme und maritime Signallichter der Kanarischen Inseln einen Bericht erstellte, in dem „der Bau eines Leuchtturms erster Ordnung mit Dauer- oder Blitzlicht in Punta de Maspalomas im Süden der Insel Gran Canaria“ vorgeschlagen wurde. Dies geschah in einem historischen Kontext, in dem die Insel in Antwort auf die zunehmende Handelsschifffahrt in der zweiten Hälfte des 19. Jahrhunderts mit einer Vielzahl von Infrastrukturen für die Seefahrt, Häfen und Kais ausgestattet wurde. Mit der Erstellung des Bauprojekts für den Leuchtturm wurde der aus Telde stammende Ingenieur Juan de León y Castillo - Bruder des Politikers Fernando de León y Castillo - beauftragt, welcher sich selbst sehr für die Gesetzgebung für Freihäfen einsetzte. Am 1. Februar 1889 wies der Leuchtturm von Maspalomas den Schiffen mit seinem Feuer erstmals den Weg.

Der Leuchtturm von Maspalomas und die Stiftung Fedac Um seine kulturelle Nutzung zu ermöglichen, wurde der Leuchtturm von Maspalomas infolge einer Verwaltungskonzession im Jahr 2009 an die Inselregierung von Gran Canaria abgetreten, welche ihrerseits die Stiftung für Ethnografie und Förderung des traditionellen kanarischen Handwerks, FEDAC, mit seiner Umwandlung in ein ethnografisches Zentrum beauftragte. Das Ethnografische Zentrum „Faro de Maspalomas“ steht den Besuchern mit mehreren Ausstellungssälen, einem kanarischen Kunsthandwerksladen, einer Touristeninformationsstelle, sowie Werkstätten für traditionelles Handwerk und Zeitausstellungen zum Thema Völkerkunde offen.

Das Museumsprojekt ist bestrebt, das traditionelle Handwerk und seine Produkte im Kontext der Geschichte Gran Canarias herauszustellen. Für die Ausstellungen konnte das Ethnografische Zentrum auf die vielfältigen, reichen handwerklichen Erzeugnisse zurückgreifen, die die Fedac in ihren Sammlungen völkerkundlichen Kunsthandwerks bewahrt.

Adentrarse en las calles de su caso histórico es sumergirse en buena parte de la historia de la Isla. Tras su fundación Agüimes fue cedido por los Reyes Católicos a la Iglesia, pasando a ser Señorío Episcopal hasta el siglo XIX. Esta especial característica y la dedicación a la agricultura han configurado el carácter de la villa. Desde el pueblo pesquero de Arinaga, hasta el pago agrícola de Temisas, en la zona alta del municipio, no faltan rincones que conocer y que recorrer. También resulta muy recomendable visitar el barranco de Guayadeque –donde se asentó una numerosa población de aborígenes canarios.

Una visita al municipio de Santa María de Guía le transportará a un pasado esplendoroso y, mientras se deleita con su magnífica riqueza arquitectónica y patrimonial, podrá conocer y participar de tradiciones y artesanías centenarias, disfrutar y relajarse con unos paisajes de hermosa y calmada belleza y experimentar el privilegio de probar uno de los productos artesanos más exclusivos del archipiélago, la joya gastronómica de Canarias: el Queso de Flor de Guía. En un recorrido por las empedradas calles del casco histórico se nos abre una ventana al esplendor de antaño y nos esperan impasibles al paso del tiempo numerosas edificaciones de fábrica elegante y señorial y el magnífico templo parroquial; también, talleres de artesanía donde se asombrará del laborioso y refinado trabajo de los artesanos del cuchillo canario y la talla de la madera; y establecimientos donde podrá probar los deliciososo dulces típicos de Guía y el famoso, exquisito y único queso de flor, elaborado con leche de oveja y cuajo extraído de la flor del cardo.

Muy cerca del Casco Histórico se encuentra el yacimiento arqueológico del Cenobio de Valerón, un impresionante granero colectivo utilizado por lo antiguos canarios, formado por más 300 cuevas y labrado en la piedra volcánica. Y en la zona de medianías merece una visita la Casa del Queso, para conocer la tradición quesera de la comarca. Para aquellos que prefieran disfrutar del mar y la naturaleza, el municipio les ofrece también esa posibilidad. En la playa de San Felipe se gozan de estupendas olas para la práctica del surf y en las piscinas naturales de Roque Prieto se disfruta del mar en un ambiente familiar. En las medianías y cumbres, se pueden deleitar con paisajes maravillos para la relajación o la práctica de senderismo. También las tradiciones y las fiestas populares son reconocidas y despiertan el interés de los visitantes. Entre ella destacan la Fiesta del Queso en abril y mayo, las Fiestas de la Virgen en agosto, la Fiesta de Las Marías en septiembre, y también la Semana Santa, de importante valor patrimonial.

A stroll around the cobbled streets of the old town offers us a window onto the splendours of yesteryear, with countless elegantly-built stately buildings impervious to the passage of time, and the magnificent parish church; along with craft workshops that will amaze you with the laborious, yet refined work of the craftsmen who make traditional Canary Island knives and wood carvings; and establishments where you can try the delicious typical desserts of Guía and its famous, unique, exquisite “queso de flor” or flower cheese, made from sheep’s milk curdled with the sap of the thistle flower.

Not far from the Old Town centre is the archaeological site of the “Cenobio de Valerón”, an impressive common grain store used by the ancient Canary Islanders, comprised of 300 caves dug into the volcanic rock. And in the foothills area, the Casa del Queso (Cheese Museum) is worth a visit to discover the cheese-making tradition of the district. For those who prefer the sea and the countryside, the municipality offers this possibility too. There is fantastic surfing at playa de San Felipe, and you can really enjoy the sea in a family atmosphere in the natural pools at Roque Prieto. You can enjoy the wonderful scenery of the foothills and highlands to relax of for hiking. The local traditions and popular fiestas are also renown and usually arouse the interest of visitors. Ganz in der Nähe der Altstadt liegt die archäologische Fundstätte von Cenobio de Valerón, ein beeindruckender Gemeinschaftskornspeicher aus der Zeit der kanarischen Ureinwohner, der aus mehr als 300 in das Vulkangestein gehauene Höhlen besteht. In mittlerer Höhenlage des Gemeindegebietes lohnt sich auch sehr ein Besuch des Hauses des Käses, Casa del Queso, um die Käsereitraditionen des Landstrichs kennen zu lernen. Auch denjenigen, die lieber das Meer und die Natur genießen, bietet die Gemeinde herausragende Möglichkeiten: Am Strand Playa de San Felipe haben die Surfer Riesenfreude an den fantastischen Wellen und in den Naturschwimmbecken von Roque Prieto genießt man das Meer in familiärer Atmosphäre. Die wunderschönen Landschaften der mittleren Höhenlagen und Gipfelregionen eignen sich hervorragend zum Entspannen und Wandern. Aber auch das alte Brauchtum und die traditionellen Volksfeste erfreuen sich großer Beliebtheit bei Besuchern von fern und nah. La fertilidad de nuestras tierras y la presencia de diferentes microclimas fomentan la diversidad de cultivos y la excelente calidad de los mismos. El control exhaustivo garantiza el correcto manejo de las técnicas consiguiendo unos frutos con características de calidad inmejorables, en color, peso, sabor, aromas, frescura, contenidos de vitaminas y minerales, etc. Gracias a estas materias primas y al manejo con sabiduría de las técnicas de elaboración y presentación de los platos la cocina canaria se sitúa en una posición ventajosa, capaz de satisfacer al más exigente paladar. Es difícil resumir tal variedad, hay que probarla: el potaje de jaramagos, el de berros, el caldo de cilantros, el caldo de millo, las papas arrugadas, los mojos. Y con sabor a mar: los caldos de pescado, las sardinas asadas, el atún en adobo, son platos que nos remontan antaño pero que hoy en día están presentes en los hogares canarios y en la oferta de restauración para el deleite de todos. No podemos dejar de mencionar el empleo de hierbas aromáticas y especias tanto en la elaboración de platos como para la preparación de salsas, adobos y mojos. Con ellas se aporta no solo sabor y aroma, sino que muchos de ellos tienen efectos beneficiosos para la salud. Entre las más usados están el comino, el tomillo, el laurel, el pimentón, el azafrán, el orégano, el perejil, la hierba huerto, la matalaúva, hierba Luisa y romero. Es fácil encontrarlas en los mercadillos de los pueblos y en las tiendas especializadas.

Una parte importante fruto del esfuerzo de hombres y mujeres, del trabajo con distintas clases de ganado, han dado unos resultados excepcionales con numerosos platos de carne, que a la brasa, asados, en salsas, etc., bajo un denominador común “exquisito sabor” enriquecen las mesas: las carajacas, el baifito en salsa, los chorizos, etc.

Hablando del ganado no se puede omitir, los quesos, que también de forma esquemática responden a una zonificación: de cabra ( todo el sur y zonas de cumbre), de oveja (medianías del norte), de mezcla con oveja de cabra (sureste y noreste) o con oveja y vaca ( norte y noroeste) o de vaca (centro- norte). También hay que destacar nuestra cocina dulce, variada y rica. La presencia de numerosos almendros en la cumbre de la Isla permite la elaboración de diferentes manjares como mazapanes, bienmesabe, turrones o almendrados. No siendo éstos las únicas delicias, a la interminable lista se unen los deliciosos bizcochos y suspiros de Moya; las truchas de batata y de cabello de ángel, los huevos mole, así como todas las recetas que tienen como ingrediente principal el gofio. Gran Canaria además cuenta con vinos de excelente calidad, ideales para acompañar cualquier comida. Estos vinos se incluyen dentro de dos denominaciones de origen que son la de “Monte Lentiscal” y la de “Gran Canaria”.

When you discover Gran Canaria and its flavours, you also discover the different areas of the island, some associated with a rural culture and others with the coast, each providing the dinner table with different species of animals and vegetables, giving your imagination free rein to travel from the interior down to the coast. Practically every one the Island’s 21 municipal boroughs has managed to combine the flavours of the land and the sea in an exquisite cuisine. It is difficult to give a summary of such variety; it has to be tasted: hedge mustard stew, cress stew, coriander broth, corn broth, “papas arrugadas” –new potatoes boiled in their jackets–, the “mojo” sauces. And from the sea: fish soup, grilled sardines, tuna in a marinade. These are all dishes with a long tradition, but which have maintained their presence in Canary Island households and restaurants for everyone to enjoy. We cannot forget the use of aromatic herbs, both for elaborating dishes and in the preparation of sauces, marinades and “mojo” dips. They not only give the dish flavour and aroma, many of them are also beneficial for your health. The most commonly used herbs include cumin, thyme, laurel, paprika, saffron, oregano, parsley, mint, anis lemon verbena and rosemary. They are commonly found in village markets and specialist shops. The constant effort of men and women, working with different kinds of livestock, has produced exceptional results with a wide range of meat dishes. Whether these are grilled, roasted, served in sauce or whatever, they all share of the common denominator of an “exquisite flavour” that enriches any table: “las carajacas” (fried liver) baby goat meat in sauce, “chorizo” sausages, etc. Talking of livestock, we cannot forget the cheeses, which vary, depending on what kind of milk they are made from and which part of the island they come from: goat’s milk cheese (all the south and the highland areas) sheep’s milk cheese (northern foothills), mixture of goat and sheep milk (south east and north east), mixture of sheep and cow’s milk (north and north west) or cow’s milk (centre - north).

We should also highlight our rich and varied dessert cuisine. The fact that there are so many almond trees in the highlands means that the Island can offer a range of delights like marzipan, “bienmesabe” – (almond paste), nougat and almond biscuits. But these are not the only desserts that you can find, the list also includes sponges and meringues from Moya; sweet potato pastries, egg dishes and a range of recipes based on “gofio” – roasted corn flour. Gran Canaria also has good quality wines to go with any meal. These wines include two denominations of origin: “Monte Lentiscal” and “Gran Canaria”.

Wenn Sie Gran Canaria und seine Geschmäcker entdecken, dann entdecken Sie auch die verschiedenen Inselgegenden, auf deren Feldern die Zutaten wachsen, und natürlich auch die dazugehörigen Küsten. Man muss sie einfach probieren: den Potaje de jaramagos (Doppelsame-Eintopf ), den Potaje de berros (Kresse-Eintopf ), den Caldo de cilantros (Korianderbrühe), den Caldo de millo (Maisbrühe), die Papas arrugadas (Kartoffeln in Salzkruste) und die Mojos (verschiedene Tunken). Und aus dem Meer: Die Caldos de pescado (Fischbrühen), die Sardinas asadas (gegrillte Sardinen) und der Atún en adobo (eingelegter Thunfisch) sind sehr alte und schmackhafte Gerichte, die aber immer noch fester Bestandteil der kanarischen Küche zu Hause und im Restaurant sind. Wichtig zu erwähnen ist die Verwendung von Kräutern und Gewürzen beim Kochen und Braten sowie bei der Zubereitung von Soßen, Marinaden und Tunken. Viele von ihnen geben nicht nur den Speisen Geschmack und Aroma, sondern sie sind auch der Gesundheit zuträglich. Besonders zu erwähnen sind hier vor allem Kümmel, Thymian, Paprika, Safran, Oregano, Petersilie, Minze, Zitronenstrauch und Rosmarin. Man findet sie ganz leicht auf den Wochenmärkten in den Dörfern und in den entsprechenden Fachgeschäften.

Das Ergebnis der ausgezeichneten Arbeit unserer Viehzüchter ist die Qualität des Fleisches, das gegrillt, als Braten, mit Soße, etc. auf unsere Teller kommt. Es verdient durchweg das Prädikat “hervorragender Geschmack”. Beispiele: Leber in pikanter Soße, junger Ziegenbraten, Grill-Paprikawurst, etc. Wenn man vom Vieh spricht, kommt man nicht umhin, über Käse zu sprechen. Die verschiedenen Sorten lassen sich nach Herkunftsgebiet klassifizieren. Ziegenkäse (Süden der Insel und Berge im Zentrum der Insel), Schafskäse (mittlere Lagen und Norden der Insel), Mischung aus Schaf und Ziege (Südosten und Nordosten), Schaf und Kuh (Norden und Nordosten) und Kuh (Zentrum und Norden). Ebenfalls zu erwähnen sind die abwechslungsreichen und schmackhaften Süßspeisen. Da es in den Bergen im Zentrum der Insel zahl-

reiche Mandelbäume gibt, sind deren Früchte natürlich auch in den Süßspeisen präsent: Marzipan, süßes Mandelmus, Nougat und Mandelgebäck. Damit sind die Süßspeisen noch lange nicht erschöpft. Die Liste ist schier unendlich: Biskuits, Gebäcke Mit Bataten- und Kürbisfüllung, süße Eiercreme und zahlreiche Rezepte, deren Hauptzutat das Gofio (geröstetes Maismehl) ist. Auf Gran Canaria werden auch exzellente Weine hergestellt, die man praktisch zu jedem Gericht trinken kann. Es gibt zwei offizielle Herkunftsbezeichnungen (D.O.), und zwar “Monte Lentiscal” und “Gran Canaria”.
