Quick, easy & healthy recipe Tuna and fresh vegetable salad

Dressing: • 5 tbsp reduced-calorie mayonnaise • 4 tbsp low fat yogurt • 2 tbsp white wine vinegar • Salt and Pepper • 12 Cherry Tomatoes, halved • 225g/8oz Whole Green Beans - cut them into 2.5cm/1inch pieces • 225g/8oz courgettes - sliced thinly • 225g/8oz button mushrooms - sliced thinly • 350g/12oz canned tuna in brine, drained and flaked • Chopped fresh parsley to garnish • Salad leaves of your choice and dish to serve

To make the dressing, put the mayonnaise, yogurt, vinegar, salt and pepper in a screw-topped jar and shake together until the ingredients are well blended. Put the tomatoes, beans, courgettes and mushrooms in a bowl. Pour over the dressing and leave to marinate for about 1 hour. To serve, arrange the salad leaves on a serving dish, add the vegetables and then the tuna. Finally garnish with chopped parsley end enjoy! NUTRITIONAL INFORMATION

Sweet Treats Melon and Ginger Sorbet Serves 4 Dressing: • 1 Ripe Melon, peeled, seeded and cut into chunks • 1 tbsp Grated Fresh Root Ginger • 4 tbsp Unrefined Caster Sugar • 1 Egg White, lightly whisked • Fresh Strawberries or Raspberries, to serve

Put the melon, lime juice and ginger into a food processor or blender and process until smooth. Pour into a measuring jug and make up to 600 ml/1 pint with cold water. This month I have decided to talk about children and why it is important to look after yourself at a young age. If you’re in your teens, you are just at the right time to start taking care of your face properly. It doesn’t take a lot of time, and it doesn’t have to cost a lot of money. We all know that sun screen protects your skin from the sun, and this obviously reduces your chance of getting skin cancer. Did you also know that using sun screen products reduces your chance of signs of early aging? 90% of premature aging is caused by the sun. It may not be something that you are thinking of when

you’re in your teens, but you’ll be glad you did in 15 years time. Find a facial cleanser that’s best for your skin type. Many teens find that oily skin is their main concern, so look for a gel based cleanser if this is your problem. After cleansing use a light oil-free moisturiser. Make sure you wash your face in the morning and at night - you never want to sleep in your makeup. Use a weekly mask and a weekly exfoliator, a mask deep cleans your pores, while an exfoliator removes the top layer of skin. When choosing a mask, look for a clay mask which will open pores and clean deep down. When choosing a exfoliator make sure it isn’t too harsh for your skin. If acne is a problem for you, please remember you are not alone. Whilst you can’t change your genes, you can do your best to take care of your skin so your acne eventually gets better. Don’t buy every acne product on the market; sometimes they are too harsh for sensitive teenage skin. Using a cleanser helps keep acne at bay. Do not touch, pick, rub, scratch or squeeze your skin. When you squeeze or start picking the problem area you are at a higher risk of creating scar tissue and by

I’m thinking of all the things I’d really like to spend time doing this weekend. I love pottering, especially outside - I like to lose myself in simple tasks, to mentally relax, to really lose sense of time. At the weekend I try to allow myself some pottering time. When I was a child I spent most of the day outside only venturing back indoors for meals. I had a space to grow things, flowers and lettuce were my favourites. I raided the blooming flowers in Dad’s garden to make petal perfume, I made dens using old bed mattresses stripped of all fabric and materials anyone could

spare, I jumped in puddles and walked in ditches, I made mud pies and leaf plates and left notes for the fairies under bushes. Another thing I loved doing and still do was to cloud gaze, none look like clouds - there might be a dragon, an old woman, a duck, what a fantastic way to develop imagination and visual skills and so relaxing. I still do this with my 20 year old daughter! In our increasingly busy lives I wonder how often we just STOP and let our children just BE. Don’t feel guilty or lazy, just potter together and relax. Allow yourself

to pause and this teaches your children how important it is and they will learn how to do it, it really does matter enormously for all our emotional and mental well being. Less bustle for our children leads to greater understanding of the natural world around them and blissful memories for you and them. I’m lucky as I get to do these things in my daily life, with other people’s children. Give it a try, potter, revitalise yourself, relax and give yourself a break. Go West with Beverley...

When friend and businessman Craig Rennie invited Beverley to join him as a guest at the annual ‘Childish Things’ comedy show in aid of Helen & Douglas House in February 2010, neither could have predicted that just one year on they would be collaborating on a music show in aid of the Hospice. It was Beverley’s visit to Helen & Douglas House shortly after the event that shifted her perception of what a hospice environment can provide, prompting her own fund-raising initiative. As well as the expert care being given to local children suffering from life threatening conditions, the facility supports the families so often exhausted from the provision of full-time care. Having witnessed the passion and commitment to care at first hand, she decided it was time to play her own small part in supporting the work of the hospice. There are an estimated 23,500 children and young people in the UK who will die before they reach adulthood. Some die when very young; others deteriorate slowly over many years. The hospices not only help the child or young person but also support the families caring for them, assisting them through the many difficulties they experience as

a result of their child’s medicallydependent condition. “The ‘Childish Things’ event has been going for seven years now. I really enjoyed the comedy evening and saw an opportunity to do something music related but on a smaller scale” says Beverley. The evening at Wycombe’s Swan Theatre on Sunday May 29th promises to be a lively one, with Beverley performing a range of her lyrically brilliant hits including the much loved and timeless ballad ’Promise Me’ as well as a range of songs including ‘Woman to ‘Woman’, ‘Memories’ and ’Castle in the Clouds’ which draw deeply on her own emotional experiences. ‘Go West’ will bring their own energetic pop anthems including ‘We Close Our Eyes’, ‘Call Me’ and ’The King of Wishful Thinking’ which became an instant hit in both Europe and the US when featured in the blockbuster film ‘Pretty Woman’. Peter Cox of Go West says “We feel very privileged to have the opportunity to do something to support this wonderful facility and the work Sister Frances and her team do to improve the ‘depth of life’ of its guests. We are looking forward to an exceptional night.” Beverley is looking for people to really let their hair down on the night to help raise money for this brilliant charity, “We picked the evening before a Bank Holiday to make sure everyone can have a fun night! My good friend, actor Warren Clarke of Dalziel and Pascoe has offered to MC the

evening and there will be some surprises in store…” says Beverley. The words of Sister Frances Dominica, the founder of Helen & Douglas House help bring understanding and perspective to the remarkable work that they do: “The original definition of hospice is a place of rest and refreshment for people on a journey and these children and families are on a journey and we try to journey with them a little bit’ she says, “It’s not just the length of life that’s important but the depth.” How poignant then that amongst those opening the show for Beverley & Go West as part of ‘Shed@ThePark Theatre Company’ will be Saskia, a 19 year old Buckinghamshire young lady who suffers from a rare chromosome disorder. Both Saskia and her family have benefitted greatly from the care and support that Helen & Douglas House has provided, helping them to make life more ordinary rather than less ordinary.

Lemon Meringue Pie There is nothing quite like home made Lemon Meringue Pie and this recipe is really easy to make. It is a no weigh recipe! It’s a summer delicious desert with a zingy taste and good for outdoor dining. You will need: ●

2 lemons (non-waxed preferably) 3 free range eggs (yolks separated from the whites) 6 tablespoons Caster sugar Cornflour powder Water Short crust pasty case 7/8inch

Method: First of all you will need a short crust pastry case. You can either buy one ready made or you can make your own. I usually make up a batch of short crust pastry – enough to line about four or five 7/8 inch flan dishes and freeze the others for another time when I don’t have to bother make up just one pastry case for next time! If making your own, bake in a moderate oven for 10 minutes and keep to one side. Wash the lemons and grate rind on fine side; cut lemons in half and squeeze out juice and put both rind and juice into a pan to which you add approx 200 mls water and 2 heaped desertspoons of cornflour. Mix with wooden spoon.

Warm slowly over a medium heat stirring all the time, especially when it starts to thicken and cook for 30 seconds. Take off the heat and stir in about 2 tablespoons of caster sugar – taste to see if you need to add a little more sugar according to your palate (but don’t make it too sweet). Leave to cool for a few minutes then add the 3 egg yolks stirring thoroughly to combine and leave in pan. Place the 3 egg whites in a bowl and whisk for a few minutes until the mixture forms peaks. Add 2 tablespoons of caster sugar and whisk in. Add another 2 spoonfuls of sugar and whisk a little more to mix in (don’t over mix). Spoon the lemon mixture into the pastry case and on top spread the meringue mixture making sure there are no gaps between the pastry edge forming a ‘wavy sea’ finish on top.

So perhaps think before dismissing the common carnation in a bouquet next time! Alstroemeria – “devotion and friendship” My final suggestion is the gorgeous Alstroemeria, available in a multitude of colours from white to red, pink, orange and yellow, this lovely long lasting bloom is perfect for almost any flower occasion, it lasts well and says a lot. So, if you’re getting married in the coming months or planning a wedding next year, perhaps you would like to think about the type of wedding flowers to bring meaning and sentiment to your displays – talk to Floribundi or your chosen wedding florist for advice and guidance. ....Lupins, Aqualegia, forget me nots, bleeding heart, sounds like a cottage garden made in heaven, and with Aprils warm spell they should be up and flowering good. Let’s hope we get more of the same! Seasonal Top Tips: So the lawn should be taking off nicely now, and if you are a real enthusiast you’ll be cutting it once a week for a while, unless you’ve fed it already then you could be cutting it twice a week, don’t forget it grows like mad in Spring and won’t need all that nitrogen feed till it calms down a little. End of May is time for bedding plants. Try and wait until the far end of May, any last minute cold snaps might kill them or if not can stunt the growth and slow down the flowering. Although they only live one season they can give you the most flowering time during the summer than any herbaceous plant or shrub, so they are worth buying.

Just stick to the basics and water before you plant them, right after you plant them, and during the summer. Dead head Geraniums especially to promote more flowers, and don’t let the weeds take over. Oh, and slugs & snails love French Marigolds. Finally box hedging. Where bedding plants don’t like being planted before the frosts, box hedging doesn’t like to be clipped, and it can make the ends go brown and unsightly. So as a rule of thumb this should be done after Derby Day, as recommended by Alan Titchmarsh! Favourites: How about adding a little height in the garden. If you have a small garden and you fancy a tree that won’t get much more than a few metres wide, how about the slim ornamental cherry, Prunus ‘Amanogowa’. The branches tend to grow quite upright without spreading too far from the main stem,

producing a tall column shaped tree. Being an ornamental cherry you have the typical floral display of pinky white blossom in Spring before the leaves appear, and being narrow doesn’t cast much shade. One more absolute favourite for this time of year is one of the primroses. There are so many different types and many enjoy the wild yellow primrose that once cultivated comes up just about anywhere in your lawns and borders. But my favourite is the drumstick Primula, with a globe of lavender colour flowers on a 3” stem. Five or six of these dotted closely in between other plants at the front of a border gives a great early display, and particularly suited to woodland areas in semi-shade. Are you good at getting what you want?

Assertiveness is that wonderful skill of being able to stand up for your own personal rights, expressing your thoughts and feelings in a way that is open and which allows your own needs to be met without violating the rights of others. You’d be surprised how many people struggle to do this in their daily lives and the amount of anxiety and low self esteem that it can lead to. Many of my clients say things like, ‘I want to tell my relative how their actions make me feel, but I don’t want to upset them ....’ So the unfortunate person carries on feeling angry, frustrated or anxious about a situation they wish to change, but are too afraid to do so for fear of upsetting others. Over time, this can lead to an erosion of confidence, self respect, self esteem and increasing personal tension and stress. So why do people struggle with being assertive? In essence, we learn to behave this way through our

experiences and this learning process can be traced back to our early childhood. Think about this – small babies have no inhibitions – they cry and smile openly and are very good at getting their needs met. However, children quickly learn to adapt their behaviour according to the responses they receive from those in their immediate environment – very often their parents or main care givers. So children’s behaviour becomes shaped from early years by the responses they are exposed to e.g. some children are encouraged and rewarded for expressing their thoughts and feelings openly, whilst others may be discouraged from doing this, or only praised when they express thoughts, but suppress their feelings. The good news here is that we have all learned to be the way we are and so, with effort, we can all learn to behave differently. If you are unsure how assertive you are in daily life, answer these questions and then ask yourself, ‘Is my response one that I am really happy with? Is my response allowing me to say what I need to assertively and behave in ways that are conducive to me achieving the outcome I desire without violating the rights of others?’

1. At work, how do you respond if you are unfairly criticised? 2. At home, how do you respond when you don’t want your in-laws to visit? 3. In public, how do you respond when somebody barges in front of you in a queue? 4. With friends, how do you respond when a friend makes a request that you consider as unreasonable? Do you need some assistance to help you increase your assertiveness; to learn how to be assertive, not passive or aggressive? Then Cognitive Behaviour Therapy (CBT) offers you a very accessible way of doing this. CBT is based on the principle that our behaviour is learnt and so unhelpful behaviour can also be ‘unlearnt’, putting in its place more adaptive and functional ways of behaving that will help you achieve your goals.

Wellbeing

IF the answer is ‘Yes’, then how do you do it? (Honestly!) Is it achieved by scheming, manipulation, bribery or perhaps, screaming and foot stomping? Or are you one of those people who have managed to learn the art of being assertive?

Turf grasses in lawns do not last a lifetime, despite what many lawn owners think. Like shrubs in the garden, turf grasses will become thin and straggly and require regular pruning and shaping and training.

MOSS CONTROL IN LAWNS

If you keep your grasses healthy and dense and react promptly to any moss, weeds and lawn pests and diseases, then you should be able to retain the lawn in the style you are hoping for. The majority of ‘pruning’ is performed by the act of mowing each week and occasionally scarifying and aerating to remove the ‘dead wood’. A desirable lawn should only have grasses in it so no brownie points for weeds and moss in the lawns surface. If the percentage proportions of grasses, weeds and moss are swaying in the favour of what you do not want in the lawn then it is time to do something. THATCH IN LAWNS Thatch is a layer of natural decaying and dead leaf litter and other plant materials that builds up on the top of the soil surface at the base of the grass plants. Over time, especially if it is

Mosses, like most lawn weeds, primarily take advantage of bare areas but do not kill out existing grass as some people believe. Bare areas in lawn can be result from several causes. Unsuitable grass varieties, poor drainage, drought, soil compaction, excessive shade, thatch accumulation, poor fertility, diseases, improper mowing and other cultural practices are common reasons for turf failure leading to moss or other weed problems. Improving these factors to encourage thick, healthy grass is the key to long term prevention. The following steps will generally control thatch, existing moss and discourage it in the future: 1. Use a moss control product to kill existing moss in autumn or early spring, generally both. 2. Scarify out dead moss and thatch.

How to ‘top-dress’ a lawn with organic matter Top dressing is the idea that it’s a way to gradually add organic matter and build up the lawn soil without digging everything up and starting again. A big problem so many people have with their lawns – especially in the developments that were heavily graded – is that the underlying ‘soil’ is terrible. It’s more like a thin layer of shale clay on top of subsoil. The trick with top dressing is adding only enough new organic matter that it aids the soil without smothering the existing grass. A quarter inch layer is enough that the grass crowns can slightly elongate to adapt to the slightly higher soil surface. It is also important to use something that is light weight.
