Valerie Hedgethorne taught cookery & cake decorating for many years in Brighton before becoming a Home Economist and writing for the national magazine CAKE for 20 years.

Valerie is a past president of the British Sugarcraft Guild & is a member of the local Guild Branch, which meets monthly in Rottingdean for demonstrations of all types of cake decorating.

I like to give a recipe for soup in the January issue, and this one is perfect for this time of year. Carrots are cheap and oranges are in season. This soup has an excellent flavour due to the inclusion of orange.

You will need a food processor or a blender.

METHOD: Chop the onion. Melt the butter in a large pan, cook the onion gently until soft but not coloured.

Peel and slice the carrots fairly thinly, add to the pan, cover with a lid and cook on a low heat, stirring from time to time, for a few minutes.

Add the stock, cover and simmer for 30-40 minutes until the carrots are soft.

1 medium onion 25g (1oz) butter 675g (1½lbs) carrots 1¼ litre (2 pints) vegetable stock Zest and juice of 1 orange 150ml (¼pint) crème fraiche 1 tablespoon cornflour

Purée in a processor or blender.

If too thick add a little milk.

Return to the pan.

Add the orange zest. Mix the cornflour with the orange juice and add to the soup. Bring to the boil. Stir to cook the cornflour.

Add salt and pepper to taste.

Stir in the crème fraiche.

To serve, add chopped parsley and a curl of orange rind.

Dating - New Year new you?

The start of a new year often leads to groups of hysterical people who are desperate to become a ‘new’ updated version of themselves and get on a date.

Gym memberships, new diets, hot yoga, and brand new fandango juicing machines will soon be appearing on kitchen worktops up and down the country and that’s less than 24 hours into the new year.

My prediction is these New Year’s resolutions will last a maximum of 15 days! My opinion?

Don’t bother. Potential daters or dating matches probably don’t care, and more importantly, is it really you?

Don’t get me wrong, I’m not mocking a healthy lifestyle and exercise but just because we have turned another year doesn’t mean we need to morph into a different person.

Don’t kid yourself into thinking you’re going to transform yourself into a meditating gluten free vegan (or at least not overnight).

We are often guilty of setting ourselves unachievable goals and putting ourselves under tremendous pressure to eat that ‘protein only’ diet and spin at least 8 times a week. Stay with being the old and more interesting you, the 2016 you. It’s much more attractive to be confident and to be happy with yourself. No one wants to go out for dinner in January and watch someone eat a salad!

So what are you waiting for? Now is the perfect time to start pro-actively looking into dating, all the parties have dried up, there’s nothing on the telly and you’ve probably got a new outfit or dress that needs wearing right?

I know first hand that being single over the festive season can sometimes feel quite claustrophobic especially when held captive by loved up couples and over enthusiastic friends and family. Now is as good a time as any to get out there and start meeting some like-minded people.

I’m sure we all over did it a little this Christmas, but that’s no reason to beat yourself up, decide on a complete personal image overhaul, turn vegan or start meditation.

January is a long, cold and rather depressing month so why would you decide now is a good time to give up all of those things you really enjoy? At least wait until all the Christmassy booze and provisions have organically disappeared; after all, it is unethical to waste food!

I’m sure you must have a recent snap of you looking happy and festive - upload that to a dating app for that perfect recent profile picture!

New-age philosophy will tell you that ‘you attract what thoughts you have’ or that ‘positivity attracts other positivity’, so confidence is key.

Once you start to feel confident and happy with who you are it becomes contagious.

Eider Ducks

Eiders are the UK’s heaviest ducks as well as the fastest. It is a seaduck but as it often feeds on coastal molluscs it tends to stay close to the shore, often strung out in long lines beyond the breaking waves. There are 27,000 pairs in the UK, mostly off the Northumberland and the west coast of Scotland but they also live in Northern Ireland, Wales and even as far south as Cornwall.

In winter the population rises to 67,000.

Their love of mussels, which they swallow whole, brings them into conflict with humans.

Perhaps for this reason they were the first birds to be protected by law – an edict issued by Cuthbert – patron saint of Northumberland in 676. There are still 1000 nesting pairs on the

islands there, likely to be the descendants of the birds protected by St Cuthbert as Eiders return to the place of their hatching and cooperate in family groups.

Specific: Set one clear goal that is really important to you and keep your focus on it.

Measurable: Track your goal i.e if you want to lose a stone break it down into smaller amounts. If you want to run 5k, run in increments so you can see your progress.

Achievable: Weigh up the time and effort against this decision. If it’s too much, you’ll be setting yourself up to fail.

Realistic: Set a goal that you can be sure will fit in with the demands of your life, work, kids, partner etc.

Time bound: Set a realistic time frame that’s neither too short or too long. This will help keep you motivated.

The Forever Changing Face of The North Laine History Notes by M Bance The corner of Jubilee Street (now Carluccio’s) was occupied by the Central National School from 1871 until 1969. It was one of the town’s earliest schools, designed in a Regency Gothic style, it had two shops on the ground floor with the master’s residence above.

It closed in 1967 and was demolished in 1971 before a protection order, that was in the post, arrived.

I used to live in the North Laine, we moved there in January 1985 and I can’t tell you how exciting it was. We could open the door of our Robert Street house and (if we avoided getting run over

by Argus lorries) find everything we needed just steps away: there was a fish monger, a butcher, a baker and a green grocer just in Sydney Street alone; in Gardner Street, a small Tescos, a purveyor of eggs and a shop that sold shoes for vegetarians. Then there was delicious bread from Infinity Foods, a selection of great pubs, and, for a truly new shopping experience, a visit to Anita Roddick’s Body Shop in Kensington 14

But this 1980s version of North Laine was just one of many different stages in the life of the area. In the 1760s, North Laine was one of five large fields, still farmed on the medieval rotation system, surrounding Brighton. In fact, “Laine” is a Sussex dialect term for an open tract of land at the base of the Downs. At the turn of the 19th century, building work for the expanding town had started to encroach upon the farmland and fields gave way to market

Gradually, market gardens became industrial units and, street by street, North Laine developed to become the town’s main area for processing food and drink.

Its position next to the main highway south into Brighton made it a suitable place to bring in animals for slaughter and processing and for storage of grain to feed the growing population.

But, through the first quarter of Queen Victoria’s reign, the North Laine was known mostly for its squalor, abysmal living conditions and high concentration of slaughterhouses. Vine Street might well have been the most “unwholesome” place of all, the street being virtually given over to slaughtermen and their associated trades. A candle factory, using the fat from the slaughterhouses, opened on the corner of Spring Gardens and North Road and there was a large bacon curer’s yard off Jubilee Street. Added

for a restorative pint since 1864. The Wagon and Horses, which was built in 1848 by Frederick Mahomed as a gymnasium, became a public house in 1852 and across the road there was the Mash Tun which was originally known as the Volunteer, after the infantrymen stationed in the nearby barracks.

to this, it was common for ordinary householders to keep chickens and pigs in their back yards.

One thousand people lived between Gardner Street and Thomas Street (now Tichborne Street), with no running water or sewage and water came from wells that were often contaminated by the nearby cesspools.

Worse, was Orange Row, north of Church Street, and at its northern end, two alleys together known as Pimlico which were considered Brighton’s worst slums.

In 1849, engineer Edward Cresy was sent by the Board of Health to assess Brighton’s housing and sewage facilities.

Unsurprisingly, Pimlico, Orange Row, Spring Gardens and Thomas Street featured 20

prominently in his report. He said that these were: areas where diseases prevailed, often the result of sulphurated hydrogen which arises from the excrement retained in cesspools. It pervades all the breathing places found at the back of buildings. Many of the houses are wretchedly damp, constructed with inferior bricks and mortar made of sand. The walls are covered with lichen, and with the decomposition of vegetable matter, the inmates seek the imagined restorative powers of the public house.

And there were many such establishments offering a warm, dry refuge away from the hardships of everyday life.

Idle soldiers (waiting for Napoleon to invade, or not ) would have frequented the narrow alleys around Church Street, rubbing shoulders with the town’s drunks, beggars, thieves and prostitutes.

Quite a large number of prostitutes it would seem - in 1860 somebody counted 97 brothels and 300 prostitutes.

Thomas Street, alone, had four houses known to be for ‘women of the worst character’.

Action to clean up the area started to take effect in the 1870s, with the first slum clearance which included old tenement houses and most of Orange Row and Pimlico.

They were replaced by more modern streets and the North Laine moved into another phase of development. After WWII, there was a decline in the manufacturing base of the area and, as a consequence, it became generally run down; ripe, many thought, for extensive redevelopment.

But then Ken Fines, the Borough Planning Officer, stepped in. He felt the area had charm and saw its potential. Today Fines is credited with having saved the North Laine area from falling victim to plans that were afoot to replace existing buildings with new high-rise developments, a flyover and a large car park. After considerable opposition by council members and businesses, the council eventually came round to his view, and the North Laine Conservation Area was designated in 1977.

As a result of the faith Ken Fines had in the area, the North Laine has been able to regenerate itself once again. It is now a highly sought after residential area and boasts some of the finest, most exciting independent shops, cafes and restaurants in the whole of Brighton.

At FAIR, we had an extra busy year in 2016!

Not only did we have more customers at 21 Queens Road, we worked on extra projects for 2017 both in Brighton and India.

In November, we visited Kolkata to see the progress of one project with our long term supplier Jeevika Development Society and Tallula Bentley, a talented young British designer working with natural dyed knitted textiles. Tallula brings a completely new skill to the group which will be an 18 month process but will widen the opportunities of products they can supply.

We have worked with Jeevika for 12 years. The organisation provides micro credit, vocational training and income generation opportunities for women living in rural villages around the city of Kolkata. As well as having a tailoring unit, Jeevika work with women to develop a solid sustainable agriculture program. We have seen many positive changes over the years including the increase in local work available for the women. Jeevika empowers them to become more independent by creating a stable income for the women.

We also visited the inspirational Calcutta Rescue where we stumbled across a brilliant find. Calcutta Rescue provides free medical services to the homeless in Kolkata offering clinics for mental health, 24

cancer, TB, as well as general care. They have two schools for children living in the slums and a weaving unit that makes material for the handicrafts that we buy to generate funds for them and for uniforms for the school children. Used to buying small pieces from the handicraft unit, we were thrilled to discover five metres of beautiful hand woven cotton from the weaving unit. The material was so luscious that we paid and packed it to take to Jeevika hoping we had found a means for greater income for the unit. We have just received the sample dress from this new collaboration between Calcutta Rescue and Jeevika meaning we can have double the social impact with this dress.

FAIR are part of a growing movement that considers how the money we spend can contribute to change for good both here and overseas.

Our hope is that this way of thinking will impact millions of people’s lives without having to rely on governments. Dorit Oliver-Wolff at

A Holocaust survivor, Dorit is on the shortlist for a top national award for her autobiography. She lived through the Holocaust and went on the become a famous German Pop Star.

Today she is 80 years old and lives in Eastbourne, but still remembers the trauma of trying to escape from the Nazis and avoid being sent to a concentration camp.

She was a 5 year old Jewish girl living in Hungary when Nazism started to spread across Europe. At the age of four Dorit was singing and dancing in front of the future king of Yugoslavia. At the age of six she was hiding from Nazi soldiers who were kidnapping her fellow Jews.

After concealing herself in her basement for nine months she weighed just three stone and had lost all of her hair.

Yet she survived.

A few years later she was touring with a dance troupe, studying relentlessly by day

and dancing at night. A talent scout spotted her and she signed a record deal.

The autobiography she has written is called ‘From Yellow Star to Pop Star’. She is dedicated to educating others to the consequences of the Holocaust and has been interviewed for TV and radio programmes. The book should be read because it is history and people can learn from it and improve the future for all of us. She is hoping to win the book prize and anyone can vote for Dorit at

Eiderdown? Dream On Eider ducks are primarily arctic dwellers, braving icy temperatures and polar storms. This ability was noted in the earliest times, remnants of stone-age clothing found in Finland show the use of eiderdown. There is evidence that eiderdown harvesting was still common in Scandinavia in the Middle Ages – the Vikings taking silk and eiderdown quilts with them on their voyages.

The use of eiderdown in Iceland has a very long history, more than eleven centuries. So long so that eiders and humans there have learned to co-operate. Despite being completely wild, spending most of their life on the ocean, eiders actually seek nesting sites near humans and can be incredibly tame – allowing the farmers to pet them as they sit on the nest. The farmers protect the eiders from their enemies, mink, ravens, foxes, ravens etc and ‘in return’ the ducks permit the farmers to gather their down from the nest.

Eiderdown…the ultimate luxury

The eider’s feathers are supremely effective against the fierce conditions, keeping the warm blooded ducks safe in polar conditions. During the egglaying period hormonal changes in the female cause her to shed about 4 grams of incredibly light and soft down into her nest. The lining protects her eggs from the ground temperature and also bares her belly so she can emit heat and incubate them.

This nest lining is what the eider farmer collects, replacing it with hay. The down elements cling together – Velcro-like, forming a cohesive mass.

Eiderdown is breast feathers only.

The term eiderdown has gradually become confused with any stuffed quilt…. But in fact they are rare. There are more Rolls Royces than eider quilts made each year.… It is truly a luxury item.

The down taken from the nests then has to be sterilised, washed etc to remove moss etc

Eiderdown is only produced by live, female birds.

Female eider ducks are only ready to lay eggs and to produce down from age 4. (Feathers are taken from geese etc at the time of slaughter, usually young.)

It takes 9 hours to gather enough down from the eider nests for one quilt.

The down has to be meticulously hand ‘picked’ to remove any stray feathers and what-not in there.

Each kg will take 9 hours to pick. (The cohesive nature of down means that it is not possible to mechanically separate stray feathers, e.g. by airstream as is done for goose feathers) Perhaps most lovely of all is that if you are lucky enough to own a real eider quilt you can rest smugly as well as snugly, knowing that the bird who gave the down is probably still bobbing about in the Polar seas* – equally warm. *Eiders live for 25 years

At the beginning of each New Year, it is easy to feel compelled to make yet another set of resolutions only to find that a few weeks later, we are utterly disappointed in ourselves not to have kept them. So this year, how about trying a different approach that research has shown to be effective because it enables you to take the smallest of steps in making the smallest of changes that can eventually help you to become the best self that you want to be over a period of time.

It is easy to set vague ambitions in life.

Research suggests that enhancing optimism about the future can motivate people to work toward that desired future and thus make it more likely to become a reality. Imagining life going as well as it possibly can, can increase our happiness in the moment and also lay the foundation for building a better future.

This is an activity that needs to be carried out once a day over two weeks to start with.

Winter Warming Spices Lucinda Warner

As the New Year passes and the long days of January loom ahead, it’s easy to suffer from a touch of the winter blues.

At this time of year, including warming spices into our lives is a lovely way to support our health and well-being.

The cold weather can make our circulation sluggish and our immunity low and our digestion is often overburdened by the excesses of Christmas. Spices are excellent remedies for these seasonal afflictions and some can even support our mood, helping with the symptoms of SAD that can affect many at this time of year. They pair beautifully with many foods and drinks and are easily available in the shops.

Try some of these ideas for delicious warming beverages to help you through the coming months until the spring begins to stir again.

Spicy chai – You can make a delicious spicy chai with or without caffeine according to your preference. For the caffeinated version add black tea to the spices below, otherwise replace with rooibos tea or just enjoy the delicious flavours by themselves with a spoon of honey. Many different spices

Cardamom and rose petal tea – Cardamom is a very balanced spice being both slightly stimulating and also relaxing and calming.

Black pepper and turmeric milk – Turmeric has enjoyed a lot of attention in recent times for its anti-inflammatory and healing properties. It is traditionally taken with milk, fats and black pepper which greatly improves its absorption. Add 2 cups almond milk, 1 teaspoon coconut oil, 1 teaspoon turmeric powder, a twist of black pepper and 3 or 4 cardamom pods (lightly crushed) to a pan.

Heat gently ensuring that the milk doesn’t boil.

Strain and enjoy with honey or maple syrup.

Don’t let the bed bugs bite In the 1880s 75% of British households had the discomfort of bed bugs. This fell to 25%

by WW2 and by the 1960s they seemed to have been eradicated. Unfortunately, they are making a come back. Brighton is a recognised hot spot as is London, Southampton and other densely populated cities.

They are unpleasant. Infestation is not connected to cleanliness, all they want is human blood. Whilst they do not pass on any diseases their bites can swell, be very itchy, unsightly and the experience disturbing. They breed like crazy – a single female can generate 5000 bed bugs in just six months - so they are well worth avoiding.

What’s causing the upsurge and spread?

When booking into a hotel we are advised to put our luggage in the bath first and then INSPECT for 2 minutes. Check the mattress, piping, headboard. Look for the insects themselves (think apple pips) and their eggs. Eggs are dust-like, resembling ground pepper. If you find anything call the staff. Bed bugs can travel

BUT there are some key questions you should ask that will help you compare them and reach a decision: Advertising is primarily a numbers game. Find out how many copies they PRINT, not how many readers are claimed.

Establish what happens to the copies - how many stay in the city?? Are they delivered direct to homes? How MANY copies are delivered direct?

Work out the cost per THOUSAND copies. Some advertising might sound cheap but you may not get much for your money....

Do they do a discount for a block booking? (Ads work by being seen multiple times) Here are the answers for us at least, you could use them as a benchmark?!!

Anston House

By Selma Montford The derelict eight storey red brick office building in Preston Road, known as Anston House, is rightly considered to be the ugliest ruin in Brighton.

Brighton and Hove City Council planning officers have recommended that it should be demolished, and that it should be replaced with 3 new towers of between 13 and 15 storeys. As the 15 storey towers include the equivalent of two double-height floors it would in fact be 17 storeys.

So one comparatively short ugly derelict ruin is to be replaced by 3 ugly tall overbearing towers arranged in what appears to be a haphazard manner.

The scheme is out of keeping with the surrounding area and would have a seriously detrimental effect on houses to the rear in Dyke Road Drive, overshadowing of the listed Preston Park, the Rose Garden and the Rotunda. and would set an undesirable precedent for the future of Preston Road.

The Council required that there should be 92 'affordable' flats in the 3 new towers, whereas the developers have only included 46 'affordable' flats. Why? We must also ask what is 'affordable'? 'Affordable' for whom?

Commercial office space has been proposed for the ground floor, but we are not convinced that this is the right site for an office development which usually prefers to operate from the town centre. Reducing this could result in extra living, or open, space.

Instead of promoting 3 tall towers a low, or medium, rise of of high density housing could have been proposed for the site and would have provided the same amount of residential 42

space. The Hanover area of Brighton is low rise, high density housing. Even the squares off the seafront the housing is considered low rise high density, even with generous green space.

The neighbouring Albion Hill high rise housing in 3 blocks of flats, which replaced low rise housing just like the Hanover area, and is now considered unsuitable for families. The greatest number of people on the housing waiting list is single parents with children, but this scheme is unsuitable for children.

The developers claim that First Base spent 2 years talking to local residents. I attended some of these sessions, but suggestions that came from members of the public have been ignored. It is the old game of 'Consult and Ignore'.
