STRAWBERRY SHORTCAKE Seasonal Recipe by Valerie Hedgethorne Valerie Hedgethorne taught cookery & cake decorating for many years in Brighton before becoming a Home Economist and writing for the national magazine CAKE for 20 years. Valerie is a past president of the British Sugarcraft Guild & is a member of the local Guild Branch, which meets monthly in Rottingdean for demonstrations of all types of cake decorating. A shortcake is firmer than a sponge and is a classic recipe to use with fruit and cream. The most usual one is with strawberries and this is very good to have in summer. There are several recipes to choose from but this one is my favourite. The base compliments the fruit and cream and it also looks so good! You will need a 20cm/8in. sandwich cake tin, a large piping bag and a star tube.

STRAWBERRY SHORTCAKE METHOD:

INGREDIENTS: Base

Line the base of the tin with greased greaseproof paper.

• 250g (8oz) self raising flour

Heat the oven to Gas 5/190C

• ½ teasp. baking powder

Sieve the flour, baking powder and salt, rub in the fat and mix in the sugar.

• Pinch of salt • 110g (4oz) hard margarine • 110g (4oz) caster sugar • 2 eggs • 1 teasp. vanilla extract Filling • 450g (1lb) strawberries • 300ml (10fl oz) double cream • Extra sugar if required for the sliced strawberries • Icing sugar to dredge

Beat the eggs together with the vanilla extract then stir them into the flour mixture to make a stiff dropping consistency. Spread the mixture evenly in the tin and level the top. Bake for 30-40 minutes until golden brown and firm to the touch. Allow to cool completely, then slice across in two halves. Reserve 7 of the best

strawberries complete with their green tops, and slice the remainder. Add sugar if required. Whip the cream to soft peak. Around the edge of the top half of the cake pipe 6 large rosettes and one in the centre. Spread the remainder of the cream over the base half of the cake and put the sliced strawberries evenly over and sprinkle with caster sugar. Put the top half in position. Place a strawberry on each rosette and dredge lightly with the icing sugar. This can be made the day before or frozen ahead without the fruit and cream.

Salad Days The components of our classic summer salad may seem boring but it turns out they have been assembled from across the world and millennia: Lettuce Lettuce is a member of the daisy family. It was cultivated in ancient Egypt for the oil in its seeds and went on to be bred selectively for its edible leaves, reaching 30 inches tall & somewhat like our modernday Romaine lettuce, by 2680 BC. It was considered sacred, dedicated to the God of Reproduction, Min, and an important part of ceremonies - recorded in many images in tombs and wall paintings. The large upright lettuces developed by the Egyptians reached the Greeks, where the island of Cos was a major producer during the Byzantine period. In turn, the Greeks shared the plant with the Romans. Both the Romans and the Egyptians claimed

the plant increased sexual prowess and vigour (all night apparently), whereas the Greeks believed the opposite and used it in funerals. Much more recently, British women in the 19th century alleged it caused sterility. In fact, it has mild narcotic properties – due to chemicals in the milky sap, a type of latex, in the stems. Anglo Saxons knew the plant as ‘Sleepwort’. After the many centuries’ development, there are now over a thousand types of lettuce. In China for instance a variety is grown for the stem – rather than the leaves - as eating raw food is not acceptable there.

Memorably, Beatrice Potter’s rabbits are renowned for finding lettuce irresistible but perhaps Mr McGregor was playing a long game? Rabbits’ digestive systems cannot cope with lettuce, it can even prove fatal – so deffo not pet food.

Tomatoes are berries, discovered by the Spanish in South America and taking their Aztec name ‘Tomatl’ (fat water) with them to Europe. The original wild versions were small, like cherry tomatoes and probably yellow.

Interestingly, most of the time lettuce – of course it was larger so more coarse - was cooked (poached), or semi-cooked (the Romans would smother it in a hot oil and vinegar dressing). Now we usually eat it raw which means it is super-important to wash it thoroughly (otherwise a recognised pathway for toxins….). That done, lettuce is a good source

HMOs planning consultation Residents’ concerns about high concentrations of houses in multiple occupation (HMOs) have led to a proposal to extend planning rules across the city.

In most of Brighton & Hove, property owners wishing to convert a family house into a shared house or HMO for up to six people do not currently have to get planning permission. Larger HMOs of seven or more occupants already need planning permission. Currently five wards have controls through an ‘Article 4 Direction’ which means that in the following areas small HMO conversions need planning permission: • • • • •

If agreed it will mean that planning permission will be required for a change of use from a family home to a small HMO anywhere in the city. A citywide approach aims to make the rules consistent for everyone, provide long-term certainty for developers and residents and prevent concentrations getting too high before action is taken. It would also bring the planning regulations in line with HMO licensing which is already in force citywide. Tomato plants are vines – growing 3-10 foot. Generally, if not supported, they would ‘sprawl’ across the ground where the hairs on their stems can form new roots when in contact with the soil as needed, especially if the main stem is damaged.

whereas the French and Northern Europeans regarded them purely as decorative – mistakenly believing them to be poisonous, the idea being exacerbated by their interaction with pewter plates.

The leaves, stem and unripe fruits contain small amounts of tomatine and solanine, toxins also found in potato leaves and other members of the deadly nightshade family. (So, it is a NO to tomato leaf tea…known to be responsible for at least one death. It is also important to be careful about pets - the plant and even the fruit is toxic to dogs). There are over 7,500 varieties worldwide now, with about 177 billion tonnes produced annually. China accounts for 32%, followed by the EU then India, US and Turkey. The

most productive farms in the world are in the Netherlands, Belgium and, unexpectedly, Iceland. Tomatoes should be stored unwashed at room temperature, ideally on the stem. Tomatoes kept in the fridge are thought to lose their flavour permanently.

Auto-watering – To water plants while you are away put one end of a pipe cleaner into a bowl of water and the other end in the plant pot. The plant will be able to draw the water when it becomes dry. Cleaning after baking- Sprinkle the doughy/floury surfaces with salt – then wipe away with a damp sponge.

In the 18th century, long before effective water purification and treatment systems were discovered, quenching the thirst could be hazardous, even deadly. Women, particularly, often bought gin as a medicinal drink to soothe the nerves, possibly giving rise to the epithet ‘Mother’s ruin’, although its precise origins are debateable. Dutch courage Gin is a distilled alcoholic drink that derives its main flavour from juniper berries (Juniperus communis: the common juniper). It is a broad category of spirit, having diverse origins and embracing various flavours, but all types use juniper as the common ingredient. English gin probably originated

with the older Dutch liquor, genever - the juniperflavoured national liquor of the Netherlands and Belgium. Initially it was produced in the Low Countries by distilling malt wine to 50% ABV, but distilling techniques were then primitive, the resulting spirit unpleasant tasting, so herbs were added to improve the flavour. The juniper berry - jeneverbes in Dutch (hence the name jenever, Old English genever and later ‘gin’) – had traditionally been used for its alleged medicinal properties, but by the early-1600s the Dutch were levying taxes on jenever and similar liquors as alcoholic drinks, indicating that jenever, no longer considered primarily a health-

production, simultaneously imposing a hefty duty on all imported spirits, including French brandy. This fuelled the home market for lowgrade barley unsuitable for brewing beer, and during the early-1700s thousands of English gin-shops sprang up, ushering in a period known as the Gin Craze. Because of the cheap cost of gin, compared with other beverages, gin began to be consumed regularly by the poor. Of the 15,000 drinking establishments in London (excluding coffee and drinking chocolate shops), over half were gin shops. Whereas lowalcoholic beer retained a respectable reputation as a safe alternative to water, gin was blamed directly for the various social problems of the age. It was the comparative reputation of the two drinks that popular artist William Hogarth illustrated in his didactic engravings Beer Street and Gin Lane (1751) with which we began this article. Described by the BBC as “arguably the most potent anti-drug poster ever conceived”, Gin Lane depicted in graphic detail the inevitable slippery slope from the glass to the grave. In early-18th century London, much gin was produced in illegal pot stills inside residential houses and cruder forms of the drink often used turpentine or sulphuric acid in addition to juniper. An array of regular gin brands, purchased by a traditional clientele during the 20th century G & T: a tropical drink Eventually the development of the modern column still during the late-1820s/ early-1830s facilitated the distillation of neutral spirits, thus prompting the creation of the famous ‘London dry’ gins. It was also during the early-1800s that gin and tonic water became familiar partners. In British colonies in India and elsewhere in the tropics where malaria was prevalent, gin was used to disguise the bitter flavour of quinine. Quinine, the only effective anti-malarial compound, was dissolved in carbonated water to form what became known as tonic water. The resulting cocktail drink was thus gin and tonic or G & T – still enjoyed today, albeit today’s tonic water usually contains only a trace of quinine as flavouring. Gin cocktails Although a superior, more respectable drink than the dangerously cheap, inferior 18

gins of Georgian London, gin retained an edgy reputation into the early 20th century. Due to the relatively simple methods used in gin production, clandestine ‘bathtub gin’ was widely available in the speakeasy bars of Prohibition-era America. Mixed alcoholic drinks or cocktails were all the rage during the Roaring Twenties, with gin a common base spirit for many fashionable drinks such as martini (gin and vermouth) and the ‘gimlet’, a cocktail of gin and lime juice. Gin remained a traditional spirit, especially among older drinkers, before suddenly experiencing a dramatic revival worldwide in the past 5 or 6 years. Many new brands and producers now lead innovation and change, including novel coloured and flavoured gins that appeal to a wider, more youthful market. Join Martlets Paw-some Sponsored Dog Walk ‘Pooches on the Prom’ 23rd June 10 am start.

Brighton Naked Bike Ride, 9th June - We are Nature! Up to a thousand riders are anticipated to assemble on Sunday 9 June, from 11am, at Preston Park, Brighton, BN1 6SD. Participants will decorate their bikes and bodies before the ride heads off at 1.30pm. Accompanied by a fleet of sound systems, the ride will travel along the seafront via Brighton Palace Pier, back down Western Road, through the Lanes, North Laine and Kemptown, before finishing at Black Rock naturist beach. Ride organiser Duncan Blinkhorn said: "Moving to a future that is safe from climate chaos requires us to make better use of the Earth's limited resources, and stop pumping carbon into the atmosphere. World Naked Bike Ride demonstrates that less can be more: less consumption, less pollution, less clothes even! With just bikes and body power, we are campaigning for better road safety, a more stable climate, cleaner air and... more fun!"

Pooches on the Prom, Martlets’ much-loved 5k or 8k sponsored dog walk is back on Sunday 23rd June 2019. The event will start at 10am at the dog-friendly Big Beach Café, Hove Lagoon where celebrity vet ‘Marc the Vet’ will be judging ‘The Most Stylish Dog’ Award and meeting local four-legged friends. Every pooch taking part will receive a wellearned medal and doggy bag as a thank-you for their efforts in helping to raise money for Martlets. Registration is £5 per human and accompanying dogs take part for free as they put their best paws forward and take their owners for an enthusiastic sponsored walkies along the prom. Roses & Elderowers By Lucinda Warner Early June is such a joyful time. The hedgerows are filled with life and abundance as butterflies, bees and bugs frequent the blooms of elder and wild rose. Both these plants are rich sources of food and medicine for humans as well as other creatures, giving us one bountiful harvest now, and another in the autumn when the elderberries and rosehips ripen. Elderflower is a traditional herbal remedy that has a variety of uses, from helping to clear fevers, to easing the symptoms of hayfever. Try combining it in a tea with plantain and nettle if you are suffering seasonal allergies or with yarrow and peppermint for helping to encourage a fever to break. The elder tree was considered sacred in

times past and it was believed that a nature deity called the Eldermother resided within. It was therefore considered important to ask permission before harvesting or cutting any part of the tree, a tradition which I like to follow even today as a sign of respect and gratitude for all the gifts nature offers. Rose is cooling, calming, antiinflammatory and soothing to the emotions, especially grief and sadness. It is lovely externally for soothing red or irritated skin. The healing properties of these two wonderful plant allies can be combined in a variety of delicious ways. Perhaps most simply a tea can be made with the fresh or dried elderflowers and

rose petals with hot water. Or you can try making a sun tea, which is a lovely way to enjoy these plants on a hot day. To make a sun tea add one head of elderflowers and a small handful of rose petals into a glass or jug of cool water. Leave in direct sunlight for a couple of hours and then strain and drink the lightly fragranced and deliciously flavoured water. This is cooling and refreshing and has a soothing and uplifting quality to it. If you are a fan of making elderflower cordial why not

Cucumber A refreshing summer favourite, cucumbers are 95% water. They are actually a type of gourd and originated in India. Humans have cultivated them for at least 3,000 years, although they didn’t reach Britain until the 14th century. Emperor Tiberius adored them and had them on his table every day - during winter they were grown in mobile beds under mica and pushed around to get the sun. We were rather slower to adopt them – uncooked food was considered unhealthy and they were known as cowcumber being thought fit only for cattle feed. How times change! In the Victorian era, serving paper-thincucumber sandwiches at high tea was the essence of elegance and opulence. Perhaps because their minimal nutritional value indicated an ample diet? The habit was adopted throughout the empire, providing a cooling taste of home when temperatures rose in India, Australia and Africa. They are apparently more effective at refreshing us than ice-cream. Like to try a taste of the Raj? – Thinly slice cucumber, gently dry before sprinkling with salt and a dash of lemon juice and place between lightly buttered slices of bread. Accompany with tea.
